Greetings to the Members of the Saddle and Sirloin Club,
I hope the 2011/2012 academic year has been one of great accomplishment, significant personal growth and lasting memories for each of you. It has certainly been so for me. Since my arrival in January of 2012 I have had the pleasure to meet many of you, and have participated in enough student events on campus to know that we have a fine de-partment and a great student body. Know that we will continue to serve as a student-centered department, and that we will do all we can to provide quality educational experiences now and in the future. I continue to meet every week with alumni of the department and stakeholders from the animal industries. They share a strong interest in our programs and express a desire to partner with us to develop new programs of excellence as we move forward. It is a nice time to be an Ohio State Buckeye!
It is with great anticipation that I await the 2012 Little International show as it an excellent opportunity for students to learn new skills, to work with animals, and for me to meet so many students and parents. Events like the “Little I” are a celebration of the importance of the livestock industry to our heritage, and also a harbinger that we are near the end of another academic year. I hope each student realizes how quickly a baccalaureate program goes by, and that many of the friends you make in your time on campus will remain great friends for the rest of your life.
We are in a time of significant challenges with the struggling economy in Ohio and the nation. In spite of this hardship almost all of our students continue to find gainful employment soon after graduation. This speaks very highly of the value of an Ohio State University education as well as to the quality of our students. Let’s be optimistic about the future and thankful for our time together at such a great institution. Best wishes for an excellent show!

Dear Friends,
It is my pleasure and honor to welcome you to the most highly regarded tradition in the Department of Animal Sciences at the Ohio State University- the 98th Little International. With all the changes occurring in the livestock industry, it is amazing that this prestigious event has held together for 98 years. As I look at the quality of the club – through the members, advisors, alumni, and supporters – it is easy to believe the success stories of various events.
The education we receive within the classroom is very important; however, what mat-ters most is that you can process the academic material and apply it. What matters is our ability to step up, take a leadership position, effectively follow through with the job, and be successful in a hands-on situation. Within Saddle and Sirloin, there are endless opportunities to prepare for real life circumstances.
I enjoy talking to S&S alumni who are out working in the agriculture/livestock indus-try. It is great to hear how traditions evolved. It is even better to know that we are able to keep them alive and build on them. I hope our traditions can be passed on and that we can all look back and say that we are proud of the way we left it.
I want to thank the officer executive team, advisors, members, and supporters, that helped me as president and us as a club, have such a wonderful year.
Whether you are here to see children, grandchildren, friends, family, or students, your guidance and support has enabled them to experience opportunities like no other-Thank you!

Club AdvisorsDr. Steven BoylesDr. Steven Boyles grew up on farms in West Virginia and Ohio, receiving a B.S. from Virginia Tech in 1979, an M.S. in reproductive physiology from The Ohio State University in 1981 and a Ph. D. in ruminant nutrition from Kansas State University in 1984. He served as a livestock extension specialist at North Dakota State University before joining the Animal Science faculty at Ohio State in 1992. Dr. Boyles teaches a course on animal welfare, has an extension position with Beef Quality Assurance, Animal Handling and Facility Design, and focuses his research on forage use and body composition. He is a distinguished teacher and researcher receiving awards such as the OSU Alumni Distinguished Teaching Award. He has served as a beef cattle nutrition consultant internationally and has also been involved in conducting environmental assessments and animal welfare audits of livestock operations in the U.S. Dr. Boyles and his wife Kate, reside in Worthington with their children, Adelaide and C.W.

