Fort Guacamoleserves 4 to 6

3 ripe Haas avocados, pitted and peeled3 whole Serrano Chilies, seeded and minced

1/4 cup freshly squeezed lime juice (2 small limes)1/2 teaspoon salt

2 large, ripe tomatoes, seeded and diced1 medium ripe onion, diced

1/4 cup whole fresh cilantro leaves (no stems), minced

Place the avocados, chilies, lime juice and salt in a large bowl. Mash the avocados with a fork or potato masher, leaving small lumps. Gently fold in the tomatoes, onion and cilantro. Taste, and add more lime juice if desired. The guacamole should be spicy, so add more Serrano Chilies as your taste dictates. Serve with

tortilla chips!

Jalapeños Stuffed with Peanut Butterserves 6 to 8

1 pound Fort-style pickled jalapeños (see recipe below)3/4 cup peanut butter

2 tablespoons mango chutney

Slice the pickled jalapeños in half lengthwise (not quite all the way through), leaving the two halves at the stem end. Using a knife or spoon, remove and dis-card the seeds and ribs. In a small mixing bowl, combine the peanut butter and chutney. Stuff the chilies with the peanut butter mixture and press the halves back together. To make sure you are getting a balanced bite and not too spicy,

eat the jalapeño in one bit!

Fort-Style Pickled Jalapeñosmakes about 1 pound

1 pound small to medium-sized fresh jalapeños (12 to 16)3 1/2 cups cider vinegar

1 3/4 cups water1/2 cup sugar

2 1/2 teaspoons salt2 1/2 teaspoons sesame oil1 teaspoon pickling spice

3/4 cup coarsely chopped yellow onion3/4 cup coarsely chopped carrot

3 cloves of garlic, peeled and whole

Rinse the jalapeños and trim off the woody ends from the stems. In a 4-6 quart stainless steel or enameled pot, combine the vinegar, water, sugar, salt, sesame oil and pickling spice. Add the jalapeños, onion, carrot and garlic. Cover and bring

to a simmer over high heat, stirring occasionally. Reduce the heat to low and simmer for five minutes. Remove from heat.

While still hot, transfer the jalapeños and pickling juice to a sterilized 2-3 quart canning jar. Cover tightly with a lid or plastic wrap and refrigerate

for at least one week before eating.

Brittany & Michael basalt

Brittany and Michael had a mutual friend that insisted the two meet. So on a Monday night, the friend invited Michael to join them for a drink. While Michael was in the heat of bingo game and a

dance-off at a local Denver Irish pub. Nearby, Brittany patiently waited. After an epic victory, Michael hopped in a cab and raced to meet her. The two talked about their love of traveling, shared some

stories then parted ways. As fate would have it, over the next few weeks they randomly kept running into one another and Michael finally asked for her number, and the rest was history! While

dating, they opportunity to spend time abroad in New Zealand together and jumped at the chance! On their last evening in New Zealand, Michael took Brittany up to her favorite spot overlooking

Wellington and proposed with a beautiful “travelers” ring - a handcrafted silver band with two Koru plants winding together. They spent the next six months traveling around Southeast Asia and finally returned to Colorado where they began their next adventure, becoming husband and wife! They

hosted friends and family for their rustic farm wedding on September 6th!

The Theme: Brittany and Michael wanted a “rustic sustainable farm” wedding. They wanted to bring in the cultural themes the two discovered from their year and a half abroad, while still staying true to their love of sustainable agriculture. After an unlucky trip venue hunting in Aspen, the two met the farm manager from Rock Bottom Ranch at the Aspen Farmers Market and he invited them to the farm. The moment Brittany and Michael stepped onto the 113 acre wildlife preserve, there was no doubt in their minds they had found the perfect place to say “I Do!”

The Dress: Brittany’s dress was not-so-ordinary! She knew she wanted to get her dress handmade in South East Asia for cost purposes and to custom create something that matched her style. They found a place in Bangkok, Thailand, and in the process of 2 stressful weeks, had her dress and Michael’s suit made by a Thai woman named Waan. It was bright white with a beautiful see-through lace of vines and flowers sewn onto it. The thin straps were decorated with this same lace, giving the illusions that the vines climbed from the dress onto my back and shoulders. The back of the dress dipped down in a V-shape and was finished with tiny pearl buttons and a medium-length train. The vines fail off the bottom of Brittany’s gorgeous gown and trailed along giving it a beautifully rustic and natural look.

The Flowers: When it came to floral, Brittany wanted a loose, organic composition of flowers to enhance the rustic and natural feel of the wedding. She had the main flowers (bridal bouquet, bridesmaid, flower crown and boutonnières) done by the talented Susan’s Flowers & Gifts, and the rest were handmade the day of the wedding by my girlfriends. They focused on green, white and yellow floral with pops of deep purple. All accentuated with Aspen leaves. The Bride’s bouquet had Italian ruscus, seeded eucalyptus, aspen leaves, Queen Anne’s lace, white snap dragons, dahlias, scabiosa pods, yellow freesia and deep purple lisanthus. Her flower crown was crafted with Italian ruscus embellished with clusters of yellow dahlias, white scabiosa and yellow freesia! The boys boutonnières were composed of fresh lavender, scabiosa pods and aspen leaves.

