By the time you read this newsletter, the Board of Directors will have heard from the Metro Board about funding for some of our projects. We anticipate being able to continue with the weed control and reseeding that ARK Ecological has begun. If there are additional funds, we hope to work on some of the landscaping projects on which you have voted. Many of us are not thrilled about receiving the Castle Rock newspaper in the green wrapper every week, but I would like to encourage everyone to try to pick it up the day it arrives. That will save it from ending up in the street or in your neighbor’s yard…or shredded by your snow blower. The “trail damage” signs have been removed from the trailheads. We are checking into buying new pet waste stations for more trailheads. We hope having the additional pet stations will make it more convenient for all the dog walkers. The group held a white elephant exchange around the fireplace while sampling the various desserts. Participants donated a large number of new, unwrapped toys to “Toys for Tots” in memory of our dear member and former Marine, Dave McElhany. The toys were taken to the Marine Recruiting Office in Parker to be distributed to needy families. Door prizes were given to a few lucky winners. January brings the Stock Show to Colorado and so we have planned a Western Potluck at the clubhouse. Games will be played following the meal. We have thoroughly enjoyed getting to know one another and look forward to spending time with the great friends we have made in the group. The two main sides have been either they are needed for security or they invade my privacy. The reality is that both of these perspectives are valid. The HOA’s attorneys’ office has advised the HOA NOT to deny security cameras, as well as that there is no specific violation of the CCR’s in having cameras. Furthermore, two different rational people can easily disagree with the interpretation of the provision that an owner cannot interfere with another’s reasonable enjoyment (9.8c CCR’s), which has been interpreted as ‘I’m not comfortable with that camera facing in my general direction so it interferes with my enjoyment and is a violation. Force them to take it down, HOA, or I’ll go after the HOA’. The last part of this hypothetical statement points to a homeowner feeling the HOA is somehow responsible for their loss of enjoyment by allowing cameras. But 9.27 (CCR’s) provides that the neither the HOA nor its committees bears liability for it decisions. The final aspect of cameras is that they appear to be in dispute when there is ongoing conflict between neighbors. So what is the HOA to do? Unfortunately, there is not much the HOA can do. While the HOA has the ability to decline DRR’s for cameras, the HOA does not have a strong case or cause for such a stance. Just as a person has the ability to stand in front of a charging bull, it is not very advisable. There was a point in time when the HOA’s understanding was that state law required the cameras to focus on the camera owner’s property. The HOA has since learned from the attorney that this is not the case. Please note that while cameras are basically ‘allowed’ they do need to go through the DRR process and be approved. So if you have cameras that have not been approved, then you would be in violation of 9.3e of needing approval for exterior changes. As stated above, this topic is most heated when there is ongoing conflict between neighbors. This is also when both arguments (security and enjoyment) are likely very strongly felt. It must be said though that the best way to ensure security and enjoyment is to have ALL you neighbors looking out FOR your property and safety and NOT for your violations. The HOA will enforce clear violations, however the HOA will resist being used as a tool for back and forth retaliation. If you’re going to have cameras it is highly recommended that you try and work with your neighbors and be cognizant of the natural feeling they may have of being violated. One might say it is not far from having someone constantly staring out their window with a camera 24/7, while not illegal, it does sound ‘creepy’. That is the raw emotion that it appears this issue elicits from many.

April Fool’s Day is not a national holiday—at least officially. Although the government doesn’t recognize this annual day of fun and pranks, it has found its way into the hearts of people young and old. It is believed to have started in the sixteenth century in France, when Pope Gregory, changing the beginning of the year from April 1st to January 1st, introduced a new calendar to the world. Some people either hadn’t heard of the change or didn’t believe it. When they continued to celebrate New Year’s Day on April 1st, they were called “April Fools.”

The tradition of playing tricks on others became popular in Europe in the eighteenth century, and was brought to the New World by early American settlers. Early pranks in colonial America included pinning signs on people’s backs, putting salt or pepper in candy, telling people they had a hole in their clothes or food on their face, or holding items in place by a string. Teachers in the nineteenth century used to say to pupils, “Look! A flock of geese!” and point up. The prankster would then yell, “April Fool!”

In modern times, April 1st is a day set aside to play small, clever tricks on people. To qualify as a real April Fool’s prank, it should be harmless, in good fun, and completely believable (at least for a while) by your victim. Your trickery should always make your victim smile when you shout “April Fool’s!” So, get creative and go make some “April Fools” out of your friends.

Luck Of The Irish One of the most frequently visited sites in Ireland is the Blarney Stone. Thousands of tourists a year visit Blarney Castle for a chance to get the “Gift of the Gab” by kissing the Blarney Stone. Although the exact origin of this custom is unknown, the history of the castle itself is well documented.

