Welcome to the Stockbridge Forum. We have now successfully
expanded our readership to include Goodworth Clatford and hope to expand our readership even further in the coming months.
Within the pages you will find a monthly recipe and a children’s activity corner page (this month is Autumn month!).
We need your help!Do you write? If you feel that
you could contribute an article to the Forum then please call the editor on: 01962 735137, we would be delighted to hear from you. We would like to include a local walk each month and would therefore greatly appreciate help from our readers. Are you a walking organisation? Do you have a favourite local walk? Please send it via email or post and you could see it in print!
From next month we will be adding a letters and comments page to the magazine. It's your opportunity to speak to us and let us have your thoughts, be it on the magazine itself or the content of an article. The Forum is for the community and the community needs a voice, so our letters page will give you the freedom to speak.

Test Valley residents can do something really straightforward this month to help
save thousands of pounds of public money.
Electoral canvass forms must be sent out by the Borough Council each year to confirm who is eligible to vote in the area. The forms will be arriving very soon. If the details have not changed since last year and are all correct on the form when it arrives there’s no need to send the form back – it can all be confirmed online or over the telephone at no cost to council taxpayers.
To do this residents can simply go online at www.registerbyinternet.com/testvalley and follow the instructions or use the security code printed on the form and confirm the details by calling 0800 197 2328. For a small fee registrations can also be confirmed by texting 2328 and the security code to 80212.
The Council’s Corporate Portfolio Holder, Councillor Daniel Busk says: “If your registration details are unchanged then confirming them online or over the phone saves the cost of return postage. The sooner it is done the better, so that costly
You can save public money!
reminders and visits from canvassers won’t be needed.
“There are over 85,000 people who could be eligible to vote in Test Valley, but they can only do this if they are on the Register of Electors. It is really important that people confirm their registration with us. If the registration is not confirmed then voters at that address will no longer be on the Electoral Register.
“To go on to the Register at a later date you will then need to re-register and run the risk of not being eligible to vote in local, regional or national elections. Not being on the Electoral Register can also affect credit ratings.
“Even if some changes are needed, it’s very easy to do. You will have been sent a list all of the people currently on the register at your address. Just add anyone who should be registered and cross-out anyone who is no longer living at your address. We will need your signature to confirm any changes, so send the form back to us without charge as soon as possible, in the pre-paid envelope provided.”
Electoral Registration forms should be returned to the Council as soon as possible and at the latest by 15th October 2010.

Here's a selection of frequently asked questions especially for you sceptics (you know who you are) 1. When you say 'room' or 'carpet' what do you mean? We mean average size areas, say 10x12ish. But we don't quibble if the areas are a little larger - it's all done on fairness really. 2. Do you move furniture? Our pricing policy reflects the time it takes us to clean working around furniture, rather than moving it. That said, we are for example, happy to move your three piece suite backwards and forwards cleaning under it and replacing it back into position. What we don't price into the job at these discount rates is moving large pieces of furniture like bookcases, sideboards or wardrobes. Similarly we are not insured to move electrical items, in particular flat-screen tv's. Again we apply common sense and fairness to the situation and inevitably we do end up moving some furniture around, even at these discount prices. 3. Are there any 'hidden' extra costs? The prices quoted above are fully-inclusive and are the actual prices you will pay (VAT is included).

Modern Day Animaliers Sam Sopwith
Georgie Welch Kate Denton
An Exhibition of Painting and Sculpture
3rd—31st October 2010
Preview 3rd October noon—3pm. Tickets or Catalogue available from

