Well, summer issue is here - all be it late in summer, but we’re holding on to those last rays of sun and hoping for a second heatwave in September.

Our spring issue was a success and we’ve got some great writers on board for this issue and going forward. On (pg 14) we’ve managed to stop ‘TheNatural Juice Junkie’ from running for a quick interview - Neil tells us how he got into juicing and what his top three ingredients are for the perfect juice. We’ve also got a great article ‘The Beauty of Beet’ on (pg 20) from Eifion from CISM Ltd including the recipe for a powerful beetroot smoothie.

‘Change of Direction’ on (pg 18) offers some useful information if you’re looking to change careers and train to become a natural health practitioner. Check what courses are available from CNM College.

It is an alarming thought that, on average, women in Britain are apparently ‘hosting’ 515 cosmetic chemicals a day!

As a Nutritional Therapist, I often find there is more awareness about the benefits of a natural and organic diet than there is regarding the benefits of natural and organic skincare

Most people know that food in its natural state, ideally organic, is preferable to convenience foods that are full of unhealthy sugars, salt, additives etc. However, less attention is paid to the equivalent in beauty products ie. natural, organic, ingredients in skincare are preferable to the kind of chemicals that are as unhealthy for our skin as junk food is for our overall health.

If a skincare product or cosmetic is marketed successfully, it is easy to focus on what is being promised (such as fewer wrinkles), rather than how natural the ingredients are or indeed whether the product will actually fulfil its promises. But is conventional skincare any better at delivering results than natural skincare?

There is research to show that ingredients such as parabens, foaming agents, PEGs, artificial fragrances and petrolatum are linked to various health concerns, skin irritation and ironically, skin aging. Not forgetting perfumes - artificial fragrances have been linked to headaches, fatigue, allergies, asthma and insomnia.

It is an alarming thought that, on average, women in Britain are apparently ‘hosting’ 515 cosmetic chemicals a day! Although the skincare industry argues that their ingredients are safe, this does not take into account that most women (and men) do not use a single product in one day, they use a number of them, and it is this cocktail of chemicals which is of greatest concern.

If you consider how many products you use each day - shower gel, shampoo, conditioner, moisturiser, hair products, not to mention make-up and perfume, it really can add up to quite a combination.

In a year, on average, you could be absorbing 5lbs worth of potentially toxic chemicals from your personal care products. The skin is our fourth organ of detoxification after the bowels, kidneys and liver and it needs also to be allowed to do its job as a protective barrier. The skin absorbs around 60% of what we put on it, into the bloodstream. It surely makes sense to avoid skin products containing toxic chemicals - to minimise the amount of potentially harmful ingredients we put into our bodies, by taking as much care over what we put on our bodies as we do when deciding what to put in them.

juicingWe all know that vegetables and fruits are good for our health, yet UK government figures published in 2012 suggest fewer than a third of adults and only one in 10 children are eating the recommended “five-a-day” of fruit and vegetables.

Did you know that in Japan the recommendation is 17 portions of vegetables and fruits per day?

Based on current eating habits I think the western world has little chance of hitting that target, but what if there was an easy way to get to all that plant-based goodness?

Freshly extracted juices are a quick and easy way to increase your intake beyond “five-a-day” and deliver concentrated nutrients to your cells in around 15 minutes – a tiny frac-tion of the time it takes our bodies to digest a typical meal.

When we eat solid foods it takes our bodies a number of hours to separate the vitamins and minerals from the fibre and this requires

a lot of effort from our digestive system.Whilst the fibre acts as a kind of broom, to sweep clean our intestines and colon. Fibre is important to ongoing health, but high levels of dietary fibre are not required in every meal. Also, the juice of various fruits and vegetables includes soluble fibre, such as pectin, which is found in a range of fresh produce including apples, pears, oranges and carrots.

One of the father’s of modern juicing, Jay Kordich, is famous for saying “it is the juice of the fibre that feeds you”. Put another way, it is not strictly true that we are what we eat. We are, in fact, what our cells manage to absorb from what we eat.

The condition of our bodies is inextricably linked to how we feed them. Our bodies are constantly changing with 98% of the atoms in the body being replaced in less than a year. It is the nutrients we absorb from our food that are used to build and repair our bodies with new cells.

sign that I needed. The following February, my daughter was born and seeing her older brother holding her in his arms was the final wake up call to make a few dramatic changes.

