Grilled Tofu with Chimichurri Sauce and Grilled Garlic Bread

Servings: 4 Prep Time: 15 Min. Cook Time: 10-15 Min.

WHAT YOU NEED:Chimichurri Sauce:• 2 c. lightly packed chopped parsley• 4 garlic cloves, halved• 1 tsp. salt• 1/2 tsp. freshly ground pepper• 1/2 tsp. chili pepper fl akes• 2 Tbsp. shallot or onion, minced• 1/4 c. of vegetable or olive oil• 3 Tbsp. sherry wine vinegar or

red wine vinegar• 3 Tbsp. lemon juice

Cumin Rub: Grilled Garlic Bread:• 1 tsp. granulated garlic • 8 pieces of crusty and dense• 1/2 tsp. smoked paprika Italian bread, cut 3/4 or Hungarian paprika to 1 in. thick• 1/2 tsp. ground cumin • 4 large cloves garlic, • 1 lb. water-packed extra-fi rm peeled and cut in half tofu, cut in half lengthwise • extra virgin olive oil• olive oil

WHAT TO DO:1. To prepare the Chimichurri sauce, place all ingredients in a blender or food

processor and pulse until well chopped, but not puréed. Set aside.2. To prepare the rub, combine the garlic, paprika and cumin; mix well. Set

aside. Cut the tofu in half lengthwise to make 2 “steaks” about 3/4 in. thick. Brush lightly with olive oil. Press the rub into both sides of the tofu steaks. Place tofu in a grill pan coated with oil or directly on the cooking grate over direct heat. Cook for 3-4 min. Turn the tofu steak with a pair of tongs and a fl at spatula if necessary. Sear the second side and continue grilling until done, about 3-5 min. Cut each tofu steak in half to form 2 triangles. Serve with Chimichurri Sauce and Grilled Garlic Bread

3. To prepare the Grilled Garlic Bread, place bread on grill rack or in grill pan. Cook, turning once, until golden on both sides, about 2 to 3 min. per side. Rub 1 side of each piece of bread with a half clove of garlic; rub hard for good garlicky fl avor. Place each piece of bread on a serving plate and brush with a thin coating of olive oil.

May is our anniversary issue – one full year since we took the reins of Natural Awakenings here in Colorado. A year ago mid-April, we were

driving cross-country, a compact car in the lead and a dangerously overloaded rental truck towing a trailer - like Smokey and the Bandit, but with cell phones. What a rollercoaster year this has been! Luckily, there are a lot of local resources for stress relief inside these pages. Webster’s defi nes wellness as: the quality or state of being in good health especially as an actively sought goal. Myrtle Fillmore, founder of the Unity movement over 120

years ago, proclaimed “I am a child of God, and therefore I do not inherit sick-ness.” What if our natural state is to be vibrantly healthy and glowing with joy? Happy Mother’s Day! This month, we honor all women, mothers, the fe-male perspective, the feminine energy, the Goddess that is every one of YOU! This past year has taught us much about ourselves, how to still be friends and business partners (not easy!), how grateful we are for all the changes we’ve had the courage to make, and for those hurdles we have yet to overcome. We’ve learned that no matter how busy the day is, you better make time for yourself or the next time you look up, it’ll be 8 p.m. and you’ll wonder where the time went! We’ve learned that having a pet is one of the great joys of life, no matter how long it takes to clean the hair out of your clothes, carpet, etc. We’ve made a lot of progress in our commitment to Natural Awakening’s wellness: doubling our distribution; hiring a better-quality printer; upgrading our paper stock to make the colors sizzle; hiring a new layout expert; new email newsletter; new editing team; combining Boulder/Denver; new website and more. More of you are coming across our magazine than ever before from Castle Rock to Longmont and everywhere in between, but you won’t fi nd us out in the street in box. For many, life is a persistent call to ac-tion, an imbalance between action and

