No,therealreasonmostpeoplegetturnedoffbytofuisn’tbecauseit’sgross.It’sbecauseitseemsSOBORING.Butiftofuisconsideredboringratherthanhateful,thatrepresentsprogress.(Thatis,ifyouconsiderwideracceptanceoftofu“progress,”whichis,Iadmit,aleapfortofuhaters.)

See,whentofuwasintroducedtotheUnitedStatesinthemiddleofthelastcentury,itwasgenerallyingloppy,goopy,slimy,rubbery,tastelessdishesthattrieddesperatelyandunsuccessfullytostandinforproperthingslikemeat.Itwaspoorlytreatedbymisguided,protein-starvedpeoplewhoprobablydidn’tlikefoodthatmuchinthefirstplaceandthereforedidn’tcarewhetherthefinalproducttastedgoodornot.*

See,tofureallyistasteless.(Actually,it’smorelikeflavorless,becausetastelessmeanssomethingelse.)Goodtofutasteslike…nothing,really.Nothingatall.Butthatlackofflavor,asitturnsout,istofu’sgreatestasset.

TouseananalogythatIhaveafeelingyou’llwarmto:Tofu’sflavorlessnessisalotlikevodka’sflavorlessness.Youcandoanythingtoit,addjustaboutanyflavoringoringredientyoulike—sweet,salty,bitter,savory,sour,younameit—anditwillsupportthatflavorlikeachamp.Vodka,er,Imeantofu(sorry,distracted)willstayinthebackground,providingasolidbaseofproteinforwhateverelseyoufeellikeaddingtoit.

Sowhat’sthepointoftofu,then,ifitdoesn’ttastelikeanything?Thepointoftofuisthatit’saclean,healthful,powerful,plant-basedproteinthatprovidesallkindsofnutrients,notalotofcaloriesorcarbohydrates,andprettymuchnocholesterol.Inotherwords,it’sfood,andit’sprettygoodforyou.(Seethispageformoreonthatfront.)

NowhammiesHere’ssomethingimportanttounderstand:Thisisnotavegetarianorvegan-focusedcookbook.It’snotanondairycookbook.You’llfindmilk,honey,cheese,mayo,andmorenonveganstufflikethatinhere.Maybeeventheoccasionalcrumbleofbacon.ButwhereverIcan,I’llpointoutpossiblesubstitutionsifyouwanttoeatvegan,and,besides,ifyou’reacommittedvegan,youprobablyhaveabunchofworkaroundsalready.Butthepointofthisbookisn’ttoavoidmeat,it’sjusttoaddanotheroptionintoyourrepertoire—

ahigh-protein,low-fat,low-carb,low-cholesterol,gluten-free,calcium-rich,inexpensive,readilyavailableoptionthatalsohappenstobereallyeasytoworkwith.

I’mnotgoingtohityouwithanywildlyunusualingredients.Noagar-agarorhempseedsorvirgincoconutoilfromthesouthern-facingslopesofMountMatavanuhere.Notthatthere’sanythingwrongwiththosethings.Theyhavetheirmerits,butmanyofthemarehardtofindandnotsocheap.Besides,sinceI’manomnivore,I’mjustashappytousebutterorchocolate.

I’mnottryingtofoolanyoneintoeatingtofu.Ihaterecipesthattrytofakepeopleout.I’mnotgoingtocallitchickenifitisn’toramilkshakeifitisn’t.Although,ifit’seasiertoexplainwhataparticulardishissortoflike,Imightdothat.LiketheTofuSaladrecipeonthispage.It’snoteggsalad,butyoucankindofuseitassuch,soI’vementionedthewords“eggsalad”togiveyouaclueaboutwhattoexpect(eventhoughtherearen’tanyeggsinit).There’soneexception,whichisSaltedCaramelTofu“Cheesecake”(thispage)—there’snootherwordforcheesecake.