I went to see a nutritionist and she gave me some advice on how to clean up my diet. In just a few weeks I felt healthier than I had in years. I become absorbed in healthy eating and researched everything and anything to do with becoming healthy, that’s when I found juicing.

For me juicing has become a part of my healthy balanced lifestyle, but it’s a part of it, not the whole focus. The longest juice detox I’ve done is 7 days and I tend to do this a few times a year to reboot the system.

How did you find out about juicing and what made it stick as a way of life?

Just before my 23rd birthday I lost my dad to cancer at the age of just 50 and I came to the conclusion that, at my then young age, I was going to chase the good life. Little did I know at the time that the ‘good life’ isn’t so great after all. It was 10 years later that I started to realise that the life I was living was not sustainable.

It was in 2008 that the wake up call came, whilst running around with my kids at a children’s birthday party I felt pain in my chest. With hindsight it was the huge red warning

Do you think that there’s a positive change on the horizon, when it comes to food and lifestyle habits of most people?

People tend to over-compensate for the exercise they do, people

will say “I spent an hour in the gym and this means I can now go out

and eat pizza, chocolate etc”. It doesn’t work like that. But I do think that things are

changing, we’re entering a new era in health and food and I think it’s largely down to the power of the internet - people are educating themselves.

Which 3 ingredients are key to your daily juices?

Ginger – I juice ginger every day. It can help with asthma, hay fever and acts as an antihistamine. Ginger is an amazing anti-inflammatory too, which helps my body with post exercise recovery.

Leafy greens – it’s hard to find someone who juices that doesn’t include leafy greens; they pack such a punch when it comes to antioxidants.

Avocados – they have so many great nutritional benefits and they make juices creamy and delicious.

Running seems to have become a huge passion of yours, how do you make sure you have the energy to go the distance?

I tend to drink green juices or smoothies daily and the nutrients I gain from these help me to maintain my energy levels for running. I also gave up eating meat too, I just feel healthier when I don’t eat meat and I recover quicker from exercise too.

I was never a sporty person and was always the last kid to be picked for a team. In June 2012 I met a lady who was training to do Ironman, she was not hugely different to

anyone else and I thought, if she can do Ironman surely I can do a run. I began to find running meditative and I finished the run and signed up to do my first full marathon. I’m now training for the 100 mile run, spread over 4 days, it equates to a marathon a day.I’ll be running it in aid of Maggie’s Cancer Charity, a fantastic charity that offers a support system for a broad range of subjects -from support if you have cancer, to support for family members who need to deal with bereavement.

My decline of my health started immediately when my dad passed away, I can’t help but wonder that if there’d been an external support system like Maggie’s available back then, I would have avoided some of the health problems that I had. Part of my motivation is that people living with cancer don’t have the choice to quit - so I won’t quit either.

What drives you forward and gives you the motivation to tell your story to others?

For most people the limitations are only the self imposed ones. At 39 years old I’m not about to become a premiership footballer. But, within reasonable confines there’s not a great deal I couldn’t achieve. I hear all of the time ‘you must have amazing willpower’ but it’s not about willpower - it’s about motivation and commitment. Find the motivation that is

so critical that you ‘must’ do something and it becomes a reality - it’s even bigger if it’s not just for you, do it for someone else.My whole aim with Natural Juice Junkie is to share my story and to help people change their situations. If it helps just a few people to make a positive change to their health then that’s amazing.

What else is on the horizon for you for 2014/5?

From a health focus I have 5 goals:1 – London Marathon – which I completed in April this year.

2 – 100mile run - September 2014

3 – 1st Tri-athlon

4 – Do more yoga – if you’d said to the younger version of me, I’d be doing yoga,

I’d have laughed. I love yoga now and I’d recommend that everybody do it. It’s a bit like the distance running - it becomes meditative.

5 – To become a no-meat athlete. I found the more I’ve trained and the healthier I feel then the less I want to eat meat. I don’t describe myself as being vegetarian or vegan as I don’t like rules; I’m a bit of a rebel at heart. I just feel healthier when I don’t eat meat and I recover quicker too.

