Fish cakes with lemon creamPreparation: 30 minutes

Cooking: 30 minutes Serves: 8

800g potatoes, cut into pieces

415g can Woolworths Select Red Salmon,

drained and flaked

1 small red onion, finely chopped

2 tbs baby capers

⅓ cup dill sprigs, finely chopped

1 egg

1 cup dry breadcrumbs

olive oil cooking spray

1 cup light sour cream

1 large lemon, rind finely grated and

2 tbs juice

1 bunch radishes, finely shredded

2 small Lebanese cucumbers,

finely shredded

1 Put potatoes into a saucepan and cover

with cold water. Place over a high heat

and bring to the boil. Reduce heat and simmer

for 15-20 minutes or until tender. Drain and

roughly mash. Transfer to a large bowl.

2 Preheat oven to 150°C. Add salmon,

onion, capers, dill and egg to potato.

Season with salt and pepper and stir well to

combine. Using your hands, shape mixture

into 32 small patties. Coat with breadcrumbs

and place on a large plate. Spray fish cakes

on both sides with olive oil.

3 Heat a non-stick frying pan over medium

heat. When hot, cook cakes, in batches

for 1-2 minutes on each side or until golden.

Transfer to a baking tray and place in oven

to keep warm.

4 Combine sour cream, lemon rind and

juice, salt and pepper. Serve patties with

lemon cream. Top with radish and cucumber.

NOTE: Fish cakes can be made a day in

advance and reheated prior to serving.

Fresh tipTo test that the pan is heated, flick a little

water onto the surface. If is sizzles, you

can add the fish cakes.

variation:Smoked salmon tartlets

Preheat oven to 200°C. Grease 2 x 12 hole

patty pan trays. Cut 1½ sheets partially

thawed puff pastry into 24 squares. Press a

square of pastry into each hole. Prick bases

with a fork 2-3 times. Bake for 10-15 minutes

or until golden. Cool on a wire rack. Combine

½ cup light sour cream, finely grated rind of

1 lemon, 1 tbs lemon juice, salt and pepper

in a bowl. Spoon cream into pastry cases. Top

with 100g shredded smoked salmon. Finely

shred 5 radishes and ½ small Lebanese

cucumber and combine. Spoon cucumber

mixture onto salmon tarts and serve.

Potato bakePreparation: 20 minutes

Cooking: 1 hour Serves: 8

60g butter

¼ cup plain flour

1⅔ cups skim milk

½ cup grated gruyère or swiss cheese

1.2 kg washed potatoes, thinly sliced

1 Preheat oven to 200°C. Grease and line

a 20cm deep cake pan with baking paper.

Melt butter in a saucepan over medium heat.

Add flour and stir until smooth. Cook for 1-2

minutes or until bubbly. Remove from heat and

add milk, whisking constantly, until smooth.

Return to heat and bring to boil. Add half the

cheese. Stir until melted. Remove from heat.

2 Line base of prepared pan with one-third

of potatoes, overlapping slightly. Cover

with one-third of the sauce. Repeat twice

more. Sprinkle remaining cheese over top

layer. Bake for 1 hour or until golden and

potatoes are tender. Stand for 10 minutes

before cutting into wedges.

NUTRITIONAL VALUE

Per serve: 7g protein, 9g fat (5.5g saturated fat),

30g carbohydrate, 6g dietary fibre, 940 kJ

(225 Cals).

Beetroot, red onion & balsamic saladPreparation: 10 minutes

Cooking: 45 minutes

Serves: 8

6 large beetroot, trimmed (approx. 1.4 kg)

2 tbs olive oil

1 large red onion, halved, thinly sliced

2 tsp caraway seeds

¼ cup Woolworths Select Balsamic

Vinegar of Modena

1 Place beetroot into a saucepan and cover

with cold water. Bring to the boil over

high heat. Reduce heat and simmer, partially

covered, for 40 minutes or until tender. Drain,

peel and dice. Place into a bowl.

2 Heat oil in a frying pan over medium heat.

Add onion and caraway seeds and cook

for 3 minutes or until soft. Add to beetroot

with balsamic vinegar. Season with salt and

pepper. Toss until well combined. Serve.

NUTRITIONAL VALUE

Per serve: 4g protein, 5g fat (0.5g saturated fat),

18g carbohydrate, 6g dietary fibre, 550 kJ

(130 Cals).