Blarney Castle was built in 1446 with walls 18 feet thick in places. The stone itself is situated high up in the battlements of the castle, and is reached by following one of sev¬eral long, stone

spiral staircases up to the top. The stone is believed to be half of the Stone of Scone, which originally be¬longed to Scotland, and over which Scottish kings were crowned. Cormac MacCarthy obtained the stone in 1314 from Robert the Bruce, and eventually it was placed in Blarney Castle. Legend has it that an old woman cast a spell on the stone to reward a king who had saved her from drowning. The king kissed the stone and was given the ability to speak sweetly and convincingly, the “Gift of the Gab.”

More likely though, the basis for the legend of the Blarney Stone comes from the dealings of Queen Elizabeth I with Ireland’s chiefs. Cormac MacCarthy was a diplomatic negotiator, with an ability to delay the queen’s requests. Elizabeth proclaimed that MacCarthy was giving her “a lot of Blarney,” and thus the legend was born.

Kissing the stone is supposed to bring the kisser the gift of persuasive eloquence. But it comes at a price—the stone is in a difficult to reach place. In order to reach the stone, the kisser must lie on his back and bend backward and downward, hold¬ing iron bars for support. But those willing to go to these lengths are truly able to say they have the “luck of the Irish.”

Golf Preparedness With spring just around the corner, many of us are gearing up for the golfing season. Before you head back out on the course, take time to review some basic preparation steps to ensure that you have a day free of injuries or strains.

Remember to warm up before teeing off. Walk for several minutes, swinging your arms to warm up those muscles. After your muscles are beginning to warm up, do some stretches, concentrating on the muscles that you will use most during your game. Stretch your arms and back, as well as your shoulders and legs. To protect your feet from injury and fatigue, make sure that your golf shoes are properly fitted and are comfortable at all times during your walk on the course.

Driving At The Right Distance Many people were taught to keep one to two seconds behind the vehicle in front of them when driving. However, this advice is not the best way to stay safe on the roads. This rule was established by observing the stopping distance and reaction time of drivers under ideal road, vehicle, and driver conditions. However, often these conditions do not exist. In fact, this doesn’t take into account the fact that a driver may need to take his or her eyes off the road, even if just to look in the rear and side mirrors.

So what is the proper distance to keep between you and the car ahead of you? Experts now recommend at least four seconds. To be sure you are at the proper distance, look for a fixed object on the roadside, such as a sign or telephone pole. Once the car ahead of you passes that object begin counting (one thousand one, one thousand two, etc.). You should get to at least the count of one thousand four before passing the object yourself. Of course, in poor road or weather conditions, you should increase this count.

Because it is instinctive to want to fill the space ahead of you on the road, at first it may feel awkward to have a greater distance. But you will be safer and will enjoy a less stressful ride in the long run.

I f you haven ’ t been to www.sapphirepointe.com lately, then you may be surprised to find all the improvements we have been working on. There are live news feeds from both the Town of Castle Rock and the Douglas County News Press. There are also community forums (message boards), a contact/feedback form for the board, each committee and also for clubhouse reservations. The site has HOA and community events and

news, upcoming events and meetings, a community calendar, opinion polls, FAQs and the association documents, minutes and newsletters. There an enhanced DRR (Design Review Request) Form that can be downloaded, filled out on the computer, printed, signed and returned to TMMC for your convenience. [ This download is found under Documents -> Design Guidelines ]

There are also mailing lists that you can subscribe/unsubscribe to at any time. These email notification lists can keep you informed about upcoming meetings (with pre-meeting agendas) and community events. We may establish additional lists in the future if it makes sense to do so.

All homeowners with a registered account on the old site were converted over to the new website (and emailed new passwords and instructions on how to log in). When you log in, you can change your password then to something you can more easily remember. We have had nearly 100 new registrations since June, so we now have 400 registered users on the new website. We would like to see and hear from the rest of our homeowners in Sapphire Pointe, Puma Ridge, Cutter’s Ridge and Cliffside. Registering is a quick and simple process and allows you full access to the entire site (including all the association documents) and the ability to post messages in the forums, sign up email notifications and vote in opinion polls. Please visit the website and take a look around. We hope it is useful to you and perhaps you may bookmark the site and visit us regularly!

Seniors And Pets Studies have shown that senior citizens who own pets are, in general, healthier, more physically active, and take better care of themselves than seniors who don’t own animals. Owning a pet generates a sense of responsibility and caring and can lead to setting a daily routine. The presence of a pet can often ease stress, and bring a calming influence during unsettled situations.

So, if the benefits are so great, many seniors must own pets, right? Actually, according to the American Veterinary Medical Association, only 10 percent of seniors own cats and 20 percent own dogs. Many seniors do not own pets to give themselves the flexibility of being able to travel without worry, and to save on the expense of providing care for their pets while they are gone. Others are worried about the general costs of caring for a pet, wondering how they might afford pet care expenses on a fixed income. And some worry about their physical ability to care for pet or what might happen if their future physical condition impairs their ability to provide for their animal.

