1. Combine the oats and almond milk in a pot and cook on medium heat. Once the mixture begins to thicken, add the sliced banana and a handful of berries. 2. Continue cooking until the oatmeal is thick enough to stick to a spoon. 3. Cut the plantains into quarters. On an oiled pan on medium-high heat, cook until the plantains brown slightly. 4. Spread the browned plantains on a lightly oiled tray and bake for 20- 30 minutes. 5. Roast the diced almonds and walnuts for five minutes on low- medium heat, taking care not to singe them. 6. Serve the oatmeal into bowls, sprinkling the roasted nuts and remaining fruit on top. Enjoy!
