Year 12 Food and Hospitality students and staff escaped to popular foodie desnaon, the 'East End District', last Friday. Steven answered various quesons students had concerning food trends, his menu and how he designs and makes his own detailed, intricate and high quality desserts. Taste buds were definitely tantalised as each student had the chance to choose and indulge in one of Steven's fantasc dessert creaons. Gaining first-hand informaon from a professional in the industry such as Steven was an amazing opportunity. He even commented on the genuine engagement and involvement of our students within conversaon and interest in the topic. Steven Ter Horst is a local SA food business, originally starng off as a ny shop front on Unley Rd. We encourage supporng local food businesses so our class also visited the new Mondo Espresso Bar on Grenfell Street. Mondo Espresso Bar inspired students with in-trend rusc presentaon styles and 'on-the-go' menu items. They even locally roast their coffee beans from their own designed blend! YEAR 12 FOOD & HOSPITALITY: DESSERT HEAVEN ON THE EAST END!

Year 12 Food and Hospitality students and staff escaped to popular foodie destination, the 'East End District', last Friday. This strip is known as Adelaide's favourite hotspot for food enthusiasts and attracts both locals and tourists for its well-known restaurants, cafés, coffee shops and dessert bars.

Currently, the class is working on their second summative assignment, which requires them to explore current dessert trends including; flavour, presentation and texture trends, devising their own dessert that focuses on a trend of choice, then preparing, cooking and presenting their creation within a set time frame.

All students were engaged and inspired by Steven, from Steven Ter Horst Chocolatier, on Rundle Street. Steven answered various questions students had concerning food trends, his menu and how he designs and makes his own detailed, intricate and high quality desserts. Taste buds were definitely tantalised as each student had the chance to choose and indulge in one of Steven's fantastic dessert creations. Gaining first-hand information from a professional in the industry such as Steven was an amazing opportunity. He even commented on the genuine engagement and involvement

of our students within conversation and interest in the topic.

Steven Ter Horst is a local SA food business, originally starting off as a tiny shop front on Unley Rd. We encourage supporting local food businesses so our class also visited the new Mondo Espresso Bar on Grenfell Street. Mondo Espresso Bar inspired students with in-trend rustic presentation styles and 'on-the-go' menu items. They even locally roast their coffee beans from their own designed blend!

Later in the year the class will continue to support local SA food business when we visit The Seasonal Garden in Hahndorf and The Locavore in Stirling. However, next time the focus will move from food trends to food sustainability and meeting customer dietary needs.

It was a pleasure taking the class out on this excursion and I look forward to seeing their inspired dessert creations.

“God so loved the World...He gave His only Son”

At our recent highly successful Open Night I provided three Principal’s presentations where I get to do something that I really love, speak to an audience about this wonderful school. It provides me an opportunity to reflect on the things that we do so well and the opportunities that Gleeson College and Catholic Education can provide. What I deeply value about our school, is that in my opinion, it is a school that genuinely caters for all. As Principal I really hope that Gleeson College is an environment where, regardless of individual passion and interests in life, the young people that attend are able to find their place, to succeed and excel. It is our role as the educators of your children to provide them every possible opportunity to achieve their own personal excellence in whatever form that might take. We are continually striving as a faith and learning community to develop meaningful pathways for our students.

I always welcome feedback from any member of our community that may wish to provide advice and support on how we can continue to improve.

Changes to Volunteer Police ChecksThe Catholic Church in South Australia has recently foreshadowed changes to some of the arrangements relating to police checks for volunteers. These changes are

consistent with moves across SA to align the volunteer police checking process more closely with recommendations arising from the Royal Commission into Institutional Responses to Child Sexual Abuse. While the Catholic Archdiocese of Adelaide’s Police Check Unit (PCU) will still manage the police check process, some of the changes, effective from 1 May, include:• Sourcing a Working With Children

Check through the SA Government’s Department for Families and Social Inclusion (DCSI);

• A streamlined, simpler application process;

• The opportunity for volunteers to volunteer on 7 occasions per year without the requirement for a police check (where volunteering does not include excursions or overnight stays);

• No requirement for children under 18 years of age to hold a check;

• The provision of a convenient wallet-sized clearance card as distinct from a clearance letter.

As our school transitions to the new arrangements by 1 May it is possible we may invite you to renew your current check, prior to its usual expiry date, under the current arrangements. In the meantime, if you have any questions in regards to police checks as a volunteer please contact Ms Mary Hennessy at the College.

Athletics CarnivalAs you are aware our re-scheduled Athletics Carnival will be held next Thursday. We are very much looking forward to hopefully wonderful weather and a great day of healthy competition, maximum involvement and a day filled with the great community spirit for which Gleeson College is renowned.