Seniors, in this respect, are no different from any other prospective pet owner. They need to evaluate whether they can care for a pet and if they can afford the costs before they adopt an animal. Many humane societies across the country offer senior citizens low and no-cost adoptions and spay or neuter services. There are some programs designed to provide low cost vet care to lower income seniors, including some that distribute pet food.

In terms of housing, by law, senior citizens living in federally assisted housing must be allowed to keep pets. Many landlords accept pets and some nursing homes allow residents to bring their own pets with them. It is becoming more common for seniors with existing pets to find accommodation for themselves and their animals if the need to relocate arises. By accommodating seniors with pets, it can increase the quality of life for the pet owners and give opportunities for homeless pets to find a home. Because of the improved health and well-being of senior pet owners, society as a whole will benefit also.

The key to an easy brunch on a busy holiday morning is the ability to make your dishes ahead of time. These fabulous breakfast recipes will satisfy your hungry crew while freeing you up to enjoy your morning.

Sausage Phyllo Egg Bake

1 tablespoon butter

1 red bell pepper, chopped

1 green bell pepper, chopped

1 onion, finely chopped

1 cup sliced mushrooms

1 pound bulk ground Italian pork sausage

6 eggs, well beaten

1-1/2 cups shredded Havarti cheese

10 oz. package frozen spinach, thawed and drained

1 cup ricotta cheese

1 egg

2 tablespoons chopped fresh basil

1/3 cup grated Parmesan cheese

30 (14” x 9”) phyllo pastry sheets, thawed

3/4 cup melted butter

In a large skillet, melt 1 tablespoon butter over medium heat. Saute the peppers, onion, and mushrooms until tender. Remove from skillet and set aside. Brown the sausage in the same skillet. Drain and return the sausage and the pepper mixture to the skillet. Add the beaten eggs and cook for about 5 minutes or until the eggs are set, stirring often. Stir in the Havarti cheese. Remove from heat and let sit about 30 minutes.

In a separate bowl, combine the spinach, ricotta cheese, 1 egg, basil, and Parmesan cheese. Unroll phyllo sheets and cover with plastic wrap and a damp paper towel. Place one sheet of dough in a 13” x 9” glass baking dish. Brush with melted butter. Continue adding nine more phyllo sheets, brushing each with melted butter. Spread half of the egg/sausage mixture over the dough. Layer, brushing each with butter, 10 more phyllo sheets. Spread with all of the spinach/ricotta mixture. Layer, brushing each with butter, five more phyllo sheets. Top with the remaining mushroom/sausage mixture, followed by five more buttered phyllo sheets. Finally, score the top of the phyllo dough in a diamond pattern.

Cover tightly. This can be refrigerated for up to 24 hours, or frozen for up to 3 months. If refrigerated, uncover and bake at 350 degrees for about 60 minutes. If frozen, thaw overnight in refrigerator, then bake uncovered at 350 degrees for about 75 minutes. Serves 10-12.

Mini Make-Ahead Quiches

1 package refrigerated pie crust

1 large portabello mushroom, chopped

8 ounces button mushrooms, chopped

2 tablespoon butter

1 tablespoon olive oil

1/2 cup whipping cream

1 egg

1/4 teaspoon salt

1/8 teaspoon cayenne pepper

1 cup shredded Swiss cheese

Roll out pie crust flat. Using a 3” cookie cutter, cut 24 circles from the pie crust, rerolling the crusts if needed. Press into greased 1-3/4” muffin cups. In a large skillet, melt butter over medium heat. Add the olive oil and mushrooms. Saute mushrooms until brown and tender. Divide mushrooms evenly among the crust-lined muffin cups. In a small bowl, combine egg, cream, salt, and cayenne pepper. Beat well. Pour egg mixture evenly over mushrooms. Sprinkle with grated cheese. Bake at 375 degrees for 20 minutes or until center of quiches is set. To freeze, cool on wire rack and freeze in a single layer. Place in an air tight container. To reheat, place frozen quiches on a cookie sheet. Bake at 350 degrees for 14 minutes.

Overnight Breakfast Casserole

1 pound frozen tater tot potatoes

1/2 pound diced Canadian bacon

2 onions, chopped

1-1/2 cups shredded Cheddar cheese

1/4 cup grated Parmesan cheese

6 eggs

1/2 cup whole milk

Salt and pepper to taste

In a 5 quart crockpot, layer the ingredients in order: one third of the tater tots, bacon, onions, and cheeses. Repeat layers two more times, ending with the cheese. In a medium mixing bowl, combine eggs and milk with a whisk. Season with salt and pepper. Pour mixture over layers in crockpot. Cover and cook on low for 6-8 hours.
