Ultimul editorial din acest an aş vrea să-l simţiţi plin de cafea,
miros de mere coapte cu scorţişoară şi cozonacii bunicii!
A fost un an greu, plin de evenimente, multă muncă, satisfacţii şi
dezamăgiri, reuşite şi nereuşite, ca orice an din viaţa noastră. E frumos să
rămânem în minte doar cu ce ne-a înălţat sufletul, cu experienţele care
ne-au schimbat perspectivele pentru viitorul an sau viitorii ani.
Cineva mi-a spus cândva, că „Dacă reuşeşti să schimbi în bine sufletul
unui om, ai schimbat universul!”
Aşa că, ghidată de acest lucru, am reuşit după 4 ani de voluntariat în
asociaţia pe care o păstoresc să am o echipă de oameni frumoşi, curajoşi,
tineri şi dornici să schimbe sufletul şi lumea fiecărui tânăr pe care l-au întâlnit
în evenimentele de cafea pe care le organizez.
Am reuşit să ajut alte trei ţări să înceapă să construieasca o comunitate
de cafea în ţara lor: Moldova, Bulgaria şi Malta. Am reuşit împreună cu echipa
mea să pregătim foarte mulţi tineri din toată ţara, gratis, să prepare cafea mai
bună, cu ajutorul tuturor sponsorilor, care au înţeles, că dacă noi nu facem
împreună ceva, nimeni nu va face, în locul nostru. Am întâlnit un nebun fru-
mos, un fermier extraordinar – Graciano Cruz, care mi-a dovedit, încă o dată,
că dacă iubeşti ceea ce faci, e imposibil să nu reuşeşti. Am făcut parte din
echipa de traineri, de la primul Barista Camp organizat vreodată în Europa şi
asta mă face foarte fericită, că am putut reprezenta România, printre zecile de
ţări participante. Suntem la capătul evenimentelor de cafea pe anul acesta, cu
regională de barista de la Cluj şi Campionatul Naţional de Barista 2014/2015.
Câştigătorul Campionatului Naţional de Barista va reprezenta România în
Seattle, anul viitor în aprilie, care va fi iarăşi un prilej de mândrie, că ne aflăm
încă odată, alături de peste 50 de ţări din toată lumea, care se întrec, care mai
de care să arate că reprezentantul lor este cel mai bun.
Aşa cum vă spuneam, a fost un an plin, ca o ceaşcă de cappuccino
aburindă şi înainte de a încheia, aş dori să vă urez un sfârşit de an extraordinar,
cu sănătate, linişte în suflet şi dragostea celor dragi şi un început de an, aşa
cum vi-l doriţi şi vi-l imaginaţi!

B ack in July 2006 when I was !ying to Ecuador, the two seats next to me were occupied by a couple of recently married Italians. I could not avoid listening to what
they were saying and at the point when I understood they were talking about wine, I introduced myself very politely. "e young man next to me happened to be Achille Boroli, the owner of the prestigious Italian Boroli Wines, who decided to take his bride to the Ecuadorian Galapagos Islands for their honeymoon. He told me about his beautiful vineyard and winery next to the lake of Como, in the northern part of Italy near Milan. We exchanged business cards and when he noticed that besides of wine I was also in the co#ee business, he told me that an additional reason he had decided to travel to Galapagos for, was to visit some of the organic co#ee estates on the archipelago, to see how they managed with the preservation of the natural environment. It was then that I $rst heard about co#ee being produced in the Galapagos.
"e purpose of my trip was primarily purchasing several containers of soluble co#ee from “El Café”, the largest processing plant in Ecuador, which was a win-win situation for me, due to the very small co#ee production in that country (abt. 600 thousand bags) and soluble co#ee factories importing over 60% of their needed raw material from abroad. However, once I arrived to their Guayaquil processing plant, I expressed my interest to Ms. Heredia and Mr. Rubira to cup some of the Ecuadorian Arabica co#ee as well, which I was pleasantly surprised to notice that it was quite similar to the high-end Colombian Milds.
