A

Approaching this anchorage, keep well off the rocky point to the west and set your anchor on the muddy bottom in 4-6 metres. Holding is fi rm enough that this spot not only off ers good overnight protection in the northeast monsoon, but may be used in lighter winds during the southwest season too.

There is a small Muslim fi shing village on stilts in the northwest corner of the bay. Approach by dinghy using the shallow creek on the west of the bay, and please observe the usual Muslim dress code.

This small island off ers a great daytime anchorage in 8-10 metres off the sandy point to the northeast.

Snorkelling and diving are best on the seaward edge of the fringing reef on the northeast side the island. There is also an all-tide access beach on this end of the island.

Alternatively, good overnight anchorage can be found anywhere on the West Coast of Koh Yao Yai when the northeast monsoon prevails.

Koh Khai Nok is another great daytime anchorage. The brilliantly white, all-tide beach on its northern end can be seen from miles distant.

Anchor in 10-15 metres and be careful, as the bottom rises very quickly onto a sandy ledge scattered with coral heads. In either monsoon season, you will fi nd a couple of places to tuck in close to avoid the occasional ground swell, which can occur in this open anchorage.

A wide variety of fi sh and corals make this island a favourite for scuba divers and snorkellers at slack water and neap tides. An excellent day destination for families because of the small cove teeming with brilliantly coloured Sergeant Major Fish, which will feed from your hand.

By far the busiest destination for speedboat tours from Phuket, there is a daytime restaurant on the beach. A 200 Baht fee per boat and 40 Baht per non-Thai visitor are levied by the local Or Bor Tor (Council) for visiting vessels. There is also a 150 Baht charge per couple for deck chairs, whether you use them or not! Take your wallet.

Main ingredients3 king prawns• 5 gm shallots• 10 gm yellow pepper• 30 gm cherry tomatoes• 40 gm fennel• 20 ml white wine• 50 gm mashed potatoes• Salt, black pepper and • chilli fl akes (to taste)

30 gm Parma ham• 60 gm gourmet kidney beans• 10 gm red pepper• 1 gm dill• 10 gm tomato concasse• 15 ml Italian olive oil• (extra virgin)

Bell pepper coulis100 gm yellow pepper• 100 ml olive oil (extra virgin)•

100 gm red pepper• Salt and black pepper (to taste)•

PreparationClean the red and yellow peppers and roast lightly. Cut half into small cubes (concasse) and combine the rest in a blender with extra virgin olive oil until creamy in texture. Add salt, black pepper and a little chilli. Sprinkle black pepper on the king prawns, wrap with Parma ham and pan-fry with olive oil, shallots, chilli, gourmet kidney beans, fennel, tomatoes and the red and yellow pepper concasse. Deglaze with white wine and add salt and pepper. Take a hot dish, and place the prawns and other ingredients in the centre. Add mashed potatoes on top of the prawns. Garnish with the red pepper coulis, dill, and fried cherry tomatoes.

About Chef Angelo Magliaro

My passion for food started back in my childhood. My mother was an excellent cook, so even as a kid I started to enjoy getting my ‘hands dirty’, while helping the ‘big Mama’. Since then my relationship with the kitchen has become a real passion. This is the way I like to express myself and my feelings.

My experience as a professional chef started in Italy, at the famous Grand Hotel Helio Cabala in Marino (Rome). I have to say that I was very lucky to have as teachers a few of the best and most world-renowned Italian chefs, such as Gianfranco Vissani, Gualtiero Marchesi, Sergio Mei and Antonello Colonna – all Michelin-star rated. I gained further experience at the fi ve-star Hotel Schwaitlalm in Salzburg, where I was focused on Austrian cuisine. I then moved to the Raff aello restaurant in Mexico City where I had the chance to learn about Latin and South American cuisine. After that I went to Mainburg in Germany where I spent two years. I also broadened my experience working with the UN and the FAO (Food and Agricultural Organization). My previous employment was with the Sheraton in Shenzhen in China a restaurant which received the China Daily World Cuisine magazine award for ‘Best Italian Restaurant’. In my 22 years of working experience, my cooking skills have been recognised by various publications including popular Italian newspapers such as ‘Il Messaggero’, as well as other international publications. I’ve also taken part in several Italian TV cooking shows including ‘La Prova del Cuoco’ and ‘Uno Mattina’.

