A Passion for French Cuisine Exquisitely decorated with heirloom antiques, pickled wood furnishings and art from Jacques Pépin’s personal collection, Jacques was modeled after a Parisian bistro. Comfortable and eclectic, the ambiance is pure French, as is the cosmopolitan yet wonderfully embraceable cuisine.

Luscious aromas waft from the gleaming show rotisserie, where chicken, duck, pork, beef and veal roasts slowly turn. Each dish is a classic, ingeniously reinterpreted by Master Chef Pépin. Rotisserie-roasted chicken falls off the bone, bursting with flavor, while his sea bass filet pairs exquisitely with beurre blanc.

TOSCANA+

Authentic Italian Toscana means Tuscan, and just as Tuscan cuisine evolved from rich family traditions, many of our recipes originated with the mothers and grandmothers of our own Italian culinary staff. Presented on elegant, custom-designed Versace china, masterfully prepared dishes exemplify the essence of Tuscany and celebrate Italy’s culinary passion.

Perhaps the evening begins with the octopus carpaccio with champagne vinaigrette or the artichoke and parmesan cheese timbale with black truffle sauce. Classic dishes from other regions of Northern Italy are featured as well, such as the minestrone alla Genovese, lasagna al forno alla Bolognese and osso buco alla Milanese.

POLO GRILL+

A Classic Steakhouse Polo Grill embodies all the elements of a classic steakhouse, expressing them with timeless reverence. Mindful of tradition, the decor features crisp, white linen tablecloths, dark wood furnishings and supple, high-back, burgundy leather chairs.

Each course stands as the very definition of time-honored favorites, most notably the beef dishes, all of which are certified Black Angus USDA Prime and dry aged to enhance tenderness and flavor. ALBANY, AUSTRALIA Western Australia’s oldest colonial settlement, Albany holds not only great historical significance but also immense natural beauty. Founded in 1826 as a British military outpost, the town evolved into a provisioning port for ships, a departure point for Australian troops bound for World War I, and eventually a base for the whaling industry. History buffs will be intrigued by sites such as the Anglican church, town hall, restored gaol and a one-of-a-kind whaling station museum, while the dramatic scenery of the rugged coastline will astound anyone fortunate enough to sail into Princess Royal Harbour. Known as Ataturk Entrance, the channel accessing the harbor from King George Sound is quite narrow, with forested peaks rising on either side from the rocky shores and sweeping white beaches.

AOMORI, JAPANEach change of season brings fresh new beauty to the coastal city of Aomori. The blush of cherry blossoms greets you in spring, while in winter the forests of the surrounding mountains are so heavily laden with snow that the trees appear to be giant white beasts. The port is dominated by Aomori Bay Bridge, offering great views of both the city and the harbor and mirroring the striking triangular design of the Aomori Prefecture Tourist Center. The skyline’s contemporary angles result from the city’s destruction during World War II and rebuilding thereafter, but Aomori also celebrates ancient societies that settled here millennia ago. You’ll be reminded of this prehistoric past at the 21st-century museum of modern art, as its architecture pays homage to the nearby excavations of ancient ruins. After exploring, relax at the caldera lakes and natural hot springs in the lush countryside.

DUTCH HARBOR, ALASKALocated on Amaknak Island and linked via bridge to Unalaska Island, Dutch Harbor is a place of historical significance, stunning natural beauty and resilient people. Walk in the footsteps of the indigenous Aleut, or Unangan, people by following trails established thousands of years ago. The paths take you through swaths of wildflowers dotting green valleys from which rise volcanic peaks surrounded by the sea, a windswept land so pristine you will forget that signs of civilization are nearby. Even so, Russian fur traders and American armed forces did make their marks here. The U.S. established a naval base in 1940, and Dutch Harbor became a theater for World War II. While intriguing museums recall a turbulent past, today Dutch Harbor embraces the peaceful nature of its scenic surroundings and thrives as a fishing “village” that brings in the country's largest catch.

HAKODATE, JAPANIn 1854 Hakodate became Japan’s first port to open to foreign trade as the country’s era of isolationism came to an end. The resulting influx of traders and merchants from Russia, China and Western countries imprinted the city with a mélange of cultural styles that now distinguish Hakodate’s unique atmosphere. Star-shaped Goryokaku Fort was designed in the European style – even as its purpose was to defend Japan from foreign imperialism – and is now flanked by thousands of native cherry trees. The Russian Orthodox Church stands just blocks from the Chinese Memorial Hall, and nearby you’ll find traditional Japanese markets selling the signature Hakodate shio ramen, a salty noodle dish that is the city’s specialty. After recovering from siege and fire in 1877, Kumamoto Castle sustained its greatest damage in the earthquake of 2016 – ironic given the castle is known for its dark obsidian color resembling Japan’s volcanic landscape. Affectionately known as the Penguin Parade, this magical scene has enchanted visitors since 1920. SAN SEBASTIÁN DE LA GOMERA, CANARY ISLANDSTo experience the quieter side of the Canaries untouched by the tourist trade, call on the unspoiled island of La Gomera. Here the only things more ancient than the cultural traditions are the native laurel forests that blanket the volcanic peaks rising into the clouds. Plunging ravines disappear into a lush green carpet fed by gurgling streams, and craggy outcrops rise into an ever-present shroud of mist that nurtures the luxuriant highlands, lending a magical aura. So isolating was this rugged terrain that native inhabitants developed a language of whistling to communicate across the miles. The language is preserved today, so ask for a demonstration in a local restaurant in San Sebastián de la Gomera, the coastal town that descends from the hills to the black sand beaches below. The town also celebrates less ancient history, as this was the final stop of Christopher Columbus before he sailed for the Americas.

SANTA BARBARA, CALIFORNIAKnown as the American Riviera, the enchanting town of Santa Barbara is nestled between the picturesque coastline of its southern shores and the verdant Santa Ynez Mountains rising steeply to the north. The warm sunshine of a Mediterranean climate illuminates the red-tiled roofs and adobe façades of the town’s Spanish Colonial architecture, including the grand Old Mission founded by the first Spanish settlers in the 18th century. Osaka

OARAI, JAPANKnown for long stretches of pristine beach, a large aquarium and an oceanfront shrine, the seaside town of Oarai entices you with all things coastal. Try fresh seafood, such as a rice bowl with raw sardines served with grated ginger and soy sauce. Caught just offshore, the young sardines must be eaten the same day as they are caught, and thus they draw gourmets from around Japan to Oarai. A short jaunt inland to Mito would also be worthwhile, as it is home to one of Japan’s three great gardens, Kairakuen. Opened in 1842 by the local lord Tokugawa Nariaki, the garden is famous for its more than 3,000 plum trees, which herald the arrival of spring when they bloom from late February through March.

OSAKA, JAPANPrior to the 8th century, the capital of Japan moved with each new emperor and Osaka was one of those earliest capitals. Osaka then grew into a commercial center of the rice trade and became known as “the nation’s kitchen,” a moniker now applied because of the city’s reputation for cuisine so good that, as the saying goes, people go broke buying it. A vibrant arts culture also developed in the 17th century, including the famous kabuki and bunraku theaters that can still be seen today. Devastated during World War II, Osaka reemerged as a maze of bridges and skyscrapers flanking a moated castle that stands in the city center as a reminder of a regal past. The skyline gains further allure from the illumination of several Ferris wheels, unique status symbols of modern Japanese cities.
