How Does the Body Absorb Nutrients?

Most of the absorption of key nutrients happen in the small intestine.

Digestion begins in the mouth and ends in the small intestine. The Villi that line the intestine are responsible for the absorption of many essential nutrients into the blood stream such as proteins, carbohydrates, vitamins and minerals.

Nutrients- The Body’s Building Blocks

• Proteins- in every living cell in the body and serves as the building block for strong muscles, also function as enzymes and hormones regulating internal functions

• Carbohydrates- provides the energy store for physical exertion and stress

• Vitamins- molecules that are “vital” to life but the body can not manufacture many of them on its own

• Minerals- are catalyst for activities in the body such as breathing, heart beat and swallowing, they are essential for life functions and must be provided through an outside source

Celiac DiseaseThey were both Gluten Intolerant

Page 11: What’s eating you

What is Celiac Disease?

Celiac Disease (CD) is a lifelong inherited autoimmune condition affecting children and adults. When people with CD eat foods that contain gluten, it creates an immune-mediated toxic reaction that causes damage to the small intestine and does not allow food to be properly absorbed. Even small amounts of gluten in foods can affect those with CD and cause health problems. Damage can occur to the small bowel even when there are no symptoms present.

Gluten is the common name for the proteins in specific grains that are harmful to persons with Celiac Disease. These proteins are found in ALL forms of wheat (including durum, semolina, spelt, kamut, einkorn and faro) and related grains rye, barley and triticale and MUST be eliminated.
