    However much we differ on issues, there are moments which should bring

    us together. One such moment is the Golden Jubilee of our nations inde-

    pendence.

    We should rejoice in the fact that in spite of many periods of uncertainty and

    difficulties in the last 50 years, we have managed to pull together as a nation

    to this day.

    We have come to a stage, which the world is acknowledging as promising

    for success. We have given ourselves a functional democratic Constitution,

    which is standing the test of time. The rule of law has become the order ofthe day and it underpins the good governance, which is giving meaning to

    our national motto of Freedom and Justice.

    Let us resolve to draw a firm line between our chequered and unhappy past

    and a future full of hope, achievement and fellow feeling. With such a re-

    solve, we cannot fail.

    Long Live Ghana!

    The Independence of Ghana is meaningless unless it is

    linked up to the total liberation of Africa. - Dr. Kwame

    Nkrumah (March 6th, 1957)

    This month we celebrate our countrys Golden Jubilee,

    marking 50 years of independence.

    We should remember that the Jubilee year is a time of

    joy, forgiveness of debts and universal pardon. It is of

    course a time to celebrate, but the Jubilee should alsoprompt us to reflect on where weve come from and

    where were heading, to ponder the past and plan for

    the future.

    Here at Enjoy Accra, we have decided to use this March

    issue to write about Ghanas political leaders, a non-

    exhaustive list tapping into the past and the present.

    Inside, readers will also find tourist highlights around

    the country, a tour of Ghanaian music, from highlife to

    hiplife, and a snapshot of the countrys economic

    strengths and weaknesses.

    We round the edition up with a story about a free

    education centre for aspiring young artists in Accra; if

    anything represents Ghanas bright future, it is its

    children.

    When we conceivedthe idea of extending

    our operations to

    Africa, it was not

    difficult to make a

    choice as to which

    country to go to. The

    traditional hospitality

    of Ghana, as an

    irresistible place to do

    business, was

    confirmed the very day

    we arrived in 2000.

    We found, and still find, the business climate here in

    Ghana very conducive and friendly so we decided to stay

    on, and with the benefit of hindsight, we are glad we did!!

    As the Government and people of Ghana celebrate 50

    years of nationhood, we at GRAFITEC LTD cannot help but

    feel the spirit of joy, goodwill and friendliness. We have a

    huge sense of pride for coming to Ghana and we feel even

    more proud to be part of the Ghana@50 celebrations.

    The challenges of nationhood notwithstanding, Ghana

    continues to occupy an enviable position in the comity of

    nations in Africa and indeed the world at large. The recent

    election of His Excellency, the President John Agyekum

    Kufour to the Presidency of African Union, the two term

    election of Dr. Kofi Annan to the high position of UN

    Secretary General as well as the various roles Ghana

    continue to play in international issues and peace keeping

    missions are ample testimony to this.

    We are of the opinion that Ghanaians ought to be and

    justifiably proud of their achievements.

    Permit us once again, to wish His Excellency the President

    John Agyekum Kufour and the good people of Ghana a

    happy Ghana @ 50 Celebrations.

    At the end of theSecond World War in

    1945 there were only

    three independent coun-

    tries in Africa: Liberia, which had been founded by freed slaves

    and declared itself independent in 1847; Ethiopia, which was an

    ancient territory and had never been colonised by a European

    power despite several attempts by the Italians; and Egypt, which

    had achieved independence in 1922.

    Africans were burdened by colonial perceptions of who they

    were. The British believed Africans were fundamentally different

    from Europeans. This belief invited racism, implying that

    Africans were not just different, but also inferior.

    Still, the Gold Coast in the 1950s was a country with the highest

    level of education in the whole of Sub-Saharan Africa. Many of

    its nationals filled the civil servant ranks in Nigeria, and Gold

    Coast nationalists had campaigned for home rule before the

    Second World War.

    But it was Kwame Nkrumahs leadership that tapped into and

    elevated the independence mood of the people. Already in 1947

    Nkrumah was a full-time politician, installed as General

    Secretary of the political party the United Gold Coast

    Convention.

    The British imprisoned him for inciting people to revolt against

    the status quo, but he was later freed and in 1948 formed the

    more radical Convention People's Party (CPP).

    In 1951 he was again imprisoned, this time for inciting strikes.

    Later that year, elections were held for a larger LegislativeCouncil, with Africans in the majority.

    The CPP won, and Nkrumah was released. He then negotiated a

    new constitution with the British and in 1954 became Prime

    Minister.