Are you originally from Phuket? No. Phattalung is my home town. My parents still work and live there. Along the way, I graduated from Walailak University in Nakhon Si Thammarat with a degree in information science.

When did you move to Phuket? Four years ago, after my graduation.

What brought you to Phuket? My sister was already living and working here and I was off ered a job fi rst in Membership Service at Blue Canyon and then as secretary to the managing director of a real estate company.

How did you become part of the Franke team? About fi ve months ago I saw this job posted on the internet. I though it looked really interesting and challenging. It was really exciting because my new boss (Mr. Arnaud Brandt) came down from Bangkok to interview me.

What is your particular responsibility? My position is Offi ce Manager and Sales Representative for Phuket, so I’m responsible for everything in the showroom. I prepare the work schedules for the technicians and look after the dealer network. In addition, I research and contact property developers to approach to present Franke's products.

How do you approach your job? I try to be fl exible and open to new ideas.

How do you keep your clients? By being loyal to them.

How do you handle stress? Chill out and manage the problems as they arise. Laughing out loud is quite a good way to relieve stress.

What is your motto for running your job? Be positive. You must believe that every problem has a solution.

Tell us about your style of leadership. I aim to minimise stress in the workplace. It’s not necessary to make a big issue of every small mistake.

What’s happening in the world of Franke? Franke, now the largest kitchen sink manufacturer in the world, will be one hundred years old next year and we in Phuket are planning a big birthday party.

What do you see as your biggest success to date? I don’t really think like that. I just do my best

Who is the person who has infl uenced you the most in your career? I’d say my current boss, Mr. Arnaud Brandt. He’s a good boss and a very interesting guy.

Whereabouts do you live in Phuket? What determined your choice of location? I bought my house near Heroines’ Monument. The area has a local feel to it, but still has good facilities. It’s close to town and not far from the airport. It seems like the centre of Phuket.

Jutipak is a no-nonsense business person who works hard, and still fi nds time to enjoy a happy and healthy lifestyle which epitomizes all that is good in our Buddhist traditions.

How is Phuket from your point of view? Phuket is a tourist destination with excellent infrastructure and natural beauty. I think the island is perfect. Nowadays, the island has seen a huge increase in high-end developments. I hope over-development doesn’t spoil things.

What areas of Phuket are your favourites? My favourite place is Phuket's best view point Laem Phrom Thep. It’s a beautiful place with great sunsets.

What do you like and dislike about living in Phuket? I like the sights and natural beauty of Phuket, but besides that I am not really happy when some of the tourists or residents do not seem to understand or care to protect the environment. I think we must be careful not to spoil the natural beauty of the island or we’ll all be in deep trouble.

What do you think Phuket should improve upon? The environmental issues, well... in fact, it's not just in Phuket that we should all be aware of this problem.

How old are you? I’m now 27.

What is you marital status? I’m single.

Are you planning to start a family soon? No. I’m still enjoying the single life. Right now, I’m focussed on my work.

How do you divide time between working and your family? I don’t divide the time. I do both at the same time, working and taking care of the family.

What do you do in your spare time? It’s pretty simple really. When I’m free, I spend time at home reading a book, watching movies, listening to music or surfi ng on the internet. I don’t really enjoy the party scene – that’s not me. If I have more time, I like to travel home to be with my family. We can visit the temple together to make merit. It’s also good to hang out around the kitchen or go to see relatives – simple pleasures in the Buddhist tradition.

How often do you exercise? Probably three times a week. I like to play badminton in the public park near my place. I don't take it seriously. I just do it for fun and to keep healthy.

How would you rate the quality of your life? I don't view my life in that way, but I think it's good. I mean I’m satisfi ed.

Bobby Duchowny studied aromatherapy – a healing art that promotes massage, when combined with specifi c herb and spice oils, as a method to reduce stress, boost energy and heal certain physical ailments – at the American Aromatherapy Association.