Three internationally acclaimed female artists who specialise in the portrayal of
animals will be showing a selection of their work at a major exhibition being held from 3 to 31 October at Stockbridge Gallery in Hampshire. It is rare for such an extensive and unique collection of 75 exceptional pieces of work to be exhibited outside London.Sam Sopwith, Kate Denton and Georgie Welch have each established themselves at the forefront of their chosen genre and the exhibition will include a mix of both their canine and equine works in two and three dimensions. Sam Sopwith studied with the renowned sporting artist Neil Forster, under whose expertise she developed her skills in drawing animals. She has undertaken many commissions on a wide variety of subjects, including houses, racehorses, highland cattle, portraits of members of Her Majesty's Bodyguard and virtually every known breed of dog. Sam is the grand-daughter of Sir Thomas Sopwith, the pioneering aircraft designer.
Kate Denton has worked for 30 years as a sculptor and went to Goldsmiths College where she studied under Sir Ivor Robert-Jones. She took a post graduate qualification in foundry techniques and then worked in Poplar, making her one of the first women in the UK to work in a commercial foundry. She has exhibited broadly throughout the UK and South Africa, and was elected to the Royal Society of British Sculptors in 1993.Georgie Welch specialises in limited edition bronzes of dogs and horses. Having spent most of her childhood on

horseback Georgie left school and rode professionally until she started sculpting in 1995 and now works solely as a figurative sculptor. Georgie won the British Sporting Art Trust Award in 1998 and all of her sculptures are cast in the `lost wax` method of casting at the renowned Pangolin Editions Foundry in the UK. She was also recently acknowledged as one of the best in show at the The Society of Equestrian Artists International Open Exhibition.Stockbridge Gallery specialises in animalier art and sculpture, exhibiting a fine selection of work from early 19th century to modern day artists. “I opened the gallery in 2009, having had a life-long passion for art, and in particular dogs in art. Despite the difficult economic conditions, interest in animalier work continues to flourish,” says Victoria Armstrong, curator of Stockbridge Gallery. “We are delighted to have the opportunity to hold this major exhibition, featuring
three of the most talented contemporary UK animaliers, whose work features in the private collections of many notable connoisseurs. The aim of the exhibition, however, is to show that beautiful works of art are also affordable and the exhibition will display some 75 pieces, which we hope will appeal to animal lovers and art lovers alike.” The preview is to be held on 3rd October (noon to 3pm) and for more information or to request a catalogue, phone Stockbridge Gallery on 01264 810142, email [email protected] or visit www.dogsinart.com. The gallery is situated in the picturesque village of Stockbridge, Hampshire and is open to the public every week from Tuesday to Saturday. Private viewings available on request. ‘Dogs in Art’ is happy to ship work throughout the UK, Europe and internationally.

Tom, Dick and Harry live at the bottom of our garden. To the uninitiated, these are
our apple trees. Nicknamed in a flight of fancy they have absurdly stuck. The names serve us very well, even if they totally bemuse everyone one else. “Harry is not looking well” (he is most in the shade). “I’ve lopped a bit off Tom” (he overhangs the path). “Dick is looking a bit droopy” Beg pardon! No, it’s all above board. We bought dwarfing rootstock so that they would not become too big for the garden. Except no-one thought to explain this to Tom, Dick and Harry. We chose good croppers; we now know the error of our ways. They try very hard to grow above their alleged 8 – 10 feet. They have very spindly branches and very heavy crops; which we annually forget to thin out until it’s too far gone. So now our three apple trees look more like weeping willows. And yes, we probably should have espaliered them at some point, but they are now seven and they are set in their ways. So, having remembered at the last minute to thin them out a bit, I have supported them best I can all summer (physically and emotionally you understand) and must now try and harvest the bountiful crop before they all drop to the ground and feed the squirrels.
We were a bit late to the garden party this year; on a Friday in May we managed to beat the Bank Holiday pandemonium and come home laden with trays of bedding plants and stock for the vegetable patch.
The Bountiful Garden
All of which sat in its trays for another two weeks, whilst I valiantly watered it daily and we bemoaned the lack of time to plant any of it. Then one afternoon my husband grabbed the opportunity and planted up the vegetable patch before it got too late in the season. He toiled hard, his back ached and he declared he felt like a ‘proper gardener’. It all looked magnificent. We awoke the next morning to find the rows of brassicas stripped bare. ‘Pigeons’ said Mother. ‘Really?’ we replied in disbelief. Our innocence was abruptly ended when a suspicious looking pigeon was spotted with a beak full of green leaves. So next morning I quickly erected ‘the cage’; a triumph of bamboo canes, netting and twisty wire that has served very well to keep all manner of wildlife out and thwarted every attempt to get inside to weed. But then weeding is not my strong point. Well, it is a never ending task at the best of times and our garden is mostly dandelions. Mother suggested I start with one bed and try to keep it weed free. It was good
advice, helped enormously by the fact that I picked the raised bed which is not only near enough to the back door for late evening pottering, but is now so overrun with herbs, raspberries, salad and a rampant courgette that any dandelion would be hard pressed to break though.
Our gardening efforts are always bound by time, energy and local pestilence. We have an unwritten agreement with wire worm that we will plant potatoes every year and they will neatly destroy them for us, and this year’s attempts at root vegetables have yet to tell just how thriving our slug population is. But, despite the odds, our harvest has not been too bad and it all served very well when six year old daughter announced her school topic was ‘growing stuff’. We dashed around proudly taking pictures of all the fruit, herbs, salad and vegetables which at that point were looking positively luscious. A few weeks of unintentional neglect and the hardiest have proved their
Darwinian point which we applauded by plundering their bounty, such as it was. We have had a few good servings of broad beans, broccoli, runner beans, courgettes and tonight the first couple of corn cobs. Even the tomatoes put on a good show, although you have to be really quick to get to them before the daughter! The raspberry plants brought from a local plant fair have had a good first year, as have the ‘marked down, end of line’ DIY shop strawberries. None of this matches the bounty of Mother’s harvest of course; personally I blame it on the soil - hers is perfectly brown and crumbly in that TV garden kind of way. She keeps sending me home with bagfuls of potatoes and delicious delicacies that make me want to try harder. But at least I can always rely on my three boys, Tom, Dick and Harry to reciprocate with bagfuls of apples that she uses to make all manner of things. ‘More power to her elbow’, as my Grandma would say.- AWB