How does it work?

With the Tour de France having gripped the nation and the Commonwealth games being held in Glasgow, gaining ultimate health and fitness seems to be capturing our attention once more. There are a number of changes that people seem to be making to try and reach their own health targets. One of the things that seems to be high on the list of many health conscious folk is daily smoothies. It’s surprising how much benefit

you can get from including a nutrient packed smoothie into your daily diet. And one of our favourite power packed veg to use is the simple beetroot.

Beetroot has made a name for itself lately and deservedly so, this vibrant little veg is packed full of betacyanin which gives it it’s amazingly rich colour. Betacyanin can reduce homocysteine levels, an elevated level can

be associated with heart disease. Beetroot smoothies have become increasingly popular with elite athletes to aid performance and improve endurance. Scientists found that when eight male volunteers aged between 19 and 38 years drank 500ml of beetroot juice every day for six days they were able to improve their exercise endurance, cycling for an extra 92 seconds than when they drank a placebo drink of blackcurrant cordial.(1)

Other than a large capacity of antioxidants, beetroot also contains a large amount of nitrates. A 100g beetroot can contain 250mg of nitrate. Through a chain reaction, the body converts the nitrates to nitric oxide, a compound that can enhance blood flow throughout the body and help lower blood pressure, providing us with a larger capacity to improve blood flow and oxygenated red blood cells to the working muscles. A 2009 study found that having beetroot juice prior to a sports performance improved endurance and duration of exercise by 16%.

We realise that we need oxygen for our muscles to work for longer and stronger. However, some have been manipulating this for extra gains. For many years the practice of blood doping has been a serious problem in endurance sports. Blood doping is where an athlete will have up to 2pints of blood removed 2 weeks prior to an event allowing the body to rebuild its red blood cell quantity. Then 48hrs prior to the event the blood is reintroduced to augment the red blood cell quantities allowing for greater oxygen to be transported. This method of performance has been outlawed by the World Anti-Doping Agency and all National Anti-Doping agencies.

Consuming beetroot smoothies could help give you that natural edge. Following the ingestion of a 100g beetroot, nitrate concentration increases after 1-2 hours. So, try a beet smoothie a day and see if it improves your endurance and stamina.

These smoothies can be pre-made days in advance and frozen. The magic with this smoothie, is that the recipe is relatively simple, but you can adapt it as much as you want. The recipe can be adapted for cold weather by adding a little spice, such as turmeric or cinnamon.

As a nation we are going to have to start eating a diet which involves less meat. Choose one dish, and make that dish

using the best local, seasonal and organic ingredients to hand.

For most, it has been all about stripping back the menu and focusing on one dish, making sure that dish is prepared the way it should be prepared - using the best ingredients available. Well, that’s what we do at Ethical Chef anyway. This year at Glastonbury we cooked up a chilli on a bed of bulgur wheat with local cheese, yoghurt and fresh coriander. Doing just one dish enabled us to source all of our ingredients organically, be able to cook from scratch every morning and it allowed us to cut down on the amount of waste created. This was not only to save money but because we value and appreciate the importance of these wonderful nutritious ingredients.

With an ever growing population and a depleting reserve of resources, the price of food is only going to rise and this is especially relevant to the production of meat. As a nation we are going to have to start adopting a diet which involves less meat.

how to make it... Start by dicing your onion and adding to a hot pan with a splash of olive oil and a pinch of salt. Cook your onions until they start browning then chop your garlic up and add to the mix.

Mix all of the spices together in a bowl and then add to the pan. Give the pot a nice stir and cook off the spices for a minute or so before adding your tomatoes, kidney beans and chopped fresh chilli.

Add a splash of water, bring to the boil and leave to simmer for about 15 minutes, while you cook your rice. Garnish with some cheese, sour cream and as much coriander as you’d like.

How much had you heard about juicing before you applied for the ‘Super Juice Me’ retreat?

Well, after going to see my doctor for the umpteenth time for feeling completely out of breath, massively over-weight and exhausted, she recommended I read two books by Jason Vale. At the time I cast them aside thinking ‘how the hell is a book going to help me?’ Then just a couple of weeks later my doctor called me back into her consulting room and said that

Jason Vale was going to film a documentary about how juicing could help heal the body. My doctor applied to the program on my behalf and I’m so grateful that she did.

