Nana Les’ Christmas wonderland opens

Nana Les and neighbour Alex West have created a Christmas wonderland.

If you have not been out toNana Les’ place on TikiRd, then you haven’t seenthe amazing Christmas

display that Les Connor hasput together, every year, forthe last five years.

With all of her childrenliving in Australia, Les justloves doing this for otherfamilies.

“I love getting a reactionfrom them,” she says.

“I enjoy sharing with otherpeople’s families and seeingtheir expressions of pleasure.”

And Les enjoys the chal-lenge of designing and creat-ing her displays. It takes manymonths to put it together withactivity first starting back inJuly with the construction ofthe display table.

This year there are newpieces for the table as well as awhole new Norwegian Wood-land area. The woodland areais a magical place where elves,gonks and wertzels live andthe table display alone, uses300 batteries.

“Outside is huge this yearwith a tree forest, more lightson the outside of the houseand up the driveway.”

This year Les has beenextremely fortunate to havethe help of her young neigh-bour, Alex West, who steppedup and helped keep hermotivated after the death of afamily member.

Christmas with Nana Lesopened to the public last weekand closes on Christmas Eve.When: Open to view eachFriday, Saturday and Sundaynight from 7pm-9pm as wellas Wednesday, December 24.

Town’s Christmas parade ready to run

Santa and Mrs Claus at the 2018 Te Awamutu Christmas parade.

Te Awamutu’s eagerlyanticipated ChristmasParade, organised byTe Awamutu Rotary

Club and sponsored byCoresteel, takes place this Sat-urday from noon.

Rotary president PeterRobertson says planning for theannual event has been underway for some time.

He says entries have beensteady and a great parade isanticipated.

The route is the same asprevious years, so Te Awa-mutu’s CBD will be closed forparking and traffic from earlymorning.

There will be restrictedparking and traffic access inneighbouring streets leading upto the parade start.

Organisers ask the public totake heed of notices alreadyposted in and around the venueand ensure their vehicles are notleft in the wrong areas.

On Saturday morning thereare a number of events plannedfor shoppers to enjoy thepedestrian-friendly main street.

Te Awamutu Rotary haspartnered with retail shops to

run a Retail Window Competi-tion for shoppers.

The competition can only beentered on the day.

Entry forms can be pickedup and returned from threelocations: Furniture Zone,Heathcote Appliances andPaper Plus.

The entry form will list theparticipating retail businesses,

Peter says the aim is to havesome fun, but also to raiseawareness of what is on offer byour retailers by running a com-petition where shoppers have tohave some knowledge of eachshop so they can identify the‘odd item’.

The competition starts at10am Saturday and closes at3.30pm. The first two correct

entries drawn at the FloatPrizegiving at Selwyn Park willreceive a prize of items donatedby the participating retailers.

Other entertainment duringthe morning include dance per-formances from Te AwamutuRock ‘n’ Roll Club and Imperi-ous Dance Company, plus therewill be a display of hot rods andstreet machines in the vicinity ofCentral Cafe from Te AwamutuRod and Custom Club.

Most importantly, Santa hasconfirmed his attendance at theTe Awamutu Christmas Parade,plus he will be in the RosetownLions’ Santa’s Grotto in FirstNational Real Estate, 35 Alex-andra St, from 10am untilnoon.

Santa will be back onWednesday — Saturday,December 18 — 21 andMonday, December 23 from10am-1pm.

Bring a camera or phone tocapture a lasting memory.

During the parade the publicis asked to follow instructionsfrom organisers and volunteers,keep back from the road andkeep an eye on children at alltimes.

Police house joins Light Trail

For the first time Kihi-kihi’s Police House,Jail and Temple Cot-tage will be decorated

for Christmas and join withothers in this year’s ChristmasLight Trail.

The buildings will be openoutside their usual hours and

viewings will be held in theevening.

The decorations can beviewed by a simple walkthrough the buildings.

Trustees intend that theexperience will be informativeand enjoyable for all ages andhope that this is just the first of

a new tradition to be pre-sented at the histor icsite.

