Happy new year, and welcome to

the first edition of Let’s Eat! magazine,

for 2013.

In keeping with the dawning of

the new year, this edition offers

many ‘beginnings’ on the island.

Our cover story features the newest

resort to grace the Bali seafront, Le

Meridien, Jimbaran, with talented

Executive Chef Paul Lewis promising

“To bring the best of South East

Asia to Bali“. Our team also enjoys a

traditional Rijstaffel feast at The Long

Rice Table, at the newly opened The

Stones Hotel, Legian. Over in Berawa

we visit Bungalow which opened in

late 2012, and combines gorgeous

homewares with home style cooking,

then visit the The Deck, Petitenget,

where newly installed deli counters

and chicken rotisserie complement

an extensive a la carte menu. There

is also a trip to the Bukit, crowned by

a glorious sunset at El Kabron where

we toast the new year with tapas and

fabulous cocktails. You can also enjoy

our seasonal feature on Rambutan,

learn fascinating facts about pandan

leaves, and use our recipes to prepare

Indonesian dishes at home.

Alison is a travel writer and self confessed food-lover. She has spent many years traveling the globe, immersing herself in foreign cultures and sampling local cuisine, applying her motto ‘Everything should be tried at least once.’ Her heart has now been captured by Bali where she is happily indulging her favourite things; writing, traveling and discovering new restaurants

Menur describes herself as a part-time food lover and a full-time food friend. She enjoyed her exposure to many different restaurants during her year teaching Indonesian Language and Culture in Washington DC. Now back in Indonesia she has discovered that her pleasure in trying new food has deepened and she hopes to one day open her own restaurant.

Eve is the newest member to join the Let’s Eat team and says her family’s motto has always been “live to eat,” rather than ‘eat to live.” Aside from eating she also loves to write, travel, design and cook (although, admittedly that also involves eating.)

The St. Regis Bali Resort hosted a wine dinner at Kayuputi Restaurant

to welcome Mr. Sebastiano Rosa, owner of Tenuta San Guido, producer

of Italy’s beloved red wine, Sassicaia. A six-course degustation menu

chef de cuisine Agung Gedeto to perfectly complement the wines

The Stones Hotel, Legian, is the first hotel in the Asia

Pacific to carry the iconic Autograph Collection label from

the world’s leading hotel brand, Marriott International.

Located on Kuta beach, the spacious hotel has three

restaurants, including The Long Rice Table that caters

to those seeking an authentic yet romantic Indonesian

restaurant. The earthy setting with natural wood elements

live cooking station in one corner. Long communal

Executive Chef, Christopher Smith hails from the Gold

coast, Australia and is the man behind the food scene

at the Stones hotel, including The Long Rice Table.

The restaurant provides Indonesian food galore with a

highlight of Indonesian Rijsttafel – a banquet for two (or

more) of authentic Indonesian dishes from from east to

west, including Javanese Ayam Bumbu Rujak, Balinese

Tum Bebek, Kenus, Perkedel, Rawon, and Lodeh. We

try a selection of dishes that are available in both the

Rijstaffel and a la carte menu. The Soto Ayam, Indonesian

clear chicken soup is very fresh and best enjoyed with a

side of White Rice and Yellow Rice. Martabak is a typical

savoury street food made with ground beef and spring

onion wrapped in a crispy and tasty skin, and is even more

delicious when dipped in the Cuka sauce with its tasty hint

of tamarind.

Rendang from Sumatra is very authentic, maybe because

Auli Ramadhan, the Sous Chef has West Sumatran blood

running through his veins, while the grilled skewers of the

Sate Campur are served on a unique portable small burner

with choices of chicken, lamb, beef and sate lilit (mixed

seafood.) Dessert ranges from Fresh Fruit Platter, to

Banana Fritters covered in cinnamon sugar, and refreshing

Pandan Leavesasian Vanilla

Pandan leaves come from the plant Pandanus amaryllifolius, sometimes referred to as screwpine, which is native to asia and parts of australia’s tropical north. Leaves are narrow, blade-like and attached to the woody aerial roots of the plant. Pandan is known to be sterile and it is often propagated by cutting. The leaves are dark green in colour, with a strong nutty aroma.

