What you need to know about cancer and diet. Not all health problems are avoidable, but you have more control over your health than you may think. Research shows that a large percentage of cancer-related deaths—maybe even the majority—are directly linked to lifestyle choices such as smoking, drinking, a lack of exercise, and an unhealthy diet. Avoiding cigarettes, limiting alcohol, and getting regular exercise are a great start to an anti-cancer lifestyle. But to best support your health, you also need to look at your eating habits.

What you eat—and don’t

eat—has a powerful effect

on your health, including

your risk of cancer. Without knowing it, you may be eating many foods that fuel cancer, while neglecting the powerful foods and nutrients that can protect you. If you change your diet and behaviors, you can minimize your risk of disease and possibly even stop cancer in its tracks.

Cancer prevention diet tip #1: Focus on plant-based foods. Why plant-based foods are cancer-fighting powerhouses? It comes down to this: Plants have less fat, more fiber, and more cancer-fighting nutrients. These three elements work together

to support your immune system and help your body fight off cancer.

The best diet for preventing or fighting cancer is a predominantly plant-based diet that includes a variety of vegetables, fruits, and whole grains. A plant-based diet means eating mostly foods that come from plants: vegetables, fruits, nuts, grains, and beans.

The less processed these foods are—the less they’ve been cooked, peeled, mixed with other ingredients, stripped of their nutrients, or otherwise altered from the way they came out of the ground—the better.There are many ways

to add plant-based foods to your diet. A nice visual reminder is to aim for a plate of food that is filled at least two-thirds with whole grains, vegetables, beans, or fruit. Dairy products, fish, and meat should take up no more than a third of the plate. Keep in mind that you don’t need to go completely vegetarian. Instead, focus on adding “whole” foods, which are foods close to their original form. Just as important, try to minimize or reduce the amount of processed foods you eat. Eat an apple instead of drinking a glass of apple juice, for example. Or enjoy a bowl of oatmeal with raisins instead of an oatmeal raisin cookie.

Simple tips for getting more plant-based foods in our dietBreakfast: Add fruit and a few seeds or nuts to your whole grain breakfast cereal (such as oatmeal).

Lunch: Eat a big salad filled with your favorite beans and peas or other combo of veggies. Always order lettuce and tomato (plus any other veggies you can) on your sandwiches. Order whole grain bread for your sandwiches. Have a side of veggies like cut up carrots, sauerkraut, or a piece of fruit.

Snacks: Fresh fruit and vegetables. Grab an apple or banana on your way out the door. Raw veggies such as carrots, celery, cucumbers, jicama, peppers, etc. are great with a low-fat dip such as hummus. Keep trail mix made with nuts, seeds, and a little dried fruit on hand.

Dinner: Add fresh or frozen veggies to your favorite pasta sauce or rice dish. Top a baked potato with broccoli and yogurt, sautéed veggies, or with salsa. Replace creamy pasta sauces, with sautéed vegetables or tomato sauce made with healthy olive oil.

Dessert: Choose fruit instead of a richer dessert. Or a single square of dark chocolate.

AN INSPIREDINSPIRATIONWITH CHEF DOUGLAS RODRIGUEZ

Chef Rodriguez was inspired to cook by the grand dame herself, Julia Child. He watched her on television as a young boy, and was drawn to both her character and her abilities. “Her mothering personality drew me to her, and I wanted to be able to cook,” said Rodriguez.

Inspiration was also found at home. “My mother was also a big part of me wanting to cook. It became that anything I enjoyed eating, I wanted to recreate it,” Rodriguez said. Julia Child’s show clearly affected young Chef Rodriguez. His first journey into the cooking foray was to prepare one of Julia’s celebrated soups. “The first time I made French onion soup, I was seven years old. I liked it so much it gave me goose bumps,” Rodriguez said. “It’s not normal for a seven-year-old to want to make French onion soup!” This is not your average boy growing up in Miami in the 1960’s.

Life before the Internet meant that information was not as easy to find, but the challenges for Chef Rodriguez were understood; He knew what was necessary for him to continue learning about his passion. “If I wanted to make a dish, I had to go out and buy everything. If I was unclear on an ingredient, I’d buy a book or go to the library to do research,” said Rodriguez. After his first success in creating an edible facsimile of Julia Child’s French onion soup, Rodriguez was intent on going forward with his self-education. “Early on, I wanted to cook everything. I think the second dish I wanted to make was eggplant Parmesan,” Rodriguez said. He continued to learn and cook while in high school, and eventually attended Johnson and Wales University in Providence, Rhode Island. Johnson and Wales was a great experience for him (the culinary school is celebrating 100 years this year). Fusing the Past with the Present