Access to these historicbuildings is via Leslie andHavelock Streets — the eventstarts tonight and continueson December 14, 15, 17 and18 from 7.30-9pm.

Tomorrow Bunningsteam membersnationwide will begetting behind the

barbecue to help Kiwis in needthis Christmas as part of TheSalvation Army’s 2019Christmas appeal.

Every cent raised will begoing towards The SalvationArmy’s much needed supportservices.

And as we know, Christ-mas can be an incrediblystressful time for many Kiwisin need.

For most of us Christmas isa joyous holiday, but forothers it’s another day withoutfood or shelter and it can befilled with stress and loneli-ness.

The Salvation Army is onthe front-line when it comes toassisting our community inneed and supports more than16,000 New Zealanders withtransitional housing, gifts andfood hampers over the festiveseason.

Community ministries pro-gramme co-ordinator for TheSalvation Army, Jodi Hoare,said that thanks to partnerslike Bunnings, who are sup-porting their ChristmasAppeal, we can help NewZealanders in need this festiveseason.

“Many New Zealandersfeel under enormous financialpressure during the festiveseason.

They’re already finding ithard to pay their bills and putfood on the table and theadded pressure of Christmascan be extremely stressful,”said Jodi.

All Bunnings stores acrossNew Zealand will be sellingsausages on Friday.

“The Sallies do incrediblework supporting those whorequire it the most,” saidBunnings New Zealand gen-eral manager Toby Lawrance.

“Bunnings will provide all

materials for the day and ourteam members, who alwaysembrace the opportunity tohelp a worthy cause, will workthe barbecues across thecountry,” said Toby.

Members of the commun-ity can drop by their localBunnings store’s sausage

sizzle this Friday from 9am to3pm where The SalvationArmy volunteers will also behelping out behind the barbe-cue.

So grab a snag at yourlocal Bunnings store and helpraise funds for Kiwis in needthis Christmas.

he holiday season meansso many different thingsto different people withmany celebratory feasts

traditionally focusing on meat.As a young vegetarian JackieKearney found this quitechallenging.

“Back then,” she says, “a platethat excluded meat was often justa selection of rather plainvegetables.

Then one year Jackieacquired a new vegetarian cookbook. Linda McCartney’s firstcookbook became a game-changer.

“There’s something lovelyabout having plant-basedshowstoppers on the table and itdefinitely encourages morepeople to try the plant-basedalternatives,” says Jackie. “Andof course food made from scratchalways tastes better too.”

Jackie has put together someof her favourite recipes in herbook Vegan Christmas Feasts —it’s worth a look whether you arevegan, vegetarian or a meateater, there’s something you’lllove.

Following is a recipe from thebook:

RAINBOWSILVERBEETTARTLETS WITHBROAD BEAN PUREEThis is a great vegan alternativeto miniature quiches usingnutritious gram/chickpea fl our,and you can incorporatewhatever seasonal vegetablesyou like. Rainbow silverbeetprovides a colourful alternative

to spinach, and you cansubstitute the broad beans forpeas, if you like. The tarts can befrozen after baking and can beserved warm or cold as a starteror sharing platter. The puree alsomakes a pretty bruschett a orcanape topping.

Ingredients■ 1 x 320g ready-rolledshortcrust pastry, 35 x 23cmflour, for dusting■ 120g chickpea flour■ 1⁄2 tsp black salt (or use any)■ 1⁄2 tsp turmeric powder(optional)■ 1⁄2 tsp salt■ 1⁄2 tsp baking powder■ 120g frozen baby broadbeans, or substitute frozenpeas■ 1⁄2 tsp stock powder■ 1⁄2 tsp mint sauce■ 6 — 7 medium-sized stems ofrainbow silverbeet, trimmedand chopped into 3 — 4cmpieces■ a handful of freshly choppedthyme■ a handful of vegan baconcrispy bits (optional)■ 8cm cookie cutter (or 5cmcookie cutter for mini tartlets)■ a non-stick 12-hole muffinpan (or a 24-hole mini muffinpan), lightly greased

MethodPreheat the oven to 180C / Gas

4.Lay or roll out the pastry on a

well-floured surface. Using an8cm cookie cutter (or 5cm cutterfor mini tartlets), cut out 12 (or24) circles. Press the pastrygently into the holes of theprepared muffin pan making

sure of a snug fit. Put the pan inthe preheated oven for 10 — 15minutes until the pastry hasstarted to cook.

