1 roasting chicken, 5–6 lbs./2.3–2.7 kg, giblets removed2 tbsp. unsalted butter, room temperature1 tbsp. Simple Indulgence Cilantro Mojo Seasoning Blend1 lime, juiced using the Zest ’N Press™ Gadget 1 tbsp. extra virgin olive oil

Preheat oven to 375° F/190° C. Rinse chicken in cold running water and pat dry. Slide fingers under skin of breast to create a pocket on each side. Combine butter with seasoning blend. Place 1 tbsp. butter/seasoning mixture under the skin of each breast and smooth out to cover meat. Place chicken, breast side up, in UltraPro™ 6-Qt./5.7 L Roasting Pan. Squeeze lime juice over skin and place rind inside cavity. Rub chicken with olive oil. Microwave uncovered on high power 18 minutes. Transfer to oven and roast 32 minutes, or until juices run clear. Loosely tent with foil and allow to rest 15 minutes before carving.