    Independence was now only a matter of time and excitement

    was rising. Three years later, the country broke the chains of

    colonial rule independence at last!

    On the following pages, we present short biographies of Ghanas

    most important heads of state from Nkrumah to Kufuor.

    1927 He entered Government Training College Accra, which later became part of Achimota College

    1930 He obtained Teachers Certificate from Achimota Training College

    1931 He became a teacher and later promoted to be a head teacher at Catholic School Axim

    1939 He received a Bachelor of Arts from Lincoln University, USA.

    1942 He received a Master of Science degree in Education from the University of Pennsylvania,

    and a Master of Arts in philosophy the following year.

    1945 He started writing a pamphlet titled Towards Colonial Freedom

    1945 He was honoured with doctorate degree in law at Lincoln University and named mostoutstanding Professor of the year

    Political and Public Life

    1948 He became General Secretary of the United Gold Coast Convention (UGCC)

    1948 Detained with executive members of UGCC known later as the Big Six

    1949 He resigned from the UGCC and formed his own political party, the CPP, on June 12th,

    1949, in Accra

    1950 He declared positive action on January 8th, 1950, which led to a general strike all over the

    country. Consequently, he was arrested, tried and imprisoned

    1951 The CPP won the general election in February 1951. Even though in prison, he overwhelmingly

    won his seat in Accra Central. CPP called for his release from prison. The Governor Sir Charles

    Arden Clarke ordered his release and asked him to form a government

    1952 In April 1952, he was made Prime Minister of Gold Coast

    1954 CPP won the General Election and was asked to form another government

    1957 Declaration of Ghanas Independence on March 6th

    1958 Married to Egyptian Helena Ritz Fathia

    1960 The CPP won a referendum which made Ghana a Republic with him as President

    1964 He won another referendum which made Ghana a one-party state

    1966 Overthrown by coup dtat

    1972 He died in Conakry, Guinea, on April 27th. In spite of his democratic failure, he is still respectedas the founder of Ghana

    1972 In July his body was moved and buried in Accra

    Greater Accra Region

    Shai Hills Resource Reserve

    About 50 km north-east of Accra, the

    reserve encompasses about 48 sq km

    of largely savannah-covered plains.

    It is the closest wildlife reserve to

    Accra, only about an hour away under

    favourable traffic conditions.

    A memorable day can be spent walk-

    ing through the cool, dry evergreen for-

    est to the mountain caves and the rem-

    nants of former Shai settlements in

    the reserve.

    The Dipo festival is normally per-formed between March and May and

    it is an added attraction for tourists to

    Shai Hills.

    Centre for National Culture

    The centre has a craft shop, which dis-

    plays and sells Ghanaian and African

    handicrafts such as pottery, ceramics

    and kente weaving produced on thepremises and by other craftsmen in the

    region.

    The centre also runs a large artefact

    market where indigenous textiles are

    sold to the general public.

    Patrons of the arts have the privilege

    of viewing live demonstrations of

    kente weaving, rattle making and

    wood carving.

    The centre has an art gallery which

    exhibits and sells outstanding paint-

    ings and sculptures produced by some

    of Ghanas most celebrated artists.

    Central Region

    Kakum National Park

    Established in 1932 but officially

    opened to the public in 1994, the 357sq km national park is comprised of

    mostly undisturbed virgin rainforest.

    Excellent walking tours and Africas

    only canopy walkway through the for-

    est provide the opportunity to see

    much of Ghanas indigenous plant life,

    as well as rare butterflies, birds and

    game.

    The park in located on the Elmina

    Road, about 250 km west of Accra.

    Ghanas 10 regions offer many natural and cultural points of interest,from Mole Park in the north to former colonial castles along the coast.In this issue and the next, we offer a snapshot of some of the countrysmost interesting tourist spots.

    Elmina Castle

    The Portuguese founded the Castle of Saint George (later

    simply named after the town of Elmina) in 1482 to protect

    the gold-rich lands discovered in 1471.

    The castle was completed according to its original plan in

    1486 and the town was raised to the status of a city.

    Guided tours are available for visitors, and a small muse-

    um explains the history of the triangular trade between

    Europe, Africa and the Americas.

    Western Region

    Nzulezu Stilt Village

    The village is an amazing community built entirely on

    stilts in the middle of Lake Tadane.

    All structures are suspended over the water and trans-

    port in and out is only possible by canoe.

    While in the area you can visit Fort Apollonia at Beyin,

    take a canoe trip up the scenic Ankasa River, or go on an

    expedition with local fishermen.