Sift the chickpea flour into alarge bowl and add the black salt,turmeric powder (if using), salt,380ml water and baking powder.Whisk to make a smooth batter.Set aside.

Put the broad beans, stockpowder and 100ml of water into asmall pan and bring to a simmerover a medium heat for a fewminutes. Add a little more waterif needed, so that there isapproximately 2 tablespoons ofliquid in the pan after cooking.Remove from the heat, add themint sauce and blend to asmooth, thick puree. Set aside tocool. This mixture can be frozenor made several days in advanceand kept in the fridge.

Put the silverbeet into a smallpan and heat gently over amedium heat until it is justwilted, or microwave for 30seconds to wilt quickly. Put thewilted silverbeet onto papertowels to remove any excess

water.Remove the muffin pan from

the oven. Put a small spoonful ofwilted chard into the pastrycases and then pour over thebatter until each pastry case isalmost filled. Carefully put themuffin pan back into the ovenand bake for a further 30 — 40minutes until the pastry is justgolden and the filling is firm.Remove from the oven. Thetartlets can be served warm or

set aside on a wire rack to cool.When ready to serve, the

tartlets can be gently reheated ina low oven if you like, then pipeor spoon a small swirl of thebroad bean puree on top of eachtartlet.

Decorate with a lightscattering of chopped thyme andsome vegan bacon crispy bits ifyou like.

was inducted as Vicar of St John’s TeAwamutu.

“During that time I have come to realisethat the history of this place is central to itswork and mission,” said Julie.

“For that reason I have decided to hold aspecial service, An Historic Christmas, whichpeople are invited to dress up for and enjoy

the atmosphere of a traditional Nine Lessonsand Carols.”

Julie says that she would love everyone tocome dressed in mop caps, top hats or the full1900s style if they can.

Nine Lessons and Carols is a service thatincorporates nine short Bible readings orlessons from Genesis interspersed with thesinging of Christmas carols, hymns and choiranthems.

People are invited to join in the traditionalservice just as it would have been celebrated atthe turn of the last century.

A traditional supper will follow.Seating in Old St John’s is limited so be in

IngredientsFor the lemon curd:■ 3 Tbsp cornflour■ juice of 5 large lemons(approximately 220 ml/1 cup)■ pinch of salt■ 1 cup minus 1⁄2 Tbspgranulated sugar■ 60ml/1⁄4 cup unsweetenedsoy milk■ 80gvegan butterFor the swiss roll sponge(makes 2 rolls, approximately16 slices):■ 2 cups of unsweetened soymilk■ 11⁄2 cups granulated sugar■ 2 tsp cider vinegar■ 1 cup vegetable oil, such assunflower or rapeseed

■ grated zest of 2 lemons■ 2 1⁄2 cups of self-raising/rising flour■ 2 Tbsp cornflour■ pinch of salt■ 1 tsp baking soda■ 1 tsp baking powderFor the custard:■ 75g custard powder (checkvariety is vegan)■ 1l unsweetened soy milk■ zest of 1⁄2 lime, finely chopped■ 70g plus 1 tsp granulatedsugar■ 1⁄2 tsp vanilla paste or goodquality vanilla extractFor the cream:■ 2 x 200ml plant-based cremefraıche■ 1⁄2 cup plus 1 Tbsp icing sugar■ 1⁄2 tsp vanilla paste or goodquality vanilla essence■ 150 — 250 ml plus1 Tbsplimoncello liqueur (optional)■ 2 Tbsp multi-coloured cakesprinkles■ 1⁄2 tsp edible glitter or otherfestive cake sprinkles(optional)■ sterilized glass jar■ 2 Swiss roll pans, lightlyoiled and lined with bakingpaper

MethodTo make the lemon curd, add

the cornflour and 100ml plus onetablespoon water to a small panand mix well to make a paste.Add the lemon juice, salt andsugar. Put the pan over amedium heat and stir well untilthe sugar has dissolved and the

curd is thickened and smooth.Remove from the heat and addthe soy milk and vegan butter.Whisk well until smooth andglossy. Pour into a sterilized jarif making ahead of time. Thecurd will keep in the fridge for upto 3 weeks.