The Favorite Detail: “The calligraphy art I wove into the details of the wedding. I learned calligraphy because I became intrigued with the art form about a year before the wedding. I tried to incorporate it in all details of the wedding

– the guests names on the antique window, the handmade chalkboard signs, programs, invitations, table cards and signage. It really brought a personal element to the day, because every-one knew how hard I was working to learn the art form!”

The Food: “THE FOOD! Where do I begin? I met our caterer while I was volunteering on an organic CSA in Boulder. We were both pulling brightly colored carrots from the damp earth and packaging them for the farmers market the next day. We were getting to know one another and she said she was a private chef and had been for 20 years in Boulder. I asked her about catering our wedding because I was striking out finding affordable and quality options and she had us over to dinner with her business partner/best friend. They cooked a completely homemade, self-created meal full of organic and fresh ingredients. I had never eaten anything so beautiful in my life. We hired her on the spot and my husband asked if he could come for dinner the next evening. Juliette and I became good friends and she graced our wedding plates with baked sweet and spicy chicken amidst carrots, onions and dates, roasted seasonal root vegetables, wild rice salad, massaged kale salad, and, my favorite: gigantic butter beans in a Tuscan savory blend. For appetizers she laid out platters of colorful fresh hummus, summer squash tartines, roasted nuts and fresh fruit.”

The Sweets: For dessert, the couple had Romeo Cakes create a beautiful and simple vanilla 3-tiered buttercream frosted cake. It was filled with a layer of homemade fruit preserve filling and completed with a delicate burlap edge at the base of the cake and flowers trailing down the side.

Mr. and Mrs. Moment: “Taking photos and playing with the chickens in the hour after the ceremony! We went on a walk through the beautiful fields of the ranch with our photographer. We grabbed two chickens and laughed until we cried while dancing around with them. For some reason, I just adore chickens and that was the highlight of the evening.”

Advice for RMB Brides: “Hire a day-of coordinator. I hired my girlfriend who was an ex-wedding planner and she was amazing! When doing a budget wedding, it is often not in the cards to hire a planner for the entire event. I planned every detail and enlisted my lovely friends and family to help out along the way. When the day comes, LET IT GO. It will be perfect, and stress carries onto your guests and creates a sour mood. Fill your day with love and happiness, and the day will be lovely and happy. Soak it in. It will go great, and, if it doesn’t, laugh it off!”

Colby & Brice telluride

Colby and Brice met in high school at a party and instantly became best friends. A few years later they realized they couldn’t live without each other, so they made it official and became

a couple! Brice planned to propose to Colby on a trip they had planned to NYC. When the weather looked unfavorable, she canceled, and Brice, who is typically go-with-the-flow seemed unusually upset about it! To make up for it, Colby made reservations at one of the couple’s favorite restaurants Elk Creek Café. Brice just couldn’t wait any longer, so on a rainy evening in their car, in the Elk Creek Café parking lot, he proposed and Colby said yes! They ran inside and had a relaxing dinner filled with live music and celebration. Colby and Brice

became newlyweds with an intimate Tellluride celebration on June 13.

The Theme: The Rockies were the focus for Colby and Brice’s wedding! They wanted a stress-free, adventure-filled day and didn’t plan a thing! They found the location the day before and it was perfect for their intimate “I Do’s.”

The Dress: “A friend of mine graciously offered to give me a wedding dress she never wore and that I had fallen in love with! I was thrilled she said I could do whatever I wanted with it! I cut it short and wore that version downtown and ordered a skirt to wear over it during the ceremony.”

The Flowers: Rather than big blooms, Colby loved greenery and earthy plants, so she designed a cascading bouquet of ivy and accented it with floor length green ribbons. She loved it!

The Favorite Detail: “The Mountains! The San Juan Mountains are the best wedding detail you can possibly get! The Town of Telluride perfectly added all the charm and vibrant color we needed!”

The First Dance: The two danced to the beat of their own drum and walked around Telluride that day laughing, shopping and taking in the mountain views.

The Celebration Brunch: After the ceremony, Colby and Brice took the gondola into Telluride and had brunchat The Butcher & The Baker. They didn’t call ahead, and just walked in, got a table and ordered off their brunch menu. They toasted to their marriage with delicious mimosas!

Mr and Mrs Moment: “The excitement of being mar-ried in such a beautiful, new place. It was an indescribable way to start a new chapter of our life together as husband and wife.”

Advice for RMB Brides: “Climb the tallest mountain, leave all the stress down below. Make it memorable, adven-turous, and fun. (and find a photographer that will climb the mountain with you and take gorgeous photos of your day!!!)”

The Dress: “My dress was Truvelle. The designer is my age and is based in Canada. I waited until she had a trunk show in Colorado and then went to check them out in person. The dress I fell in love with was traditional and white on the top and gold sequined on the bottom.”