Brussels sprouts with garlic crumbsPreparation: 10 minutes

Cooking: 15 minutes

Serves: 8

2 slices sourdough bread, roughly chopped

2 tbs olive oil

2 garlic cloves, crushed

800g brussels sprouts, trimmed

1 Process bread in a food processor until

fine crumbs form. Heat oil in a non-stick

frying pan over medium heat. Cook crumbs

for 4 minutes, stirring often, until golden and

crisp. Add garlic and cook for 1 minute.

2 Bring a saucepan of water to the boil.

Add brussels sprouts and cook for

8-10 minutes or until tender. Drain and halve.

Sprinkle with toasted crumbs and serve.

Fish fillets with prawnmousse fillingPreparation: 20 minutes

Cooking: 25 minutes Serves: 8

700g green prawns, peeled and

deveined

1 egg white

⅓ cup finely chopped chives

16 small skinless bream, dory or

snapper fillets

1 lemon, rind grated and 1 tbs juice

30g butter, softened

1 tbs plain flour

1¼ cups white wine

3 bunches English spinach, washed

and stems trimmed

1 Preheat oven to 200°C. Grease a large

roasting pan. Process half of the prawns in

a small food processor until chopped. Add egg

white and process until well combined. Transfer

to a bowl. Finely chop remaining prawns and

add to pureed prawn mixture with 2 tbs chives.

2 Lay 8 fish fillets into pan. Spoon 2 tbs

prawn mixture onto each and spread

evenly. Top with another fillet. Season with

salt and pepper. Bake for 25 minutes or until

cooked through.

3 Mash butter with flour to make a paste.

Bring wine to the boil over high heat.

Reduce heat and simmer for 2 minutes.

Whisk in half the butter mixture, whisking

constantly until smooth. Repeat with remaining

butter mixture. Simmer for 2 minutes. Stir in

remaining chives.

4Meanwhile, place wet spinach into a large

saucepan. Cover and cook over medium

heat for about 3 minutes until spinach is limp.

Drain well. Serve fish on a bed of spinach and

spoon over sauce.

tomato ricotta

Preparation: 10 minutes

Cooking: 15 minutes Serves: 8

Preheat oven to 180°C. Lightly grease 4 x

½ cup ovenproof ramekins. Place 250g fresh

full cream ricotta into colander lined with a

clean tea towel and press firmly to remove

as much liquid as possible. Transfer to a dry

bowl. Stir in ¼ cup pitted green olives,

diced, ¼ cup semi dried tomatoes, drained

and chopped, 1 tbs finely chopped chives,

salt and pepper. Spoon into prepared dishes,

pressing down firmly and smooth tops. Bake

for 15 minutes or until firm to the touch and

golden. Cool. Turn out and serve with melba

toast or plain rice crackers.

NUTRITIONAL VALUE

Per serve: 3.5g protein, 4.5g fat (2.5g saturated

fat), 1.5g carbohydrates, 0.5g dietary fibre,

240 kJ (60 Cals).

Date & walnut rolada

Preparation: 5 minutes

Cooking: 20 minutes Makes: 36 slices

Place 300g dates, stone removed, roughly

chopped (approx. 20 dates), ¾ cup white

sugar, ½ cup lemon juice (you will need

2 large lemons) and 2 tbs honey into a

non-stick saucepan over medium heat.

Cook, stirring constantly until sugar dissolves

and mixture comes to the boil. Simmer for

20 minutes or until all liquid has evaporated

and mixture becomes thick and stiff. Remove

from heat and fold in 1 cup walnuts, roughly

chopped. Cool. Transfer to a sheet of baking

paper and form into a log and roll up in the

paper. Chill for 30 minutes. Using a small

serrated knife, cut into thin slices and serve

with cheeses.

NUTRITIONAL VALUE

Per serve: 3.5g protein, 12g fat (0.5g saturated

fat), 48g carbohydrates, 5g dietary fibre,

1290 kJ (310 Cals).

Baked applesPreparation: 15 minutes Cooking: 35 minutes Makes: 8

¼ cup large dried apricots, chopped

2 tbs raisins, chopped

1 tbs brown sugar

½ tsp Woolworths Select Ground Cinnamon

8 Granny Smith apples

20g butter, chopped

custard or thick cream, to serve

1 Preheat oven to 180°C. Combine apricots, raisins, brown sugar

and cinnamon in a small bowl. Core apples and make a shallow

cut into the skin around the middle of each. This prevents the apples

splitting.