Club Advisors
Mr. Gregg Fogle Mr. Gregg Fogle is a graduate of The Ohio State University with a Bachelor of Science in animal science and a minor in agri business and applied Economics. He has been employed as the Herdsman of The Ohio State University Beef and Sheep Centers since December of 2000. Gregg resides in Richwood, Ohio and also operates a personal business shearing between 6000-8000 head of sheep each year.
Mr. Kyle CulpMr. Kyle Culp grew up in Decatur, IN, and joined the Department of Animal Science in September 2010. Kyle holds an Associate’s from Connors State College, Warner, OK, a B.S. in animal science from Texas A&M University in College Station, TX, and an M.S. in agricultural and Extension education from Purdue University, West Lafayette, IN. Kyle was a member of the National Champion Livestock Judging Team at Texas A&M, and has judged numerous livestock shows throughout the country. His M.S. research was focused on beef cattle production, and included international work in Kenya, Africa. He is currently working toward a Ph.D. in livestock growth and development here at OSU. Prior to joining the department, Kyle worked as a Youth Livestock Program Specialist at Purdue. He teaches courses in livestock evaluation, and beef cattle production, and coaches the Livestock Judging Team. He currently resides in Hilliard, and recently married Ashley Bushman, a member of the 2004 OSU Livestock Judging Team, and a 2005 OSU animal sciences graduate.
Dr. Dustin BolerDustin Boler was raised in Spencer, Indiana on a small purebred Simmental beef operation. He completed a bachelor’s degree in animal sciences and in agricultural economics in May of 2004 from Purdue University. After graduation, Dustin spent two years working in quality assurance for Tyson Prepared Foods in the Dallas/Fort Worth Texas area. He began graduate school at the University of Illinois in 2006. He completed his master’s degree in animal sciences with a specialization in meat science in August of 2008. He completed his PhD at the University of Illinois studying the effects of Improvest/Improvac on fresh meat quality and carcass cutability of finishing pigs in the spring of 2011. Dustin is currently an assistant professor of meat science in the Animal Sciences Department. He teaches introductory meat science, and team teaches an animal products course and the harvest and fabrication course. His research focuses primarily on applied meat science investing the effects of various production practices on fresh and processed meat quality. Dustin lives with his wife, Brittany, in Hilliard.

Club & Event History
Saddle and Sirloin at The Ohio State University is celebrating 100 years of tradition since its founding in February, 1911, as the first college
organization of its kind. The primary purpose of the club is to promote and stimulate interest in the livestock and meat industries. To further this purpose, the “Little International” is presented each year as one of the club’s major activities. The Little International, originally called the “Young International” was first held in the fall of 1912 in order to help prepare the livestock which would be going to Chicago for the International Exposition the following December. The event has been held yearly since, with the exception of a two-year lapse due to our nation’s military obligation.
On November 25, 1962, at the National Block and Bridle Convention, The Ohio State University Saddle and Sirloin Club became the 40th member of the organization. The purpose of the National Block and Bridle Club is to promote animal agriculture through development of a program of activities to supplement students’ studies and to enhance professionalism of students who will one day be leaders in the animal agriculture industry.
The emblem of the Block and Bridle Club represents the principles upon which it is built. Character, sincerity, and a moral life are asked of members and are depicted in the straight perpendicular of the “B.” The distinct curves of the “B” are symbolic of social pleasure, mental energy, and the determination of members. The meat block and cleaver inside the top half of the “B” represents the material aspects of life and the profession. The bridle in the bottom half of the “B” stands for the behavior of Block and Bridle members, the mannerisms and respect we show towards others, and the manner in which we treat our livestock.
Following the original policy, Saddle and Sirloin is open to all Ohio State University students interested in the livestock and meats industries. Since its organization, it has sponsored various functions and activities, many of which have become tradition. These include the annual awards banquet, livestock shows, judging contests, and the Little International. Funding for these activities includes serving barbeques and a food stand at the Farm Science Review.
Looking back at years gone by will show that members have shared in much success and leaders developed in Saddle and Sirloin have gone far in the field of Animal Sciences. Saddle and Sirloin appreciates the support given to the organization by those at the university and in the agricultural industry and recognizes the importance of these relationships in accomplishing goals and working toward a bright future in the industry.

