Recipe of the Week Colcannon

2 1/2 lbs potatoes, peeled + cubed 4 slices bacon 1/2 head cabbage, chopped 1 onion, chopped 2 cloves garlic, minced 1/2 cup milk Salt + pepper 1/4 cup butter, melted

Steps:

1. Place potatoes in large pot with water covering the top of potatoes. Bring to boil, cook for 20 minutes until tender.

2. Cook bacon over med high heat until evenly brown. Drain fat, reserve drippings. Crumble bacon + set aside.

3. In the reserved drippings, saute the cabbage, garlic + onion until soft.

4. Drain the cooked potatoes, mash with milk + season with salt + pepper.

5. Fold in the bacon + cabbage mixture, transfer to a large serving bowl. Make a well in the centre + pour in the butter. Serve immediately.