2 Arrange apples into a large shallow baking dish. Fill cavities

with fruit mixture. Dot tops with butter. Pour 1 cup water into

base of dish. Bake for 30-35 minutes or until apples are tender. Serve

immediately with custard or thick cream.

NUTRITIONAL VALUE

Per serve (not including custard or cream): 1g protein, 2.5g fat (1.5g

saturated fat), 25g carbohydrate, 4g dietary fibre, 505 kJ (120 Cals).

A handmade gift or decoration is a great way to say happy Easter with a personal touch. Take a walk down our stationery and party needs aisles for a little inspiration and everything you need to create a gorgeous gift.

GET INSPIREDeaster crafts

Hand-painted eggsA beautiful way to decorate your Easter table

or Easter gift basket teamed with your favourite

Clover Hill flowers.

1Place 12 eggs in a large saucepan

and cover with cold water. Place over

a moderate heat and bring to the boil.

Remove from the heat immediately.

Cover and set aside to cool. Refrigerate

until required.

2Bring the eggs to room temperature.

Paint the eggs with a base coat of white

or cream acrylic craft paint (available from

craft stores). Egg cups or mini muffin

trays will assist with holding the eggs

steady while painting. When the paint is

touch dry, turn the eggs upside down

and paint the other side.

3Paint the eggs the required base colour

in acrylic craft paint. We used pretty

pastels such as pale blue, pink, lavender.

Set aside to dry.

4Decorate the painted eggs with

complimentary colours. For dots and

flowers use a cotton bud dipped in

acrylic craft paint. Press onto the egg

to make the design. For stripes and

crosses use different sized paint brushes.

Masking tape cut and pressed onto the

egg will help ensure your stripes are

straight and even. Remove the tape as

the paint has dried and continue with

the next stripe. You can make a bunny

by dipping the ball of your finger into the

paint and pressing onto the egg to make

a finger print. Make another print to form

the bunnies’ head. Allow the fingerprints

to dry then add the ears, nose and eyes

using a fine paint brush.

These eggs are for decoration only

and not for consumption. Egg shells

are porous and will absorb residue of

the paint.

1Select a sheet of Tudor A4 Coloured Paper. Fold it in half exactly and then fold it in half

again. Run your fingers along the fold to make the edges sharp. You should now have a

card to work on like the ones pictured above.

2Unfold the paper and place on a craft mat or another flat surface suitable for cutting on.

The bottom right-hand rectangle of the paper will be the front of your card. Trace eggs,

bunnies or any other design you like onto this part of the paper. It’s best to use a coloured

pencil that is close to the colour of your paper. Once you have made sure the design is in

the right position, you can start to carefully cut it out with a craft safety cutter.

3Choose a decorative wrapping paper or print out a design from your computer. Cut the

decorative paper into a rectangle 14cm x 9cm. Glue this rectangle behind your cut-out

design on the card with Bostik Glustik. Smooth out any bubbles and set aside to dry.

You can also decorate your designs with Bic Kids Glitter Glue for an special touch.

4To make the basket weave card, place the front of the card onto a craft mat or another

flat surface suitable for cutting on. Using a ruler, draw eight 6cm lines crossways at least

both ends. Carefully cut the lines using a craft safety cutter. Take a contrasting sheet of

A4 coloured paper and cut out four 12cm x 1cm strips. Weave these strips of paper into

Strawberry swirl cheesecakePreparation: 30 minutes + chilling

Serves: 10

200g plain sweet biscuits

80g butter, melted

1 tbs powdered gelatine

¼ cup boiling water

2 punnets strawberries

2 tbs icing sugar

2 x 250g tubs Woolworths Select

Spreadable Cream Cheese

395ml can sweetened condensed milk

1 tsp vanilla extract

extra strawberries, halved, to garnish

1 Line base of a 20cm springform tin with

baking paper. Process biscuits in a food

processor until fine crumbs. Add butter and

process until well combined. Press firmly

over base of tin to cover. Chill while preparing

cheese filling.

2 Sprinkle gelatine over boiling water and

whisk well to dissolve. Set aside.

