The intruders then ripped apart a second-floor skylight, pried loose the iro n bars inside the skylight and dropped into an office. The room into which they dropped contained the hub of our phone system and a bank of computer network connections. They cut, dis- connected or ripped out all of them. In order to enter an office not accessible from their e n t ry point, they bro k e through a wall. Once they had entered that office, they had access to the video monitor. In addition to cutting the cables, they were able to remove the video tape on which they might have been recorded. Weekend nights are a typi- cal time for robberies in s u p e rmarkets because thieves expect to find a safe with heavy weekend receipts. We do not have a safe and do not keep cash in our building. We were there f o re reinforced in our thinking, supported by the police, that we have a cash handling system that suits our needs well. Our insurance company will cover the damages, so our expenses are limited to the deductible. Every voter got a tele- phone call urging them to cast a ballot. And in the end the Onion River Food Coop of Burlington, Ve rmont has won the gre a t s u p e rmarket war of ski country. It will build a new, 15,000-square-foot store downtown that will serve as the city’s primary food store. But to get to this point meant a battle that pitted the food coop against a supermarket chain, Shaw’s, that also wanted to build a store downtown to fill the void left by the clos- ing of the Price Chopper supermarket in April 1999. Although 350 miles away, the battle is rele- vant to Brooklyn, where the Park Slope Food Coop is planning to expand and competes with chain stores like Key Food on Seventh Avenue for some business. The Onion River Food Coop operates a 3,500-square-foot store. But the closing of the Price Chopper presented an opportunity to expand, said Ned Flinn, Onion River’s manager. The coop responded to the city’s request for proposals and drew up a plan for a 15,000- s q u a re-foot store that, apart from the natural and organic food staples, would also include conventional items like Cheerios and Grape Nuts, Flinn said. Adding such items, Flinn said, would address community concerns that not everybody would be interested in organic food, which by and large costs more than standard goods. Meanwhile, Shaw’s, which serves all of New England, drafted its own proposal for a 45,000- square-foot store. The City Council approved the Onion River plan 12-2 in December but a petition drive forced the issue to a referendum that was held January 25. Shaw’s supporters said the size would allow for a wider range of offerings than a coop and, if the city of 38,000 residents was going to have only one supermarket, it may as well be some- thing traditional. Shaw’s asserted its food was cheaper but Flinn said the claim was made based on comparing conventional items against organic. “It was apples and oranges,’’ he said. “Our standard items were cheaper than theirs.’’ S h a w ’s also canvassed voters by tele- phone, printed fliers distributed to every h o u s e h o l d . “The mailing was warm and fuzzy,’’ Flinn said. “They had a big photo of the original store in 1897. And in the end the Onion River Food Coopof Burlington, Ve rmont has won the gre a ts u p e rmarket war of ski country. It will build an e w, 15,000-square-foot store downtown thatwill serve as the city’s primary food store.

But to get to this point meant a battle thatpitted the food coop against a superm a r k e tchain, Shaw’s, that also wanted to build astore downtown to fill the void left by the clos-ing of the Price Chopper supermarket in April1999.

Although 350 miles away, the battle is rele-vant to Brooklyn, where the Park Slope FoodCoop is planning to expand and competeswith chain stores like Key Food on SeventhAvenue for some business.

As in Ve rmont, prices andexpansion are high on theminds of many Park SlopeFood Coop members.

Recent price comparisons u rveys show that items at theCoop usually are cheaperthan supermarket chains likePathmark, which carry limited

o rganic goods if any. “Big box’’s t o res such as Costco and BJ’stend to beat the Coop, but ofcourse they only offer mega-quantities and a limited selec-tion. (And like the Coop, theyspecialize in long lines.)

The city has no connectionto the Park Slope Coop’sexpansion plans but it, too,has generated a lot of talkamong members.

The design, which would

use the adjacent building theCoop bought last year, callsfor 60 percent more shelfspace and wider aisles.