Pandan leaves in cooking In Indonesia, pandan is popular as a flavouring

agent which enhances both sweet and savoury

dishes. Its delicate and aromatic taste is often

compared to vanilla, and popular recipes include

pandan cake and pandan chicken. The leaves

are pounded to extract their vanilla-like flavour

and natural green colour – used in dishes such

as dadar (green pancakes filled with coconunt

and palm sugar.) The leaves can also be steeped

in coconut milk to impart a stronger, sweeter

flavour.

Health benefits Pandan leaves contain essential oils, tannin,

glycosides and alkaloids, and are used for pain relief,

to freshen breath and also to reduces gum and

mouth pain. Other therapeutic benefits include

• Relief of headache and arthritis.

• Reducing fever.

• Laxative for children

• Solves skin problems.

• Strengthens gums

Recipe.

Pandan and lemongrass ice tea2 stalks lemon grass, slightly bruised

5-6 pandan leaves

8 cup water

2 tbsp sugar (optional )

Crushed ice

Boil water in a large pot, add lemon grass and

pandan leaves. Simmer for 3-5 minutes. Add sugar

and stir until dissolved. Remove from the heat and

let it cool. Serve with crushed ice. Menur

RaMBUTanThe Hairy Red

Rambutan is one of those iconic Asian fruits that only comes into season twice a year, including January, when a trip to any of indonesia’s bustling markets will reveal an abundance of these wonderful red spiky fruits with their uniquely sweet, candy like flesh.

What is a rambutan?Coming from the Indonesian word ‘rambut’ which means hair, rambutan has a soft, flexible exterior shell which is covered in

hair-like soft spines. It is a common fruit type in South East Asia, the same way an apple is common to many people in cooler

climates.

getting to know rambutan.Closely related to the lychee, the tropical rambutan varies in type and quality. In Indonesia there are 22 good quality rambutan

types; five of the leading ones are Rapiah, Aceh, Lebak Bulus, Cimacan, Binjai, and Sinyonya. The fruit are oval-shaped and

usually 3 to 5 cm long. While the exterior makes it seem larger than a lychee, the inner fruit is actually smaller. Rambutan

flesh is juicy, milky- white, translucent in colour, with a gelatinous texture surrounding a central seed. The flavour of a

rambutan is more acidic than lychee, and is sweet and aromatic. It is a source of vitamin C, calcium and provides niacin, iron,

protein and fiber.

How to choose rambutanA ripe rambutan is typically red but

there are some varieties that finish

with a bright yellow colour and some

that end up with an orange blush. Don’t

worry; the flavour is pretty much the

same! The best fruit have little or no

black forming on the tips of the soft

hairy spines. They are fragile and keep

only a day or two at room temperature.

For longer storage wrap in a perforated

plastic bag and refrigerate. Menur

1. Open the rambutan by squeezing it, then peel half the

skin off, leaving the other half to hold in your hand like

a wrapper.

2. Alternatively, use a knife to make an incision into the

skin only, not the whole fruit, and squeeze it out.

3. Beware of the big seed in the middle!

recipe: rambutan Fruit salad

15 rambutan

1 mango

2 kiwis

1 1/2 cups chilled and sweetened coconut juice

Peel and pit the rambutan. Dice or slice mango

into short thin strips. Thinly slice the kiwis.

Arrange in a small bowl, and top with chilled

sweetened coconut juice.

Serve and enjoy.

