Chamonix Valley
The Hotel du Montenvers was built in 1880 to
accommodate mountaineers and travellers
who came to see the Mer de Glace.
After several months of work, this legendary
hotel, renamed Terminal Neige-Refuge du
Montenvers, will reopen on 15 June 2017. The
Maisons & Hotels Sibuet group has moder-
nised the hotel, while keeping its identity and
soul. It can sleep up to 66 people in single
rooms, family rooms and 10-bed dormitories.
After a day of skiing or hiking, relax in the sau-
na or try the milk bath in the wellness centre
before going to the ice cave.
Guests and visitors can eat at the Restaurant
du Montenvers, either in its cosy dining room
or on its beautiful terrace facing the impres-
sive ‘Drus’ peaks.

Residence Le Pré du Lac, located in the pictu-
resque village of Saint-Jorioz, by Lake Annecy,
has been refurbished with a new restaurant, a

Located at the entrance of the old part of An-
necy, the Boutik Hotel is a new concept in
Savoie Mont Blanc: all the decorative objects
in the hotel are for sale. This designer hotel
has 12 rooms, each with a different style:
Green Forest, Nostalgic Colours, etc. The Bou-
tik Hotel has a very friendly atmosphere and
organises afternoon teas, Sunday brunches,
pétanque tournaments, and aperitifs. Guests
can also order organic packed lunches to enjoy
by the lake or in the mountains.

The five-star Hotel Le Royal in Evian-les-Bains
is a grand historical building by Lake Geneva,
nestled among 47 acres of parkland. The hotel
reopened in July 2015 after a full renovation.
Le Royal has received the ‘Palace’ label, and is
now part of both the Leading Hotels of the
World group as well as Virtuoso, a luxury tra-

hotel by Lake Bourget. Its seven rooms and
suites have been decorated in an original way,
each with a different theme: the Siesta Suite is
designed as a fisherman’s cabin, and in the
Princes’ and Princesses’ Room, the children’s
beds are inside a castle!
Le Château de Bourdeau has a gastronomic
restaurant called Le Chat qui Nage, where
Welsh chef Siôn Evans cooks local produce.

Challes, built in the 15th century, became a
hotel in 1860, the year that the Duché de Sa-
voie became part of France. Located in Challes
-les-Eaux, close to Chambéry, the capital of

rant and a beautiful four-hectare park.

tury, is renowned for its gastronomic restau-

˃ Domaine des Saints Pères is a beautiful
grand house dating from the 19th century.
Situated close to Chambéry, it has 14 be-

barn particular to the Savoie region. Guests
can enjoy a relaxing atmosphere in this new
room, decorated with old wood, and with
beautiful views of the garden.

˃ Chef Jean Sulpice, who has two Michelin stars for his restaurant in Val Thorens, takes over the Auberge du Père Bise in Talloire, by Lake Annecy. After some important renovation work, the restaurant will open in May. ˃ At two-Michelin-star restaurant Le Clos des
Sens in Annecy-le-Vieux, chef Laurent Petit
cooks local fish and crayfish, as well as locally-
grown vegetables. There is no meat on the
menu. The dining room and kitchen have been
redone to stage the chef’s creations.
˃ Also in Annecy-le-Vieux, an old townhouse
has been transformed into an art gallery and a
gastronomic restaurant. Julien Valéro, who
worked with the famous French starred chef
Marc Veyrat, serves organic vegetarian cuisine
at La Cour de l’Abbaye.
˃ Yoann Conte, who has two Michelin stars
for his restaurant La Maison Bleue, by Lake
Annecy, is opening a pop-up restaurant in his
garden this summer. Yoann Côté Jardin will
open for lunch only, serving a light menu of
tartars, salads, club sandwiches and delicious
desserts. This is a great opportunity to enjoy
delicious food in a relaxing and beautiful
setting.