rest, male and female energies, yang and yin. Everyone possesses yang and yin en-ergies, regardless of gender. Yang, or male energy, is action-oriented, productive, and result-focused. Yin, or female energy, is receptive, intuitive, and process-focused. Yang is symbolized by the Sun, while the moon is the sign for yin. These are simplis-tic descriptions of profound natural forces. It takes both of them to make us whole. Currently it’s a yang world. Acquisition and productivity defi ne our self-worth. Yin has been pushed aside, whether in the name of God, corporate power, or the sacred dollar. A saying among scientists is that the best work is done in the bed, bath, and bus. These are decidedly feminine mo-ments when one is receptive, not thinking about the goal. Without yin inspiration, action-oriented energy can easily become misdirected. The inspiration that comes from yin stillness gives rise to yang action toward a worthy goal. Persistent fatigue is a great example of yin’s quiet insistence. When yin is re-pressed, emotional imbalance, feelings of futility and addictive behaviors may arise. When we try to prove our self-worth with over-action, spirit within won’t support that path. It’s based on a lie that who we are isn’t enough. Yin knows the truth. Meditation is a yin activity. Connect-ing with spirit within brings peace and healing. It makes daily life fl ow smoothly. At any moment, take a breath and re-member that you are a unique expression of spirit, an irreplaceable piece of the puzzle of all that is. All that you are right now is more than enough. How many of us seem to catch every little bug and fl u going

around? Do you blame it on allergies or genetics? Do you often feel “run-down?” Stress may be the culprit. It suppresses the immune system and causes loss of sleep, depression, heart attack, anxiety, high blood pressure and other illnesses. Mainstream medicine often treats the symptoms, but not the cause. This is like applying a band-aid without taking out the splinter. In order to address the underlying stress and fi nd relief, we must iden-tify the indicators of stress. Feelings of anger, anxiety, fear, depression are common from prolonged stress. If they persist, they will affect our brain chem-istry and our physical bodies. Don’t forget to take care of your brain. According to U.S. Census data from 2000, 37.5 million women are currently reaching menopause age (40 to 59) and up to

70% of these women may experience varying symptoms such as hot fl ashes, night sweats, vaginal dryness, UTI’s, memory problems, fatigue, irritability and others. Menopause is marked by ovarian follicle depletion and a decrease in proges-terone. These hormonal changes affect the entire endocrine system; hypothala-mus, pituitary, thyroid, parathyroids, adrenals, pineal body, reproductive glands and the pancreas. A defi ciency in one creates an imbalance and this is where menopause symptoms come into play. The fi rst step in managing this change is to clean up the diet. Read labels carefully. Purchase meat and dairy that is free of steroids, antibiotics and hor-mones. It doesn’t have to be organic to be healthy meat. Farmers pay a high price for an organic certifi cation and many local farmers, who have practiced or-ganic for years, can’t afford to pay this price. Whole Grains Dispose of Body Fat

Here’s yet another reason to switch completely from refi ned fl our prod-ucts to whole grains. In a new study by the Jean Mayer USDA Human

Nutrition Research Center on Aging, at Tufts University, adults who ate three servings of whole grains a day while also eating less than one serving a day of commercially enriched fl our products had less of a type of fat tis-sue that is thought to play a key role in triggering diseases. The fat is known as visceral adipose tissue, or VAT, which surrounds internal organs. The researchers examined 2,834 participants, ages 32 to 83, and VAT volume was approximately 10 percent lower in the healthy eating group. However, lead study author Nicola McKeown, Ph.D., explains that, “Whole grain consumption did not appear to improve VAT volume if refi ned grain intake exceeded four or more servings per day. This result infers that it is important to make substitutions in the diet, rather than simply adding whole grain foods. For example, choosing to cook with brown rice instead of white, or making a sandwich with whole grain bread instead of white bread.”