3 Trim tops from strawberries. Puree half

with the icing sugar until smooth. Set

aside. Finely dice remaining strawberries.

4 Place cream cheese into food processor

and process until smooth. Add condensed

milk, vanilla and gelatine mixture and process

again until combined.

5 Stir in diced strawberries. Pour mixture

over base. Using a teaspoon, drop small

dollops of strawberry puree over the mixture.

Drag a knife through the puree to give a swirl

effect. Refrigerate for 4 hours or until set.

6 To serve, remove from tin and cut into

wedges. Serve with extra puree and extra

strawberries.

NUTRITIONAL VALUE

Per serve: 11g protein, 21g fat (13g saturated

fat), 50g carbohydrate, 1.5g dietary fibre,

1800kJ (430 Cals).

strawberries, with no soft patches or

stir through the juice from 2 oranges

and ½ cup pureed strawberries.

❋ Sprinkle strawberry slices with a

little caster sugar and a few drops

of balsamic vinegar then stand for

30 minutes. Serve with thick cream

or fresh ricotta.

3 ways with Dutch carrots Sweet and spicy (top left)

Preheat oven to 180°C. Trim tops from

1 bunch Dutch carrots, leaving about

4cm attached. Wash well and peel. Lay

into a lightly greased ovenproof dish and

dot with 10g butter. Combine 1 tbs warm

honey, ¼ tsp each ground cumin and

ground ginger and pour over carrots. Bake

for 20 minutes until carrots are just tender.

Cool and clean (bottom left)

Trim tops from 1 bunch Dutch carrots,

leaving about 4cm attached. Wash well and

peel. Bring a large frying pan of water to the

boil, add carrots and simmer for 5 minutes

or until just tender. Drain and refresh in cold

water. Combine ½ cup natural yoghurt with

1 tbs finely shredded mint, 1 small garlic

clove, crushed and 1 tbs lemon juice.

Transfer to a small bowl. Serve with carrots.

Flash in the pan (right)

Trim tops from 1 bunch Dutch carrots,

leaving about 4cm attached. Wash well and

peel. Bring a large frying pan of water to the

boil, add carrots and simmer for 5 minutes or

until just tender. Drain, reheat pan and add

20g butter, 1 tbs currants and carrots.

Toss over high heat until coated with the

butter. Transfer to a serving plate and drizzle

with 2 tsp balsamic vinegar and chives.

as baby carrots, and are smaller as well

as sweeter than regular carrots. Look

for firm carrots that have no soft or

discoloured patches.

Anzac parfait withcaramel saucePreparation: 15 minutes

Cooking: 10 minutes Serves: 6

40g butter

½ cup brown sugar

½ cup sweetened condensed milk

¼ cup golden syrup

1 cup cream

6 Anzac biscuits, roughly crushed

2 bananas, peeled and sliced

vanilla ice-cream

½ cup chopped toasted pecans

1 Place butter, sugar, condensed milk and

golden syrup into a small saucepan and

stir over low heat until sugar has dissolved.

Bring to the boil and cook for 5 minutes or

until the mixture is golden. Stir in cream until

smooth and cook for 1-2 minutes or until it

has thickened. Cool slightly.

2Divide crushed biscuits into the base of

6 tall dessert glasses. Top with banana

slices, a scoop of ice-cream, toasted pecans

and caramel sauce. Top with another scoop

of ice-cream and more caramel sauce and

decorate with pecans.

4 hamburger buns, halved

4 slices cheddar cheese

pan over medium-low heat and cook the

Barbecue green prawns with Thai marinadePreparation: 10 minutes + 30 minutes

marinating time

Cooking: 2 minutes

Serves: 4

16 green king prawns

1 stalk lemongrass

2 green shallots, finely chopped

2 garlic cloves, crushed

2 small red chillies, seeded and chopped

2 kaffir lime leaves, finely shredded

finely grated rind and juice of 1 lime

1 tsp brown sugar

1 tbs fish sauce

1 tbs vegetable oil

lime wedges, to serve

1 Peel prawns, leaving tail intact and devein.

Remove tough outer layer from the

lemongrass and finely slice the tender part.

Place into a small food processor.

2 Add shallots, garlic, chilli, kaffir lime leaves

and lime rind and process to a finely

chopped paste. Add brown sugar, fish sauce

and lime juice and process until combined.