    Nzulezu is about 90 km from Takoradi and is bestapproached from Beyin. Visitors are welcome every day

    except Thursdays, which are considered sacred.

    Ankasa Conservation Area

    The 500 sq km protected area consists of the Nini-Suhien

    National Park and the Ankasa Resource Reserve.

    For those wishing to spend the night in the park, there are

    modest cabins made mostly with local building materials

    and each has its own kitchen.

    About 8 km from the Ankasa entrance is the spectacular

    Bamboo Cathedral.

    Giant bamboo shoots bow and crisscross forming a dome

    and what some have called natures perfect architectural

    design.

    Ghana is home to numerous ethnic groups, each with

    their own distinctive musical traditions. The Ewe people

    of south-eastern Ghana are known for their folk styles,

    which are related to the music of Benin and Togo. The

    Ewe have also contributed popular styles,

    especially the agbadza and borborbor, a

    konkoma-highlife fusion that was

    invented in the early 1950s in chickenKpandu.

    North-western Ghana is home to

    the Dagarti, Lobi, Wala and

    Sissala peoples, who are known

    for xylophone-based folk music.

    Southern and central Ghana

    is dominated by various

    Akan peoples, includ-

    ing Fante and

    Ashanti. They are

    known for complex

    court music and a

    huge log xylo-

    phone used in

    asonko music.

    North-eastern Ghana is famous for talking drums, played

    by the Gur-speaking Mamprusi, Frafra and Dagomba

    nations.

    During the colonial era, the Gold Coast was a hotbed of

    musical synergy. Rhythms from across West Africa, espe-

    cially gombe and ashiko from Sierra Leone, Liberian gui-

    tar styles like dagomba, mainline and fireman, Fante osi-bisaba, European brass bands and sea shanties, and

    Christian music were all combined into a melting pot that

    became highlife.

    The word highlife comes from the 1920s, when it was

    used to describe parties held by the European upper class

    to which the locals aspired. There were two types of

    highlife at the time.

    Dance orchestras played at the parties of the elite, while

    poor, rural guitarists played a kind of often-scorned music

    that was also called palm wine music (the term palm

    wine has referred to multiple styles from West Africa, but

    is now more commonly associated with the popular

    music of Sierra Leone). Originally associated with the

    Fante people, the guitar-based highlife spread across the

    country and, to a lesser degree, abroad.

    In the 1930s, Sam's

    Trio, led by Jacob

    Sam, was the most

    influential of thehighlife guitar bands.

    Their "Yaa

    Amponsah", three

    versions of which

    were recorded in

    1928 for Zonophone,

    was a major hit that

    remains a popular

    staple of numerous

    highlife bands. Thenext major guitar-

    band leader was E.K.

    Nyame, who led the

    Akan Trio and sang in

    Twi. Nyame also

    added the double

    bass and some ele-

    ments from jazz and

    Cuban music.In the 1960s, dance highlife was more popular than gui-

    tar-band highlife; most of the guitar bands began using

    the electric guitar until a roots revival in the mid-1970s.

    Dance highlife evolved during World War II, when

    American jazz and swing became popular with the arrival

    of servicemen from the United States and United

    Kingdom.

    After independence in 1957, the socialist government

    began encouraging folk music, but highlife remained pop-

    ular, with new influences from Trinidadian and Congolese

    music. E.T. Mensah was the most influential musician of

    this period, and his band The Tempos frequently accom-

    panied the president.

    The original bandleader of The Tempos was Guy Warren,

    who was responsible for introducing Caribbean music to

    Ghana and, later, was known for a series of innovative

    fusions of African rhythms and American jazz. King Bruce,Jerry Hansen and Stan Plange also led influential dance

    bands during the 1950s and 60s. By the 1970s, however,

    pop music from Europe and the US dominated the

    Ghanaian scene until a mid-1970s roots revival.

    By the beginning of the 1970s, traditionally styled highlife

    had been overtaken by electric guitar bands and pop-

    dance music. Since 1966 and the fall of President Kwame

    Nkrumah, many Ghanaian musicians moved abroad, set-

    tling in the US, UK and Nigeria. Highlife bands like

    Okukuseku recorded in Lagos or Nigeria's eastern Igbo

    region.

    In 1971, the Soul to Soul music festival was held in Accra.Several legendary American musicians played, including

    Wilson Pickett, Ike and Tina Turner and Carlos Santana.

