The Boulevardier four roSeS Small baTch, campari, cocchi di Torino vermouTh

— £11.00

Appeared in 1927 book “Barflies and Cocktails” by Harry McElhone. Obviously, this is a Negroni with bourbon in lieu of gin. It was the signature drink of Erskin Gwynne, expatriate writer and editor of “The Paris Boulevardier’’ a Parisian monthly magazine.

The seCreT CoCkTail Tanqueray gin, apple-jack, lemon juice, Tac grenadine, egg whiTe

— £12.00

This is a forgotten cocktail, in the truest sense; it is cloaked in familiarity because of its similarities to the Pink Lady cocktail. Adding some applejack to the original recipe made the drink immeasurably tastier, but not one whit sweeter. However its history is obscure and we might never know who first created it.

Clover Club Tanqueray gin, lemon juice, Sugar Syrup, raSpberrieS, egg whiTe

— £11.00

The Clover Club drinker is traditionally a gentleman of the pre-Prohibition school. In the middle of the eighteenth-century, it was made in the bar of the Bellevue Stratford Hotel in Philadelphia where the Clover Club members gathered and the drink originated. The drink didn’t break out of Philadelphia until 1910.

Pegu cLubferdinand’S gin, orange curaçao, lime juice, lemon & Thyme biTTerS

— £12.00

The Pegu Cocktail was the signature drink of Burma’s Pegu Club. The club was located just outside Rangoon, and its membership comprised only foreigners, who were senior government and military officials and prominent businessmen. The recipe appeared in the “Savoy Cocktail Book” of 1930 by Harry Craddock and was called The Pegu Club Cocktail.

The Millionare #4 zacapa 23yr, plymouTh Sloe gin, apricoT brandy, lime juice

— £15.00

Recipe appears in the “The How and When” cocktail book of 1937. Different formulas can be found through the years; this incarnation offers a nice balance between sweet, tart and strong.

red wine, orangeS, wholenuT, cloveS, ginger, cinnamon, STar anice, nuTmeg, vanilla

£11.00

Mulled wine dates back to Roman antiquity, but it wasn’t until the 14th century that the mix of wine, fruit and spices gained its name, from an Old English

word meaning “muddled.” While the word “muddle” is most commonly used today to denote a generally confused state, in its original meaning, that confused state was brought about with alcohol. It is thought that the process of mulling wine

was first employed as a way to save wine that was about to spoil.

In medieval times these wines were called Ypocras or Hipocris, named after the physician Hippocrates. They were thought to be very healthy, and indeed, with wine

at the time being far more sanitary than water, these heated drinks probably did keep people healthy through the cold winters.

Moving forward to the 1500s, cookbooks listed methods of mulling “Clarrey”, or Bordeaux. Recipes involved honey, cinnamon, cardamom, galingale and of course

French wine. Mulled wine was a favourite in Victorian England, and Negus - a type of mulled wine - was even served to children at their birthday parties.

Today, mulled wine is a staple at many holiday parties.

Charles Dickens gets the credit for elevating mulled wine into a traditional holiday drink. While mulled wine appeared in several of the beloved novelist’s

books, it was its appearance in his popular short story, A Christmas Carol, that sealed its place in Christmas culinary history.