Next prepare the Swiss rollsponge. Preheat the oven to 160C/ Gas 3. In a large bowl, add thesoy milk, sugar, vinegar, oil andzest. Whisk together until thesugar has dissolved. Sift theflour, cornflour, salt, baking sodaand baking powder into the bowl,then whisk together until thebatter is smooth.

Divide the mixture betweenthe two trays and bake in thepreheated oven for 20 minutes

until slightly golden and cookedthrough.

Place two sheets ofgreaseproof paper on the table,the same length as the bakingtrays.

Allow the sponge to coolslightly for a few minutes, thentip each one onto each of thepapers on the table. Peel off thelining paper, which will now beon the top.

Spread each of the spongeswith the lemon curd. Start to rollthe sponge up into a roll usingthe greaseproof to help curl andsecure the sponge until you havea long roll. Let it sit securely inthe paper with the join at thebottom until ready use.

Trim the end of each roll to

neaten then cutinto eight slicesper roll. Line thebase of a largedeep glass bowlwith the slicesand then arrangedecorativelyaround the edgeso you can see apattern on theoutside. Usinglarge trifle bowl,you will haveapproximatelyhalf Swiss roll leftover. Drizzle theslices generouslywith limoncello ifusing.

Prepare thecustard bymixing thepowder with alittle of the coldmilk to make apaste. Add theremaining milk,

lime zest, sugar and vanilla andplace in a pan on a medium heat.Bring to simmer and whisk wellto make a smooth custard.Remove from heat and coverwith clingfilm/plastic wrap orgreaseproof paper to prevent askin forming on the custard. Setaside to cool.

Once fully cooled, pour thecustard over the Swiss roll slicesand then cover the bowl and setaside in the fridge to set.

Meanwhile prepare thesweetened cream by placing theOatly creme fraiche in a largebowl. Sieve the icing/confectioners’ sugar into thebowl and whisk well to combine.

Once the custard has cooledand set, billow the cream over

the set custard. Cover thetrifle and leave in the fridgeovernight.

Just before serving, scatterthe sprinkles over the top.Scatter with edible glitter too ifyou like.

Tree Awamutu back on for ChristmasThis week Tree Awamutu returned, and for 2019

was partnered with the local Police and FireBrigade.Tree Awamutu co-ordinator Jamie Budd said that

over 30 trees were registered by local business, commun-ity groups, schools, childcare centres and from localfamilies, which was well up on last year.

And this year the pop-up Christmas Tree Forestincluded a category for Tiny Trees created by schoolchildren.

“Local Police and Fire Brigade teams joined in at thepublic viewings on the Tuesday and Wednesday eveningswhich was a great way for our community to come andshow appreciation for all that they do for us,” said Jamie.

“Quite often they are the unsung heroes within ourcommunity, doing all that they can to keep us safe andprotected throughout the year, he said.”

The public was invited to meet their local heroes beforeentering into the pop-up Christmas Tree Forest to gazeupon the spectacular display, enjoy some musicalentertainment and sample Christmas nibbles.

Jamie is grateful to Noel Leeming and The Warehousefor sponsorship of prizes for the People Choice winners ofthe five to eight year olds and the nine to 12 year olds TinyTree Categories.

Formal judging of the Christmas trees took place onWednesday night so results were too late for thispublication and will be reported next week.

CHRISTMASIt’s beginning to feel a lot like

Pavlova Roulade with Kiwifruit and Mint Soup.

Crumbed Fish and Kumara Fries.

Hand harvested from Mission Estate grown pinot gris and chardonnayvines, Mission Fete is a delicate sparkling wine with aromas of pear,apple and citrus. Mission Estate chef Ricki Littleton shares some recipesto pair with a bottle of Fete this festive season.

