With 16 stores popping up like dough balls on a tray from here to
Las Vegas, it’s sometimes dif-ficult to believe that the ever-expanding Honolulu Cookie Co. sprang from such humble beginnings.
It began in 1998 in a small factory in Kalihi, where co-owner Keith Sung came up with the original shortbread cookie recipe. Much research was required because Sung had no prior baking experi-ence, and was looking for the perfect light-and-buttery combination, complete with a delicate, sweet crumble. But after settling on the right homemade blend, he and wife Janet opened their first retail store in Ward Warehouse in 2002, much to the delight of cookie lovers everywhere.
Six years later, the owners baked up additional retail lo-cations around Oahu, and last year the company launched its first Mainland location at The Palazzo in Las Vegas. A second Las Vegas store, lo-cated at The Grand Bazaar, opened in March.
“Our cookie recipes, pre-sentation of the gift packaging and customer service com-bined together is something
that works. It just clicks,” said Herman Tam, vice president of marketing. The cookies are freshly baked
every day from 5 a.m. at the factory — which now is locat-ed in Sand Island — and are packaged individually in pine-apple shapes, which is trade-marked and licensed by the company. The original recipe still is used today.
“Keith researched a variety of recipes before he came up with his own, and travelled around the world to find the right equipment needed to bake the cookies,” said Tam.
“His innovative attitude re-ally represents the heart of our company. We’re not afraid to try something new and always welcome new ideas.”
Even today, Tam said that he and his team are taste-test-ing new flavors at the factory and experimenting with new packaging, which is designed in-house. There now are more than 20 different flavors, in-cluding the company’s most sought-after creations: choco-late-dipped macadamia, white chocolate coconut and choco-late chip macadamia. Each is hand-dipped in chocolate by trained employees.
New locations in Las Vegas even have cookies in trading-
card shapes: spades, hearts, diamonds and clubs. On special occasions, you’ll also find lim-ited-edition shapes like hearts for Valentine’s Day. “But most people recognize us for our pineapple shapes,” said Tam.
He added that Honolulu Cookie Co. currently is gear-ing up for increased expan-sion, with new stores planned for Waikiki and Japan. Also, the company tested different retail formats, such as pop-up stores in Korea this past May, and plans to continue expand-ing there in 2016.
“We’re a growing company, which makes working here re-ally fun for me,” Tam said. “I don’t like being part of a stag-nant work environment, and here, every day drives me and moves me forward.”
Tam hopes to recruit em-ployees who are outgoing and unafraid of engaging in conver-sation with customers. “What makes us special, quite frankly, is the way we treat our custom-ers,” said Tam. “Our sales asso-ciates make people feel at home, and are able to engage custom-ers in conversation when they come into our stores.”

Wrapped up in Christmas
During the holidays at Ho-nolulu Cookie Co., a local store with signature pine-
apple-shaped cookies, the sweet treats take on limited-edition, seasonal flavors, such as ginger spice, white chocolate ginger spice and milk, dark and white chocolate peppermint.
According to Herman Tam, vice president of marketing, many cus-tomers purchase the holiday collec-tion each year and save the gift box-es and tins to keep as collectibles. For this year, he is particularly proud of the Mele Wreath Gift Tin and the Mele Keepsake Boxes, which are both inspired by spice boxes and jars of sweets adorned in warm reds and greens.
“And, if anyone wants to join our team, the holiday season is the absolute best time. This season brings out our team spirit and we work hard, but we have a lot of fun,” said Tam.
