ABOUT JAPANESE WHISKY

Japan is the second largest producer of single malt whisky after Scotland. Home to rich natural resources and climates that match that of some of Scotland’s most distinguished distilleries, Japan has all the right elements to mimic the conditions for producing a wide range of styles including both Islay and Speyside allowing them to produce some world class whiskies. Japanese whisky has frequently won highly coveted awards such as the “Worlds Best Single Malt” and “Worlds Best Blended Whisky” to name a few.What is really impressive and one of the main reasons for their continued successis that unlike Scotland where each distillery will focus on a particular style of whisky,distillers in Japan will create lots of different styles of whiskies so the blends all comefrom in house casks. THE INFLUENCE OF WOOD ON WHISKY

Many of the characteristics and flavours of whisky are picked up from the wooden casks that it spends its life maturing in. Historically any type of wood may be used to make casks but today the law states all casks

should be constructed of oak.Selected for its toughness, wood plays a crucial role in the development

of malt whisky, with its porous qualities that allow oxygen in and out of the cask & its tight grain structure that prevents leaking.

Oak is easy to work and it can be bent by heat without splitting.

Wood naturally is full of occurring oils called vanillins. It is these oils that are drawn out of the cask by the spirit and over the period of

maturation they add to the whisky’s flavour appeal.

A Hanyu from the distillery's final vintage: 2000. Shortly after producing this spirit, it closed and it is only thanks to former distillery manager Ichiro Akuto that these whiskies have seen the light of day. This is a masterpiece of wood management, combining layers of oak and woody spice with delicate fruitiness.

A special edition Yamazaki from Suntory, aged in a 480-litre puncheon cask, which allows the whisky to mature much more slowly than the standard 230-litre hogshead.

A perfect showcase for the quality of Kavalan's Taiwanese made and matured spirit - a single cask bottling from a first-fill bourbon cask. Distilled on 29 August 2009, this is rich and fruity with lots of woody spice.

The second bottling in the Smugglers' Series from the Arran distillery (the first one proved rather popular indeed!). This one has been matured in a combination of rum casks and first-fill bourbon barrels - - 8,700 bottles were produced.

Super Nikka was first launched in 1962 by Masataka Taketsuru as a tribute to his wife. This 2015 Revival replicates the original flavour profile, which is heavier and peatier than today's bottling.

The first release in a new series from the Arran distillery! The Smugglers' Series Volume 1 ("The Illicit Stills") is an homage to the history of less-than-legal distillation on the Isle of Arran in the 18th and 19th century. The single malt Scotch whisky is crafted from a selection of their malts, including unpeated and heavily peated stock, whisky matured in old bourbon barrels and whisky fully-matured in Port pipes! A fantastic expression - 8,700 bottles were produced.

Amrut Fusion gets its name from the fact that it uses two barleys: Indian and Scottish - with the latter being peated for good measure. Kakubin Yellow Label is Suntory's flagship blended whisky. Produced since 1937, its name means 'square bottle'. A blend of bourbon-cask whisky from Yamazaki and Hakushu, this is a classic example of lighter Japanese whisky and is great in a highball with soda.

A 1991 vintage Balblair which has been finished in casks which previouslyheld Crozes-Hermitage Wine. Shinshu Mars

Situated between the north and south Japanese alps, Mars Shinshu is Japan’shighest whisky distillery, at nearly 800 meters. The Hombo family have been distilling for more than a century and they added whisky to their repertoirein 1949 in Kagoshima. That was the southernmost whisky made in Japan until 1984, when all whisky production was moved to the current location in Nagano.

Chichibu

Started in 2008 helmed by the whisky’s namesake Ichiro Akuto. The Akuto family have been making alcohol in Saitama for over 300 years. Ichiro’s grandfather started making whisky soon after the war in the 1940’s at Hanyu Distillery not until the 1980s did production focus on malt whisky’s.The slowdown of Japan’s economy in the 90s ultimately lead to the closing of Hanyu in 2000. Ichiro rallied in 2008 and is truly a 21st century whisky maker embracing the heritage and heart of the Scotts balanced by the precision of the Japanese.

& orchard fruits with a sweet dry honey & vanilla lingering palate, paired with mimolett. A hard & brittle cheese with a firm & oily texture,

vivid orange colour & very nutty flavour.

LP7 paired with mature chedder - £20The whisky combines the modern ashy style with some older
