Lush Lemon Curd With Bites

INGREDIENTS MAKES APPROX. 2 CUPS

• Boulart® Original Bites (as many as required)

• 1 cup (200 g) sugar

• 1 tbsp (6 g) finely grated lemon zest

• 2/3 cup (158 ml) freshly squeezed lemon juice

• 8 large egg yolks

• 1/8 tsp salt

• 10 tbsp (142 g) unsalted butter, cut into ½ inch pieces

BAKING INSTRUCTIONS• Thaw the bites or bake them from frozen at 375 °F (190 °C)

for 3-4 minutes.

METHOD1. Inamediumsaucepanwithoutanyheat,whisktogethersugar,

lemonzest,eggyolks,andthenlemonjuiceandsalt.

2. Addbutterandplacepanovermedium-highheat.Cookwhilewhiskingconstantlyuntilbutterhasmeltedandthemixtureisthickenoughtocoatthebackofaspoon,withsmallbubblesformingaroundtheedgeofpan.Continueforaboutfiveminutes,beingcarefulnottoboil.

3. Removepanfromheatwhilecontinuingtowhisk.Pourintoaglassbowlandpressplasticwrapagainstthesurfaceofcurdandrefrigerateuntilcool.

4. Curdcanbestoredinairtightjarsforuptotwoweeksandtastesgreatsmearedonwarmbites.

500 mL 360 g Uncle Ben’s® Gluten Free Quinoa and Ancient Grains Medley

60 mL tamari (gluten free)

60 mL mirin

60 mL maple syrup

750 mL 450 g red cabbage, shredded or sliced

10 mL sesame oil

10 mL rice vinegar

10 mL vegetable or sesame oil

1500 mL 420 g cremini mushrooms, sliced

750 mL 330 g carrots, shredded

750 mL 156 g cucumbers, in spears

15 mL 7g Shichimi Togarashi

1. Prepare Uncle Ben’s® Gluten Free Quinoa and

Ancient Grains Medley according to package

directions. Hold warm.

2. To make Donburi sauce: in a bowl mix together tamari,

mirin and maple syrup.

3. In a bowl, toss together cabbage, sesame oil and rice

vinegar until well blended.

4. Heat a skillet over medium-high and add oil. Cook

mushrooms until browned. Add Donburi sauce and

cook until mushrooms are well coated and sauce

thickens slightly.

5. To assemble bowl: 250mL cooked Uncle Ben’s®

Gluten Free Quinoa and Ancient Grains Medley, top

with 1/6 of Donburi mushrooms and add remaining

ingredients in sections: 125mL pickled cabbage,

125mL carrot, 125mL cucumber and sprinkle with

2.5mL Shichimi Togarashi.