Academic Quadrathalon Team
Each year the Department of Animal Sciences sponsors a local Academic Quadrathlon competition. Students have the opportunity to test their knowledge and expertise in the animal sciences through a fun and friendly competition. Four teams of 4 tested their skills in 2011 in a quiz bowl, written exam, and an oral presentation. The winning team selected from the local competition represented The Ohio State University at the Midwest Section meetings of the American Society of Animal Science and American Dairy Science Association held in March.
The team competed against 16 other mid-western university teams at the 2011 ASAS Midwest regional competition. The highlight of the competition, was a 1st place finish overall which was the result of a 3rd in the lab practicum, a 3rd on the oral presentation, 6th in the written exam and a 1st in the quiz bowl. Team members also had the opportunity to attend the scientific presentations at the meetings and interact with others who have an interest in the animal agriculture industries including students, faculty, and staff from the other prominent mid-western universities in the animal sciences. Additionally this first place finish gave them the opportunity to participate in the National Beef Quiz Bowl Competition held in conjunction with the National Cattleman’s Beef Association annual meeting in Nashville, TN in February 2012. The team was edged out by TAMU in their final quiz bowl round resulting in a 3rd place finish. Following the competition team members enjoyed the convention and some highlights of Nashville. An amazing trip and an amazing group of individuals, Congratulations!

2011 Meat Judging Team
The 2011 Meat Judging Team represent The Ohio State
University at six regional and national contests throughout the season. These individuals spent countless hours practicing in coolers, traveling in vans, and learning many life skills through the meat evaluation program. They were successful in bringing home the following honors:

Kyle Culp Being named champions Eastern National Livestock Judging Contest in Westminster, MD, highlighted the 2011 Ohio State University Livestock Judging Team season. Seven animal sciences students comprised the team. Team mem-bers included Katy Shircliff (now a graduate student in meat science at University of Missouri), Caitlin Bushman, John Heins, Arlis Young, Tyler Lones, Ty McGuire and Lynette Sell. Clean sweep would describe the efforts of the team at the Eastern National. The team ranked first in beef, sheep, swine, and oral reasons, and obviously, this resulted in being named champion team overall. Individually, Lones took top honors in the overall event, McGuire was reserve high individual, Heins third, Sell 8th, and Bushman 9th. The team also performed well in State College, PA, at All East, in Har-risburg, PA, at the Keystone International Livestock Exposition, and in Omaha, NE, at Ak-Sar-Ben earning fourth overall honors in three competitions. At All East, Heins was second in overall evaluation, Young placed seventh, Lones took top honors in sheep evaluation and Bushman finished fourth in beef evaluation. Heins was seventh overall and in reasons at Keystone, and finished fourth in swine judging. Individual honors at Ak-Sar-Ben went to Shircliff and Bushman finishing fifth and tenth, respectively, in swine. The most prestigious individual honor, however, was earned by Katy Shircliff at the North American International Livestock Exposition where she was named to the ten member All American team. This is an honor bestowed upon students who excel in academics, leadership and judging prowess. The team and coach would like to extend their sincere gratitude to all of their supporters, as well as the flexibility of the many faculty that allowed students to expand their learning opportunities by gaining learning experiences outside of the classroom.

Steeb Showmanship AwardHistory of the Steeb
Regular patrons of the Little International Livestock Show during their lifetimes, Mr. and Mrs. Carl E. Steeb, were the generous
donors of this beautiful rotating trophy known as the Steeb Award. The presentation is made at the end of Little International Activities. In presenting the trophy to our Saddle and Sirloin Club, the donors planned to have the rotating trophy presented each year to the contestant who proves to be the best showman among all species exhibited. The Saddle and Sirloin Club is extremely grateful for the interest the Steebs have shown the Little International Livestock Show. The club plans to continue this tradition by, once again, awarding the trophy in honor of Mr. and Mrs. Steeb.

