History of the 4th Of July Variously known as the Fourth of July and Independence Day, July 4th has been a federal holiday in the United States since 1941, but the tradition of Independence Day celebrations goes back to the 18th century and the American Revolution (1775-1783). In June 1776, representatives of the 13 colonies then fighting in the revolutionary struggle weighed a resolution that would declare their independence from Great Britain. On July 2nd, the Continental Congress voted in favor of independence, and two days later its delegates adopted the Declaration of Independence, a historic document drafted by Thomas Jefferson. From 1776 until the present day, July 4th has been celebrated as the birth of American independence, with typical festivities ranging from fireworks, parades and concerts to more casual family gatherings and barbecues. The tradition of patriotic celebration became widespread after the War of 1812, in which the United States again faced Great Britain. In 1870, the United States Congress made July 4th a federal holiday; in 1941, the provision was expanded to grant a paid holiday to all federal employees. Over the years, the political importance of the holiday would decline, but Independence Day has remained an important national holiday and a symbol of patriotism. Fat gives it the creamy texture but it will also determine how fast the ice cream melts. That is one of the main reasons why nonfat or low fat ice cream melts slower. It contains more water than the full bodied ice cream that is full of fatty goodness. In addition, nonfat or low fat versions contain more air whipped into them, which allows them to keep their shape longer. So the next time you enjoy your favorite tasty treat, remember it all begins with the ingredients. Add Joy To Your Daily Life 1. Pay as much attention to the things that are working positively in your life as you do those that are giving you trouble. 2. Rake a big pile of leaves every fall and jump in it with someone you love. 3. Memorize your favorite love poem. 4. Learn three knock-knock jokes so you will always be ready to entertain children. 5. Sometimes seafood can be difficult to cook. It is best to treat it with loving care. Shrimp and scallop need very

little cooking at all. The longer they cook the tougher they get. Give this recipe a try. You might just surprise

yourself.

Scallop Piccata with Sautéed Spinach

1 ½ pounds sea scallops (about 12)

¼ teaspoon salt

¼ teaspoon freshly ground black pepper

5 Teaspoons canola oil, divided

1 clove garlic chopped

½ cup vermouth

3 Tablespoons chopped fresh parsley

2 Tablespoon butter

4 teaspoons capers

1 10ounce package fresh baby spinach

Directions:

1) Heat a large cast-iron skillet over high heat. Pat scallops dry with paper towels. Sprinkle salt and freshly

ground pepper over scallops. Add 1 tablespoon canola oil to pan; swirl to coat. Add scallops; cook 2 minutes on

each side or until browned and done. Remove from pan; keep warm.

Reduce heat to medium. Add chopped garlic to pan; cook 10 seconds. Add vermouth, scraping pan to loosen

browned bits; cook 2 minutes or until liquid is

reduced by half. Remove from heat. Add parsley,

fresh lemon juice, butter, and capers, stirring until

butter melts. Pour sauce in a bowl. 3. Heat

remaining 2 teaspoons oil in pan over medium-high

heat. Add spinach; sauté 30 seconds or until spinach

almost wilts. Drizzle sauce over scallops; serve with

spinach.

Professor's The Last Lecture' Tells A Story About How To Live

It's not unusual for retiring professors to give a last lecture. When Carnegie Mellon University's Randy Pausch gave his, in 2007, he wasn’t retiring. He was dying of pancreatic cancer.

His now famous lecture was viewed by millions on YouTube. It inspired many to follow Pausch's advice about what is important in life. Now he has a book. The Last Lecture (Hyperion), with coauthor Jeffrey Zaslow.

The father of three small children, Pausch said in a USA Today interview, "I was trying to put myself in a bottle that would one day wash up on the beach for my children." From his lecture. Achieving Your Childhood Dreams, here are a few of his points about life:

Never underestimate the importance of having fun. I'm dying and I'm having fun every day because there's no other way to play it.

Experience is what you get when you didn't get what you wanted.

No one is pure evil. Find the best in everybody. Wait long enough and people will surprise you.

It's not about achieving your dreams but about living your life. If you live the right way, the dreams will come.

We can't change the cards we're dealt, just how we play the hand.

In an interview with amazon.com, Pausch says the thing he learned as he grew older was that you can’t get anywhere without help. Ask yourself: What kind of person do people want to help? Then you'll know the answer to: What kind of person should I try to be?

Hearing what other people say about you is important to your success and happiness.

His book is humorous while allowing him to tell of his life experiences and the lessons he learned. For one: The secret of winning the stuffed animal on the midway, like most anything else, is sheer persistence. But it helps to have long arms and discretionary income. Randy died July 25th, 2008.
