A brewery with an adjoining restaurant – that’s nothing unusual.But with us it‘s the other way around: Our famous restaurant is complemented by an own

small, extraordinarily exclusive brewery! Of course, we attach great importance to good cuisine, a cosy atmosphere and friendly service. And because a delicious beer is an absolute must,

we make it ourselves.

Why the exotic name: „König von Flandern”?

Well, there‘s a legend: In the middle of the 16th century a certain Gambrinus, popularly known as the King of Flanders and Brabant, travelled to Augsburg. Because he was a very fun-

loving ruler who never missed a feast and loved nothing more than a mug of beer, it was later falsely told - as we now know - that he was not only the patron saint of brewers

but had even invented the art of brewing himself!

In reality, the Fleming monarch had come to Augsburg to ask for a loan from Anton Fugger. This was not unusual at that time; people of all walks of life, including royal house members,

thronged to the well-filled coffers of the Augsburg merchants.

The procedure, however, took some time and since Mr Gambrinus could not imagine a more pleasant pastime than hanging around with a mug of foaming beer, he spent many wet and

merry hours in the brewery of a certain Mr Schissler. The latter baptised his beer palace “König von Flandern“ in fond memory of his best customer.

When today‘s brewery was founded in 1988, the charming story was remembered in the name of the venue.

depending on variety.

7. STORE

THE ART OF BREWING

To this day, we carry out the brewing process entirely by hand. In ancient vaults, we let our na-turally cloudy beer mature in peace and quiet, according to traditional recipes.

Like our restaurant, we attach great importance to sourcing the ingredients for our beer from regional suppliers: hops from Hallertau and malt from Bavaria.

Our brewmaster is aware of what a beer needs at all times in order to mature and reach per-fection. He still controls many things “by hand”, which have long been automated in larger breweries. Thus, every new batch of our Drei-Heller beers has a unique individual taste and

a strong character at the highest level of craft. The old brewery slogan comes to mind, „so genuine and true, just how it used to be“.

In the 16th century there were about 60 breweries in Augsburg, one of them also in ourVaulted cellars. The above-mentioned Heribert Schissler had a so-called „Brauereigerechtsame“,

a brewery licence. This license is still in the archives of the city of Augsburg.

By the way, by order of the magistrate, the 60 Augsburg brewers all brewed their beer at thesame time - for a rather bizarre and at the same time very practical reason, which sheds a special light on the time. The magistrate sent out the Stadtbüttel two days before the wedding day to

ask the residents upstream of Lech and Wertach to stop rinsing the material products of their digestive activity into the rivers, „because the laudable magistrate will brew beer

the day after tomorrow“...

In the Middle Ages, beer was brewed from a variety of different ingredients.Only after brewing regulations were introduced by monastery breweries was the gruit, for

example ox gall and many other strange things, gradually replaced by vegetarian hops. At that time, beer was also considered suitable for children; it had a lower alcohol content than today and was largely germ-free due to the boiling of the beer wort – which cannot be said about the

drinking water of the time, especially in cities.

Due to the huge quantities of beer that poured through the throats of citizens in the Middle Ages and early modern times, barley juice was a constantly bubbling source of joy, not least for

the town treasury and state tax authorities, which evolved around 1500 years later. Already in the late Middle Ages, beer production and sales taxes were levied

almost everywhere in the Reich.

That was more than 500 years ago – so if you have a freshly tapped glass of glittering and sparkling Drei-Heller beer in front of you today, you will also experience the outstanding taste

of genuine medieval tradition combined with the modern art of brewing.

AUGSBURG AND BEER

THE EIGHT STEPS OF BREWING

1. MILLThe malt is broken up in our

malt store in an old mill.Cereal starch is converted

into malt sugar.

2. MASH

During refining, the liquid (the so-called front wort)

is separated from the solid.

3. LAUTERThe wort is now boiled and seasoned with

hops. The hops release their aromas and bitter substances

during boiling.

4. BOIL

The wort is cooled to fermentation temperature and the yeast is added.

This is the so-called “pitching.“

5. PITCHNow the yeast „eats“ the sugar just obtained and produces alcohol and carbon dioxide. The main fermentation lasts 7 to 10 days.

6. FERMENT

Once the beer is sufficiently aged, it is served fresh directly from a special

dispensing tank. Cheers!

8. SERVE

He uses only highest quality ingredients that strictly comply with the Bavarian purity law and brews according to our ancient traditions.

What we serve on your plate is regionally sourced to the greatest extent possible.

This guarantees not only the freshness of the ingredients, but also their quality. If there is anything wrong with our potatoes or asparagus, for example, we know which farmers in Schrobenhausen we have to contact. We obtain the eggs from Ried near Mering, and the

much-praised spent grain bread is baked for us by the wood-fired bakery Laxgang. All sausages are made by the butcher Magnus Bauch.

Most of our meals and side dishes are prepared by hand every day. Try our spaetzle, our potato salad, sauerkraut, red cabbage, mashed potatoes and all our sauces. You‘ll taste the difference.

When you eat with us, you can therefore be sure to get fresh, first-class quality - both when it comes to ingredients and preparation. However, for the reasons above one or the other ingredient may not be available in sufficient quantity. Instead of just conjuring up an

alternative from the freezer, our trained service personnel are encouraged to recommend another of the fresh dishes on offer.