Inshort,Idon’tthinktofushouldreallybeconsideredasubstituteformeatoranythingelse.Tofushouldstandaloneasalegitimatefoodthat’seasytocookwithand,onceyougettheswingofitandgetawayfromthegoopandglop,ridiculouslyeasytolike.Youjusthavetogiveitachance.

SomeonewithexperienceinPRmadeadecisionearlyontogoaheadandintroducetofutotheAmericanmarketastofuratherthanwhatitreallyis:soybeancurd.Notmuchofaringtoit,youknow?“Getyourgourmetsoybeancurdhere!”Justcan’treallyseethatflyingofftheshelves.

So,marketersusedashorterversionoftheJapanesename(toufu)which,atthetime,hadthebenefitofnotmeaningmuchtomostAmericansupermarketgoers.Itwasacleanslate.Butmysterybreedsdistrustandpeoplewereslowtowarmuptotofubecausetheyjustdidn’tknowwhatitwasorwhattodowithit.Aplain,paleblockofspongywhitestuffstoredinwater?Suspiciousatbest.

Buttofuisn’tanyweirderthan,say,yogurtorcheese,really.Itdoesn’texactlygrowontrees,butitdoesn’tfallallthatfarfromthesoybeanplant.

HowtheymakeitFirst,driedsoybeansaresoakedinwaterandprocessedintoapaste.Thatpasteismixedwithwaterintoaslurryandcooked(oftenunderpressure),thenstrainedtoremovethesolids(whichoftengotothepigtrough;hogslovethestuff).Theremainingliquidiscoagulatedbymixingitwithacoagulantlikecalciumsulfateormagnesiumchloride(extractedfrombrinywaterliketheGreatSaltLakeinthesamewaywegetseasaltfromtheocean).Thisturnsthesoybeanliquidbackintoasemisolid,kindoflikecottagecheese(curdsandwhey,ifyouwill).

Then,dependingonwhatthefinalproductissupposedtolookandfeellike(silken,firm,orextra-firmarethethreebasictypes),thetofuisdrainedandpressedinawooden(oftenbamboo)ormetalpressingcontraption.Theyputthescrewsonit,sotospeak,tocompressitandhelpitexpelwater.It’sthenpasteurizedat180°F(82°C)tomakeitabitsaferandmoreshelf-stable(muchlikemilk),and,bingo,tofureadyforsale.

See?Noweirderthanyogurt,whichwasinventedwhenMongolsstoredmilkinasheep’sstomach,tiedittoahorse,andwhilegallopingacrossthesteppe,jostledandjiggleditaroundwithabunchofbacteriaforlongenoughtofermentintosomethingthat

Peoplehavebeenmakingtofufor,like,thousandsofyears.Nokidding:There’sevidencethatfolkswereeatingitinChinaduringtheHanDynastyinthesecondcenturyB.C.E.Sogetonthebusalready.

BuyingtofuChooseastyleoftofubasedonwhatyou’regoingtouseitfor.Therearethreebasictypes,thoughyou’relikelytofindevenmorevariationsdependingonwhereyoushop.Mosttofucomesprepackagedinlittlesquaretubscontainingabout14ouncesoftofu(sometimes16ounces).Notallgrocerystoresareconsistentaboutwheretheykeepit,buttheproduceareaisthefirstplaceIalwayslook,andit’sthereprobably60percentofthetime.Occasionallyyou’llfindtofunearthecheeseordairy.So,goodluck.

SilkentofuSilkentofuissoftandyogurtlike.Smushy.Silky(getit?).Ithasn’thadmuchliquidextracted,andithasn’tbeenformedintoblocks.Thisisthebesttofuforthingslikesmoothiesordips,orforotherthingsthataresupposedtobesoft,likepuddingorcustardpies.

FirmtofuFirmtofuisthemostpopularkind.Itcomesinasolidbutpliableblockwithafairlyhighwatercontent.It’seasytocrumbleandtoslice.Formostrecipes,beforeyouuseit,youshouldpressorsqueezeittogetthewaterout(seethispage).