CLASSIC KIWI

Crumbed Fish andKumara Fries

Ingredients■ 250g white fish; ■ 2 eggs(whisked with equal amountof water); ■ Flour to dust;■ Panko to crumb; ■ Lemonpepper seasoning; ■ Salt andpepper to season; ■ Oil to fry;■ 200g kumara

MethodHeat oil in a deep fryer or

frying pan to 185C. Put the flouronto a plate. Break the egg into abowl and beat it an equal amountof water. Place the pankocrumbs, lemon pepperseasoning, salt and pepper onto aplate. Cut fish into 60g pieces,coat each piece in flour and dipinto egg mix. Coat fish in pankocrumb mix and repeat processtwice on each fillet for an extracrispy crumb.

To make the kumara fries,slice kumara into strips and fryfor five minutes or bake in theoven at 200C for 20-25 minutes oruntil golden brown. While friesare cooking, carefully place fishinto heated oil for around 3-4

minutes until crust is goldenbrown. Remove excess oil andseason with salt and pepper.Serve immediately with kumarafries, tartare sauce and gardensalad. — Serves 2

Pavlova Roulade withKiwifruit and Mint Soup

IngredientsKiwifruit cream: ■ 3 greenkiwifruit, peeled; ■ 1 cupmascarpone; ■ 1⁄2 cup whippedcream; ■ 3 cups icing sugar

Golden chutney: ■ 2 goldenkiwifruit, peeled; ■ 1 cupgolden raisins; ■ 1 tsp vinegar;■ 1⁄4 cup castor sugar

Pavlova roulade: ■ 3 eggwhites; ■ 6 Tbsp castor sugar;■ 1⁄2 tsp cornflour; ■ 1 tspvinegar

Kiwifruit and mint soup: ■ 3green kiwifruit, peeled; ■ 1⁄2cup mint, leaves only; ■ Stocksyrup (1⁄2 cup water and 1⁄2 cupsugar boiled, then chilled)

To serve: ■ 1⁄2 cup Chantillycream (1⁄2 cup cream whipped

with 1⁄2 Tbsp icing sugar and 1⁄2tsp vanilla extract until softpeaks form); ■ 1 pack freezedried orange chips; ■ Freshmint/flowers garnish

MethodTo make the kiwifruit cream,

blend or juice the kiwifruit andpour into a bowl. Whisk in themascarpone, whipped cream andicing sugar and store in thefridge to keep the green colouruntil ready to spread on rouladelater.

Next make the goldenchutney. Juice or blend thekiwifruit and pour into a potwith vinegar and castor sugar.Bring to the boil then add to

blender with raisins. Blend intoa fine puree and set aside for uselater.

To make the pavlova roulade,pre-heat oven to 180C fan bake.Line a shallow baking tin withbaking paper. Whisk egg whitesuntil peaks start to form. Addhalf the castor sugar andcontinue to beat until mixturebecomes shiny and glossy. Addcornflour and vinegar and foldgently, be careful not to lose toomuch of the volume. Spreadmixture evenly onto preparedbaking tin around 2cm thick andplace into pre-heated oven andbake for 15 minutes.

Set aside to cool for 10minutes. Sieve icing sugar onto

another piece of baking paperand transfer set pavlova sheetover for easier rolling. Spreadthe kiwifruit cream all over androll the pavlova like a swiss roll.

Set roulade in the freezerbefore slicing so it doesn’t fall topieces.

To make the mint soup, bringa pot of water to the boil. Addmint leaves and blanch for fiveseconds — refresh straight intoice water and pat dry oncecooled. Add kiwifruit, mint and 1⁄2cup of stock syrup to a blender.Blend slowly adding more stocksyrup until mixture forms a thinsoup-like consistency. Chill untiluse.

To serve pour the kiwifruitand mint soup into a shallowbowl. Slice the pavlova rouladeand place into in the bowl. Servewith Chantilly cream, freezedried orange crisps, fresh mintand flowers to garnish. Servewith golden chutney.