În iulie 2006, în timpul unui zbor spre Ecuador, am întâlnit un cuplu de italieni proaspăt căsătoriţi. Nu am putut să nu aud conversaţia lor despre vinuri, aşa că m-am prezentat politicos. Tânărul de lângă mine s-a dovedit întâmplător că era Achille Boroli, patronul prestigiosului brand de vinuri italiene Boroli, care hotărâse să-şi ducă proaspătă soţie în insulele Galapagos pentru a-şi petrece acolo luna de miere. Mi-a povestit despre via să frumoasă şi despre zona viticolă de lângă lacul Como, situat în nordul Italiei, lângă Milano. Am făcut schimb de cărţi de vizită şi, când el şi-a dat seama că, pe lângă vinuri, fac parte şi din lumea cafelei, mi-a spus că unul din motivele pentru care călătorea spre Galapagos era să viziteze nişte ferme de cafea organică din arhipelag, pentru a observa cum reuşesc oamenii de acolo să-şi desfăşoare activităţile fără a afecta mediul înconjurător. Atunci am a!at pentru prima oară de cafeaua cultivată în Galapagos.
Călătoria mea avea ca scop achiziţionarea mai multor containere de cafea solubilă de la „El Café”, cea mai mare fabrică de procesare din Ecuador, ceea ce îmi conferea mai multe avantaje datorită faptului că producţia de cafea de acolo era foarte scăzută (aproximativ 600.000 de saci), iar fabricile de cafea solubilă importau peste 60% din material prima din afară. Când am ajuns la fabrica Guayaquil, i-am rugat pe doamna Heredia şi domnul Rubira să-mi permită să gust o ceaşcă de cafea Arabică Ecuatorială, pe care am regăsit-o ca $ind foarte asemănătoare cu cea columbiană, cultivată la înălțime.

"e following day I visited “Expigo”, another important Ecuadorean co#ee exporter, where I was warmly received by Mr. Gonzalez, whom during a very pleasant crabs and beer feast in a local seafood restaurant, further enlightened me about the Galapagos co#ee. Once we went back to their o5ce, I de$nitely had to taste some of the Galapagos Bourbon co#ee as well, which they very kindly provided me with, however clari$ng upfront that they had none for selling, as the whole production had been already entirely booked. After cupping the co#ee, which had a re$ned, sweet, exuberant taste, with notes of tobacco and leather, intense, delicious fragrance, caramel aroma, medium acidity and a good body, I felt quite frustrated because I couldn’t get my hands on some of that treasure I had just discovered, therefore I had to comfort myself with the good money I was making on the soluble co#ee deal for the US and Polish markets.
Of course I wouldn’t settle to be just a distant spectator to such an exotic discovery, hence the next day I treated myself with a roundtrip to the Galapagos, where I could get familiarized with the recently found treasure, which I intended to make mine, at least a part of it that is……… “savy”
Once there, I learnt that the beautiful archipelago of Galapagos faces a struggle against the introduction and expansion of exotic species, a threat to the endemic ecosystem on daily basis. Bearing this in mind, the “International Conservation” in joint forces with the “Galapagos National Park” and the “Foundation for the Galapagos Alternative and Responsible Development” are promoting the “Galapagos Conservation Co#ee” project.

În ziua următoare am fost în vizită la un alt exportator de cafea, Expigo, unde am fost întâmpinat călduros de domnul Gonzalez, care în timpul unui festin cu bere şi crabi la un restaurant local cu speci$c, mi-a povestit mai multe despre cafeaua din Galapagos. Când ne-am întors la birou, am pro$tat de ocazie şi am gustat şi cafeaua Bourbon Galapagos, care nu era de vânzare întrucât întreaga cantitate era deja rezervată. După ce am simţit gustul ra$nat, dulce şi exuberant al cafelei, cu note de piele şi tabac, miros intens şi aroma de caramel, ce avea o aciditate medie şi un corp bun, am fost destul de dezamăgit că nu puteam să mă mai bucur de comoara pe care o descoperisem şi tot ce-mi rămăsese era să mă bucur de banii frumoşi pe care urma să-i obţin din afacerea cu cafea solubilă pentru pieţele din SUA şi Polonia.