New scientific research has revealed that a plant compound in watercress may have
the ability to suppress breast cancer cell development by “turning off” a signal in the body and thereby starving the growing tumour of essential blood and oxygen.
The research, which was unveiled at a press conference at the Royal Society of Medicine’s Chandos House on 14 September, was conducted by the University of Southampton. It shows that the compound, phenylethyl isothiocyanate (PEITC), is able to interfere with the function of a protein called Hypoxia Inducible Factor (HIF), which plays a critical role in cancer development. As tumours develop they rapidly outgrow their existing blood supply and further development isn’t possible until they are able to obtain enough oxygen and nutrients to maintain the growth of cancer cells. To get past this roadblock, the cancer cells send out signals which cause the surrounding normal tissues to grow new blood vessels into the tumour which then supply oxygen and nutrients. HIF is at the heart of this process of inducing new blood vessel growth. However, PEITC, of which watercress is the richest natural source, was shown in laboratory tests to have the ability to block the function of HIF.
The research team, which
was led by Professor
Graham Packham of the University
of Southampton’s School of Medicine
at Southampton General Hospital,
then went on to show that PEITC may
“turn off” HIF by changing
the function of a second protein
called 4EBP1. Importantly, this provided a measurable readout that could be used to find out whether eating watercress could be affecting the HIF epathway. Working with Barbara Parry, Senior Research Dietician at the Winchester and Andover Breast Unit, Prof Packham performed a pilot study in which a small group of breast cancer survivors underwent a period of fasting before eating 80g of watercress (a cereal bowl full) and then providing a series of blood samples over the next 24 hours.
The research team was able to detect significant levels of PEITC in the blood of the participants following the watercress meal and, most importantly, could show that the function of 4EBP1 was also measurably affected in the blood cells of the women.
The two studies, which have been published in the British Journal of Nutrition[i] and Biochemical Pharmacology[ii] provide new insight into the potential anti cancer effects of watercress, although more work still needs to be done to determine the direct impact watercress has on decreasing cancer risk.
Prof Packham commented: “The research takes an important step towards understanding the potential health benefits of this crop since it shows that eating
watercress may interfere with a pathway that has already been tightly linked to cancer development.”
PEITC is the phytochemical which gives watercress its unique peppery taste. Watercress is the richest natural source. PEITC has previously been shown in many in vitro and in vivo animal studies to have strong anti cancer properties. Pioneering work by Professor Stephen Hecht in 1995 demonstrated that the compound could neutralise a cancer causing chemical found in the blood of smokers. But until now no clinical investigations have been undertaken to demonstrate the mechanism for dietary watercress to exert its protective influence on humans.
The Southampton research was funded by The Watercress Alliance[iii], a consortium of British watercress farmers. It follows research they funded with the University of Ulster, Coleraine, in 2007[iv] which found that watercress increased the ability of cells to resist DNA damage caused by free radicals and that daily intake of watercress significantly reduced levels of DNA damage found in blood cells. DNA damage is considered to be an important trigger in the early stages of cancer.
Watercress Alliance member Dr. Steve Rothwell commented: “We are very excited by the outcome of Prof. Packham’s work which builds on the body of research which supports the idea that watercress may have an important role to play in limiting cancer development. It is fitting that the latest project is being carried out in Hampshire which is at the centre of UK watercress production.”
Prof. Packham added: “Understanding the risk factors for cancer is a key goal and studies on diet are an important part of this. However, relatively little work is being performed in the UK on the links between the foods we eat and cancer
development. Support from organisations such as the Watercress Alliance makes a strong contribution to research in this very complex area.”
A summary of the research was accepted for inclusion in the Breast Cancer Research Conference which took place at the University of Nottingham on 15th to 17th September.
Breast cancer is the most common cancer in women in the Western world and currently affects approximately 1 in 9 women during their lifetime.
Grown in mineral rich spring water, drawn from deep under the chalk downs of Hampshire, Dorset and Wiltshire, watercress packs a powerful nutritional punch, gram for gram containing more iron than spinach, more vitamin C than oranges and more calcium than milk. It is brimming with Vitamin A (converted from beta carotene) with 80g providing a whopping 42% of the recommended daily allowance. Its curative properties have been revered down the centuries; Hippocrates, the father of medicine, is said to have located his first hospital close to a spring to ensure fresh watercress to help treat his patients, Greek soldiers were given it as a tonic before going into battle and the 16th Century herbalist Culpepper claimed it could cleanse the blood.