While the traditional dishes are mainstays to many families across the country and world, what sets

a number of restaurants apart from others is the creative freedom exercised by the chefs. Chef Rodriguez is familiar and has made his way in the gastronomic world with this ability. “To change something, you have to understand it well enough to change it. You have to understand where it came from, understand the ingredients, the history -- it’s all very important when creating a dish,” Rodriguez said. Chef Rodriguez provides an example of such a creation taken from a time-honored dish. “Ropa Viega is a Cuban dish, which translates to ‘old clothes.’ The original recipe calls for a cut of meat called a ‘skirt steak’ that is shredded, thus, ‘old clothes.’ I make the dish, use another cut of meat or add different vegetables, and change it into something different,” said Rodriguez. Chef Rodriguez, currently located in Miami, stays on the cusp of the shifting cuisine scene. “There hasn’t been any change in traditional Cuban cuisine for decades. This is where most of the Cubans shape what eat and what we cook,” Rodriguez said. When asked about the Americanization of Hispanic foods, Chef Rodriguez said he believes the popularity of Hispanic-inspired foods will continue to rise, but

stresses that these are not foods with Hispanic origins in mind. “Chipotle – is that really Mexican food or is it American food? Do they eat burritos in Mexico? No, they don’t. Corn tortillas are not traditionally Latin. There is a lot more beyond that aspect of cooking,” said Rodriguez. Chef Rodriguez sees the chefs and cooks that combine traditional Latin dishes with fresh ideas and ingredients reshaping American food in the long run – without the Americanization. “I would like to think of my cooking as tortilla-free Latin cooking.” Be on the lookout for Douglas’ Ceviche Recipe in the next issue!

A Nuevo Latino is a state of mind and is my own characterization for successful and

assimilated American Latinos who love their culture and who have a basic understanding

of the exceptional political and economic power that Latinos have today.

Let me break it down to a few bullets:

Nuevo Latinos love their heritage and openly enjoy many of the aspects of Latin culture such as food, music, entertainment and style.

They are equally comfortable in both Latino and non--Latino environments and frequently move between both worlds.

Nuevo Latinos are not exclusive to any particular national origin or geography, though most reside in a major city.

Most are bilingual, however, many do not speak Spanish fluently.

Many, but not all, Nuevo Latinos participate in some form of Hispanic advocacy.

Most importantly, Nuevo Latinos are ambitious and opportunistic. They want to succeed in a BIG way. They understand the power of their Latinism and are comfortable capitalizing on it to advance their goals and careers.

Nuevo Latinos have the best of all worlds and they KNOW IT. They’re the ones at 5--star

restaurants casually chatting--it--up with the Spanish--speaking busboys or shuffling

into a hotel lobby with Marc Anthony’s latest hit blaring in their headphones. My friends

at NAHREP are like this. They own businesses, love being Latino--American and are

ready to conquer the world.

The Nuevo Latinos are moving the image and influence of successful Latinos from the neighborhood to the mainstream. The power of this shift has the capacity to drive our economy and transform our political landscape – and it has only just begun to take shape. The assertive migration of Latino culture into mainstream media and consumerism is the second pillar for Latino ascension in America.

We recently heard from the National Association of Hispanic Real Estate Professionals that the average wealth of someone who does not own a home is $2500. The average wealth of someone who owns a home is $75000.

That is a big difference so we thought that we would ask successful realtors across the country their tips for you when deciding to buy a home.

Wealth is something that some still find uncomfortable to talk about, perhaps when they read the statistics we can provide a little of clarity. The majority of wealth achieved or passed on comes from Real Estate so we thought this story would be of value.

Get a GFE (Good Faith Estimate) and do your homework to understand what it is you’re being charged for. Then you need to remember that you get what you pay for. Don’t just meet with your bank, chances are they may be cheaper than smaller institutions but they also have less programs and flexibility for lending. What good is it to get the best deal on a loan if ultimately you don’t close?

As far as choosing an agent goes, try to choose an agent who has a closing coordinator. According to NAR, the typical agent has 12 transactions in the year which means, depending on their median transaction, they are not in the position to hire support staff. Working with an agent who is dealing with marketing themselves as well as homes, driving around showing houses, all while trying to follow up with your inspections, lender, insurance company and title agent is not the best choice if you desire a smooth transaction. Work with an agent whose primary objective is getting you the right house at the right price, one that has support to handle all the other areas of the transaction

48 IN NAPAA Weekend Getaway...

Grab your friend or invite that special someone for a 48 hour trip where you can enjoy the many life pleasures Napa has to offer….Dale!

Where to stay? Villagio in Yountville – you can also stay at the Andaz down town but let me tell you why I like the Villagio, since a massage is a MUST when you are in Napa, I found this to be my favorite spot to introduce you too. This is also the place where you will reserve your massage.