Aromatherapy, using essential oils to stimulate or relax, is the perfect complement. While my therapists’ hands

worked their magic on my body, I felt I had left all my worldly cares and tension behind.

By now in sensory heaven, the Sawasana angels prepared me for a Rejuvenating Anti-Stress Facial. A blend of facial massage with natural creams, this treatment cleansed and rejuvenated my skin and facial muscles. Visit Wat Chalong (Chalong Temple) The culture of Thailand is heavily infl uenced by Buddhism. There are of course many temples in Phuket, but the most popular attraction for both visitors and local residents is Wat Chalong, which is situated to the south of Phuket City.

Wat Chalong was built during the reign of King Rama II (1809-1842), and has since been subject to much extension. The temple contains several structures and halls. One of these features a gilt-covered statue of the famous and revered Luang Poh Cham, plus statues of Luang Poh Chuang and Luang Poh Gleum, all ex-abbots of the temple. The Grand Pagoda is decorated with wall paintings of scenes from the Buddha's life and features various Buddha images. The air-conditioned 'exhibition home' of Luang Poh Cham contains lifelike human-sized wax models of Luang Poh Cham, Luang Poh Chuang, Luang Poh Gleum, and Luang Pu Thuad, as well as examples of antique Thai furniture and Benjarong (Thai porcelain designed in fi ve colours).

The temple is also associated with many other revered monks including Luang Pho Chae who led the residents to put down the Ahngyee rebellion by Chinese coolies in 1876.

When you visit a temple remember to remove your shoes, hat and sunglasses before entering the temple building and to dress modestly. If you sit in front of any religious artifacts such as a Buddha image, you should not point your feet towards the object. Importantly, women should not attempt to touch a monk.

Things to do in Phuket

Enjoy Birdwatching in PhuketPhuket off ers many birdwatching opportunities. The terrain includes mangrove forests, marshland and secondary and old-growth jungle. The best time of the year to visit Phuket for bird watching is from about the middle of October through April. At this time, many species of migratory birds will be present.

Over two hundred species of have been seen on Phuket. Full day and overnight tours off er the birder a variety of habitats in which to see exotic birds. Apart from Phuket you can also add a day of birding in Phang Nga Province or Khao Sok National Park. Thale Noi and Krabi are also destinations. Tours are educational, easy and fun.

Laem (Cape) Phromthep is the most popular and largest of all the view points. It’s a headland on the extreme southern end of Phuket about 19 kilometres from Phuket City. Nearby is Windmill View Point. It can be found on the road between Naiharn and Promthep. As the name would suggest the hilltop boasts a modern windmill, the only one on the island.

Continuing towards Kata you’ll fi nd Three-beach View Point. This is a very tastefully developed facility with a Thai-style sala, which off ers superb views on several levels. From here Kata Noi, Kata and Karon beaches can be seen and out to sea is Koh Poo Island. It is one of the island's best views.

This is a great way to experience magnifi cent vistas and cool breezes. Most view points have refreshments available. Don’t forget your camera.

Student Accommodation FundsIn these days when memories of fi nancial Armageddon are still fresh, it’s good to know that there are still opportunities for low-risk investments which will give a reasonable return.

One asset class has demonstrated its resilience during the recent economic turbulence. Student accommodation funds have remained a robust investment, and have emerged as a sector of the property market in their own right. A growing number of investors are attracted to their strong fundamentals which provide a secure income stream.

Student numbers are increasing each year due to record exam results at home and a greater infl ux of overseas students. Universities need quality accommodation to attract their share of students, and currently there is a signifi cant undersupply. The emergence in recent years of private student accommodation initiatives has been the result. Private operators are now working with universities to purchase and develop their existing stock, or to build new. As an investment, the sector presents a compelling proposition. Demand for beds continues to outstrip supply; bad debts are low; occupancy is high and students pay their rent (which increases each year), in advance.

Only 9% of students in UK are currently housed in private accommodation. There are some eight million students in the main EU countries, and only 13% are in purpose-built accommodation. Student accommodation is being seen as the single largest, untapped real estate market in Western Europe. Universities will continue to work in partnership with the private sector to provide suitable modern accommodation. This creates an attractive investment opportunity which benefi ts universities, students and investors, alike.