Nu mă puteam mulţumi să $u doar un simplu spectator al unei asemenea descoperiri exotice, aşa că în ziua ce a urmat m-am răsfăţat cu o tură prin Galapagos, ce avea să mă familiarizeze cu această comoară recent dezvăluită şi pe care intenţionam, măcar parţial, s-o obţin pentru mine.
Odată ajuns acolo, am a!at că în minunatul arhipelag Galapagos se dă o luptă zilnică pentru introducerea şi extinderea speciilor exotice ce ameninţa ecosistemul. Ţinând cont de acest fapt, INTERNATIONAL CONSERVATION şi Parcul Naţional Galapagos, alături de „Fundaţia pentru Dezvoltare Alternativă şi Responsabilă din Galapagos” şi-au unit forţele pentru a promova proiectul de „Conservare al Cafelei din Galapagos”.
Această alternativă sustenabilă se concentra în special pe zonele înalte ale insulei, din afara graniţelor Parcului Naţional, unde sunt localizate plantaţiile şi fermele de bovine. Scott Henderson, directorul regional al Programului Tropical al Paci$cului de Est, aprecia că în zonele muntoase din

“In the highlands of the archipelago there are about 11 hectares of land suitable for agriculture, which is being under-exploited” as expressed by Scott Henderson, the regional director of the Tropical East Paci$c Program. "e whole idea is to produce an exquisite co#ee for the most demanding palates while helping preserving the “Enchanted Islands”. Henderson stresses out that in the past years several native species have dissapeared, like the “Scalesia” Woods, which are the natural habitat of the archipelago land creatures, especially of the giant turtles. Due to the need of preserving the Galapagos ecosystem, the Galapagos National Park provides technical assistance to the farmers on how to plant endemic species for the co#ee shadow, which will provide shelter for the local fauna at the same time!
"e Galapagos co#ee history begins back in 1869, when a group of French explorers, who happened to be co#ee lovers as well, seeded the $rst bushes ever on the Galapagos volcanic soil, where they eventually grew and !ourished. "en, in 1879, the $rst island owner in Galapagos, Manuel J. Cobos decided to venture in to sugar cane and co#ee plantations as a source of income and therefore he imported co#ee seeds, through Panama, from the Caribbean French colonies. Being a demanding fellow, he decided to only buy the best seeds available, Bourbon Arábiga, because they had all the characteristics required to produce a good co#ee.Time passed and with the introduction of co#ee in new producing countries, Galapagos passed through di5cult times and was eventually abandoned and forgotten due to the high competition in the industrialized production.

Henderson a accentuat faptul că, în ultimii ani, multe specii native, precum pădurile „Scalesia”, care sunt habitatul natural pentru fauna terestră a arhipelagului, în special pentru broaştele ţestoase gigante, au dispărut. Datorită nevoii de prezervare a ecosistemului Galapagos, Parcul Naţional Galapagos a oferit asistenţă tehnică fermierilor la plantarea speciilor potrivite pentru umbra cafelei, care vor adăposti în acelaşi timp şi fauna locală.
Istoria cafelei Galapagos începe în anul 1869, când un grup de exploratori francezi ce iubeau de asemenea cafeaua, au plantat primele tufe în solul vulcanic din Galapagos care au crescut şi au în!orit. În 1879, prima persoană care a deţinut o insulă din Galapagos, Manuel J, Cobos, a decis să înceapă să planteze trestie de zahăr şi cafea ca o sursă de venit, aşadar a importat seminţe de cafea prin Panama de la coloniile din Caraibele Franceze. Cum era un client pretenţios, acesta a cerut să cumpere numai soiul cel mai calitativ de seminţe, Bourbon Arabiga, deoarece acestea aveau toate caracteristicile necesare producerii unei cafea bune. Odată cu trecerea timpului şi a apariţiei noilor tari producătoare de cafea, Galapagos a trecut prin momente di$cile, ajungând să $e abandonată şi uitată din cauza competiţiei acerbe a producţiei industrializate.