Joe Holtz, General Coord i-n a t o r, said the Coop hopes toreceive bids from contractorsin mid-April to determine thecosts of the expansion. Con-s t ruction could take up atleast another year or so, but itw o n ’t be known for sure untilthe bids come in, he said. ■

Monday—the busiest phoneday of the week—and muchof Tu e s d a y. Unfort u n a t e l ypeople calling from outsidegot a ring signal but noanswer so that it seemed thatwe were just not answeringour phones. With the loss ofphone service, we lost e-mail,our fax and the ability totransmit the bulk of ourorders for the week. Our tele-phone contractor was veryp rompt and worked all dayMonday. Bell Atlantic was notparticularly responsive to oure m e rgency need Monday,and we had to wait until Tues-day for cable repair. As I writethis, the phones are beingreconnected one by one, andthe necessary reprogrammingis almost complete.

The cost to the Coop ins t a ff time has been signifi-

cant. Several of us devotedv i rtually all of our time inthese first two days to recon-necting networks, securingthe building and arr a n g i n gfor necessary repairs. Othersof us attempted to carry onbusiness as usual withoutn e c e s s a ry phone, fax andcomputer access. The bre a k -in created extra work for allmembers of the staff. Nor hasthe work ended.

We still have to work onimprovements to our securitysystems to prevent furt h e ro c c u rrences. We havereceived valuable advice fromthe police, from our videosecurity system people andfrom our insurance company.

We especially appre c i a t ethe understanding andpatience of the members whowere directly affected, and weare grateful to others for theirg e n e rous sharing of cellphones. ■

The controversy overgenetically engineered foodsat the Coop entered a newphase this month whenWhole Foods, the Austin-based gro c e ry store chain,announced that it would stopusing genetically modified

i n g redients in any of thep roducts sold under its pri-vate label. Wild Oats, theD e n v e r-based chain, quicklyfollowed suit. Up until now,the Coop has defended itspolicy of selling geneticallye n g i n e e red (GE) foods asn e c e s s a ry given the diff i c u l t yof finding adequate substi-tutes for them. That meansthat anytime you purc h a s ec e rtain products that are notorganic, you are probably get-ting genetically engineere dfoods. These pro d u c t sinclude canola oil, radicchio,c o rn or corn oil, papaya,potato, soy, squash andtomato. In terms of

p rocessed foods that theCoop sells, this includesmany canned tomato pro d-ucts, most vegetarian pro-teins and any breads, chips,or crackers that use “veg-etable oil.”According to onere p o rt from the Enviro n m e n-tal Committee, the Coop sellsliterally hundreds of geneti-cally engineered pro d u c t s .

Genetically engineere dfoods may pose a danger tohumans as well as the envi-ronment. Little re s e a rch hasbeen done on the health risksposed to humans by geneti-cally engineered food. Someof the genetically engineere dfoods have genes from other

foods spliced into them. So,for instance, you might biteinto a tomato and actually beeating genetic material fro ma fish. Studies show thata l l e rgens can be passedthrough foods in this way andthus put people with allergiesat risk. Genetically engi-n e e red foods may also haved i s a s t rous effects on thee n v i ronment. One studyshowed that Monarch butter-flies were adversely aff e c t e dafter genetically engineere dc rops were introduced intotheir domain. The crops inquestion had Bt spliced intothem. Bt is a naturally occur-ring pesticide that is now

spliced into the very geneticmake-up of corn, cotton andpotatoes. Not only might Bth a rm certain species ofinsects, but many enviro n-mentalists believe that itcould create a problem of“superpests,”insects thathave ingested enough Bt tobe immune to it. Such super-pests would seriously thre a t-en org a n i c a l l y - g rown cro p s ,which rely heavily on Bt.