I would like to thank Sports Development Coordinator Ms Rachel Staffin and her dedicated team of helpers for the wonderful organisation of this carnival and we look forward to reporting the outcome of the day in a future edition of The Globe. Thank you also to the House Captains for their great organisation and enthusiasm. I am sure the Athletics Carnival will once again be a highlight of the College Calendar.

Lenten ReflectionEaster is the most important season in the Liturgical year. The weeks of Lent provide a time of reflection and renewal in preparation for the remembrance and celebration of the ultimate sacrifice that Jesus made at the crucifixion, followed by the most joyous and triumphant resurrection a few days later. Easter is the story of what it means to truly love one another. As the Gospel of John states, “God so loved the world that he gave his only Son”.

We are called during this Lenten season to reflect on those areas of our lives that require some reflection and perhaps even change. Often people observe ‘fasting’ as a tangible way of demonstrating restraint. This fasting need not be confined to those things that we consume; perhaps we can ‘fast’ from passing unfair judgement of others, being critical and argumentative, even from the use of technology at meal times. Embracing any of these sacrifices bring us closer to others and therefore closer to God.

I wish each of you a most blessed and Holy Easter season.

GLEESON COLLEGE BOARD PROFILE: Mr Peter StewartHi to all Gleeson College community members. I’d like to introduce myselfas the newly appointed Chairperson

of the College Board.

It is my absolute pleasure and delight to take on this position and I’d like to assure

you that the membership of the Board led by Principal Andrew Baker and our President, Father James, is outstanding and will provide strong governance and

support to the staff and students in 2016.

At our last Board meeting on February 24, it was agreed that Board members

would take the opportunity to introduce themselves via The Globe and to

provide a brief insight to the issues we are discussing at our meetings. We feel it is important for everyone in our

community to understand the role of the Board and to see who is representing

you at this level.

From a personal perspective, my “day

job” involves working with a statewide disability service provider and I have

a strong interest in the financial management, community engagement

and academic development of the College. I am also passionate about the culture of organisations and am proud

of the fact that Gleeson College excels in this regard.

The February meeting saw us attend to our annual housekeeping in the form of

election of office bearers and I would like to congratulate Michelle Sauerwald for

her appointment as Deputy Chairperson. In addition to our standing items

of Finance and Health & Safety, we reviewed the Master Plan, which will see

ongoing improvement in the facilities of the school and we were treated to a tour of the College to view some of

the terrific projects completed over the summer. Andrew Baker also presented

a summary of the Parents Survey

from 2015 and the feedback provided wonderful endorsement of the many aspects in which the College performs well, but also some valuable food for

thought in how we can improve.

I wish you all the very best for the year and hope to meet as many of you as I

can over the coming months.

Congratulations to Jessica Mills (10 FSCUA) on winning a bronze medal in the Under 16 Hammer Throw at the Australian Junior

Athletics Championships held in Perth last week.

Jess threw the hammer a massive 44.81m to secure 3rd place at the championships, which were held

at Floreat Stadium.

Well done Jess on this exceptional sporting accomplishment!

Every student within Gleeson College has a right to feel safe and protected against harassment by others. Harassment is defined at this College as actions and/or words which cause hurt, discomfort, offence, fear, insecurity, embarrassment or humiliation. It is our belief that any behaviour deemed as bulling and harassment does no align itself with the Gleeson 10 values of: Dignity and Respect, Peace and Harmony and Compassion.

they can follow should they feel bullied or harassed while at school.

At this time of the year and to coincide with the National Day of Action against Bullying and Violence, it is timely to inform the community of the support provided to students at Gleeson College. Also, as we are entering the Student Leader driven ‘Wellbeing Week’, I wanted to highlight the importance of positive wellbeing and being present in a safe community for all members of Gleeson College.

YEAR 12 FOOD & HOSPITALITY CLASS EXPLORES ‘CLEAN SWEETING’

Recipe Legend:C = Cup | T = Tablespoon | t = teaspoon

INGREDIENTS:Tart Shells• 2 C almond flour• 2 T maple syrup• 1 T cacao powder• ¼ C coconut oil, melted• ½ t baking powder• 1/8 t saltRaw Chocolate Mousse• 1 medium avocado• ¼ C raw cacao powder• ¼ C maple syrup• 1 t vanilla extract• 1 pinch salt

Dessert Trends > ‘Clean Sweeting’ > Avo-licious Choc TartsMETHOD:Tarts Shells1. Preheat oven to 180 degrees celsius

with fan.2. Line/spray tart tins.3. In a large bowl, add all of the crust

ingredients and mix very well. Really get your hands in there to get it all together and work it into a nice dough.