But back to why I would stay here is because you can walk around town, you have Napa Living, Bouchon, bakeries etc. You can find a cheaper place but you won’t have the practical places to walk too.

Lunch – Bottega – A must visit for lunch, its TV Chef Michael Chiarello’s spot. The salsa Parmigiano with crusted bread is a great intro to your lunch. The restaurant has an indoors and outdoors dining area with a good looking crowd.

3 wineries for the wine, cost and breath taking views:

1st winery - Head over to Ceja for sure. You will enjoy the family ran winery. Vino de casa and PINOT are my favorites. They even serve food to pair if you’re their wine club member when you pick up your shipments. Try and schedule an onsite appointment at their vineyard, the bocce court, patio and you feel the tranquility of their vineyard since it’s off a not much traveled road.

2nd winery - Get on Hwy 29 and visit Alpha Omega, buy a bottle and enjoy it on the patio that also has water fountains and cabana style seating where you can enjoy the Napa life.

3rd winery - I would then recommend you head to Domaine Chandon for a bottle of bubbles to balance out the day – while you are there you can enjoy it with truffle popcorn. Their “chilled red” is a hit and you can only buy it there. Power Nap! Although some might say to schedule the massage on this day, you want to maximize your time with the hotel. I’m telling you…leave the massage for the 2nd day. You will be all rested up to sexy yourselves up for a night on the town.

Dinner – Morimoto’s hands down, watch Iron Chef, Google him and if you don’t like sushi, it’s even better because Morimoto’s serves the most delicious and creative non sushi plates. I would recommend the Miso glazed double cut pork chops and that’s after the spicy king crab legs. For sushi, you must have the Toro to start off and get creative with the pulpo Carpaccio. Tell Filippo and Alexa hi from VivaMazing!

Day 2 Brunch – As you wake up, get ready and pack I suggest that you walk up the street for coffee and a pastry. You have a full day ahead of you and you

don’t want to have a heavy breakfast.

2 wineries – V Sattui – Although I am not a fan of big crowds, this winery is a must visit if you are new to wine country. They have a picnic area for you to buy hams, cheeses, souvenirs and of course wine. I enjoy their whites and rosé. I recommend you buy some cold cuts and brie cheeses to pair with the wine and eat at the picnic area to people watch.

Make sure to make a reservation at Chinnock Cellars if you can – tell Brian and Terri I say hello. They can give you an intimate tasting but I am sure they will want to see larger parties but you never know. You can go into their wine cave for a tasting and fermentation discussion and when you are done with the wine tour, you can buy some of Brian’s great cigars to pair with his award winning Merlot, Oh by the way they also bottle

their own olive oil that I use on my cooking videos.

If you can’t get into Chinnock – head down Silverado Trail to Paraduxx – great reds and a beautiful patio to enjoy a bottle. I find this place relaxing; remember it’s not about the quantity of tastings but the quality and relaxation.

Massage – it may sound odd to go back to the Villagio but I always prefer that the massage be the last thing that I do in Napa so that I can go home relaxed. This way you are out and can check out and go on with the rest of the day. They have hands of magic and I believe to be affordable. Take your time and enjoy the glasses of wine and fruits before you head back home.

This is the first of a series of 48 in Napa I will write. There are over 1000 wineries in Napa and it’s not so much about the wine than it is about the lifestyle and breathing of your soul. Napa is fun, breathtaking and sexy…Dale Viva!

I have fun just hanging out with them and seeing them grow...that’s my fun.”

Q. We take your IPod and press play. What do we hear?Toby- “Michael Jackson, Stevie Wonder, Jorge Celedon. It’s a variety. I want people to know I’m a fan of music, It doesn’t mater what genre it is.“

Q. Where do you see yourself in 2 yrs.?Toby- “2 yrs? Hopefully still doing what I’m doing now. Traveling the world, doing music... I’ve been producing for a couple of artist lately. Trying to do movies...All my videos, they’re all my concepts...I’ll start off with that and hopefully we can take it to the big screen.

Because you’re not just depending on the label to promote you or your music as an artist. I love and respect my labels...,but Artists out there, you have to take charge of your career and don’t just depend on somebody. You’ve got good music, put it out. So there I was in the hotel lobby waiting for Toby Love. After a few time changes due to his fight delays from N.Y. , I sat ready with camera crew on stand by waiting with anticipation on my interview for ‘En La Calle’ with the Nuyorican Bachatero. Suddenly, an Escalade pulls up and out steps a pair of crisp, clean white sneakers onto the curb with his black fedora, dark shades and his “bling” and I was ready to go. They told me 5 min...we took 15 and I wasn’t going to stop till they cut me off.

Although he lacked sleep, he was very accommodating and generous with his time. For those not yet familiar with Toby Love’s music, it has a little of everything tropical like Merengue and Salsa