Did you ever get offered any alternative to the medications before? Yes, I had been previously recommended to attend a centre for chronically ill people in Mid Wales, it had a three year waiting list and involved cognitive training, but when I turned up the first day I was examined by the consultant that run the course and he sent me straight back home, I was too unwell to attend the course.

What was the ‘ah-ha’ point for you in the whole Super Juice Me experience? I had plenty of ‘ah-ha’ moments, but the first real ‘ah-ha’ was on day three, when I was going from my room to the café, where we all had our juices, my head was up and I was breathing easy - at that point I knew something was working.

How did you feel when you read the side affects of the tablets you were on?

I’m an Anaesthetic Technician, so due to my medical training I knew a lot about side effects

from certain drugs, but had never actually read the sheets that come with the drugs I was taking, when I did it blew me away. I think they’d added all of the side effects they could think of as a ‘just in case’.

How many tablets do you take per day since the Super Juice Me experience and how has your life changed? Since the retreat I’m only having to take one tablet prescribed by my doctor and the freedom I’ve gotten from not being stuck to the pharmacological apron strings is amazing. I used to walk out with about three shopping bags full of tablets, now I can go and get three months tablets and put them in my pocket.

How do you plan to share your story with others and help spread the juicing word?

Since the premier was aired it’s as if I’ve started a juicing mission of my own - I want to talk to everyone about the whole experience, it has been my re-birth and I feel I have to tell as many people as I can, as quickly as I can about juicing. I have been spared for something special and I think that something is to spread the word about the power of juicing.

The simple answer is...... get out more. Yes, this is a very simplistic answer but it hasmerit. Fresh air can naturally improvemental health and can create a feeling ofoverall wellbeing. Being exposed tosunlight can lift mood and your bodywill make more serotonin (the feelgood hormone) in response toincreased tlevels of sunlight. Getting outside and being activecan also have great results for mentalhealth, not only will being activeimprove physical and mental health but italso increases social interaction. Socialising with friends or meeting new people has been proven to boost confidence,improve mood and reduce social isolation. With the summer months, come longer daysand lighter evenings. This means that manypeople are tempted to stay up later resultingin less sleep. While the amount of sleep each person needs is varied and individual, a good amount of sleep to aim for isapproximately 8 hours a night. Try to resist later nights.

Plan somethingThink about organising a day with friends orfamily, perhaps visit a local park, gardens orforest. If this seems like too big a task try toget out for 15-30 minutes a day in yourgarden. With most of us spending over 8 - 10hours a day in work it is about fitting theoutdoors into our lives. This may be the lastthing that we feel like at the end of a long dayor after a busy week, but it has great benefitsfor our mental wellbeing; it really is worth it.

So, that is the summer sorted but what aboutthe rest of the year? There are things that wecan do to encourage better mental wellbeing.Some top tips for good mental health all yearround include;

Get some sunlight - use a light box if necessary during the winter months

Be active

Socialise

Get enough sleep

Talk about your feelings

Take a break

Accept who you are

Drink sensibly

Ask for help

Give something to others

Hay fever (allergic rhinitis) is an allergic condition with symptoms such as itchy eyes, sneezing and a runny nose. It is estimated that one in five people will be affected by hay fever at some point in their lives. Some people are only affected as a child whereas some adults develop the condition later in life.

Hay fever is usually triggered by a type of pollen, and lasts while that pollen is in the local environment. Tree pollen is released in the spring, grass pollen at the end of spring/ beginning of summer and weed pollen from spring to autumn.

The main treatment for hay fever is antihistamines, which counter-act the affects of histamine.

Histamine is produced by the immune system to protect the body from infection. In the case of hay fever the body produces too much as a reaction to the pollen, as it’s seen by the immune system as a threat.

Are there any natural forms of antihistamine?

There are medicinal plants that have antihistamine effects, nettle for example has been shown to reduce the symptoms of hay fever and is recommended to take as a preventative before the hay fever season. As little as 600mg or 1 teaspoon per day has been found to be effective. This can be taken as a tea, tincture or capsule.