A most delicious tart, a great success in my restaurant.
Method1. Cut the vanilla pod in half length wise. Grate the seeds inside. Boil 1 litre of water with 100 grams of sugar, the vanilla seeds and vanilla pod. When boiling also add the pieces of quince.2. Butter a ovenproof dish. Make a caramel in a saucepan using 175 grams of sugar. When a nice brown/gold colour remove from heat.3. Pre-heat the oven to 180˚C or Gas Mark 6.4. After 30 minutes strain the quinces from the
boling water with a strainer making sure that you keep the vanilla pod for later. Pour the caramel onto the oven proof dish and place the two half vanilla pods on top, then cover carefully with the pieces of quince. Place some bits of butter on top of the pieces of quince.5. Place the ovenproof dish into the oven and cook for approximately 30 minutes.6. Remove the dish from the oven and carefully pour off the extra juice. Cover the quinces with the pastry (you can brush with a little egg wash if you feel – this is not
La Tarte Tatin Aux Coings
really necessary as the tatin is served up side down). Poke once or twice in the middle with a small knife.7. Return to the oven for another 25 / 30 minutes. The tart must be beautiful gold brown.8. Take out of the oven and place the hot dish on a wet cloth (it helps release the tart from the dish).9. Place a large flat tart dish on the tart and turn over (away from you to avoid been burned by sugar or juice).10. Serve warm with an excellent vanilla ice cream.
Keep a day or two. Enjoy! Germain Marquis