There is much to celebrate about being a woman…one aspect is the

capacity for blissful, prolonged, ecstatic, sexual pleasure. Unfortunately, too many women do not know this pleasure or worse, associate sex with pain and suffer-ing, whether emotional or physical. Our culture has not traditionally sup-ported our inner Goddess. Many of us were not raised to embrace our sexual-ity in a healthy, safe manner. We grew up with beliefs and attitudes about sex that result in shame, fear and apathy. Most sexual dysfunction is due to emotional responses to sex rather than medical issues. Common dysfunctions are loss of libido, painful intercourse, diffi culty reaching orgasm and chronic yeast and bladder infections. According to WebMD and the National Cancer Institute, birth control pills, which contain synthetic hor-mones, may drastically lower libido, cause weight gain, mood changes and increase your cancer risk. Pregnant or lactating women may have a lower sex drive due to complex hormonal changes that couples can address by staying con-nected sexually in a loving, supportive manner that meets all needs. The psychological aspects of sexual dysfunction can be challenging but not impossible to treat. A trusted friend or professional to talk to can be helpful, especially when one is questioning what is “normal” sexually. Many women are surprised to learn their fantasies, insecurities, self-doubts, fetishes, fears, pains are far more common than they imagined and not abnormal at all. This awareness can be a huge step toward a more fulfi lling sex life. Getting Ready for PregnancyStop taking birth control pills. If you’ve been using a hor-monal method of birth control, your doctor may want you to take several months off before trying to conceive. Doing so allows your cycles to regulate and clears your body of any lingering manmade hormones; use another form of non-hor-monal birth control during this time.

Get your body in shape. According to Mairi Breen Rothman, a certifi ed nurse-midwife with the M.A.M.A.S., Inc. home birth practice, in Takoma Park, Maryland, being in shape ensures a healthier pregnancy. “Pregnancy is hard work, and the more strength you have, especially in your core, back and legs, the better you’ll feel during pregnancy,” she advis-es. Being in good physical shape before pregnancy can also make it easier to stay fi t during the nine months that follow.

Start eating better. A balanced, organic diet provides the nutrients needed to raise a healthy developing baby. “Dur-

ing pregnancy, the baby is very much a part of its mother’s body,” says Rothman. “That means eating toxin-free foods, which cuts back on chemicals found in the mom’s body, will also limit chemical exposure to the baby.” Also remember to take a prenatal vitamin; a study by the MRC Epidemiology Resource Centre, at the University of Southampton, in the UK, found that only 5.5 percent of the 238 pregnant women monitored had taken the recommended 400 micrograms of folic acid each day prior to becoming pregnant.

Take care of chronic medical conditions. If you have diabe-tes, high blood pressure or asthma, for example, get it under control before becoming pregnant. Apprise your healthcare professional of any family health problems, so he or she can plan ahead once you conceive.

Having a Healthy PregnancyTake prenatal yoga. “Prenatal yoga not only promotes long, lean and supple muscles, it also helps with breathing, which is important during labor and delivery,” counsels Rothman. Yoga also helps open the hip and pelvic joints and eases the aches and pains of pregnancy. The cat-cow pose, in particu-lar, benefi ts the lower back, promotes circulation and even helps move the baby into the proper birth position.

Limit exposure to toxins. Examine the labels of products you regularly use—especially skincare and cleaning products—and banish anything that contains a toxic soup of chemicals; if you can’t pronounce an ingredient, it’s probably not good for you or your growing baby. Research from leading institutions such as the University of California–Berkeley and the National Institute of Occupational Safety and Health has linked person-al care and cleaning product ingredients to endocrine disrup-

Research alternative therapies. Taking drugs for common medical problems such as headaches, colds and muscle pain isn’t always the best approach. Speak with your midwife or obstetri-cian about options like acupuncture, massage and homeopathy. According to a study published in Acta Obstetricia et Gynecologica Scandinavica, Swedish researchers found acupuncture to be effective in relieving back and pelvic pain during pregnancy; of the 1,500 pregnant participants, 60 percent of those who tried acupuncture reported substantial pain relief.