Airline alliances, in which companies share routes and facilities, have become a signifi cant aspect of the aviation world. Are these pacts quasi-monopolistic cartels or ‘customer friendly’ rationalisations?

The world of airline alliances is changing rapidly, adding a new competitive edge to the companies which serve Phuket.

Air Berlin, which fl ies directly to the island, is set to become the fi rst low-cost carrier to become a full alliance member. It will join the Oneworld alliance in 2012. In another development, the fl amboyant British billionaire Richard Branson is looking to form a fourth global alliance, building on his Virgin Group which services Phuket with its carriers, Pacifi c Blue and V Australia.

Other alliances whose members operate services to Phuket include Oneworld with Aerofl ot and Finnair; Star Alliance with Thai Airways International and Asiana Airlines; and SkyTeam with China Southern Airlines and Korean Air. Of course, this is just the tip of the iceberg. With the code-sharing system, which is a cornerstone of the airline alliance model, there are many cross linkages.

The three established alliances, Star Alliance, Oneworld and SkyTeam account for 73% of the world’s airline capacity and this is growing. S7 of Russia and Kingfi sher Airlines of India are due to join Oneworld. Russia and India are two emerging markets for Phuket’s tourism industry. The 28-member Star Alliance will soon acquire Air India and Ethiopian Airlines. Next year, the 13-member SkyTeam alliance is expected to take in China Eastern, the country’s largest airline. To give you an idea of the size of these groupings, Star Alliance carry around 627 million passengers a year and SkyTeam and Oneworld together, account for a further 720 million. The non-aligned carriers, by comparison, can only manage 489 million passengers between them.

However, the non-aligned group still includes some impressive carriers such as Virgin Atlantic; Virgin America; Southwest in the United States (the most successful low-cost carrier in history); Transaero (a large Russian carrier that fl ies directly to Phuket); and China Airlines of Taiwan. An interesting fact is that the Middle Eastern airlines sector which includes Emirates, Etihad Airways, Gulf Air, Qatar Airways, and Saudi Arabian Airways, only has two members in an alliance, Turkish Airlines and Egypt Air, both in the Star Alliance stable.

In Asia there are also still many major airlines which aren’t aligned. The independent group includes Hainan Airlines, Jet Airways, Malaysia Airlines, Pakistan International and Philippine Airlines.

But how does the customer benefi t from all of this alliance activity? Probably the most important for many is the ability to accrue common ‘frequent fl yer miles’ from each alliance carrier. Alliances also have suffi cient critical mass to negotiate lower prices for items such as advertising, and even fuel in certain circumstances. This

helps to keep fares low. Code-sharing means that they can off er more departure times on any given route and put more destinations within easy reach. Their round-the-world packages and regional fare concessions can be great value for money.

Other benefi ts include priority access to alliance branded lounges with silver and gold frequent-fl yer cards, and priority check-in. With all alliance airlines under one roof in the same part of a terminal, access and transfers is simplifi ed. Seamless software means that member airlines can readily track each other’s schedules and adjust them to eliminate confl icts and bottlenecks.

The reason for the growth of alliances was the advent of ‘open skies’ agreements, which made it easier for airlines to gain unrestricted landing rights within de-regulated zones. Anti-trust protocols still make joining an alliance diffi cult, particularly for American carriers, but major advances have been made to enable mega-carriers like British Airways and American Airlines of Oneworld, and United Airlines and Lufthansa of Star Alliance, to form trans-Atlantic linkages.

It is not all ‘plain sailing’ (should that read ‘fl ying?) for the alliances, however: more like swings and roundabouts. They‘ve all gained and then lost members. Star Alliance acquired Ansett Airlines of Australia in 1999 and then it folded in 2001. It also lost Mexican of Mexico and Varig of Brazil to Oneworld. SkyTeam lost Continental to Star Alliance and ejected Northwest Airlines. Oneworld had to relinquish Canadian Airlines when it was acquired by Air Canada: a Star Alliance founding member. Aer Lingus of Ireland lost eligibility when it became a low-cost carrier.

