Ingredientsmain ingredients:
• " cup #asmati rice or regular rice
• 2 large tomatoes or "50 grams tomatoes or $ cup %inely chopped tightly pac&ed tomatoes

• ) inch ginger * 3 to ! garlic * " to 2 green chilies' crushed to a paste in mortar-pestle or
a small grinder' a#out ) t#sp ginger*garlic*green chili paste
• $ to " cup chopped mix vegeta#les li&es carrots' #eans' peas' cauli%lower' mushrooms
and potatoes

+ tsp turmeric powder,haldi• ) tsp red chili powder,lal mirch powder
• + tsp #lac& pepper or crushed #lac& pepper
• 2 t#sp chopped coriander leaves,dhania patta

whole spices/sabut garam masala:
• " inch cinnamon,dal chini
• 2 cloves,lavang
• 2 green cardamoms,chotti elachi
• " small star anise
• " te/pataa or indian #ay lea%
• " tsp cumin seeds,/eera
Instructions
". rinse rice very well in water and then soa& the grains in water %or 30 minutes. you can use
#asmati rice or any regular rice %or the pulao. i used surti &olam.
2. a%ter 30 minutes drain the rice and &eep aside.3. when the rice is soa&ing' prep the veggies and &eep aside. also crush ",2 inch ginger * 3
to ! garlic * " to 2 green chilies1 to a semi %ine paste in a mortar-pestle. you can also use a
small chutney grinder to ma&e this paste.!. heat 2 t#sp oil or ghee in a pressure coo&er. add the whole spices and %ry them %or a %ew
seconds till they #ecome %ragrant - " inch cinnamon' 2 cloves' 2 green cardamoms' "
small star anise' " te/patta or indian #ay lea%' " tsp cumin seeds,/eera5. then add ( cup %inely chopped onions.
. stir and saute the onions till light golden.
. add the crushed ginger*garlic*green chili paste along with 2 t#sp chopped corianderleaves and " tsp chopped mint leaves.
. stir and saute till raw aroma o% the ginger and garlic goes away.
4. then add $ cup tightly pac&ed %inely chopped tomatoes.
"0. stir and saute till the tomatoes #ecome pulpy and so%ten."". now add + tsp turmeric powder' ) tsp red chili powder and + tsp #lac& pepper or
crushed #lac& pepper. stir again.
"2. add the veggies - a#out $ to " cup chopped mix vegeta#les. stir and saute %or " to 2minute.
"3. then add the rice. stir and saute %or a minute.
"!. pour ".5 cups water."5. season with salt. stir very well. pressure coo& on medium %lame %or a#out "0 to "2
minutes or %or 2 to 3 whistles.
". let the pressure settle down on its own. then remove the rid and gently %lu%% the rice.
". serve tomato pulao garnished with coriander leaves. accompany plain yogurt' raita or a
veggie salad #y the side.