Although many in the busi-ness of “biotechnology”(ani n d u s t ry euphemism forgenetic engineering) counterthat these products will feedm o re people with fewer pesti-cides, there is no evidence

that that is happening. In fact,one study cited on the Gre e n-peace webpage suggestedthat farmers are using more

pesticides on genetically engi-n e e red crops. Last month afederal judge ruled that theUS Environmental Pro t e c t i o nAgency has sixty days to pro v ethat genetically engineere dp roducts are safe for humansand the environment or risklosing a lawsuit bro u g h tagainst it by the Center forFood Safety.

Now the PSFC must decidewhether to take a standagainst genetically engi-n e e red foods. Such a standmight involve labeling anyfoods that are likely to con-tain genetically engineere dp roducts and even banningmany of those products fromour shelves. In any event, it istime for the membership tomake a decision. EstelleEpstein has submitted anagenda item for the GeneralMeeting to discuss the ro l ethe Coop might play in thes t ruggle to ban geneticallyengineered foods. She hopesthat it can be scheduled forthe March GM. Meanwhile,t h e re is plenty of room formembers to make their voic-es heard on this issue,whether by calling the coordi-nators or writing letters to theGazette. ■

The Coop's HourlyEmployment Policy pert a i n sto all employees who are paidby the hour such as theReceiving, Office and Book-keeping Coordinators. Thepolicy covers wages, hours,scheduling, holidays, sicktime, vacations, health insur-ance, lunch policy, pension,hiring, firing, superv i s i o n ,and grievance and complaintproceedings.

The policy was originally

adopted by the GeneralMeeting in late 1990 and hasbeen amended by the GMseveral times since. Curre n t-l y, the General Coord i n a t o r shave authority to set payscale, hire, supervise, fire andd e t e rmine the number ofhourly employees and theirschedules. The re m a i n i n gp rovisions—sick time bene-fits, holidays, vacation timeand certain types of healthi n s u r a n c e — re q u i re amend-

ment to the policy by theGeneral Meeting.

Since these elements arep a rt of the cost of the entirecompensation package, wep ropose that the GeneralC o o rdinators be authorizedto amend these benefits asneeded (as we do with payscale) in order to more quick-ly and easily respond to theneeds both of the hourlyemployees and of the Coop. ■

Two years ago the Coopordered scanners. We intend-ed to have the scanners upand running by December of1998. Instead, in Febru a ry of2000, the Coop is still spend-ing a lot of time and energ y(and of course money interms of labor and opportuni-ty costs) on getting the scan-ners to work. One of thereasons that the scannersstill are not operational isthat the software the Coopbought, from a companycalled Trimax, did not dowhat it was supposed to do.For instance, Trimax claimedthe software could handle upto 200 suspend/resume trans-actions at a time. In fact, thes o f t w a re could only handleeight such transactions. Theproblem is that the Coop sys-tem of checking out can cre-ate a line with more thaneight persons in it. Thus thesoftware needed to be able tosuspend more than eighttransactions after they hadbeen rung up at the checkoutstations, then resume themagain when those peoplemade it to the cash re g i s t e r sto pay for their transactions.U n f o rt u n a t e l y, the suspend/resume problem was some-what unique to the Coopbecause of our bifurc a t e dsystem of checking out andpaying. So Trimax took untilDecember 1999 to rewrite thes o f t w a re so it could do whatthey promised it would.

Then the new version ofthe software created anothercomputer problem. Original-l y, each computer station,whether checkout or cashre g i s t e r, would be able to

continue functioning even ifthe network went down. Thenwhen the network was work-ing again, the individual sta-tions could share their datawith the network. Becausethis is a problem for all thes t o res using Tr i m a x ’s soft-w a re, General Coord i n a t o rJoe Holtz feels optimistic thatTrimax will fix the pro b l e mmuch more quickly than theydealt with the suspend/resume issue. Meanwhile, there p resentative from CenturyData Systems, which sold thescanners to the Coop,advised the Coop againstusing the system until eachstation can function indepen-dently of the network.