În 1990, odată cu apariţia curentului cafelei de specialitate, familia Gonzalez Duche a înţeles ce potenţial imens oferea cafeaua din Galapagos pe piaţa de specialităţi şi a decis să achiziţioneze „Haciendas el Cafetal”.

"e Galapagos co#ee is entirely organic, eco-friendly and unique in its production process. "e use of chemicals is strictly forbidden in the archipelago, making it deserve the bird-friendly certi$cation.
"e Heirloom Bourbon Arabica variety seeds, the same planted by the French explorers 140 years before, are carefully hand selected in order to spot any imperfection and then planted in the volcanic slops at altitudes of about 500 meters above sea level where the perfect balance between the “terroir”, the intensity of equatorial sun and rain creates the magical conditions to produce an organic co#ee of exceptional taste and aroma.
"e Galapagos co#ee slowly ripens under the shadow of fruit trees, as avocados, guavas, oranges, which create the perfect conditions for co#ee as it provides the needed nutrients to the soil in a natural way. Under this paradisiacal environment the bushes blossom twice per year, the $rst time in November/December and the second time in February/March, which will result in a main harvest period between August and November and eventually in a second smaller one, similar to the Colombian “Mitaca”, six months later. Regardless the relatively low altitude, the microclimate of the archipelago o#ers conditions that are speci$c to 1300 meters altitude areas in other co#ee regions around the world, particularly due to the Humboldt cold wave that passes through the Galapagos Islands and the hot wave from Panama.
Finally, only the perfectly ripen co#ee berries are handpicked and processed with fresh spring water, sundried on patios and then carefully selected in order to achieve the most exquisite and exotic cup of co#ee.
Cafeaua din Galapagos este în întregime organică şi ecologică, $ind produsă într-un mod unic. Folosirea chimicalelor este strict interzisă în arhipelag, aşadar îi conferă dreptul la așa numita bird friendly certi$cation.
Seminţele Heirloom Bourbon Arabica, aceleaşi seminţe plantate de exploratorii francezi cu 140 de ani în urmă, sunt atent selecţionate manual pentru a identi$ca orice imperfecţiune şi apoi plantate în solul vulcanic de la altitudini ce depăşesc 500 m peste nivelul mării şi unde se regăseşte echilibrul perfect dintre sol, intensitatea soarelui ecuatorial şi ploaie, astfel creând condiţiile magice necesare producerii unei cafele organice cu o aromă excepţională..
Cafeaua Galapagos creşte la umbra portocalilor şi arborilor fructiferi de avocado sau guava care crează în mod natural condiţiile perfecte pentru dezvoltarea ei şi hrănesc solul cu nutrienţii necesari acesteia. Sub acest mediu paradiziac tufele în!oresc de două ori pe an, prima dată în noiembrie/decembrie şi a doua oară în februarie/martie, altfel încât între lunile august şi noiembrie se culege cea mai mare parte a ei, urmând ca şase luni mai târziu să se culeagă restul, în mod asemănător cu Mitaca columbiană. În ciuda altitudinii relativ mici, microclimatul arhipelagului conferă condiţiile speci$ce unei zone a!ate la 1300 m altitudine în alte regiuni din lume, în special datorită valului de aer rece Humboldt care traversează insulele Galapagos şi a valului cald de aer din Panama.
În $nal numai fructele perfecte de cafea sunt culese atent şi procesate cu apă proaspătă de izvor, uscate la soare şi apoi sortate cu grijă pentru a obţine cea mai exotică şi selectă ceaşcă de cafea.