A lively soundtrack accompanies the action on the most

happening sidewalk of Bali, which can be enjoyed from

the terrace. For those who are interested, two screens

inside discreetly televise live sports, with special themed

nights arranged around the biggest sporting events, such

as the AFL final. Reflecting the international clientele that

frequent this buzzing section of Oberoi, the menu has global

influences, with classic dishes, and some twists. Soups

and salads are complemented by pasta dishes, including

Spaghetti Pomodoro, Penne Creamy Cajun and Chicken

Lasagne, while sandwiches include Hot Dog and Aloha

Burger. Western Mains include Tiger Prawn Skewer, and

Rosemary Beef and the Asian Corner lists classic favourites

like Pad Thai, Black Pepper Beef, and Green Curry.

Our Killer Nachos are very enjoyable, with neatly stacked

crispy tortilla chips piled high with refried beans, jalapenos,

tangy tomato salsa and a cheese sauce. Toppings of spicy

guacamole and a lemony sour cream complete the dish.

Indonesian favourite Oxtail Soup is up next, served on a

wooden tray with basket of steamed rice, crunchy melinjo

crackers and a fiery red sambal. The soup brims with

authentic ox tail flavour, enhanced with carrot, red beans,

leak and potato. The BBQ Pork Ribs come with a sweet spicy

barbecue sauce, potato wedges, and boiled carrots, broccoli

and cauliflower. Dessert included Black Rice Pudding and

White Chocolate Mousse, we opt for the Strawberry

Crepes served as a duo, with generous crepes stuffed

with strawberries then topped with strawberry syrup and

strawberry ice cream.

The Apple Day is a lovely cocktail, fragrant with the aroma

of fresh apples, with a taste that is equally sweet and tart,

the sugar rim making a lovely touch. The Pinktini is actually

more of a burnt orange than pink colour and blends gin with

orange juice and grenadine to make a sweet and refreshing

elixir. Daily happy hour runs from 6pm – 8pm with a ‘Buy 2

get 1 free’ deal on selected cocktails, like Mojito, Strawberry

Praise should be addressed to Chef Ida Bagus Rai for

opening a two storey contemporary warung on Ngurah

Rai By Pass, Sanur. Tucked in between shop houses

and right across the road from a children playground,

the restaurant has a convenient parking spot and a

wifi access which makes it perfect for a quick meeting.

However upon seating ourselves on the second floor, we

are so comfortable that we would find restricting lunch to

a ‘quick meeting’ a struggle. Warung Kayu Api pleasantly

The open air concept works well and provides the

perfect setting and ambience for lunch. Chef Rai, who has

worked in hotel kitchens in Bali and abroad for more than

30 years, introduces what he does best: a rich array of

international cuisine. “Cooking has been my passion since

I started my career back in the 70’s and now it has evolved

into this restaurant, where I can cook to my own standard,

using only the best ingredients,” he says.

The Nachos are a great example. The crispy tortilla chips

are sprinkled with red beans, jalapeño and cheese. In

between gulps of the signature cocktail Sanur Blue, we

watch golfers on the green aiming for their best shot. Next

comes the tantalising Kayu Api Giant Skewers Chicken

Wings with corn on the cob and side salad. The chicken

wings are perfectly grilled, sweet and tender with a slight

smoky flavour. A classic Surf & Turf follows, consisting

of tenderloin steak, three grilled king prawns, salad and a

bed of mashed potato. The outstanding béarnaise sauce

for the beef is so good that we feel compelled to ask for

another serving.

We are just about ready to raise our white flags and

surrender, when the waiter brings one last dish to be

tasted: a plateful of succulent Babi Guling and one of the

most complete sets of condiments that we have ever

seen. The meat is tender and fully soaked in spices while

the most important part, the skin, produces a perfect

crunch. “We want to offer visitors the taste of authentic

Balinese street food with big portions, and affordable

prices for locals and tourists alike – so everyone can

enjoy,” explains Chef Rai. Eve

Newly installed deli counters include choice cuts of meat

that can be char grilled to order, chicken rotisserie, and

selection of cheese, salads and freshly baked breads,

perfect for build-your-own sandwiches and make-your-own

cheese platters (eat in or take away.) The newly designed

breakfast menu definitely deserves a mention with deluxe

juices, super smoothies, free flow coffee, and enticing

dishes such as Mediterranean Poached Eggs with halloumi,

tomato and rocket on Turkish bread.