Pour into a shallow ceramic dish, add prawns,

and turn to coat. Refrigerate for 30 minutes.

3 Heat a flat barbecue plate on medium

heat. Add oil and prawns and cook in

batches for about 1 minute each side, until

they have changed colour. Serve on a platter

with lime wedges.

Spinach & ricotta cannelloniPreparation: 20 minutes

Cooking: 40 minutes

Serves: 6

300g ricotta

250g pkt chopped frozen spinach, thawed

1 large garlic clove, crushed

2 tbs finely shredded basil

¼ tsp nutmeg

1 egg

700g jar passata sauce

250g pkt cannelloni tubes

¾ cup light mozzarella cheese, grated

1 Preheat oven to 180°C. Mash ricotta in a bowl with a fork.

Add spinach, garlic, basil and season with salt, pepper

and nutmeg. Add egg and mix well. Spread 1 cup of passata

over the base of a 28 x 18cm ovenproof baking dish.

2 Transfer ricotta mixture to a medium zip-lock bag and

seal. Cut off a corner and pipe mixture into cannelloni

tubes. Lay filled tubes into dish on top of the passata sauce.

3 Add ½ cup of water to the passata bottle, reseal and

shake well to combine. Pour over filled tubes to cover.

Scatter over cheese and cover with foil. Bake for 20 minutes,

remove foil and bake for a further 20 minutes until golden.

Preheat oven to 220°C. Line a large baking tray with baking paper and arrange

Woolworths Select Chunky Steakhouse Chips in a single layer. Cook as per

packet instructions. Heat vegetable oil in a large pan over medium-high heat.

When hot, fry seafood starting with Woolworths Select Crumbed Prawn Cutlets,

Woolworths Select Salt and Pepper Squid and then calamari this way the lighter

flavoured seafood won’t absorb the stronger flavours. As seafood cooks, remove using a

HOW TO ROASTMake a cut through the outer shell to release the

heat and pressure while cooking. Then cook for

about 25 minutes on medium heat in the oven or

grill. Turn after 15 minutes.

Remove from oven and wrap in a tea towel

for about 5 minutes. Remove the shell and

the inner skin while still warm and then they

are good to eat!

TASTE TESTThe simplest way to eat chestnuts is to roast, grill or barbecue them. Chestnuts can also be boiled or puréed. When cooked, they have a sweet, nutty flavour and similar texture to potatoes. Chestnuts are versatile and delicious in desserts, chocolates, cakes, fillings, stuffings, salads and soups. Chestnuts are also great in gravy, stir-fries or mashed potatoes and casseroles.

roasted chestnuts

drifting from

the kitchen is

irresistible. Sweet,

nutty and oh-so

moorish, Wandi Valley Chestnuts grower

John Scambelloni loves this time of year

– after 15 years on their farm in Victoria, his

wife Lyn certainly knows how to roast their

freshly harvested chestnuts to perfection.

“I just put the chestnuts in a pan over low

heat with a little olive oil, sprinkle with a little

garlic salt and chilli flakes and, all you need

is a nice glass of wine! “ she says.

Chestnuts are so versatile thanks to their

high starch content. “You can use them for

sweet or savoury dishes and, because they

have a similar texture and flavour to potato,

they’re great for thickening stews and

casseroles,” explains Lyn.

While it was Lyn’s Italian-born father-in-

law Vince Scambelloni, who planted the

first chestnuts in 1972, her husband John

and his brothers, Joe and Louie, (pictured

left) now look after the 8000 chestnut trees.

“When Vince found this beautiful property

in the Wandiligong Valley, he realised it was

the perfect climate for chestnuts because

we get plenty of rain and sun,” explains Lyn.

Others saw the same opportunity and the

Scambelloni’s are now one of 25 family-

owned growers that supply chestnuts to

Woolworths supermarkets.

Chestnuts grow in a husk with a prickly

casing and, as they start to ripen, the husk

cracks and the nuts fall on the ground.

Picked up by hand, they’re taken to the

packing shed to be cleaned, sorted into

sizes and transported to Woolworths

supermarkets around the country. But

kilograms of chestnuts also find their way

to Lyn’s kitchen. “We roast them and freeze

them so that we can have them all year

round. They’re so diverse – chestnut soup

is an absolute delicacy and you can even

mill them and use the flour for baking.”

To buy: The hard outer shell should be

glossy and firm to touch.

