INGREDIENTS750 ml milk250 ml heavy cream 67 g sugar¼ teaspoons salt1 vanilla bean, split lengthwise140 g semisweet or bittersweet choco-late (chopped)67 g unsweetened cocoa powderpeppermint or mint chip ice cream8 small candy canes (optional, broken into small pieces)

Combine milk, 125 ml cream, sugar, salt, and 60 ml water in a saucepan. Scrape in seeds from vanilla bean and add the bean. Bring to a boil, stirring to dissolve sugar. Add chocolate and cocoa pow-der. Whisk until chocolate melts and mixture just comes to a a boil. Whisk remaining 125 cream in a small bowl until firm peaks form. Remove vanilla bean from hot cocoa; discard. Transfer cocoa to a blender and purée until thick and foamy. Pour hot cocoa into cups, dividing evenly. Top each with icecream and whipped cream. Garnish with a small candy cane.

1 l Cranberry juice ½ l freshly brewed red berry tea1 cinnamon stick plus 6 for decoration2 whole cloves 2 star anise 1 piece of ginger 2 clovesjuice of 2 oranges 100 g cranberries 4 tablespoons honey

In a medium saucepan, combine the juice, cinnamon stick, cloves, star anise, ginger, cloves and cranberries and bring to a boil. Reduce the heat and simmer for 25 to 30 minutes. Add the brewed tea, honey and orange juice. Strain mixture through a sieve. Pour the mulled cranberry juice among 6 mugs and garnish with cooked cranberries and cinnamon sticks.

HOT CHOCOLATE AFFOGATO WITH PEPPERMINT ICE CREAM

GREEN TEA CHAI LATTE

1 cinnamon stick 2 cardamom pods 2 star anis 1 clove2 peppercorns50 g ginger 3 tablespoons green tea matcha powder 500 ml milk (or soya milk, or almond milk) 2 tablespoons honey 4 tablespoons hot water

Pour a bit of hot water over the matcha powder and whisk until powder is dissolved. In a mortar break cinnamon, cardamom, star anis, and clove to a powder. Add milk, spice powder, ginger and honey to a saucepan and gently heat it up – do not boil. Froth the milk until foamy. Pour into matcha mixture. Serve immediately with matcha maccarons on the side.