Natural Mothering StrategiesBreast is best. Although breast-feeding isn’t super easy, it’s the healthiest op-tion. “Human milk is meant for human babies, so it’s exactly formulated to be just what babies need and what they can easily digest,” notes Rothman. Breast-feeding gives babies an im-munity boost, so that they tend to get sick less often and receive just the right nutrition; it also provides a sense of comfort, warmth and security that bottle feeding can’t match.

Use natural remedies for illness. Aro-matherapy and homeopathy remedies work to reduce mothers’ and babies’ exposure to over-the-counter drugs. For instance, eucalyptus makes a good natural decongestant; simply add a few drops into the bath, a diffuser or even onto a cotton ball that can be placed on a bedside table, for a soothing scent. Be sure to talk with your doctor about any natural measures that you are taking to support family health.

As for key foods, helpful antioxidants are found in berries and brightly colored fruits; Tannis especially likes kiwis and raspberries. Seeds and nuts have well-

known anti-infl ammatory properties, as well as minerals that form the building blocks of healthy skin and hair. Studies in the British Journal of Nutrition and elsewhere indicate that omega-3 oil, from borage, fl axseed, or fatty, saltwater fi sh like salmon can help hydrate the skin and reduce puffi ness. According to research from the University of Brussels, silica—present in cucumbers, rhubarb, bean sprouts and other veggies—seems to play a role in skin hydration, as well as the formation of healthy nails and hair. Because skin, nails and hair all need a range of nutrients to grow, repair, and rejuvenate, Tannis also suggests a good multivitamin supplement. Finally, drink-ing plenty of water is vital to keeping skin hydrated from the inside out.

HAIRLabels on my hair care products show a long list of unpronounceable ingredients. Is it possible to get great hair without dumping all these chemicals on it?It’s smart to be concerned about the ingredients in hair care and skincare products, because they are subject to little offi cial regulation and may include ingredients that are not only ineffective, but harmful to health and damaging to hair and skin. That’s why green living expert Renée Loux, author of Easy Green Living, makes environ-mentally friendly choices. “If it’s toxic for the Earth, it’s probably toxic for our bodies, too,” she believes. Complex ingredient lists often make it hard to know what we’re applying. Fortunately, consumer advocates like

Loux (ReneeLoux.com) and the Envi-ronmental Working Group (ewg.org) have done our homework for us. When choosing products, Loux’s rule of thumb is, “plants over petro-leum.” In other words, if the primary ingredients—listed in descending order by percentage in a shampoo, conditioner, gel, serum or mousse—are botanical or plant-derived in-gredients, you and the planet are probably safe. Petroleum and pet-rochemicals—which are commonly used in many hair care products and are derived from a non-renewable resource—don’t break down well into natural components in the environ-ment and may be harmful to human health. Loux also pays special atten-tion to the, last few ingredients listed on the label because this is where innocuous-sounding toxins often hide, perhaps as a fragrance or colorant. In the shampoo category, Loux likes low-sudsing versions, because suds are typically created by synthetic-foaming agents called sulfates (sodi-um lauryl sulfate is common) that may irritate skin and poison the environ-ment. With hair color, look for a stylist that uses low-ammonia dyes, or buy them yourself in health food stores and natural pharmacies; temporary colorants are safer than permanent dyes. “The deeper the color, the more important it is to look at the ingredi-ents,” counsels Loux.

