What is Celiac disease?
Celiac disease is an autoimmune disorder of the small intestinal lining that can cause digestive discomfort
The intestinal lining is sensitive to proteins, gliadins and glutelins, which make up gluten
This autoimmune disorder can occur genetically and could be triggered by emotional stress, pregnancy, surgery or viral infections
A look inside the body...
When gluten is consumed, one’s immune system antibodies form against gluten
The damaged villi can not absorb nutrients properly, leaving a person mal nourished

Common Symptoms
Symptoms after consumption of gluten: Abdominal pain Bloating Diarrhea
Symptoms of the disorder (over 300): Dermatitis Iron deficiency (anemia) disrupted menstrual cycles Musculoskeletal problems Weight loss or gain Poor balance Fatigue (more on next slide)
Diagnosis
Blood tests, though not always accurate, can detect antibodies when one ingests gluten in their diet
Doctors test for anti-tissue transglutaminase antibodies (tTGA) or anti-endomysium antibodies (EMA)
A biopsy of the small intestine (upper endoscopy) can prove that one is has celiac disease if the blood tests come out positive

Treatments
Since there is no cure for celiac disease, acquiring a gluten-free diet is a solution
Special brands such as Annie’s, Schar’s, Udi’s, Amy’s and EnviroKidz Organic are marked GF for Gluten-Free
Brands like Bisquik and Betty Crocker are beginning to carry gluten-free options
Substitutions such as corn/rice flour instead of wheat flour are possible solution

Gluten-Free Hummus Pizza Ingredients 1 Chebe Pizza Crust 1 cup chickpeas, cooked and mashed 1 sweet potato, cooked and mashed 1 avocado, peeled, cored and mashed 5 kalamata olives, thinly sliced 1 Tbsp. balsamic vinegar ½ cup organic tomato sauce 1 Tbsp. Herbs de Provence Directions Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Place pizza crust on parchment paper.
Spread chickpeas, then sweet potato, then avocado onto crust. Sprinkle with kalamata olives, a drizzle of balsamic vinegar and tomato sauce. Top with Herbs de Provence.
Bake for 15 minutes or until golden brown. Enjoy