Do some gentle warm up exercises before you swing your club and rip the ball down the middle of the fairway or into the water, as this will reduce your chances of ripping muscles, tendons and ligaments. On the course, sunburn is the most common ailment, which is easily prevented by applying a good, waterproof sunscreen to all exposed skin surfaces. It must be at least 15 SPF (sun protection factor) to be eff ective. Apply it when you leave home or arrive at the course, not on the fi rst tee, as it works best when it’s had time to soak in. Make sure you reapply it every two hours, as its eff ect will wear off as you sweat, and it’s your best protection against skin cancer. Wearing a hat and using an umbrella will shield you from the sun and don’t forget the wraparound sunglasses, so that you don’t burn out your retinae as you lose sight of that 300 yard drive.

Heat exhaustion is another common ailment, and the best method to prevent it is to wear loose-fi tting, appropriate clothing. Drinks lots of fl uids,

Staying healthy and playing good golf is generally a challenge or all of us who love the game; even more so, for players who may not be accustomed to Thailand’s tropical heat, and other dangers that are common on Thailand’s courses. You may be surprised at the number of golfers who collapse from exhaustion, have heart attacks or are accidentally hit by wayward golf balls or golf clubs.

Being prepared to play, and understanding some of the common problems is the key to staying healthy whilst on the course. Before you make your way to the fi rst tee, consider what you’re in for. Phuket’s relentless sun, heat and humidity can drain you quicker than a three putt. Following a six ball with ten caddies also makes for a slow round in the heat. Rounds of six hours during the peak season are not uncommon, and it’s possible to lose your cool as well as your competitive edge, but thankfully there are plenty of rest stops around the course to replenish those lost fl uids and to fi nd some shade.

and I mean lots of fl uids. If you do not pee at least once during your round, you have not drunk enough. Some recommend gaining relief without penalty on at least two occasions during your round. Your urine should be clear or very pale yellow and virtually odourless. Dark-yellow, strong smelling urine means you need to drink more water. Alcohol should be avoided on the course as it only aggravates the onset of heat exhaustion, and should be left until you reach the 19th hole.

If you start to see stars instead of the golf ball, or feel lightheaded and weak, it’s time to rest and cool off for a while. Get to a shaded area and drink lots of fl uid in order to get your body temperature down. Pouring some cool water over your head can also quickly bring your body temperature back to normal, as will the use of cold towels. If your playing partner is suff ering from heat exhaustion and suddenly collapses or faints, more drastic action is required. Get some help, as things may be more serious than just heat exhaustion. Elevate your partner’s legs and place them on his golf bag to assist blood to return to his heart. If you can, check his pulse and make sure there are still signs of life, as he may have had a heart attack, which is very common on golf courses, and normally follows a period of heavy pain in the chest and diffi culty in breathing. If you’ve been taught CPR, now would be a good time to use these lifesaving skills, as your playing partner is going to need them.

Being hit by a golf ball or club can be very painful. The problem with being hit by golf balls, which can be traveling at speeds of up to 160 mph off the tee, is that they cause fractures, bleeding and if you’re hit on the head, serious depressed skull fractures can render you unconscious for a while. Bleeding should be controlled by direct pressure to the wound, whilst a cold compress will reduce the pain and swelling infl icted by the off ending golf ball. If a player is unconscious, place them on their side whilst transporting them to hospital.

Snakes, whilst common on Phuket’s courses, rarely bite unless you step on them whilst searching for your ball in the rough. If you’re bitten try not to panic, and apply a crepe or roller bandage over the bite site and completely

cover the limb with the bandage. Immobilize the aff ected area and get to hospital quickly. Snake venom doesn’t travel through our body by the blood and circulatory system, so cutting between the fang marks or sucking out the venom is of no use, and only causes more trauma. Consider adding a crepe or roller bandage to your golfi ng accessories that you’re carrying in your bag.

During the rainy season, lightning strikes are another problem and you should not be out on the course during thunderstorms. If you cannot get back to the safety of the clubhouse, seek shelter in low-lying areas, not under trees or elevated structures, as lightning tends to strike these areas more often. Also keep away from areas of water.

Playing golf in Phuket is an enjoyable experience. Make it a safe and happy one.