4. Add the crust to the tart tins and press down firmly into the tins - ensure to go up the sides of the tin.

5. Bake for approx. 15 mins, until golden brown.

6. Allow to cool, then remove from tin and place in the fridge/freezer.

Year 12 Food and Hospitality students practiced a variety of saucing and chocolate garnishing techniques for their next cooking summative recently. The focus of this formative was on the hot trend of ‘Clean Sweeting'.

They worked in pairs to make ‘Avo-licious Choc Tarts’, which are gluten free, and if presented without the indulgent chocolate garnishes, also dairy free. At first the students where a little cautious about trying an avocado chocolate mousse, but once they taste-tested, they all realised how delicious it was! Check out a few of their creations below!

Raw Chocolate Mousse1. Blend all ingredients into the food

processor until smooth.2. Spoon into the cooled tart tins and

serve.

GRACE EARNS HONOURABLE FEMALE FOOTBALL AMBASSADOR ROLECongratulations to Year 12 Lady Reds footballer Grace Abbey (12 DSSAL) on her recent appointment as ‘Female Football Ambassador’ for South Australia as part of a national campaign led by Football Federation of Australia (FFA) to promote Female Football Week from March 11-18.

FFA Chief Executive Officer David Gallop officially launched FFA's Female Football Week, a national promotion and celebration of the role of women and girls in the game, last Friday. Speaking at the launch, Gallop said female football in Australia was pivotal to the game's future development.

“We are proud that more than 20% of our entire participation base of outdoor club players are female. No other footy brand can compare with that,” said Gallop.

"Females represent the fastest growing segment in our participation base. Girls starting out in football have a pathway that goes to World Cups and Olympic Games, and there are fantastic role models in the Westfield Matildas, who are on show at the moment.”

Throughout Female Football Week each of the nine State and Territory Member Federations of FFA will be conducting a range of activities all aimed to celebrate and recognise Female Football which include:• Female only coaching courses -

JAI COOPER TO REPRESENT REDS AT 2016 MEDITERRANEAN INTERNATIONAL CUPCongratulations to Year 10 footballer Jai Cooper (10 FSCUA) on his recent

selection to represent Adelaide United FC at the upcoming Mediterranean International Cup (MIC) to be held

in Girona, Spain.

The AUFC, in conjunction with Adelaide United Members Club Inc, will be taking

both an U16 boys team and the Reds Youth Team to compete in the MIC in 2016. Last year the Reds Youth Team achieved a spot in the quarter finals!

The week-long competition will beheld at several football facilities along

the Costa Brava in Girona from22-27 March.

Along the 15 years of history, the MIC has seen many talents that not long after became professional footballers, playing with some of the most recognised teams

in the world.

The Cup consists of:• 596 football matches in five

competition days:• More than 5,000 inscribed players• More than 220,000 supporters• Several live matches on TV• 20 different venues (with 24

football fields)• More than 200 teams representing

36 different nationalities

Well done Jai on this outstanding sporting achievement and best wishes

for a successful 2016 MIC campaign with the Reds!

Yeast' unit, Year 10 Food & Hospitality

baking skills as they created

Recipe Legend:C = Cup | T = Tablespoon | t = teaspoon

Makes 8 mini buns

INGREDIENTS:Fruit buns• 1C bread flour• 1t mixed spice• 2t powdered milk• 2t instant yeast• 2t bread improver• Pinch salt• 2t sugar• 2t butter• 3T mixed fruit• 2T sultanas• 110ml warm/hot water• 1 egg

‘Cooking with Yeast’ > Mini Hot Cross Buns

Glaze• 1T honey• 1t boiling water• 1/4t mixed spiceBatter for Crosses• 2T SR flour• 1t caster sugar• 3T cold water

METHOD: Fruit Buns1. Preheat oven to 200C.2. Mix flour, spice, milk powder, yeast,

improver, salt & sugar in large bowl.3. Rub butter into mixture.4. Stir fruit and sultanas into mixture.5. Mix in beaten egg & water working

the dough until it forms a ball. Lift dough onto a floured surface.

6. Knead dough for at least 5 mins until smooth & elastic.

7. Divide dough into 8 even pieces, knead into small balls.

8. Place on a greased oven tray & allow to stand in a warm place until they approx double in size (10-15 mins) - ‘proving’.

9. While they are proving make the glaze (see below).

10. Place buns into hot oven, cook for 10-15 mins.

11. Glaze while hot.12. Allow to cool on wire rack.

METHOD: Glaze1. Combine glaze ingredient, stir until

smooth.

METHOD: Hot Crosses1. Combine cross batter ingredients,

stir until smooth.2. Pipe crosses onto dough before

placing in oven.