Plantain is a traditional remedy for hay fever and has been used for hundreds of years by Native American Indian’s. It is particularly used for reducing inflammation in the eyes and membranes in the nose. This can be taken as a tea, tincture or capsule. Eyebright is another traditional remedy for sore eyes that has been used for hundreds

of years and is a keen favourite of medical herbalists. Often given in the form of drops but can be taken as a tea, tincture or capsule.

Taking a teaspoon a day of a local honey has been shown to be effective in some studies,

as the honey contains a small amount of the pollen allergen, which gradually allows the body to build up immunity to the pollen, but

it appears that it does not work for every hay fever sufferer.

Aside from its nutritional benefits it also has amazing benefits for your skin. It can be used just like any other body lotion or simply add a teaspoon of it to your bathwater which makes the water silky and you’ll need less moisturiser after bathing.

Coconut oil is also a fantastic deep hair conditioner, if you’re not planning a night of passion, lather your hair in coconut oil and wrap in a towel, leave for 10 minutes to let the oil do it’s work (you’ll need to give your hair a couple of washes with a 100 per cent natural shampoo) and everything will feel very soft and silky. Also try lathering your hands and feet and cover them with cotton gloves and socks – and the next morning rinse it all off. Coconut oil works well as an after sun lotion, is brilliant for stretch marks and is suitable for vegans and vegetarians.

The effectiveness of organic cold pressed coconut oil is based on the high concentration of antioxidants, nutritive antibacterial and anti inflammatory properties that it contains. The antioxidants could prevent cell degeneration which helps with anti ageing and can help to regenerate and rehydrate your skin (which

creams with their water content struggle to do as effectively). There are naturally occurring antioxidants such as ferulic acid and p-coumaric acid which help prevent free radical damage to the skin and have anti wrinkle properties so it’s protective against sun damage. So, opt for raw cold pressed virgin coconut oil from fresh coconuts.

Passion fruit cheesecake

how to make it... (serves 10) Using a food processor on the S blade, grind the flour, apricots and add the other base ingredients. Add the oil last. Place in a 7” spring form, or other cheesecake, pan and leave to set in the fridge for at least thirty minutes.

In a high powered blender blend the cashew nuts (do not use the soak water) and slowly add all other ingredients. Do not use chilled water as this will make your cheesecake filling go lumpy (it will harden the coconut oil) I suggest leaving the water until last and add (room temperature water) slowly to create a moveable consistency that is not too runny. You probably won’t need to use the full cup. Once the filling is ‘lumpless’ and smooth add to the base and leave to set in the fridge, for at least an hour, for the cake to firm. You can put your cake in the freezer but you don’t really need to unless you want to speed things up. I much prefer mine served at room temperature.

When ready to serve, decorate with passion fruit pulp. Can keep up to 7 days in the fridge, if it lasts that long!

Raw Chinese stir-fry A finely sliced raw stir-fry full of fiber and protein

ingredients...

Ingredients for the stir-fry:2 cups enoki mushrooms

2 cups parsnip or courgette pasta (spiralised on ribbon setting)6 sugarsnap peas

½ green bell pepper3 mushrooms (peeled)

½ small organic savoy cabbage½ red cabbage

2 or 3 heads of broccoli1 tbsp sesame seeds

1 spring onion finely chopped1 tspn chilli flakes or 1 finely chopped chilli

1/2 cup flat leafed parsley1 onion sliced into rings and soaked

in tamari overnight

Ingredients for the marinade:1 cup raw (organic, untoasted) sesame oil

3 tbsp. tamari or liquid aminos2 tbsp maple syrup or other liquid sweetener

2 chopped garlic cloves1 red chilli chopped (with seeds)

1 green chilli chopped (with seeds)3 lemons – juiced

1 thumb ginger finely sliced/grated1 chopped spring onion

Topping:1 tbsp sesame seeds (untoasted)

1 cup walnuts – crushed into chunks 1 cup finely chopped flat leaf parsley

2 tbsp/soaked goji berries (soaked in coconut water or water for at least 3 hours)

1 cup alfalfa (or any) sprouts

how to make it... (serves 2) Prepare the marinade: Finely slice the ginger and chilies and put all ingredients into a lidded cup. Shake and keep in fridge until required.