The new Sure Start Children’s Centre, run by The Children’s Society,
for Stockbridge and the surrounding villages has now been named ‘Water Meadow Children’s Centre’.
A competition was held in local schools, pre schools, nurseries and also with local childminders. All entrants were asked to think of a name and design a logo based on the nature in their community.
Our winner Joshua Hearn who came up with the name 'Water Meadow' attends Stockbridge Primary School. We will be presenting Joshua with his prize during a school assembly in the near future to celebrate his achievement. Water Meadow Children’s Centre is based at its temporary premises in Stockbridge Town Hall on Monday’s and Wednesday’s 9.00am to 2.00pm. The new premises, which are being built on the junior school grounds, are predicted to be ready by February 2011. The Children’s Centre will be organising activities for children under five and providing an information and support service for parents, carers and childminders.
Currently the children’s centre runs a “Stay & Play” group in
the town hall from 9.30am – 11.30am every Wednesday. We welcome any parents or carers from the local area with children from 0 – 5 years old to come and join us for a safe and enjoyable environment for both the children and their carers.
Sure Start brings together childcare, early education, health and family support services for families with children under 5 years old. The aim is tackle child
poverty and social exclusion working with parents-to-be, parents, carers and children to promote the physical, intellectual and social development of babies and young children so that they can flourish at home and when they get to school.
Sure Start brings together service providers from the statutory sector like health as well as voluntary, private and community organisations and parents themselves to provide integrated services for young children and their families based on what local children need and parents want.

Hampshire Mum's Diary
Its Sunday 6.20am, I sit glassy eyed with Star I in the trusty Renault which is stuffed to the gunnels with the debris of our
lives.
Is there a crisis? No far from it; we have successfully completed phase one of the major house de-clutter and await the arrival of a dear chum and mate of Star I with whom we will journey to the old cattle market in our local Cathedral city. For it is here, as virgin vendors, we will attend our first ever car boot sale.
My chum, who is an experienced ‘booter’, assures me that an early start is essential and she’s right; by the time we arrive there are already three lanes of vehicles varying in age and type, neatly queued. So we obediently take our place.
And there we wait a little while…and then just a little while longer…Luckily the Earl (Grey) is with us and as we sip Star I notices two men sidling up to the back of the car clearly checking out the contents. I feel strangely awkward about the whole thing, even slightly sullied.I wondered if the cows at market felt that way as they were scrutinized for breeding, price and ultimately the best cuts.
Cattle Market and Conspicuous Consumption
My bovine sympathises were interrupted by the high viz marshal waving us on to our allotted spot. At this point it became immediately apparent that we were surrounded by expert sales people; three tables with cloths over seemed to be de rigor and all their respective wares individually priced and displayed to their best advantage.
Our stock was strewn on the ground around the back of the car and was in danger of encroaching upon the neighbouring pitches, as we battled to retrieve the table, which the husband had kindly packed, from underneath the remaining boxes.
Mild panic set in; we were pounced upon hungry bargain hunters, “How much for that Hornby love? Will you sell the trains separately, eh? Eh??"
I could only manage “Um...err...” in response but managed to fend them off with exorbitant prices. But I need not have worried for Star I having set up the stall table and all had now seemingly turned into Alan Sugar. “Sit in the boot Mum with the petty cash and leave this to me ok?”A polite way of saying ‘You’re fired’ I think. So there the Earl and I sat in the warm Sunday sunshine while Star I waxed lyrical about our
bargains relative to RRP to the interested, and slightly bemused, punters. The introduction of a ‘buy one get one free’ initiative meant those hard to shift cuddly toys were soon leaping from the box.
Linguistic and cultural divides presented no barrier to this mini capitalist as ‘Robbo –Sapian’ skipped off – or would have done if he had the batteries- with a delighted Polish punter.
I’d started to enjoy the whole thing when...out from the dark spaces between the cars they came, furtive and nervous they sidled up to the boot of the trusty Renault to make their desperate enquiries. They were the Hornby hungry, those lusting for Lego, the Duplo dependents.
Once I had casually mentioned that there might be some in the large blue box
they pounced on their game sorting through with great dexterity, gently caressing each precious piece found.Star I had, rather worryingly, sensed their strong desire and set a high price. They hesitated but the urge was too strong; powerless to resist the deal was done.
It had been a long morning, by 11.30 Star I was tired of being an entrepreneur and set of in search of burgers leaving me in sole charge. In his absence and with the spirit of ‘everything must go' I made the executive decision, I‘d mark all the remaining stock down to ten...pence.
Despite Star I complaining about the lack of profit margin he happily threw the empty boxes and few remaining books into the trusty Renault and we were off home some seventy pounds the richer.
I was under strict instructions not to come back with anything so I made a quick detour to our local recycling tip...where I managed to pick up two giant magnets and a football table!!
Well, never could resist a bargain.