The other software pro b-lem that needs to beaddressed has to do with barcodes and items sold by thecase. Because the bar codeson the outside of many casesare for a single item, a check-out person could easily makethe mistake of charging forone item rather than theentire case. The coordinatorswant the computer to flash“quantity re q u i red” wheneversuch items are scanned intothe system. That way thecheckout worker will bef o rced to think for a secondabout whether s/he is charg-ing for one or many items.

Despite the re m a i n i n gp roblems, the Coop is pro-ceeding as if everything willbe operational soon. The ten-tative plan is to install then e w, computerized cash re g-isters on Sunday night, March5. The checkout lines willremain the same for severalm o re weeks. The new cash

You will soon see a table inthe Coop with members andc o o rdinators soliciting mem-ber loans in support of thedevelopment of our newspace at 784 Union St. Mem-ber loans have always beenan important method offunding growth and improve-ments to our building, andthey will be again for the cur-rent project.

We expect to begin con-s t ruction in June. The Reno-vation Committee is workingwith the architect, food storep l a n n e r, environmental advi-sor and refrigeration andequipment consultants tocomplete the plan that will goout to general contractors forbids in March.

In April, the committee willselect the best bid. At thatpoint, we will know the pro-jected cost of the project. InM a y, the National Coopera-tive Bank will determine howmuch money they will lend usbased on an appraisal of thet h ree buildings, how much wehave in the bank and whatthey think we can aff o rd in

monthly mortgage payments.Member loans support the

Coop in several ways. Notonly do loans bring moneyinto our bank account, theyare an indication of the directs u p p o rt of the membershipfor their Coop. The NCB haslooked at that strength in thepast when considering mort-gage and development loans.The member loan pro g r a malso supports our membersd i rectly by allowing us tokeep the required investmentfor individual members aslow as possible while obtain-ing needed capital fundsf rom those members whohave more money.

In addition, loans to theCoop made by members costthe Coop less than loans fro ma bank, yet the members whomake the loans earn a higherrate of interest than theywould get by depositing themoney in a bank. The bankencourages us to get as manyloans as possible from ourmembers. The more memberloans we get, the less we’llhave to borrow at the bank’s

higher interest rates.

Why Now?Member loans will be most

effective if they come in beforewe finalize the developmentloan with the bank.

If we don’t have our fund-ing in line by early May, theRenovation Committee willhave to try to pare down thep roject. The committee hasbeen conscious thro u g h o u tof the cost of the project. Cut-ting back would be unfort u-nate because it would meanthat we would have to give upon needed features.

R e s p o n s e :Please keep in mind that shifts that follow yours, including the next morning,a re not as well-staffed. Whatever you can do to lighten their load is gre a t l yappreciated. Are all the shelves fully stocked? Is the produce case full almost too v e rflowing all of the time and displayed well? Are all dried fruits, nuts andspices bagged and stocked? Is the cheese case full? The yogurt case? Dairy ?Chicken? Frozen food? For every case of food leaving the building, another caseshould be coming up from the basement! Are all the floors swept? Is thereceiving area clean? Is the sidewalk outside swept? The staircase and entrancearea? Is the bathroom clean? When most peoplethink of allerg i e s ,they think of the

sneezing, runny noses andw a t e ry, itchy eyes associat-ed with allergy to pollen,animals, or dust. However,t h e re is another type ofa l l e rgy which, though com-mon, is much more insidi-ous. This is food allerg y. I’mnot re f e rring to the obviouskind of food allergy we allk n o w – w h e re someoneb reaks out in hives or hasd i fficulty breathing aftereating shrimp or peanuts.I’m talking about them o re subtle kind ofa l l e rgy that occurs solong after eating theo ffending food–ati n t e rvals of hours todays–that cause and eff e c ta re not readily appare n t .Symptoms vary widely, fro mtypical allergy reactions likedark circles under the eyes,constant throat clearing andrashes to vague and gener-alized symptoms like brain-fog, fatigue and depre s s i o n .