To store: Chestnuts must be stored in an

airtight container or plastic bag in the fridge

at 0ºC to remain fresh.

Chicken salad with chestnuts & pearsPreparation: 5 minutes

Cooking: 20 minutes Serves: 4

Heat 1 tbs olive oil in a frying pan over

medium heat. Add 8 sage leaves and cook

for 1 minute. Add 4 slices pancetta and

cook until crisp. Remove sage and pancetta

and increase heat to medium-high. Add 2

chicken breast fillets and cook on both sides

for about 6 minutes until golden and cooked

through. Remove from pan and cool slightly

before slicing. Add 20g butter to pan and

heat over high heat. Core and slice 2 pears,

add to pan and cook until golden. Sprinkle

with 1 tbs sugar and turn pears over so the

sugar can melt. Add 8 shelled chestnuts,

quartered and cook for 1-2 minutes until

golden and glossy. Deglaze pan with 1 tbs

white balsamic vinegar and remove from

heat. Arrange rocket leaves, washed on

serving plates. Top with sliced chicken and

spoon over pears and chestnuts. Top with

crumbled pancetta and sage leaves.

FRESH TIPTo boil chestnuts, place them in a pan of cold water, bring to the boil, cover and simmer for 15-20 minutes or until tender. Wrap the cooked chestnuts in a tea towel. Remove outer shell and inner skin while still warm.

Bertocchi Authentic Australia’s Favourite Ham Off the Bone1 cup breakfast marmalade, warmed 1/4 cup maple syrup 12 whole cloves1 cup pecans, fi nely chopped

1 Place oven shelf in lowest position of

oven. Preheat oven to 160°C. Line a

large roasting pan with baking paper. Place

ham in the prepared roasting pan.

2 Combine marmalade and maple syrup

cook in boiling water for 3 minutes or

until tomatoes have softened.

* For quick and easy meals, stir chopped

ham, chopped sun dried tomatoes and

fresh basil leaves through ricotta. Serve with

Lebanese or lavash bread.

* For a light breakfast pan-fry Bertocchi

Authentic Ham and serve with eggs and

muffi ns in place of bacon.

* Try a little ham in your favourite salad, pasta

dish, oven bake, fi ttata or on antipasto and

pizza.

* Store ham in coolest part of the fridge and

use within 1-2 weeks.

wine vinegar. Wrap ham in greaseproof

paper then damp cloth. Refrigerate in a ham

Flourless choc hazelnut cakePreparation: 20 minutes

Cooking: 45 minutes Serves: 8

300g Woolworths Select Milk or Dark

Cooking Chocolate

125g unsalted butter, chopped

2 tsp vanilla essence

6 eggs, separated

½ cup caster sugar

200g hazel meal

1 tbs caster sugar, extra

1 Preheat oven to 180°C. Grease a 24cm

round springform cake pan with butter

and line base with baking paper.

2 Break chocolate into pieces and place

into a saucepan with butter and vanilla.

Stir over low heat until melted and smooth.

Remove from heat and cool for 5 minutes.

3 Beat egg yolks and sugar together with

electric beaters until mixture is pale, thick

and creamy. Gradually add chocolate mixture,

beating on low speed until just combined. Stir

in hazel meal and set aside.

4 In a large clean bowl and with clean

beaters, beat egg whites until soft peaks

form. Add extra sugar and beat for 1 minute.

Add a large spoonful of the egg white to

chocolate mixture and fold through until well

combined. Add remaining egg white and fold

through gently.

5 Transfer mixture to prepared pan,

smoothing top. Bake for 45 minutes until

cooked when tested with a skewer. Centre

will be moist but not sticky. Cool in tin for

5 minutes. Undo pan and transfer cake to a

wire rack to cool. Cake can be served plain,

with ganache icing (see recipe on page 31),

with hot fudge sauce (see recipe on page 31)

or simply dusted with cocoa or icing sugar.

ramekins and place onto a baking tray.

Cool for 5 minutes.

3 Lightly whisk eggs and egg yolks together

and gradually stir into chocolate mixture

with vanilla. Sift flour over and gently fold in.

4 Divide mixture evenly between ramekins.

Bake for 20 minutes or until top is set

but centre is still soft. To serve, simply drop

a scoop of ice-cream into the centre and dust

with cocoa.

