Catherine also had some positive advice for others looking to achieve the same fitness success: “When you first start it’s easy to be put off by a lot of things – not knowing how things work, feeling incompetent and unfit, lacking motivation and not seeing results immediately. Start with a group fitness class and attend it regularly. Then book a personal trainer. Summer barbeques are a must over the holiday season. Fire up the Barbie with this healthy mouth-watering recipe which is sure to get the summer sizzling:

Grilled Salmon Skewers with Mango Coconut SaladIngredients (serves 4) 600g skinless salmon fillets, cut into 3cm cubes 2 tablespoons lime juice 1 tablespoon peanut oil 2 garlic cloves, crushed 2 stalks lemongrass, trimmed, finely chopped olive oil cooking spray salad leaves, to serve

Mango Coconut Salad1 medium (1kg) fresh coconut 1 large (450g) mango, diced 1 long red chilli, deseeded, thinly sliced 1/3 cup firmly packed fresh mint leaves, torn 2 tablespoons lime juice 2 teaspoons brown sugar

Directions: Combine salmon, lime juice, oil, garlic and lemongrass in a bowl. Cover and refrigerate for 30 minutes. Make coconut mango salad: Drain and break open coconut. Using a vegetable peeler, peel thin slices from coconut flesh. Combine coconut, mango, chilli, mint, lime juice and sugar in a bowl. Spray a barbecue plate with oil sparingly. Heat over high heat. Thread salmon onto skewers. Cook skewers for 1 to 2 minutes on both sides. Serve with mango coconut salad.(Source: taste.com.au Super Food Ideas - February 2008, Page 47 Recipe by Kim Coverdale)

Summer is here, it’s heating up and I’m sure you’re all thinking about hitting the beach! Here’s a great exercise to tone the abs, obliques and pecs and get that bikini tummy you’re after:

1. Sit on your knees in front of a Swiss ball and place your forearms and fists on the ball.

2. Slowly roll the ball forward, straightening your arms and extending your body as far as you can without allowing your lower back to “collapse.” Use your abdominal muscles to pull the ball back to your knees.