A four- y e a r-old girl devel-oped the habit of constantlyclearing her throat. At thesame time her mothernoticed pink circles underher eyes. The pediatricianre f e rred them to an allerg i s twho did 16 scratch tests tovarious foods andinhalants, al l negative .F i n a l l y, the parents decidedto do an elimination chal-lenge diet, in which theyremoved all suspect foodsfor a period of time to see ifsymptoms resolved (elimi-nation) and then addedthem back one at a time tosee if symptoms re a p p e a re d(challenge). In this case thep a rents were suspicious of

c a l c i u m - s u p p l e m e n t e dfoods because they were arecent addition to thec h i l d ’s diet and so, besidesthe usual offenders ofwheat, eggs and citru s ,they eliminated calci-

um-enriched juice and soymilk. (Dairy had alre a d ybeen eliminated, hence thecalcium supplements.)Within a week the thro a tclearing ceased and the cir-cles disappeared. Addingback citrus, egg and wheathad no ill effect. There f o re ,the parents concluded itwas the calcium. (Strictlyspeaking, they should haveadded it back as well, butthey were afraid of pro v o k-ing the symptoms.)

Renee was having dailyincapacitating headaches.When I questioned her abouther diet, one thing stoodout–she consumed bre a dand cheese daily. When Isuggested she might bea l l e rgic to them and shouldeliminate them from herdiet, she exclaimed, “Howcan I do without bread and

cheese? What will I eat?” Tome this was proof enough,but Renee remained uncon-vinced. I did a skin test for

y e a s t

(found in bread) and mold(found in cheese) and withinten minutes they became redand itchy. For the next thre eweeks, Renee did withouther bagel and her Brie andshe had no headaches. Then

she ate pizza. The next dayshe had a whoppingheadache. Since pizza con-tains both bread and cheese,it was impossible to saywhich was the culprit. Reneeresumed the eliminationdiet. She seems to be able toeat bread without dire con-sequences but so far, everytime she eats cheese, theheadaches return.

I rene was suffering fro mc h ronic vaginal burning. Ye twhenever the gynecologistexamined her, no infectionwas to be found. Her doctorsuggested food allergies asthe cause. Through a combi-nation of allergy and elimi-nation challenge testing, it

was determined thats h e w a s a l l e r g i cto vinegar. When-ever Irene atefoods like mayon-naise, catsup,salad dressings ormarinades, shehad the burn i n g ;

when she avoidedthem, she was fine.These three exam-

ples illustrate casesw h e re the off e n d i n g

foods were relatively easy toidentify and eliminate. How-e v e r, there are many casesw h e re even on an extensiveelimination diet, the symp-toms do not go away com-p l e t e l y. More o v e r, even ifthey do subside consider-a b l y, such a restrictive dietwould be unacceptable bothf rom a practical and a nutri-tional point of view.

Susan is a 30-year- o l dwoman who had suchs e v e re eczema that she hadto wear long sleeves ands k i rts at all times. After try-ing everything from anti-histamines to stero i dc reams to vi tamins, shefinally turned her attentionto diet. Off grains, dairy, cit-rus, eggs and soy, her skini m p roved to the pointw h e re she could discontinuethe steroid creams. However,

she still had severe eczemaover much of her body. Iadvised her to undergo aspecial kind of desensitiza-tion involving very low(homeopathic) doses ofantigens. Before her firstinjection I had her cleanout her gut with antifungaland antibacterial agentsand follow a special vita-min and mineral pro g r a m .Then for three days sur-rounding the shot, shecould eat only hypo-aller-genic foods such as lamb,fish, sweet potatoes andlettuce. She had to avoidp e rfumes, smoke, cosmet-ics and lotions. After thre eshots, given at intervals oftwo or more months, theeczema was gone. Thist reatment, which is muchsafer than conventionali m m u n o t h e r a p y, is usefulfor many immune andf o o d - related i llnessesranging from autoimmunediseases like rh e u m a t o i da rthritis and ulcerative col-itis , to hyperactivity toasthma and hay fever.