Extra-firmtofuItdoesn’ttakeageniustofigurethisoneout.It’sfirmerthanfirmtofu,haslessmoistureinit,andiseasiertocutintodistinctcubes.Extra-firmisacesforthingslikepan-fryingorgrillingbecauseitholdsitsshapeanddoesn’tfallapartveryeasily,evenafterasqueeze.

OthertypesoftofuYoumightalsofind“lite”tofu,bothfirmandsilken,whichhasabitlessfatand/orcalories(andnotquiteassmoothatexture),andflavoredtofu.Skiptheflavoredtofubecause,atbest,itwilltasteoverflavoredand,atworst,itwilltastetotallyartificial.Besides,you’regoingtoaddyourownflavortothetofu,andyouwanttocontrolityourself.

Andforgettofuthat’salreadycutintoblocks.Ittypicallycoststwiceasmuch,andittakesprettymuchnotimeatalltocutupyourowntofu(seethispage).

Ifyouchosetherightneighborhoodtolivein,youhaveanAsianmarketorrestaurantnearbythatmakesandsellsfreshtofu.Ifyou’veneverhadadishofwarm,freshtofu,

you’reinforanearlyindescribabletreat,whichIwillhereattempttodescribe:Imagineabowlfullofsoft,cozy,savory,silky,milky,creamypudding.(OK,Ifailed,buttryitifyoucan.)Lovelywithachillyglassofbubbly.

StoringtofuJustlikemeatandmilkandex-lovers,tofucangetalittlefunkyifithangsaroundtoolong.Avoidthat.Forstarters,alwayscheckthesell-bydatebeforeyoumakeapurchase.

Firmandextra-firmtofuissoldpackedinwater.Whenyouopenthepackage,slicewhatyouneedofftheblock,dropwhatisleftinanairtightplasticcontainer,coveritwithfreshwater,andkeepitintherefrigerator.Itshouldlast3to5days.Butdoyourself(andyourtofu)afavorandchangethewatereveryday,especiallyifthewaterstartstolookcloudyormuddy.

Ifyou’renotsureifthetofuisstillfresh,giveitawhiff.Freshtofudoesn’tsmelllikeanythingatall,butoldor“off”tofuhasamild,sourreek.Ifyouhavesuspicions,orsmelloldsocksratherthanfreshwater,tossit.It’ssadtothrowawayunusedfood,butit’snogoodanymore,soletitgo.Consoleyourselfwithanewblockortwooftofu.Afterall,it’srelativelyinexpensive,andwell,bettersafethanstomachachey.

Youalsocanfreezetofuforaboutthreemonths.Justmakesureyoupressitfirst.Freezingismorethanastoragefix,it’salsoausefulcookingtechniquethatcanleadtomoreintensely-flavoredtofu(seethispage).

Ifyouhavelotsofleftovertofuthat’sclosetoitsexpirationdateandyoujustcan’tbringyourselftoditchit,crumbleit,fryitupinanonstickskillet,andstickitinthefridge.Cooked,itshouldlastafewextradays.Justtossitintoastir-fryorsoup,andyou’llbegood.

Thebestwaytopresstofuiswithatofupress.Iknow,Iknow.Moreequipment!Look,I’manavowedantigadgetfanatic.Ihatehavingmoretoolsinthekitchen.ButIactuallybrokedownandboughtatofupress,andI’mgladIdid.Itmakespressingtofueasierandkeepsthekitchencleaner.Youcanbuyacheaponeforunder$20oraritzyonefornorthof$100(bonus:thepriceyonewilllikelybeniceenoughtokeeponyourkitchencounter,sparkingallsortsofspiritedconversation).Cheaporexpensive,mosttofupressesonthemarketshouldgetthejobdonenicelyifyoufollowtheridiculouslysimple(usuallypictograph-style)directionsthatcomewithit.