The main menu is a crowd pleaser of the ‘something for

everyone’ persuasion,and with seasoned chef Agung Alit

Subawa presiding over the kitchen, meals are generous,

tasty and well prepared. Vietnamese Spring Rolls are served

fresh and tightly packed with a mix of crunchy julienned

carrots, red pepper, bean sprouts, mint and coriander. The

piquant, sweet chilli sauce adds fire. The Beetroot and

Feta salad has a summery taste, with beetroot, feta and

mandarin scattered amidst spring fresh leaves, and finished

with crunchy walnuts and dash of black pepper. The Whole

Snapper is prepared Thai style, with a zesty ginger, chilli,

pineapple sauce, while the tender Baby Pork Ribs have been

braised and marinated in richly sweet barbecue sauce. All

char grills – including premium Tenderloin and Rib Eye come

with a choice of sauces, and sides including coleslaw,

wedges and mashed potato. Our dessert is a classic tasting

Tiramisu, magnificently presented with a tiny carriage made

with dark chocolate and filled with fruit balls delicately

flavoured with fresh mint.

We arrive to find the air thick with anticipation as the

resort gears up for its official launching, and make

our way to the signature restaurant, Bamboo Chic

which overlooks the sprawling lagoon pool (with direct

access from Jimbaran Market car park.) Executive

Chef, Australian-born Paul Lewis has prepared some

of his signature dishes and joins us for a quick chat.

He was lured away from the Crown Casino, Melbourne,

by his love of Asian food and the opportunity to head

the team at Le Meridien. The innovative menu has

been inspired by his travels and highlights creative

Asian cuisine. His concept, “To bring the best of south

east asia to Bali by combining authentic flavours with

modern presentation.”

Lewis takes pleasure in ‘slow cooking’ and

his concoctions are complex, multi faceted, and

unabashedly fussy. Working closely with an organic

farm in Bedugel ensures the freshest produce, as

a Le Meridien diet.” He

adds, “If we can’t get it

in Bali, we don’t serve it.”

The resort’s location on

Jimbaran Bay – famed for its

seafood, also guarantees the

freshest local catch, and tanks

are being installed for ‘live’ seafood.

Our first dish is Sashimi, an artful mix and

match combination of lobster, red snapper and scallop.

The delicate sea flavour enhanced by salty seafood foam,

scattering of edamame beans, cubes of watermelon, and

dainty dollops of orange gel, lime gel, dark soy jelly and a

tasty miso custard. The Cantonese-style Pork Hock has been

covered in a rich master stock and baked for 26 hours at 72

degrees, resulting in a rich, incredibly tender dish, topped

with coriander leaves, tangy pickled vegetables and finished

with a sweet chilli /rock sugar dipping sauce. The Korean-

inspired Steamed Bun is excellent, a seemingly simple

enough dish, but one that is hard to get

right. This one is perfectly soft, with a

centre of quail egg, and is served on a

bed of chili minced duck, with spicy soft

boiled quail eggs deep fried with chili. The

whole fried Grouper is smothered with a fiery

Thai-style sweet and sour sauce and cooled

down with lashings of fresh lychee, coriander and

bean sprouts.

Desserts are beautifully composed. The Frozen Yuzu

Granitee is fringed by a colourful assortment of dainty

morsels, from cubes of fresh butter sponge, to orange

flowers, crumbed chocolate, pineapple mint leaves and

raspberry jelly, then topped with a shiny red crown of

raspberry flavoured cotton candy. The Sweet Burger is

equally good, with chewy chocolate macaroons, layered

with raspberry basil sorbet and dark chocolate. Alison

Just minutes from Seminyak, the pretty seaside village of Berawa is developing quite a cafe scene. Bungalow is the newest addition, combining gorgeous homeware with a tasty home-style menu.

