anu Feildel has fast become one of our favourite celebrity chefs, and his new book Manu’s French Bistro gives you 100 reasons why. While

he can’t pick his favourite recipe, his secret ingredient is always the same: butter. With a soft spot for his clever-cooking mum, Manu has won the hearts of foodies everywhere.

Q Tell us about your latest masterpieceA Following on from my first book that focused on home-style recipes, this book challenges the reader with recipes that are slightly more complex and restaurant-style. Manu’s French Bistro took around a year to produce. It’s a lot of work, but when you see it all come together and get that first copy in your hands, then it makes you very proud!

Q What is the number one rule of French cooking?A Butter, butter, butter! When you think you’ve added enough, just add a bit more!

Q French cooking can be very technical and challenging – what advice would you give to home cooks keen to give it a go?A Don’t be frightened; there are some complex dishes in this book but also some simple ones which produce beautiful flavours.

Q Do you think Australians are embracing your passion for French cooking due to your popular role on My Kitchen Rules?A Maybe! I guess being so familiar through my TV appearances, the public is encouraged to think more about French cooking than it would have before.

Q Have you enjoyed this season of My Kitchen Rules?A Yes, it is always fun travelling the country and trying new food!

Q Who was your favourite team?A I can’t say that I have a favourite, all the teams have different qualities and styles which make them all a favourite at some point.

Q What is the best dish you have tried on the show so far?A That’s a tricky one. A dish I really enjoyed was the Massaman curry with roti that Jen and Leigh made. It is a very complex curry to make as there are so many different flavours. This one was just perfect and the addition of roti made it authentic. I felt that if I closed my eyes I would think I was in Thailand.

Q Was there an eliminated couple you are disappointed didn’t make it further in the competition?A It is always sad when we have to eliminate a couple and often we are disappointed – but we have to judge the food on that particular day or challenge, so if they have a bad day or choose the wrong dish it can mean elimination.

Q Do you and Pete often disagree about the food, or are you normally on par with your opinions?A We generally agree. There have been a few times when we have slightly differing opinions which are normally about personal taste.

Q What is your ultimate comfort food?A Bacon. I love it.

Q Who is your greatest food inspiration?A Definitely my mum. Both of my books have been influenced by dishes I remember from my childhood.

Q What does the next 12 months hold for you?A I’m hoping to spend more time at my restaurant this year, but I’m sure there will be more filming and maybe another series of MKR. I’ll start writing recipes for my third book and, of course, I will be at Good Food and Wine shows around the country.