Abbey & Cale lyons

Abbey and Cale made a connection at work, while they were both in high school. They flirted for months, and as Abbey almost to work up the courage to ask Cale out, he beat her to it! The

pair attended college at CU Boulder and after graduation, Abbey went to Oregon for graduate school where they did long distance for 2 years. Their love only grew stronger with distance, and Cale

knew Abbey was the one! He surprised her with a proposal at the same location where he had asked her to homecoming all those years ago. Abbey and Cale celebrated their love with a romantic,

laid-back and meaningful May 24th wedding.

The Theme: Abbey and Cale wanted their wedding to be eclectic, with a polished and romantic design filled with details and a laid-back atmosphere. A color palette of Navy blue, blush, gold, deep pink and emerald green was used to create the look!

The Dress: “I designed my own dress, with the help of Mayra, the owner of Emma & Grace Bridal Boutique. I wanted a 2-piece, sleek, yet dramatic dress.. I chose silk for my skirt and suede for the top. I wanted the dress’s cut and style to be uniquely me, with the perfect fit and to be architectural and form-fitting.”

The Flowers: Abbey kept her flower selection to what was in season for May, which ended up being her favorite flower - the peony!

The Favorite Detail: “The Tablescapes-the leaf garlands and dipped name cards with the gold candlesticks turned out just as I had imagined. I handpicked all the decor items including the candlesticks, votives and vases for each table; each table was unique.”

The Food: Abbey and Cale loved their menu! The food was fresh, light and casual, similar to a barbecue style. For cocktail hour, guests were served strawberries with a balsamic and brie spread, caprese skewers and lime shrimp, followed by a buffet dinner. Abbey and Cale each chose a signature cocktail to jazz up for the open bar menu - Abbey chose a champagne and St. Germaine cocktail, while Cale kept it classic with an Old Fashioned.

The Sweets: “I made our cake! I wanted a naked cake look. I enjoy baking and felt confident that I could achieve the look I was after. I wanted a dessert bar, so we also had pies from a local market that we shop at. Cale loves donuts, so we included mini-donuts too!”

Advice for RMB Brides: “I would say to just enjoy the wedding planning process as much as possible, and take it at your own pace. It can be so easy to lose track of your vision and intentions for your wedding when you are getting input from everyone around you. Don’t feel the need to do something just because ‘everyone else does it,’ or ‘it’s what people do at weddings.’ Do what feels right for you.”

Kelly & Michael denver

On Kelly’s 24th birthday, she got an extra special present; she was introducedto her future husband Michael, by a mutual friend. The relationship blossomed

quickly and they knew early on that they would be spending the rest of their lives together. Michael surprised Kelly with a proposal at the top of a lighthouse on the Maryland shore. His Colorado roots drew the pair back

home to start their ever after with family and friends on May 23.

The Theme: Kelly and Michael didn’t have a set theme for their wedding day. They instead had a goal to create a special memory for their family and friends, and focused the planning on making the day’s events flow naturally. The couple loved sharing the mountains with their guests and enjoyed watching them venture outside during cocktail hour where they stood in awe of the breathtaking view! The knew at that moment they had chosen the perfect venue! They used a color palette of dusty rose, bronze, rose gold and ivory to create their timeless and elegant soirée.

The Dress: “I was fortunate to find my dress quickly – it was the first one I tried on. More importantly, I got to share the dress shopping experience with my mother and my great aunt. I was looking for a traditional silhouette that was updated with modern details, and I knew the second I put it on that it was the one for me.”

The Flowers: “Peonies are my favorite flower so it was a simple choice. I wanted to compliment the flowers with lots of lush greenery to tie in the inside of the venue with breathtaking views of the front range outside. The eucalyptus provided a unique twist. Our florist, Robyn, also did an amazing job bringing my dream to life.”

The Favorite Detail: “My favorite wedding detail might have been the only detail I didn’t plan out myself. While getting ready the day of the wedding, there was a knock on the door. Our ring bearer had brought me a beautiful white rose and a card from Michael that counted the days since we had met. It is so easy to get lost in the minutiae of planning a wedding and it was a lovely reminder of the real focus of the day.”

The Food: In keeping with the elegant feel, Kelly and Michael chose a plated dinner. Guest could choose from red snapper, stuffed mushroom, or steak!

The Sweets: Kelly and Michael’s stunning four-tier cake was a work of art. It was filled with chocolate cake with raspberry, honey-lavender cake with honey mascarpone, and vanilla bean with raspberry, all covered with an intricate butter cream frosting and peonies.

Advice for RMB Brides: “We were thrilled we took the time to explore all of our options and picked the vendors we felt were a perfect match for our personality, taste, and wedding vision. We planned this wedding from Washington, D.C. and relied heavily on the expertise of our vendors to help guide us to the right decisions. They helped us map out our wedding day down to the minute from start to finish. We felt there was nothing to worry about the day of the wedding and we were able to really enjoy every minute of our day.”
