Welcome to the Winter Edition of Freedom Road.

On behalf of our terrific team, thank you to our many customers for having supported FRT in 2015. As a 100% foreign owned travel company in China, we constantly strive to provide international service standards through our intuitive and innovative approach.

We have many new destinations to offer you in this issue. During October and November, our Product Manager Chiara Cimmino travelled to Yunnan, Sichuan and Beijing on the hunt for unique and unparalleled experiences for our customers.

While the crisp chill of winter has arrived in Northern China, you can also visit one of China’s most outstanding annual events - the Harbin Ice Festival. Or alternatively, escape the cold to one of our many South East Asian destinations to soak up the sun.

During November, FRT was proudly a platinum sponsor of the Australian Shanghai Association’s (ASA) Melbourne Cup which raised over RMB 300,000 for charity. I want to congratulate the President Wendy Landy and her wonderful team. Five charities will benefit from this most phenomenal event including Heart to Heart Shanghai and Morning Tears.

We feature this month the ancient city of Bagan, Myanmar; a Q&A with world renowned landscape photographer Thierry Bornier; and, a recap of Austcham Shanghai's own Justine Drake’s recent trip to Yunnan.

Thanks again to all who contact us to book their travel.

BEAUTIFUL BAGANIf it feels that the monuments seem to overwhelm the landscape in a bewildering variety of shapes and sizes, it is because there are over 2,000 covering an area of 16 square miles on the eastern bank of the Ayeyarwady in central Myanmar. I was born and raised in Shanghai, and have lived in lane houses (4-5 families) for most of my childhood. I witnessed first-hand the cooking methods of Shanghai-style foods change from a coal and wood stove

to modern gas stove tops and pressure cookers. However, the best impression on my taste buds will always be from the old-school methods.

Nowadays, one can still find very authentic and obviously delicious food not only in modern restaurants, but in small stalls or home-style restaurants that are easy to miss. Here’s a break-down of my favorite eats in Shanghai’s hole-in-the-wall eateries.

TOP 5 Shanghai Bites

小笼包XIAO LONG BAO小 小 小Yes, of course I have to mention the most famous dumpling of Shanghai! It’s a special transparent bun with soup and meat inside. Traditional restaurants usually provide not only vinegar, soy sauce, but also ginger slices for you to eat with this great dim sum. Dip your Xiao long bao, but watch out! It’s really hot!!

葱油饼 CONG YOU BINGCong You Bing (Chinese chive pancake) is a thin pancake with spring onion mixed in the dough. It's quickly fried and then baked on a fire, which makes it crunchy on the outside, a little chewy on the inside while rich with aroma. A stall on Fengyang Rd near West Nanjing Rd. The couple that own the stall still use a wood stove after all these years.

酒香草头 JIU XIANG CAO TOU Bai jiu 白酒 (Chinese rice wine), as the nation drink for China, is famous for being strong. However, when Baijiu meets the leafy vegetable, Cao tou草头, magic things happen. Lightly stir with a spoon the rice wine for about 3 minutes with the vegetable until it turns shiny green. With this little trick, you’ll be able to take shots like a Chinese pro!

Jianguo 328-建国328小馆No.328 Jianguo Road near South Xiangyang Road 建国路328号近襄阳南路

葱油拌面CONG YOU BAN MIAN小 小Tender pork slices, green onions and soybean sauce make the explosive flavor of cong yóu bàn miàn葱油拌面 (green onion sauce stir noodle). Most traditional Shanghai food restaurants have their own special recipes for this savory sauce.

Lv Yang Cun-绿杨邨No.282 Fengxian Road near Jiangning Road奉贤路282号近江宁路奉贤路

糖醋小排TANG CU XI小O PAI小 小 小 小White sesame, brown sugar, soy sauce, and vinegar- these simple ingredients make for magic on these little ribs. With a crispy texture on the outside, tender and juicy on the inside, the vinegar and brown sugar keep the balance with the salty soy sauce. Additional sesame makes for this always perfect pork dish.

After living in Shanghai for over 4 years I was more than aware of the challenges of domestic travel in China, especially with a family.

This was our first trip with Freedom Road Travel, who worked with us to combine a Banyan Tree Yunnan package with flights and tours to make the perfect 4 day get-away to Lijiang and Shangri-la. From the minute we booked, I knew this was going to be different. Seats on the plane were pre-booked with our kids actually sitting next to us (instead of five rows behind with a random stranger) and I even received an email with a weather report 2 days out so I knew what to pack.

The hotel entrance was stunning and both Nigel (the Hotel General Manager) and check-in staff were there to greet us. Day 2 we hit the road early to trek up the Jade Dragon Snow Mountain with a

FUN IN YUNNANwith the Drake Family

Freedom Road Travel guide. No crowds, no noise, just a massive blue sky framing the mountain range and silence. Perfect! Our 2 days in Lijiang Banyan Tree were capped off with an early start to see the sun rise over the mountain, sipping hot coffees while we watched the colors of the mountain change from grey to pink to gold. After saying our good byes to staff and our villa, we jumped in the Banyan Tree Jeep and started our journey to Shangri-la.