FACE With so many products and spa treatments to choose from, I’m confused about what my skin really needs to look its best. What are the basic necessities for a natural skincare routine? Cleansing (morning and night for oily skin, just at bedtime for dry skin) and moisturizing (all skin types) are the basics of daily skincare, according to dermatology physician Jeanette Jacknin, author of Smart Medicine for Your Skin and founder of the J.J.M.D. Botanical Dermatology skincare line. She says that soaps are generally too harsh and drying for facial skin, so use a non-soap

So, while a man may borrow his wife’s or girlfriend’s lotion, he may also want to fi nd a skincare line made especially for him.” The next two steps in Jacknin’s natural skincare routine are exfoliation, to remove dead skin cells from the skin surface, and facial masks, which deep-clean, nourish and revitalize skin. These steps should be done once or twice a week, depending on skin type and the strength of the exfoliator or mask. Exfoliates come in two forms: abrasives, which physically rub off the dead skin cells; and chemical, which dissolve or peel away the surface skin layer. When in the sun, wear a mineral-based sun block such as zinc oxide, which stays on top of the skin, rather than getting absorbed, and forms a physical barrier to both UVA and UVB ultraviolet rays. Also, watch out for nano-minerals; these have been broken into particles small enough to be absorbed by the skin during the manu-facturing process, with possibly harmful results, according to Dattner, Loux and other experts. Unfortunately, the U.S. government does not require that nano-minerals be listed on labels, so consum-ers must do their own research. What about makeup? As Loux points out, the skin absorbs 60 percent of what goes on it, and many cosmetics are full of unregulated, untested petrochemi-cals. Does that mean you shouldn’t wear any makeup? Not at all. Makeup artist Jessa Blades, of Blades Natural Beauty (BladesNaturalBeauty.com), says that switching over to natural, safe, mineral- and plant-based cosmetics is easy, as long as you are realistic. In general, the fewer ingredients used, the safer the product. “Give natural products a bit of time, and don’t be so hard on them,” she sug-gests. The good news is when it comes time to remove it, all you need is raw coconut or sweet almond oil and a cotton ball. “Natural makeup just slides right off,” says Blades.

HANDSThe smell at the nail salon is noxious; should I be worried about what’s going onto my fi ngernails?“If your eyes are watering, your nose is twitching and your lungs are seizing up, you should listen to your body,” says Loux. It is hard to get colors—es-pecially bright, deep, rich, shimmering ones—to stick to nails; consequently, of all cosmetics, nail polishes tend to contain the most toxins. “Nail polish is one of the tougher products to fi nd for someone who’s looking to go natural,” says Loux. But she points out that some brands are eliminating toluene, a petroleum-based solvent that the Environmental Protection Agency has linked to mild to severe problems with respiratory and nervous systems as well as kidney and liver functions. These less toxic polishes require more benign removers than conventional noxious-smelling

acetones. Always apply them outside or near an open window. Even better, achieve a smooth, clear shine without any polish using a nail buffer. It’s a quick, inexpensive way for men and women to sustain a natural, fi nished look.

FEET What can I do to get my winter-weary feet ready for sandals?In a word, exfoliate. Rub away calluses and thickened, cracked skin with an em-ery board, and then relax while soaking feet in Epsom salts to soften skin, and rub gently with a luffa or pumice stone. Foot scrubs containing salt or sugar granules invigorate and increase circula-tion, especially if they include pepper-mint, rosemary or tea tree oil within a moisturizing Shea butter or organic foot oil. Exfoliating creams, similar to facial exfoliates, but stronger, also help peel away withered winter skin. Always be sure to apply a moisturizer to protect the newly exposed skin. Remember to soften elbows and knees, too.

How did you get interested in holistic medicine?KM: I was born in a small town in Ger-many to a physician mother, who was utilizing a wide variety of alternative treat-ments in her practice, including acupunc-ture, herbs and homeopathy. When I was sick, I was treated with herbs, homeopathy or whatever alternative treatment remedy was best suited for me at the time. My environment became a part of who I am, and growing up in a holistic family gave me lifelong personal experience with the everyday use of alternative treatments.

So what was your education like in Germany?KM: I began a 2-year Naturopathic Medicine program in Germany and then decided to also go to medical school. In Germany, medical schools are not funded or infl uenced by big drug companies, and alternative medicine is available as an elective program at the university. So, I was able to learn the in-depth science side of medicine, while still discovering and learning about my passion, Alterna-tive Medicine.

