Head Chocolatier
MATTHEW POATWe are best known for our classic range of filled chocolates, which are shaped like racing helmets and decorated to resemble some of the most iconic helmets used throughout motorsport history.
Selection boxes of our classic chocolate racing helmet range make great gifts for any motorsport fan but we can also customise the chocolates so that they resemble specific driver helmets, or carry company branding. This makes them ideal for motorsport hospitality and corporate gifting.
This brochure introduces you to the history of our company, our classic chocolate racing helmet range and the various customisation options available. It also gives examples of some of the custom chocolate racing helmets we have previously produced.
Racing Chocs Ltd is PASSIONATE about motorsport. So much so that our whole business model is focused on creating motorsport themed treats out of chocolate.
INTRODUCTIONA LITTLE ABOUT US
Racing Chocs
In early 2018, Racing Chocs founder Matthew Poat saw a photo of some chocolates that were so shiny and colourful, they instantly reminded him of Jacques Villeneuves racing helmet. From that point on, the idea of creating chocolates that were shaped and decorated to look like racing helmets consumed him.
After creating a basic mould from some scale model racing helmets using silicone, it was clear that a fully bespoke racing helmet design was required. So, with CAD design assistance from Stand 21 and utilizing 3D printing technology, a good quality racing helmet was able to be printed and supplied to mould manufacturer Westfield Thermoform, to allow the creation of a 20 cavity 40-shore silicone mould.
HISTORYHOW WE GOT STARTED
Thanks to his background working in the motorsport industry and comfort at marketing, Matthew was able to hit the ground running with his new venture and launch Racing Chocs with a bang. The first online order was received in August and by November, Matthew commissioned Westfield Thermoform to create an additional 19 moulds to keep up with demand. In 2019, Paul Webb joined the company as an investor enabling Racing Chocs to acquire two Selmi chocolate tempering machines, which further increased the company’s ability to keep up with the ever increasing demand for chocolate racing helmets.
Once this high quality, professional mould was received, work began on learning all about chocolate, including how it is tempered, decorated, filled, stored, packaged, as well as how to create a food production workshop and setup a new food production business. Matthew put himself through an intensive five day course at the UK Chocolate Academy in Banbury, Oxfordshire, and completed his Level 2 Food Hygiene certification.
PROCESSHOW WE DO IT
Each Racing Choc is created and decorated by hand, using a variety of tools and techniques in order to reproduce some of the most iconic racing helmet designs in motorsport.
By combining cocoa butter (the fat component of chocolate) with fat based food colouring, we are able to produce almost any shade of colour desired through experimentation. Via the use of edible metallic lustre dust, we are able to add extra shine and depth to the chocolate racing helmets.
The first step is to block off any areas that need to remain clear of coloured cocoa butter by applying stickers. We use an electronic cutting machine to design and cut stickers to our own needs and specification.
Once all stickers are in place, we apply coloured cocoa butter either by paintbrush, sponge, drill or spraygun depending on the design requirements. If the design is complicated, we may need to utilise many different colours and techniques, which can be both messy and time consuming. After decoration is complete, any remaining stickers are removed and the mould is ready for the chocolate to be poured in.
Racing Chocs
Tempered chocolate is piped into each cavity and the mould is vibrated to release air bubbles. It is then inverted to remove
excess chocolate, leaving behind a thin coating which forms the chocolate shell. The coloured cocoa butter decoration
adheres to this chocolate shell as it sets.
Once set, fillings are piped in and then the mould is topped off with a layer of tempered chocolate to create the flat base
of the chocolates. We apply an acetate sheet with “Racing Chocs” repeated on it in white cocoa butter, so that once the
base layer has set and the acetate is removed, every chocolate racing helmet carries our branding.

This was one of our first custom commissions and the challenges it posed help us discover and develop new decoration techniques. One of the biggest challenges is ensuring that lines are clean and colours are solid. These may both sound like simples things but not when working with coloured cocoa butter.

CLIENT / MB PARTNERSDATE / October 2018
Ex-Formula One racer Mark Blundell now runs a successful driver management company called MB Partners. For an event he commissioned us to create some chocolates based on his helmet design.
Racing Chocs
We first apply blanking stickers to the mould for both the visor and logo areas. We then spray green cocoa butter before removing the logo area sticker and spraying with white cocoa butter. Once this is dry, we remove the visor area sticker and cast the chocolate shell, fill it and then cap it. Once the chocolate has been de-moulded, we then spray the red details-with red coca butter through a stencil onto the top of the chocolate.