    With the exception of Mexican-American Santana, these

    American superstars were all black, and their presence in

    Accra was seen as legitimizing Ghanaian music.

    Though the concert is now mostly remembered for its role

    as a catalyst in the subsequent Ghanaian roots revival, it

    also led to increased popularity for American rock and

    soul. Inspired by the American musicians, new guitarbands arose in Ghana, including the Ashanti Brothers,

    Nana Ampadu & the African Brothers, The City Boys and

    more.

    The Last King

    of Scotland

    Plot Outline: Based on the events of the brutal Ugandan

    dictator Idi Amin's regime as seen by his personal

    physician during the 1970s

    In the early 1970s, Nicholas Garrigan, a young idealis-

    tic Scottish doctor, comes to Uganda to assist in a rural

    hospital. Once there, he soon meets the new President,

    Idi Amin, who promises a golden age for the African

    nation.

    Garrigan hits it off immediately with Amin, a rabid

    Scotland fan, who offers him a senior position in the

    national health department and becomes one of the

    president's closest advisers. However as the years

    pass, Garrigan cannot help but notice Amin's increas-

    ingly erratic behaviour that grows beyond a legitimatefear of assassination into a murderous insanity that is

    driving Uganda into bloody ruin.

    Realising his dire situation with the lunatic leader

    unwilling to let him go home, Garrigan must make some

    crucial decisions that could mean his death if the des-

    pot finds out.

    early days in the early 1980s in Little Odessa, selling

    guns to mobsters in his local neighbourhood, through to

    his ascension during the '80s and early '90s, when he

    forms a business partnership with an African warlord

    and his psychotic son.

    The film charts Orlov's relationship with his younger

    brother, his marriage to a famous model, his relentless

    pursuit by a determined federal agent and his inner

    demons that sway between his drive for success and

    the immorality of what he does.

    Blood Diamond

    Plot Outline: A

    farmer, a smuggler,

    and a syndicate of businessmen match wits over the

    possession of a priceless diamond.

    Set against the backdrop of civil war and chaos in1990s Sierra Leone, Blood Diamond is the story of

    Danny Archer (Leonardo DiCaprio) a South African

    mercenary and Solomon Vandy (Djimon Hounsou) a

    Mende fisherman.

    Both men are African, but their histories as different as

    any can be, until their fates become joined in a common

    quest to recover a rare pink diamond that can transform

    their lives. While in prison for smuggling, Archer learns

    that Solomon who was taken from his family andforced to work in the diamond fields has found and

    hidden the extraordinary rough stone.

    With the help of Maddy Bowen (Jennifer Connelly), an

    American journalist whose idealism is tempered by a

    deepening connection with Archer, the two men

    embark on a trek through rebel territory, a journey that

    could save Solomon's family and give Archer the sec-

    ond chance he thought he would never have.

    By West African standards, Ghana has a

    diverse and rich resource base. The coun-

    trys economy, however, is mainly agricul-

    tural with a majority of its workers

    engaged in farming.

    Cash crops consist primarily of cocoa and

    cocoa products, which typically provide

    about two-thirds of export revenues, tim-ber products, coconuts and other palm

    products, shea nuts, which produce an

    edible fat, and coffee.

    Ghana also has established a successful

    program of non-traditional agricultural

    products for export, including pineapples,

    cashews, and pepper. Cassava, yams,

    plantains, maize, rice, peanuts, millet, andsorghum are the basic foodstuffs. Fish,

    poultry, and meat are important dietary

    staples.

    Principally gold, diamonds, manganese

    ore, and

    bauxite are

    produced and

    exported. The

    only commer-cial oil well

    has been

    closed after

    producing 3.5

    million bar-

    rels over its

    seven-year life, but signs of natural gas

    are being studied for power generation,

    while exploration continues for other oil

    and gas resources.

    Ghanas industrial base is relatively

    advanced compared to many other African

    countries. Import-substitution industries

    include textiles, steel (using scrap), tyres,oil refining, flour milling, beverages,

    tobacco, simple consumer goods, and car,

    truck, and bus assembly.

    Tourism has become one of Ghanas

    largest foreign income earners, and the

    government has placed great emphasis

    upon further tourism support and develop-

    ment.

    Today, for the Golden Jubilee, the country

    is stable and expecting a lot for the future.

    Many activities are planned for the year,

    which it is hoped will boost the economy.

    The Golden Jubilee will be an opportunity

    to showcase to the world that African

    countries are entering a new period. This

    year Ghana becomes the first colonised

    sub-Saharan state to celebrate 50 years

    of independence, but it will be followed

    by several others in the next five years.