Ringha was unlike anything I had ever been to. It was not just a 5-star hotel, but a 5-star experience. The hotel is made up of 20

or so farm villas that have been relocated to the east-side of Ringha Valley, which hosts a small town of local farmers who tend to barley harvest and yak farming as a way of life. We left Yunnan after 4 full days of travel, yet I felt we experienced far more than we had in weeks of travel to other locations. My FRT consultant Sam rang me two days after we returned, wanting feedback so he could make sure our travel next time would be even better. I don’t know how it will be, but I’m looking forward to giving them the challenge.

WHY TRAVEL LIGHT?

Travel Cheaper- At the moment airlines don’t charge for hand luggage (hopefully we didn’t give them any ideas!).

Travel Faster- If you check-in online, just head straight through security and there’s no need to wait for your bags to be spat out on the carousel at the other end. Just get off the plane and head to a taxi.

Travel Easier- One bag means less luggage to lug around and less chance of your luggage getting lost, damaged or stolen in transit.

PACKING Light & Right with Team Freedom Road

Upcoming holidays are always filled with a sense of excitement until you realise that you have to pack, and for many that also means for the family.

THE ART OF PACKING: FOLDING, ROLLING AND BUNDLE WRAPPING

Backpackers swear by rolling, business travelers tend to fold, and some people even go as far as inserting tissue paper in between layers, but it is the art of bundle wrapping which is the most compact method of packing and also the method which most reduces the problems of wrinkling.

The bundle method uses a ‘core object’, such as a folder or organizer, around which other items are wrapped. The downsides to this method are that it takes a little longer and that it’s harder to delve into your bag a grab a single item without unpacking the entire bundle, but it does allow you to maximise your bag space and minimize creases. Finally, try to wear your bulkier items of clothing on the plane, and use your pockets as additional storage space.

Absolute Essentials

• Passport• Driver's license• Health insurance information (important phone numbers to call)• Plane tickets printed out• Bank cards (debit and credit) + some cash• Details of accommodation, car hire, motorcycle hire and onward travel etc

CLOTHING

• Hooded top – We’ve also learned that a hood can be used to block out light and aid sleep• 2-4+ t-shirts• 2 jumpers/long sleeve t-shirts• 1 pair of jeans• 1 pair of shorts or a skirt• Swim shorts/swimsuit for the beach or pool• 3+ pairs socks• 3+ pairs undergarments• A decent & practical hat if visiting a sunny climate• 1 pair walking shoes/boots – normally worn on the plane• Thongs (flip-flops) or sandals – if visiting a hot climate

ACCESSORIES

• A Trusty iPad or tablet• Mobile phone + charger + headphones – (doubles as alarm clock, personal MP3 player and radio)• Sunglasses and case• Earplugs• Reading material – just one paperback book• Universal travel adaptor – when travelling abroad

WHAT’S IN OUR TRAVEL BAG? If we are going to travel with hand luggage only - here is a list of essential items that can fit into a carry-on bag. You can also use a Backpack, which has a few useful pockets as well as side and top entry.

PACK LIGHT FOR HAPPIER TRAVELS! So, why not take the one bag challenge for your next trip? Remember that most things can be bought at your destination if forgotten,

so as long as you have your passport, wallet and the clothes on your back, the chances are, everything will be ok.

Landscape Photographer THIERRY BORNIER

How did you get into the world of landscape photography?By accident, actually. Before, I was working in finance in New York and Shanghai as CFO. After I decided to quit my job, I wanted to take one year to travel around China and so I bought a camera to record my journey. During my trip I took some landscape photos of Yunnan’s fa-mous rice terraces that I submitted for fun to National Geographic. My photo was selected as the ‘Picture of the Day’ in 2010, so based off that, I decided I wanted to become a photographer and haven’t looked back!

What about landscape photography is special to you compared to other forms of photography? When compared to fashion photography, you need to create everything from A to Z. You need to have the lighting, models, shooting location, assistants – so many ingredients to make just one photo. However, when you shoot landscape, it’s just in front of you – you didn’t have to create it – it’s naturally there for you. What you have to imagine is the best scenario for lighting which is one thing people tend never to do. When someone shoots a place they automatically think that the photo will be great. To make an amazing shot, you need to use your brain. Do I want clouds? Do I want this much shadow? You need to imagine how you can make this area different compared to other photographers that shootin the same place. I think that if you want to make fine-art photography you need to not be satisfied in what’s in front of you.

What are the key things you need to take with you on a shoot?Haha good question. Good Chinese tea is a must! Some wax ear plugs when I’m sleeping, and small Bose speakers for when I’m awake also come in handy on the road.

Where has been the best accommodation you’ve been to in China? You can go to very famous hotels in big cities and they are so-so, and just as well, you can go to a small city nobody knows and you can disco-ver a 4-star hotel with amazing service. There is a place in Shanglin (上林) that has amazing quality, space and hospitality that I keep coming back to; It’s my little secret.

Do you like travelling alone or with others?I think today since I organize tours and photography workshops, I of course travel regularly in groups. Nowadays I think it’s better to travel with others to remote locations because you are able to share costs, it’sit’s a bit more fun, and also safe.

Money, business and photography aside – What are your 3 favorite destinations?Paris, Venice, and The Maldives.

How did you choose to be based in Kunming? In New York I never would have thought I would settle down in Kun-ming, let alone get involved in landscape photography, but here I am, and I love it. While in New York when I decided to travel to China for the first time, my first stop was Yunnan. As I traveled through Shangri-la and Lijiang I fell in love with this area for its culture and weather. I also realized that it was also the perfect hub for travelling to Sichuan and all the biggest provinces for shooting photography.