How did you come to the United States?KM: I was adventurous at the time and had an interest in Native American his-

tory, so as a medical student I came to the US to work on an Indian Res-ervation. This led to a family practice residency at the University of North Dakota, a hospital which had the most baby deliveries in the country at the time, so I spent a good part of my time delivering babies.

How did you meet your husband, Greg ?KM: In a dance class. He was help-ing the instructor. We both love to dance – just about any type of danc-ing. We also like outdoor activities like hiking, biking, and snowboard-ing, or just enjoying nature with our 3 year old son, Noah.

How do you incorporate how you practice into your family’s lifestyle?KM: We treat ourselves with holistic, natural means and eat and live an organic natural life style. My son, for example, needs antibiotics only

as a last resort because I use primarily homeopathic remedies to treat him for any ailments. There are so many ways to live well, be healthy and be your best. That’s the way I strive to treat my patients as well.

So you have integrated everything you know into your medical practice, but also include beauty treatments like injectables?KM: That’s right. I believe that every-one not only wants to feel their best, they want to look their best too. We all want the skin tone and smooth-ness we had in our youth. The latest tools for this are injectables. They are perfectly safe; some have been used in medicine for decades. What’s inter-esting is that I have so many women using injectables to make themselves look and feel better, but also men are becoming aware of the benefi ts of aes-thetics. Basically, I want to be able to do it all for my patients, offer as much as possible and be as knowledgeable as I can.

Any last words?KM: My passion is educating patients on how to be the best they can be. I am grateful for my background and training because it has given me the ability to be very fl exible in choosing treatment approaches which help my patients to live the highest quality of life.

You think you want a dog. And you want the best match. Being in-formed and prepared is the wisest

way to begin this journey of a decade or more. For even when you have done your research, the truth is, you will be adding a unique individual to your fam-ily who may or may not be what you expected. Even after choosing the right puppy, or successfully training an older canine, living with a dog requires you to accept him for who he is. If you aren’t prepared for this joyful, yet sometimes challenging, aspect of the human – ca-nine bond, you might want to postpone your fi nal decision. Let’s fi rst examine some common myths. Then we’ll address you, your family and community, canine profes-sionals and pup providers.

IGNORE THE MYTHS – GET REAL!We have all heard the hype: dogs are unconditionally loving and only want to please us; dogs and kids belong together; this dog won’t bite; canine care isn’t that expensive; get a puppy and mold him. Sometimes all of this turns out to be true, but often enough, it doesn’t. Dogs aren’t able to live just for us, al-though their efforts are amazing. In actual-ity, they need to be taught most things about living with humans. We are obviously dif-ferent species, but it isn’t always obvious how best to handle the differences. Just like us, dogs want to live a good life. But unlike us, they are completely dependent. You will have to either care for, or make arrangements for care, 24/7for his entire life. If you become homeless, ill or unable to improve his behavior, hewill still need you. Dogs die in shelters every day from human decisions.

YOU, YOURSELF AND YOURS!Be mindful of a deeper need that you may think a dog can fi ll while you wait for the partner, career, or dream for which you yearn. Dogs acquired as temporary solu-tions in unsettled situations often fi nd them-selves needing their own solutions later, when the baby comes or the job relocates.

Before choosing a dog, take a critical look at your life. You may have a lifestyle worthy of an active dog if you already spend time hiking with friends. Sounds like a great home for a less active or older dog if you prefer evenings by the fi re and mornings on the patio. You might have the time and patience, and be able to acquire the expertise, to raise a puppy into a well-adjusted adult dog if you have a home business or a very fl exible schedule. No matter what type of dog you choose, there will be expenses such as food, training and vet care. Bills for injuries or allergies are two examples of unwelcome surprises. As your dog ages, he may require medication, surgery or long term care.

YOU AND YOUR FAMILYAre all family members in agreement re-garding having a dog, fully acknowledg-ing future shedding, digging or barking possibilities?