Balinese-born musician Donald, and his Australian wife Giovanna, have drawn inspiration from their global travels to bring

a touch of the exotic to this charming store/cafe, where everything has been hand-picked to create a wonderful homey

atmosphere. “We wanted to make a cosy sanctuary with good music…..a place to smell the flowers, the coffee and the

incense, ”says Donald.

A colonial-style wooden bungalow with distressed timber, exposed brick walls and quaint shutters sets the scene. Ornate bird

cages dangle above the shady terrace where shelves are stacked with hand painted watering cans and fresh potted herbs (for

sale) in bright flower pots. The air-conditioned interior is brimming with retro style furnishings and antiques, many in soft hues

of green – chosen, says Donald, “To create a soothing, natural ambience.” All homewares are for sale, from four poster bed, to

chunky dining table, brass hurricane lamps, woven place mats, crocheted quilts and floral cushions. A veritable treasure trove,

Bungalow is ideal for gift shopping with its own line of bath products and candles, antique toys and inspirational books, with

titles like ‘Thank you’ ‘I Believe’ ‘Joy’ and ‘Love.’ Cafe tables are scattered amidst the antiques and there is a cosy, cushion

filled alcove under a wall of clocks.

baskets are piled with almond croissants, blueberry

muffins, and French apple pie, and a cabinet displays an

enticing array of cakes . The menu is listed on blackboards

Tofu is blended with red peppers and walnuts, flavoured

with herbs and mustard then baked into patties and served

in a sesame seed bun with rocket, tomato, cheese, and

homemade mayo to create a wholesome and tasty Tofu

Burger. The Daily Salad is a fresh and springy mix of rocket,

mixed leaves, pumpkin and fetta, while Baguettes come

Please tell us about yourself?I was born in West Sussex, England.

My childhood was spent in a small

hotel which was owned by my parents.

I grew up helping my mother around

the kitchen and working for my pocket

money.

is that how you found your passion for cooking?I believe so. I went to study for two

years at Brighton Hotel & Catering

Training. After graduating I worked for

a few years in England, but finally had

enough of the weather and decided to

try my luck in the ski chalets of France,

where I extensively cooked traditional

French cuisine.

so can you say, you are a specialist in french cuisine?Yes, I had the privilege of studying

under Albert Roux of La Gavroche in the

UK, and working in the Alpine chalets

was quite an experience. However, I

decided I wanted to learn more about

Asian cuisine and to work where

the sun is hot, so moved to Western

Australia in 2005, working as a sous

chef in hotels and restaurants from

Perth to Fremantle before going back

to Europe.

There’s a pattern here. sun, snow and back to the sun...Yes! This is why after a few years as

head chef in Tignes, I decided to try

Bermuda, where I ran the kitchen at

Ascot’s Restaurant. Then I went back

home for a few years to help a friend

in the restaurant business, and finally

made it to Bali in May 2012.

Why Bali? Why The Edge?I had already been to Bali a few times

and I love the weather and beach here.

I thought you might ask. So, inspired by French food, I have

five dishes planned. For the entree, pan seared scallop with

cauliflower puree and white truffle oil, garnished with a

summer salad. As for the mains, there is our specialty reef

and beef – a wagyu beef fillet with king prawns in creamy

garlic sauce. The other will be a garlic and rosemary lamb

chop. Desserts is a chocolate parfait with summer berry

compote and white chocolate creme brûlée.

Tumis Kangkung is a common, easily prepared dish in

Indonesia. It’s made with water spinach or “kangkung” in

Indonesian, which is easy to find in local markets. A great

complement to warm white rice, it also makes a good

side dish and is often found in nasi campur.

Method:

Cut the shallots, garlic and chilies. Heat oil in a wok and

fry with shrimp paste (optional) for 3 minutes. Add the

water spinach and fry for 1 minute. Add salt and water

followed by the spring onion and let it simmer slowly until

cooked.

Note:

If you want to add other ingredients, just remember not to

add the water spinach until the very end, as it only needs

to cook a little.