Banana & nut crepes Preparation: 5 minutes

4 frozen crepes

20g butter

2 large bananas, halved

2 tbs sultanas

½ cup pecans or walnuts

ice-cream or whipped cream, to serve

1 Prepare crepes according to packet

instructions. Meanwhile, heat butter

in a non-stick frying pan until bubbling.

Add bananas, sultanas and nuts and stir

over medium heat for 1 minute until warm.

2 Lay a crepe onto each serving plate

and fold into quarters. Top with banana

mixture. Serve with hot fudge sauce (see

recipe on page 31) and ice-cream or

whipped cream.

FlorentinesPreparation: 10 minutes

Cooking: 20 minutes

Makes: 24

Preheat oven to 170°C. Line 2 baking trays

with baking paper. Place 2 cups cornflakes

into a bowl and roughly crush. Add ½ cup

sultanas, 115g slivered almonds, 100g

mixed glace cherries, chopped and 2 tbs

plain flour and stir to combine. Pour over

⅔ cup sweetened condensed milk and

mix well. Spoon mixture onto trays, leaving

space between each for spreading. Flatten

slightly. Bake for 15-20 minutes or until golden.

Cool on trays for 5 minutes then transfer to

a wire rack and cool completely. Meanwhile,

break 200g Woolworths Select Dark

Cooking Chocolate into pieces and melt in a

heatproof bowl over a saucepan half-filled with

simmering water (make sure the bowl doesn’t

touch the water) and use a metal spoon to

stir until smooth. When biscuits are cold,

spread the flat side with chocolate and place

chocolate side up onto wire rack until set.

White chocolate & pistachio strudelPreparation: 15 minutes

Cooking: 20 minutes Serves: 6

Break 100g Woolworths Select White

Cooking Chocolate into pieces and process

in a food processor with 80g shelled

pistachios until finely chopped. Add 250g

fresh ricotta, finely grated rind of 1 orange,

2 tbs honey, 2 egg yolks and 1 tbs plain

flour and process until blended. Preheat

oven to 220°C. Line a baking tray with baking

paper. Brush 4 sheets filo pastry with 40g

butter, melted and layer on top of each other.

Position with the short side facing you. Pile

the filling along the short side 5cm in from the

edge and leaving a 4cm gap at the sides. Roll

up halfway, then fold in sides and complete

rolling to the end. Do not roll too tightly as this

will cause the pastry to split during baking.

Transfer to prepared tray and brush with

butter. Using the point of a small sharp knife,

make 4 small incisions in the top to allow the

steam to escape. Bake for 20 minutes until

golden and crisp. Cool for 5 minutes, dust

with 1 tbs icing sugar mixture and cut into

slices. Serve with ice-cream.

kids and bubs

emember the anticipation you

felt as a child in the lead-up

to school holidays? All those

plans and ideas whirling

around in your young mind?

No lessons, schedules or

homework. Time to sleep in, play with friends

and enjoy family outings – bliss!

For some parents, though, it’s a difficult time.

Trying to keep kids occupied and avoiding the

dreaded cry of “I’m bored!” can do your head

in. Referee-ing arguments between siblings

and battling to keep the house tidy. It’s tough.

And what about mums and dads who don’t

have time off from work? This is where

positivity and a bit of planning goes a long

way. For parents taking holiday time to spend

with family, it’s nice to imagine you can just

go with the flow. But, just because you don’t

have to get up early to make lunch boxes,

doesn’t mean you won’t have to find ways

to fill seemingly bottomless tummies with

nutritious meals and snacks. TODDLERS:Some playgroups run during

the school holidays. Check

community noticeboards,

local newspapers and ask

other parents if there’s

anything happening in your

neighbourhood.

Discover new parks and

playgroups. Attend story time at

the local library and ask other

mums and dads whether they’d

like to arrange play dates.

And remember, whether they

are big kids or littlies, school

holidays should be a time of

fun and relaxation, a chance

to re-charge and let off steam.

PRIMARY SCHOOL AGE KIDS:Primary school age kids: Many of the

activities mentioned on page 38 still interest

school-age children, who are also more likely

to have formed friendships with classmates

and neighbours, so play dates are likely to be

less formal. Parks, beaches and swimming

pools are great places to meet up with friends

who live further afield. This is a good time to

teach children some basic household chores,

such as vacuuming, sweeping and general

tidying. Make it fun and you may find you’ve

scored yourself a helper or two.