When you think about it,i t ’s not surprising that peo-ple develop food allerg i e s .Food is after all a fore i g nsubstance that we take intoour bodies. I f every t h i n ggoes right, then the foodstays in the alimentary canal,separated from the bloods t ream by the intestinal wall,until it has been completelydigested into amino acids,sugars and fatty acids, whicha re no longer foreign. Onlythen are they absorbed intothe bloodstream. However,when digestion is incom-plete or when the mucosalb a rrier is leaky, undigestedfood particles bearing for-eign proteins are pre s e n t e dto the immune system andt h e re the trouble begins. It isfor this reason that the firststep in treating food aller-gies is to repair the faultydigestion and leaky gut thatcaused it in the first place. ■

Our Governing Structure F rom our inception in 1973 to the present, the openmonthly General Meetings have been at the center ofthe Coop’s decision-making process. Since the Coopincorporated in 1977, we have been legally required tohave a Board of Directors. The Coop continued the tra-dition of General Meetings by requiring the Board tohave open meetings and to receive the advice of themembers at General Meetings. The Board of Directors,which is re q u i red to act legally and re s p o n s i b l y, hasa p p roved almost every General Meeting decision atthe end of every General Meeting. Board members areelected at the Annual Meeting in June. Copies of theC o o p ’s bylaws are available at the Coop CommunityCorner and at every General Meeting.

raise the markup, in order to pay forthe privilege of debit/credit cards atthe Coop. Supposedly, the conve-nience of the cards will both re t a i nand attract membership.

This seems crazy. What makes theCoop most attractive to most peopleis cheap food. Raising the markupshould be a last resort.

If the convenience of members is atissue, the Coop should install anATM. The coordinators’ arg u m e n t sagainst an ATM are unpersuasive: Iftiny mom-and-pop outlets can handlethe space and security concern sposed by automated teller machines,why can’t we? An ATM, which chargesfees only to those who use it, is theequitable answer to the question ofconvenience.

tors’ presentation of the article, GM toDecide: Should the Coop Accept Debit andCredit Cards, in which the writer states:Accepting credit and debit cards will help usmaintain a higher membership level. We willbe putting the Coop at risk if we don’t:

T h e re is no logical foundation foran assessment that the Park SlopeFood Cooperative (PSFC) will be atrisk if the General Coordinators’ pro-posal is not passed. The existence ofPSFC does not depend upon thea p p roval of a proposal to offer cre d i tand debit cards as payment options.Earlier in the same article, the

unidentified writer leads us to believethat we will suffer higher prices andunderstaffed squads if we do not sup-p o rt this proposal. These statementsare not realistic.

That said, we may agree that featur-ing new payment options would pro-vide a nominal attraction for newmembers, but these services will becostly to all of us. New paymentoptions will increase our gro c e rymark-up. That additional expense willbe diverted from PSFC, and dire c t e dto the banking industry (an industrythat has quite enough moneyalready!).

T h e re are much better ways toincrease sales and ensure fully-staffedsquads at the PSFC than attemptingto attract new members with paymentoptions. To increase sales, let’s makethe shopping experience more eff i-cient. The waiting time for check-outoften exceeds 40 minutes. Because ofthis major inconvenience, manymembers limit their visits to PSFC,and spend their money elsewhere forf requent small purchases. Let’s solvethe check-out problem, and theamount of purchases by pre s e n tmembers will increase greatly.

On the subject of workshift cover-age, we need not fear a shortage. Ofcourse, with almost 6,000 members,we have plenty of people to coverworkshifts. If we were to experience anactual shortage, we could adjust thework schedule to aff o rd 4-hour work-shifts, rather than our administrative-ly cumbersome 2-hour and 45-minuteshifts. That, and other stru c t u r a lchanges, would certainly address theproblem effectively.

These are only a few suggestions toi m p rove the PSFC. There are manym o re that we should all considerbefore passing a proposal that wouldincrease our 20% mark-up.