Ingredients:

500 gr water spinach

5 cloves garlic (peeled)

2 shallots (peeled)

2 red large chilies (deseeded)

2 tsp shrimp paste(optional)

1 tsp salt

1 spring onion (peeled and cut)

Our Honeymoon Spa Treatment starts in the soothing

environs of the Spa where we receive the warmest and

most gracious of welcomes. Wandering past trickling

water fountains and stone statues wrapped in garlands

of flowers we arrive at a private treatment room

with twin massage beds adorned with heart-shaped

arrangements of golden frangipani. This lush treatment

is based on natural ingredients, and our therapist

presents a wooden tray bearing an alluring display of

dark chocolate, ground candlenut, thick honey, thin

slices of cumber and glass jars of scented oils. We

choose cocoa butter for our massages, the chocolaty

perfume imbues the air as we are lulled into a state of

absolute serenity. A chocolate almond scrub follows

and then we are gently wrapped in a mask of coffee and

honey - a true feast for the senses. After we tumble into

a bath for two to float in a sea of flowers.

Three hours of delicious pampering later we emerge,

relaxed and glowing and make our way to the sandy

poolside fringed by palm trees, where a white clothed

table covered in candles and flowers awaits. Two glasses

of wine are included in the package, but you may wish to

enhance the mood with an exotic cocktail – perhaps a

tropical Daquiri, a Mai Tai, or a fruity Full Moon Fever.

A thick and creamy Seafood Soup is followed by a Chicken

Caesar Salad with a classic caesar dressing coating

cos leaves, thick slices of parmesan and juicy cherry

tomatoes. An innovative presentation sees croutons

replaced by a long and dainty toasted finger sandwich

layered with bacon. The Fillet of Beef is generous and

tender, topped with wilted spinach, a rich black pepper

sauce and roasted cherry tomatoes. Dessert is a divine

Chocolate Brownie Butterscotch Cheesecake, served

in triangular wedges drizzled in butterscotch, with

caramelised nuts provide a crunchy contrast to the soft

creamy filling.

The evening sadly draws to a close. It has been quite a

journey, the fabulous spa treatment providing an idyllic

We sink into beanbags and bask in the golden glow of dusk. A round of icy cool mojitos, and feast of tapas spreads before us and I can’t think of anywhere else I would rather be.

With its dazzling cliff top views over the rolling waves of

Dreamland and the rocky cliffs of Bingin, El Kabron fuses

Bali magic with Mediterranean style to create the ultimate

chill out zone. Lazy afternoons are for cooling off in the

infinity pool with a Sangria or two, but as the sun wanes,

a crowd gathers, lured by legendary sunsets, live dj and

acoustic sets and memorable cocktails. Our Mojitos set

the tone for the evening – fresh, summery,icy cold and

brimming with muddled mint leaves, lashings of lime

juice, a healthy dose of rum, and just a dash of soda. But,

nothing screams ‘tropical holiday’ quite like a Pina Colada,

and the bartender does this classic cocktail justice,

creating a golden, creamy elixir that strikes the perfect

balance of sweet rum, coconut and pineapple.

The sun sinks into the horizon, sending crimson streaks

shooting across the darkening sky, a colour perfectly

reflected in the luscious pink hues of the Cosmopolitan

that the waiter has just delivered. The fragrant scent of

orange oil mingling with cranberry is intoxicating, and

every bit as delicious as the taste itself – sweet, tart and

citrusy in equal measure. I finish with a Bingin Sour, a pale

pink, fairy-like concoction blending the earthy perfume

of Oruju with fresh muddled strawberries, vodka and

crown of fluffy white foam sprinkled with black pepper.

Its my first experience with Orujo – and I wander over

to the bar to investigate. It seems that this traditional

Spanish digestif is infused with a tantalising blend of

27 herbs including anise, lemon, vanilla and cinnamon.

The bar tender kindly pours me a shot – it’s a little like

Limoncello, but spicier, and tingles my taste buds before

lighting a fire in my belly. I like it a lot!