ROUGH STUFFPlay dates with young children inevitably involve some disputes. Some kids don’t play fair, won’t share or are too rough. Others are just bad losers. Before banning future play with such children, discuss conflict resolution with your own child and let them talk about their feelings. If the problem arises at the next gathering, talk to the child’s parents and diplomatically relay the conversation you had at home. For example, “Emma says she likes Jack very much, but she told me he hits and showed me a bruise.” Keep a close eye on the proceedings and if things don’t run smoothly, opt out.

Independence dayAt some stage, the big sleep-over question

arises. Tweens are beginning to find

friendships more important. Many parents

find this stressful, as their child begins to

forge their own way in the world and expects

more freedom. Follow your instincts. If you

know the other child’s parents and feel

comfortable allowing a sleep-over, fine. But

don’t be pressured. No one knows your child

like you do, so you be the judge on issues of

responsibility and supervision.

TWEENS AND TEENS:Older kids often occupy themselves with books, techie gadgets and telephone calls. To encourage brain-engaging activity, suggest a library visit, a trip to an art gallery or museum, or perhaps catch come culture. There’s so much more to life than surfing the web and texting your mates, we just have to lead the way.

1You’ll need: 6-10 stems gerberas, 6 stems

flexible willow or twigs, assorted foliage,

5-6 painted or chocolate eggs, wicker

basket or ceramic dish, brick of floral

foam, 15cm length wire, 30cm length

ribbon and pair of scissors.

3Cut gerbera stems into 5-10 cm lengths.

Place the first gerbera into centre of the

basket. Insert remaining stems around the

centre placement, stepping out slightly

around the basket. Tie ribbon into a bow

at top of the twigs. Arrange chocolate or

painted eggs evenly around the gerberas.

Fill in gaps with small pieces of foliage.

Top up foam with water every second day.

EASTER NESTMake a bold statement this Easter weekend with an easy-to-make centrepiece with Clover Hill gerberas.

Soak the floral foam in water, then cut to

fit inside the basket. Cut willow or twigs

into 1m lengths. Place stems into the outer

sides of foam, spacing them evenly. Gather

the tips and tie with wire. Snip the assorted

foliages into short lengths and place into

IIt’s easy to blame excess kilograms on too

much junk food and too little exercise, but

the size of the portions we eat at every meal

and snack is also vitally important. Serving sizes

of foods like soft drinks, yoghurt, crisps and most

snack foods have grown dramatically over the years. What

once would have fed the family is now often sold as an

individual snack. Cereals in huge packets, giant containers

of juice or ice cream, big jars of pasta sauce and other

super-sized family products all encourage us to eat more.

You got served!Plates, bowls, mugs and glasses are now also super-

sized. Several studies from Cornell University USA, first

published in 2005, show that the bigger the plate or glass

in front of us, the more we consume – usually without

even realising it. One study found that movie-goers given

really big buckets of popcorn ate about 50 per cent

more than when they were given smaller buckets. Later

questioning revealed that they were totally unaware they

had eaten more from the big containers. Even a larger

serving spoon encourages us to take more – just see what

happens when you put a small spoon next to rich foods

like cream or ice-cream next time you have guests.

DownsizeThe good news is that smaller plates and glasses can help

you eat and drink less without feeling deprived.

Use a big bowl for tossed salads and veggies, but

consider downsizing everywhere else. Amanda Clark,

author of Portion Perfection, says many people zone out

when given lists of dietary options, but respond well to

photographs of appropriate serves. Among her examples

of ‘portion’ dinners, is a steak about the size of a pack

of cards with three-quarters to 1 cup baby potatoes and

peas or three-quarters to 1 cup stir-fried chicken with the

same amount of cooked rice or noodles – always adding

lots of veggies.

FRESH TIPFill at least half your dinner plate with veggies, one quarter with protein such as meat, fish, chicken, tofu, legumes, eggs and the last quarter with carbs like pasta, rice or potatoes.

We stick to traditional methods

to create the perfect pasta.

Get an adult to cut up all the vegetables. Cover the toast with a cheese slice and cut into quarters. Top the noughts with a slice of tomato and boiled egg. To make the crosses, use cucumber slices and carrot sticks. Each player will need 5 pieces for a chance to win!