˃ Carouge is a new restaurant on the shore of
small Lake Carouge, in Saint-Pierre d’Albigny.
Chef Thierry Veronese cooks only local pro-
duce including local vegetables, and fish from
Lake Bourget. His creative cuisine can be en-
joyed with some Savoie wine.
˃ Bourdeau, a beautiful village by Lake Bour-
get, boasts a new restaurant called R du Lac.
The chef and his partner, who is the daughter
of the famous local Michelin-starred chef Jean-
Pierre Jacob, have created a simple but deli-
cious menu based on local produce.
˃ The picturesque town of Thonon-les-Bains
by Lake Geneva has a new restaurant and wine
bar called Le Bistrô des Arts. It offers a seaso-
nal menu with fresh local produce.

˃ The Maisons & Hotels Sibuet group took
over the legendary Hotel du Montenvers in
Chamonix-Mont-Blanc, now renamed Terminal
Neige-Refuge du Montenvers. The Restaurant
du Montenvers will re-open in June 2017, at
the same time as the hotel, after some major
work. Guests will be able to enjoy traditional
local cuisine in the cosy dining room or on the
beautiful terrace. The Bar des Glaciers, located
at the Montenvers train station, has also been
refurbished with natural materials such as
granite and wood. It will re-open in spring and
will serve snacks all day made from fresh
ingredients.
˃ The restaurant of the Résidence Prestige
Odalys Edenarc in Arc 1800 will open this sum-
mer. Amid the contemporary décor, Voga
Goga offers a wide range of fondues: traditio-
nal, Reblochon, morels, vegetarian and Beau-
fort, as well as other traditional French cuisine.

˃ The charming Chalets-Hotel de la Croix de
Fry in Manigod, Lake Annecy, has been
owned and managed by the Veyrat family for
four generations. To celebrate its 80th anni-
versary, a special menu has been created with
traditional dishes from the old days: matafans
(a kind of pancake), potato fritters and a Géné-
py ice soufflé (Génépy is a local liqueur made
from mountain herbs).

11th BALADES
GOURMANDES
On 23 July, Apremont in Coeur de
Savoie will host the 11th Balades
Gourmandes. It is an eight-
kilometre walk in the heart of the
Savoie Vineyard, with several
stops to taste some local produce
and wines.
This walk takes place every sum-
mer in a different vineyard in
Savoie. Last summer, 2,000
people walked around the
Chignin Vineyard.

BOUGNETTES
are delicious potato fritters
served in several refuges in the
Mont-Blanc valley. Try them at
the Refuge du Châtelet d’Ayères,
situated on the Tour des Fiz,
above Sallanches at Refuge du
Tornieux, and at Sous les Freddy’s
in the mountain pastures of Saint
Gervais Mont-Blanc.
FARÇON
also called farcement, is another
traditional local dish. It is prepa-
red with bacon, potatoes, prunes
and raisins, and is served with a
sausage made from pork and
green vegetables, called pormo-
nier. Refuge de l’Orgère at the
edge of the Vanoise National Park
makes an excellent farçon, as well
as Refuge du Mont Jovet in Bozel
and Refuge du Mont Jolly in Sa-
moëns.

Tasty meals in mountain refuges
Proud Hiking in the mountain is even more pleasurable when a good meal awaits you! Here are
our insider tips on what and where to eat at altitude.
˃ Refuge de la Vogeole in Samoëns serves a
delicious soupe châtrée. This soup is made
from old bread, local cheese and onions.
˃ Refuge du Semnoz, above Lake Bourget,
makes an excellent baugiflette, which is a
Tome des Bauges cheese gratin.
˃ Chalet-refuge de Chatovent in Aussois is
known for its excellent matouille, a dish made
of potatoes, apples and melted Tomme de
Savoie cheese.
˃ In Val d’Isère, the Refuge du Prariond’s
keeper has created his own version of a polen-
ta and crozets (a type of pasta) gratin.
˃ The speciality of the Refuge du Bois in
Champagny-en-Vanoise is the brick du Bois. It
is a feuilleté stuffed with Reblochon cheese,
diot and pormonier sausages, covered in a
warm pepper caramel sauce.
˃ Refuge du Ruitor in Sainte Foy Tarentaise
serves smoked diot sausages and melted
Beaufort cheese with a homemade onion pre-
serve.

Whether in the water, in the air or on the ground, every adrenaline seeker
will find an activity to get their rush.

