Most renowned alcoholic beverage of Mexico, Tequila is theexpression of both precolombine and Spanish cultures. With

the arrival of Spanish colons along with alambic technology,Mexican people began to distillate Agave, which wastraditionally used for the elaboration of Pulque, afermented indigenous beverage.

The alcohol named Tequila is obtained exclusively form the

Agave Tequilana Weber var. Azul.

Production and commercialization are protected by a MexicanOfficial Law (NOM). Every lot is checked and certified bythe Regulation Council of Tequilas (CRT). The Tequilastandards are guaranteed by a protected designation of

origin, since 1974.

As well as Cognac, Jerz, ScotchWhisky, champagne and the bestwines, there is a very specificarea recognized for the productionof Tequila.

This area of PDO (protecteddesignation of origin) has beenunder the protection of the CRT(Regulation Council of Tequilas)since 1974.

The most renowned areas are

located in the state of Jalisco.Tequila can also be made inspecific areas of Nayarit,Guanajuato, Michoacn, Tampico.

Agave plants require an average of 7 to 9years to reach a perfect maturity andconcentration of sugar.

The harvest consists in cutting the leafsand taking of the pia.

Agave plants can be harvested all year long.

During the cooking process,starch is converted in sugar.

THE COOKING

Agave pias are vapor cooked in

mampostrera ovens (stones).

The aim of cooking is to transform

sugar contents without

caramelization.

Once cooked, the agave heart(pia) is crushed to obtain the

juice and separate it from the

fiber (bagasa).

CRUSHING

Crushing may be realized with mills o tahonas(old method). The pias may overcome crushing

steps from 2 to 8 times.

The more you crush the pias, the more juice isextracted. However, in every new crushing process,the juices looses its concentration and flavorqualities.

process, sugars are turned intoalcohol (6%)

Fermentation may be done in opentanks made of:

Stainless steel

Fermentation may be induced with:

Chemical yeasts

Natural yeasts

Time for fermentation: about 3days

Reposado: 2 to 11 month in wood barrels

Aejo: 12 to 36 months in wood barrels

Extra aejo: Over 3 years in wood barrels

The barrels can be made of:

White Oak

Oyamel (mexican fir)

Encino oak

The Mexican Official Law defines thefollowing criteria for each quality ofTequila:

Tequila REVOLUCION: Our Reposado is matured 10 month in White Oak barrels.

The barrels are previously used with Tequila, in order to maintain theoriginal flavors of agave.