    Students at CCS Conservatory of Arts

    are only children but theyve per-

    formed with Bono and Beyonce and

    written sonatas and symphonies.

    Despite coming from diverse back-

    grounds, these aspiring artists are

    united by their passion for performing

    and the free training theyve received

    at the CCS conservatory in the Accrasuburb of Dzorwulu.

    For ten years the non-profit organisa-

    tion has been training African youth in

    dance, music, piano, drama, modelling

    and gymnastics at its Saturday

    Academy.

    We help them realize, God has given

    each one unique talents and a purposefor their lives. If they use it, they can

    better their lives, the nation and

    mankind, said Marquita Stokes, who

    with her mother, Ruth Stokes, both

    from the United

    States, founded

    CCS.

    The most promising students at

    the conservatory are given schol-

    arships for primary through to ter-

    tiary education.

    Africa has many rich resources,

    but the most valuable resources

    are the young human resources, said

    Marquita. Given the right education

    and resources they will make the realchanges on the continent.

    Higher Calling

    In 1995 Ruth and Marquita decided to

    uplift their lives in the United States

    and follow a higher calling. (Ruth

    was retired at the time, after more

    than 40 years as a musician and

    teacher. Marquita was a successfultelevision, video and theatre produc-

    er).

    They loaded a 40-foot container with

    educational items and computers and

    headed to Ghana.

    It was a divine appointment that we

    had to follow, said Ruth.

    They start-

    ed in a

    room at a

    school in

    Korle Gonno in Accra, offering after-

    school tutoring. Soon they were

    teaching more than 40 children at a

    time, eventually moving to their cur-rent location in Dzorwulu and expand-

    ing the courses offered.

    In 2002, more than 750 children audi-

    tioned for the selective Gateway

    Program.

    CCS conservatory is funded by Ruth

    Stokes retirement, family, churches

    and parents of students at theSaturday Academy. For every four chil-

    dren enrolled in the Saturday

    Academy, CCS strives to offer at least

    one scholarship.

    This weekend, my curiosity led me to the opening of a Lebanese restau-

    rant right in the heart of Osu.

    The interior dcor (down to the Arabic seating) got my tummy rumbling,

    long before I took a glance at the menu. And I was not disappointed in

    that area either.

    After a good hour of stuffing my face with some fantastic delicacies,

    imagine my relief when I got a chance to exercise off the food, through

    some Arabic dancing. (I didnt know how, so they taught me.)

    As if that wasnt enough, in walked Elvis Presley or was that Paul

    Ritchie? who kept our feet tapping to the good old tunes.

    Adonis has come to fill a void that I never realised was there before. This

    was exactly the kind of evening out that I had been missing; food, dance,

    entertainment with a good dose of culture, all under one roof. Or do the

    pictures tell a lie?

    Ghana Looks Strong for 2006

    CAF Football Awards

    The Black Stars, Michael Essien and the

    Ghanaian female footballer Sheila Okai arefinalists in this years Confederation of African

    Football (CAF) awards, following a vote by the

    coaches of member-national associations.

    Essien joins Cte dIvoires Didier Drogba and

    Cameroons Samuel Etoo as finalists for the

    African Player of the Year award, which will be

    announced this month at CAFs ceremony in

    Accra.

    If Essien wins, he will be only the second

    Ghanaian to receive the prestigious award.

    Ghana, Cte dIvoire and Egypt are finalists for

    national team of the year. While Okai faces off

    with Nigerias Uwak Cynthia and South Africas

    Portia Modise for woman footballer of the year.

    Ghanaian Asamoah Gyan is also a finalist, for

    young player of the year.

    WHO IS MICHAEL ESSIEN?

    He is midfield multifunctional, he is dynamic

    and strong.

    The boy has incredible physical power, he is

    super resistant with great speed and unending

    tactical abilities. Chelsea F.C. Coach Jos

    But Michael Essien is all that and more. Think

    hero, superstar an idol for a generation of

    young Ghanaians who dream of dribbling down

    a professional pitch.

    Essien was born December 3, 1982, in Accra. Hebegan his career at a local club, Liberty

    Professionals FC.

    He remained relatively unknown in world foot-

    ball until his outstanding performance at the

    Under-17 World Cup in 1999 got European

    scouts buzzing.

    In July of that same year, French club SC Bastiahad signed him.

