Salmon En PapilloteQuick to prep and cook - less than 20 minutes - makes for a perfect weeknight meal! This Salmon Dinner is a perfect traditional and healthy meal that everyone will enjoy!

Tips:Fat is a nutrient necessary for your health. While various fats in foods have different effects on health, some fats offer health-protective benefits. Omega-3 fatty acids are a type of polyunsaturated fatty acid that may help lower cholesterol levels and support heart health. Current dietary recommendations are to include fish in your meals at least twice per week. Fish high in omega-3 fats are salmon, albacore tuna (fresh and canned), sardines, lake trout and mackerel.

Ingredients:1-medium zucchini, sliced into ¼” rounds24 grape tomatoes, halved or quartered1 shallot or ½ yellow onion, thinly sliced1-2 Tbsp. Extra-Virgin Olive Oil1-2 Tbsp. Balsamic Vinegar4 salmon fillets, each about 6 oz and 1 ½” thickSalt and pepper for taste

Directions:• Preheat oven to 375°F. • In a bowl, toss zucchini, grape tomatoes, and shallot with

the olive oil, vinegar, and salt and pepper.• Place 4 half-sheets of parchment paper, each 12 by 16

inches, on a work surface. Place half of the vegetable mixture in the center of each sheet and top each with a salmon fillet. Season the salmon with salt and pepper, and drizzle with a teaspoon of olive oil (optional).

• Bring the long ends of 1 parchment sheet together in the center and create a ½-inch fold. Make several more ½-inch folds to form a tight seal, then twist the ends of the packet to close completely. Place the packets on a sheet pan.

• Bake the fish for 20 minutes on the center rack in the oven, and then remove and unwrap or cut the top of the packet carefully. Serve immediately.

Amy Kimberlain is a Registered Dietitian and Certified Diabetes Educator who has been working in the field of Nutrition and Dietetics during the last 20 years. Amy graduated from the Florida State University with a double major in Nutrition and Spanish and completed a dietetic internship at the Baylor University Medical Center. Throughout her career Amy has promoted community health nutrition by lifting up families with W.I.C. (Women, Infants, and Children), leveraging a grant to help prevent childhood obesity in public schools, and engaging individuals and groups through counseling in diabetes education. The focus of Amy’s work has been to motivate others to develop healthy eating habits one step at a time by using food as medicine. In her spare time she creates “food as art” to inspire others to realize that healthy food can look and taste delicious. She is also an avid runner, having completed her first marathon last year, and is a Registered Yoga Teacher (RYT 200).

Senior Division will hosts our very own Senior Casino Night. Equipped with Blackjack, Roulette and Wheel of Fortune. Learn to play Blackjack and Roulette. Prizes, catered food with live music by Spanky and Dino. Vouchers will be given for gambling chips.