˃ In Annecy, diving company Profil Plongée
offers an exclusive free diving camp with the
world’s vice champion, in Europe’s purest
natural lake. A native from Savoie, Stéphane
Tourreau is the perfect coach to teach
breathing, relaxation and posture techniques.
˃ Walking on water is now possible – or al-
most possible! The aqualine is an aquatic ver-
sion of the slackline. This fun and challenging
activity is organised by Sensations Vanoise in
Val Cenis. They have two 12-metre long lines
stretched between two points at water level.
FAT SCOOTER
After the fat bike, you can
now try the fat scooter. A fat
scooter has big wheels, low
suspension and a low centre
of gravity, and can travel on
all types of terrain. Easy to
ride, the fat scooter gives the
feeling of skiing and mountain
biking at the same time.

d’Arly and the Albanais.

˃ In Passy, just below the Chamonix Valley,
the guiding company Latitude Canyon orga-
nises canyoning by night. Only the abseils un-
der waterfalls, the basins and natural tobog-
gans are illuminated by the guide, thanks to
multicoloured diving lights. The other parts of
the canyoning circuit are in complete dark-
ness, so participants learn how to orientate
themselves at night.
˃ And why not dive in a mountain lake? In La
Plagne, it is possible to dive all summer in the
man-made lake Centron.
Vertiginous activities
˃ Get a rush of adrenaline in Bourg-Saint-
Maurice, Les Arcs, with the Bungee Ejection.
This attraction is a cross between a catapult
and a bungee jump. Equipped with a harness
attached to long elastic ropes, participants get
propelled to a height of 20 metres in two
seconds!
˃ Coeur de Savoie will host part of the para-
gliding World Cup from 20 to 27 May. The 150
best paragliders in the world will compete in
this spectacular show, sponsored by Savoie
Mont Blanc. Spectators will have the opportu-
nity to try tandem flights, get in a hot air bal-
loon, and learn how to make a kite.
˃ Chamonix Mont Blanc, the world’s capital
of alpinism, is opening its first via ferrata.
Beginning next to the top of the Flégère cable
car, the via ferrata Via des Evettes has two
parts: first, a via ferrata (with a steel cable),
followed by a via cordata. A via cordata is a
mixture of hiking, rock climbing and mountai-
neering, and is the perfect initiation for
people who want to get into climbing.
˃ In Aussois, Les Jardins d’Eden circuit com-
bines zip wires, via cordata, and abseiling in
the canyon and gorges of the Arc river, just
under the spectacular Fort Victor-Emmanuel.
This activity is available for people aged 12
and over.

˃ In Courchevel, you can slide at high speed
on the reception area of the ski jump. Safely
seated in a rubber ring, the bravest can try the
90-metre ski jump where the slope is at almost
30%. And you can get back up for another run
with the ski lift or funicular..

˃ There are 27 giant toboggans in Savoie
Mont Blanc. The latest one to open is in Savoie
Grand Revard, just above Aix-les-Bains. The
run is 184 metres long, with a 20% slope and
three tight turns. Slide down on a big rubber
ring and go back up easily, thanks to a lift.
Summer skiing
˃ La Grande Motte Glacier in Tignes opens for
summer skiing every day from 7.15 a.m. The
glacier has 20 kilometres of slopes and 12 lifts.
Learn to ski or improve your technique with
the ESF, who teach all summer.

˃ New for this summer, cryotherapy
treatments are available at the Evian Spa and
at the Cryopole in Challes-les-Eaux, near
Chambéry.
Cryotherapy is a treatment that uses extre-
mely cold temperatures (minus 60 degrees,
and then minus 110) for a duration of two to
three minutes. Cryotherapy is a natural anti-
inflammatory treatment, and it is said to re-
duce pain, increase cell rejuvenation, reduce
signs of aging and help fight stress and depres-
sion.

˃ The Aquamotion Centre in Courchevel, Eu-
rope’s largest mountain aqua centre, offers
aquatic osteopathy sessions. This technique,
still quite new, adapts the therapeutic prin-
ciples of osteopathy to a setting where both
the patient and the practitioner are in the
warm water of a heated pool. The patient is
maintained in a semi-floating position with the
help of small floats. The feeling of weightless-
ness, along with the soothing warmth of the
water, releases muscle tension and contri-
butes to overall relaxation.