To prepare the stir-fry, finely slice all the ingredients lengthways (except the enoki mushrooms and the ribbon noodles), finely chop the onion. If you don’t have a sprialiser then you can make noodles by using a vegetable peeler or knife and finely slicing the veggies lengthways. Take your time while chopping and place all ingredients in a large bowl. Pour the marinade over the stir-fry (you will need all of it) and leave to settle for 30 minutes to two hours.

I love to spend some time massaging my stir-fry - it really softens the dish and gives it that ‘fried’ texture. Leave for 4 hours for best results.

A great tip: Using a lidded bowl or a food storer - make the stir fry in the morning ready for the evening and regularly shake the mix so that the ingredients get a fine covering and a good soaking. The longer you soak, the deeper and richer the flavours become and the softer the stir fry. The cabbage and crunchy vegetables soften and take on all the flavours of the marinade and have that ‘wok fried’ texture.

When ready to serve, stir in or sprinkle with sesame seeds, walnuts, herbs, alfalfa sprouts and soaked goji berries.

The island of Ischia...Ischia itself is one of the lesser-known islands off the Amalfi coast and it maintains its authenticity in every way - from the traditional Italian food through to the cobbled streets of the harbour. At only 6 miles by 4 miles it’s a hidden delight compared to the better-known island of Capri.

The island itself has much to offer from the natural spring spa parks and gardens at Poseidon, to the amazing architecture and

Ischia Beaches...As beaches go, Chiaia beach in Forio, on the North West of the island has amazing white sands and shallow waters but can get very busy in high season. If you’re looking for a quiet hideaway beach then head to Cava Grado beach, set just outside the picturesque fishing-village of Sant’Angelo. It’s a small, pretty bay with great views of Sant’Angelo - a great beach for snorkelling too.

Local cuisine...As for the local cuisine, Ischia is the perfect place for the more obvious pasta based

dishes, pizza and ice-cream but also try the local fresh seafood such as impeppata di cozze - steamed mussels with pepper or the local, organic rabbit dish coniglio all’ischitana.

The island is known for locally grown tomatoes, rocket, beans, aubergines and courgettes, which all thrive in the island’s fertile volcanic soil. Take your pick from different restaurants dotted across the island, from classic eateries overlooking the sea to trattorias and restaurants up in the mountains. You won’t be disappointed with the food and most certainly not the wine.

The 4 star hotel is pristine and cool in décor with white washed walls, blue pillars and the most welcoming staff. The Superior harbour view room is just £60 extra for the week and seems like money well spent. The double doors opened straight out onto a small balcony over looking the harbour – what a view both day and night!

The rooms are light and airy, decorated with the traditional white washed walls and blue floors it’s definitely got the Italian feel and in true spa hotel style you get your own robe - replaced daily. All rooms come with air-conditioning, separate bathroom and free wifi, plus the additional small touches like fresh cakes and juice left on arrival make this hotel the perfect base for exploring Ischia.

Spa treatments...Aragonna palace offers the full spa experience and has a full range of spa packages available, from ‘Techno Ritual Body’ Harmony to ‘Day Spa for Him’, but you could just as easily book into the hotel and just take advantage of the Terme Bath with natural thermal mineral waters and the heated (to 32ºC) outdoor, roof top swimming pool. The indoor thermal bath is simply sublime, it’s a darkened pool area with a small sauna and showers and the actual mineral bath is so soothing, it’s heated to 32ºC also and just seems to have an amazingly calming effect on both the mind and body.

The spa area itself has many treatment rooms and the therapists are professional and friendly. Both Ischia and Aragona Palace itself prove the perfect place to switch off and relax in peace.

The island boasts natural thermal springs including the hot springs of Sorgeto, or the thermal parks and gardens such as Poseidon.

Getting there...HOW: Fly to Rome or Naples. Take the bullet train to Naples from Rome, or other cities. From Naples airport catch the Alibus to the port. The ferry, or hydrofoil, to Ischia leaves from Beverello. It’s wise to pre book online before travelling.

WHEN: Summer can get very busy. Try visiting in May or September, when the waters are warm and people gone. For the saunas and hot springs, it’s a great secret hiding place even in the winter time.