    At Bastia he did not command a regular place in the

    team, playing at right back, left back and in central

    defence. But as a result of a team mates injury,

    Essiens coach made the wise decision to give him a

    crack at central midfield. Essien flourished. In 2001,

    he participated in the World Youth Championship in

    Argentina and in 2002, at the African Nations Cup, hedebuted on Ghanas senior team, the Black Stars.

    Soon Essien was compared to Frenchman Patrick

    Vieira because of his ability to go from box to box. In

    2002/03 season he helped Bastia qualify for the UEFA

    Cup. He scored six goals that season.

    Still, he was only 20 years old at the time and with

    each passing year he grew stronger and harder tack-

    ler. Top French and English teams made offers andeventually Essien moved to Olympique Lyonnais. At

    Lyon, Essien played more defensive midfield, featur-

    ing regularly in the team that won the third and fourth

    of their current string of five consecutive Ligue 1

    titles.

    In August 2005, Essien declared that he would go on

    strike against Lyon because of the clubs refusal to

    transfer him to English Premiership championsChelsea. His dramatic move worked, and on August

    14th Lyon and Chelsea announced their 26m deal for

    the Ghanaian, ending one of the longest-running

    transfer sagas in recent English football history.

    On August 21st, 2005, Essien made his debut with

    Chelsea, against

    Arsenal F.C. and wearing

    the number 5 on his

    shirt. He soon cemented

    his place in Jos

    Mourinhos side, starting the majority of the league

    games since his debut. Essien could well form part ofa powerful Chelsea midfield with Frank Lampard for

    years to come.

    On May 16th, 2006, Essien was selected to represent

    Ghana at the 2006 World Cup in Germany. He shared

    the midfield with team captain Stephen Appiah of

    Fenerbahe and Sulley Ali Muntari of Udinese. Essien

    played in Ghanas 0-2 defeat to Italy, their 2-0 victory

    over the Czech Republic, and the 2-1 victory over the

    United States, and helped Ghana become the only

    African team to reach the second round of the 2006

    World Cup.

    However, Essien was suspended for Ghanas second

    round match against Brazil and could only watch as

    Ghana lost 0-3. Upon the teams return to Ghana,

    Essien said that the team had gained invaluable expe-

    rience and will be aiming to make the next finals, to

    be held in South Africa in 2010.

    Essien was nominated for the 2005 and 2006 FIFA

    World Player of the Year Awards, placing 22nd in

    both. In 2006, he was also nominated for the Ballon

    dOr. At the time of going to press, he is one of the top

    three finalists for African Footballer of the Year.

    INGREDIENTS:

    Five to six pounds of

    fresh pork leg (hind or

    front will also do),

    serves eight

    2 kg of boiled pota-toes

    2 cans of mild

    Sauerkraut

    Olive oil

    Vinegar

    Ground oregano

    Bay leavesfresh garlic

    Black pepper

    Salt

    METHODBlend two tablespoons ofvinegar, two tablespoons ofsalt, one tablespoon of groundgarlic, ground black pepper totaste (one-quarter teaspoonfor finicky diners, one tea-

    spoon for those with a tastefor hotter dishes) and oreganoto taste (one teaspoon forfinicky tastes, up to two table-spoons to really let it out).

    Then use a thin sharp knife topierce the leg all the way tothe centre bone. Try makingyour incisions so that the knife

    runs a couple of inches alongthe side of the bone by movingyour wrist so that the initialslit remains no larger than thesize of the knife.

    Repeat the incisions carefullyalong the length of the porkleg. A five to six pound porkleg requires some twenty inci-sions.

    Now you need a way to push

    the basting all the way insidethe pork leg through each inci-sion. Use a long-handledspoon if you dont have a bast-ing tool. Insert the handle endfirst if the spoon is wider thanthe incision slit. There shouldbe enough basting paste leftover to cover the whole skinand some under-the-skin slits.

    Bake your pork leg at 350-450degrees Fahrenheit. A goodrule of thumb is 35 minutesper pound. Set some means of

    collecting the juices that willooze from the leg as it cooksand rebaste the pork leg withthe juices about twicethroughout the process, shift-ing positions of the leg at eachbasting. Allow to cool for a

    few minutes before serving.

    Boil the potatoes, and cutthem into quarter pieces. Heatup olive oil in a frying pan, addgarlic and ground oregano.Roast the potatoes until theyare brown and crispy. Heat upolive oil in a frying pan, addthe sauerkraut and stir it for

    two to three minutes. Add aglass of dry white wine andsome bay leaves.