Joanie Grimes
Joanie, along with her husband, John, own and manage Maplecrest Farms.
Maplecrest is a purebred Angus and Sim-Angus seedstock operation producing 300+ calves a year. They produce bulls and females for both the purebred and commercial sectors of the market place. In addition to the farm, Joanie also manages Premium Ag Commodities, Inc. and ICAP Crop Insurance in Hillsboro, Ohio. Joanie is a 1986 graduate of The Ohio State University with a BS in Agricultural Economics. She was also winner of the Steeb Trophy at the 1984 Little “I”. Joanie and John reside in Hillsboro, Ohio and have two daughters, Lindsey and Lauren.

Chad Endsley
Chad Endsley is a member of the American, Ohio State, and Columbus Bar
Associations, the American Agricultural Law Association, and the Ohio Agricultural Council. Endsley is also the Executive Director of the Ohio Center on Agricultural Law. As Director of Agricultural Law, Chad is responsible for advising the organization on legal and regulatory matters that affect the organization and its members. He is also a frequent presenter at educational programs, seminars, and meetings
on agricultural law topics. Chad received both his Bachelor of Science degree in Agricultural Business and Applied Economics and his Juris Doctor degree from The Ohio State University. Chad and his wife, Katy, live outside Pickerington in Fairfield County with their two daughters. He grew up on a livestock farm in Coshocton County, Ohio.

Kim Manger
Kim Manger resides in Englewood, OH, where she also currently lives with her
fiancé. Kim is the Curing Manager for Sugar Creek Packing in Dayton, OH. Kim was a very active member of the Saddle and Sirloin Club throughout her college career, as she served as President in 2001-2002, Secretary in 2000-2001, and was also a committee chair for several years as well. She won sheep showmanship at the Little International in 2002, and also was awarded the coveted Steep Award this year as well.

Katy Poth Endsley
Katy Endsley is the program manager for the Ohio FFA Association, an association
that strives to build premier leadership, personal growth and career success through agricultural education. Katy’s role as program manager involves working with the state FA officer team and developing and implementing many of the leadership programs for the FFA. In addition to her work for the Ohio FFA Association, Katy co-coordinates the Ohio Lamb Jam and owns a consulting company, Endsley Etiquette. Prior to joining the Ohio FFA Association, Katy was chief of markets for the Ohio Department of Agriculture. Katy received a Bachelor of Science degree in Agricultural Communication and a Bachelor of Arts degree in Spanish from The Ohio State University. She received her masters degree in Education Policy and Management from Harvard University. Katy and her husband Chad have two daughters, Caroline and Lily, and reside in Fairfield County.

“Little I” King & Queen
Arlis Young is a transfer of the Ohio State University’s Agriculture Technical Institute in Wooster, Ohio. Within his
two years at the Columbus campus, Arlis has been very involved in several events. His favorite S&S memory is the Little International competition and social. An animal sciences major, Arlis plans to continue working for the Ohio Department of Agriculture.From Glenford, Ohio, Arlis is the son of Mike and Lori.
Linsdey Grimes, of Hillsboro Ohio, has a long and involved history with the Saddle & Sirloin Club. During her years as an
S&S member, she has served as Little I co-chair twice, as well as assisted with numerous shows and judging contests. As an animal sciences major, Lindsey also represents the college on the 2012 Livestock Judging Team, and the College Ambassador Team. Some of her favorite S&S memories include preparing for Little I. Lindsey will complete her studies within the 2012 Fall Semester, where she then plans to attend graduate school and study Meat Sciences.

As Co-Chairmen for the Little International, it is our pleasure to welcome you to the Ohio State University to celebrate a day of friendly competition, tradition and recognition of our students. We have been blessed with many opportunities at Ohio State and it has been our privilege to organize the 97th Annual Saddle and Sirloin Little International.
We would like to offer a sincere thank you to our fellow students, advisors and sponsors for all their help and hard work to make the Little International a success. A special thank you goes out to the Species Chairs, Yearbook Committee, BBQ Committee and Awards Committee for their commitment to the club and effort towards the Little I. Our wonderful advisors, Gregg Fogle, Kyle Culp, and Dr. Boyles continually offered guidance throughout the preparation process for Little I as well as during the school year and hosting of other Saddle and Sirloin events.
