Like most of the simple great foods in our catalog like polenta or olive oil, its the result of a lot of care and very little processing. ful. Its an ancient convenience food that gets deep flavor without much work. Id never even

heard of garum colatura until I visited the Italian coast south of Naples. There I dis-covered its the liquid thats drained off the barrels of traditionally cured ancho-vies. Made much the same way it was 2,000 years ago, its used as a quick way to give great anchovy flavor to a dish with-out having to fillet, soak and chop the fish. The best meal of my Neapolitan trip was a bowl of spaghetti cooked al dente that had been tossed quickly with garum, some very good olive oil, chopped garlic and a touch of dried red pepper.
