Paddy's Day Craft For KidsWith overfl owing spirits, pub crawls and boisterous parades, St. Patrick's Day celebrations are largely geared toward adults. Although children may experience a little bit of the festivities, they may not be able to participate fully in all of the activities.

That is why parents, teachers and caregivers can develop child-friendly activities that will enable children to enjoy the festivi-ties of the day but also to do so in a way that is safe and age-appropriate.

One of the easiest ways to engage children for the holiday is to enable them to create hand-made decorations and games that can be displayed. With a few simple supplies, children can cre-ate a variety of festive items to share their enthusiasm.

An idea to get them started is to construct a rainbow and pot of gold complete with leprechaun.

To do so gather the following supplies:

* poster board

* clean, empty gallon milk container

* crepe paper in rainbow colors and in black

* gold foil circles

* construction paper

* glue

* scissors

* glitter, if desired

1. Draw and cut out a leprechaun using various shades of con-struction paper. Glue it to the posterboard.

2. Cut out half of the milk container to form a "pot." Use glue to adhere black crepe paper to it. Attach to the posterboard.

3. Stick gold foil circles to form the "gold coins" that will be fi lling the pot of gold.

4. Cut out pieces of crepe paper from the rainbow colors and attach to the posterboard to form the rainbow. Let the pieces end right near the pot of gold.

5. Allow kids to embellish further with glitter and any other things they may have on hand.

Display the leprechaun with a pot of gold at the end of the rain-bow in a prime spot during your St. Patrick's Day celebration.

St. Patrick’s Day Is Coming (SPM Wire) As the nation celebrates this St. Patrick’s Day on March 17th with frothy pints of Guinness, many will raise glasses to recognize the hallowed pa-tron saint of Ireland (who is actually British!).

While those glasses are raised, consider cheering a few other Irishmen who made contributions to the world. Did you know an Irishman, John Philip Holland, invented the submarine? Color photog-raphy was invented by Ire-land’s John Joly. And guided missiles, the modern tractor, and even a cure for Leprosy were all invented by Irish-men.

So as you search for that elu-sive four leaf clover, remem-ber that Ireland has given us much more than just good beer!

St. Patrick's Day MisconceptionMyths have been present throughout history, and some have proved more enduring than others.

St. Patrick's Day celebrations often feature certain festivities that celebrants believe are straight from the Emerald Isle. But in fact, a lot of the hype surrounding St. Patrick's Day has nothing to do with Ireland at all.

One common tradition is dining on corned beef and cabbage. According to experts, the true Irish never really dined on corned beef, never mind made it an integral part of St. Patrick's Day festivities. Although famed Irish author James Joyce mentions corned beef in his book, "The Dubliners," it is surmised this could be the case because Dublin city was culturally more similar to Britain at the time than other areas of Ireland. Furthermore, much of the beef that was corned in Ireland was done so to be shipped to England and other areas of Europe.

Good Grief, Not Beef

I just want to put something straight

About what should be on your plate,

If it's corned beef you're makin'

You're sadly mistaken,

That isn't what Irishmen ate.

If you ever go over the pond

You'll fi nd it's of bacon they're fond,

All crispy and fried,

With some cabbage beside,

And a big scoop of praties beyond.

Your average Pat was a peasant

Who could not afford beef or pheasant.

On the end of his fork

Was a bit of salt pork,

As a change from potatoes 'twas pleasant.

Is an error they've never repented,

But bacon's the stuff

That all Irishmen scoff,

With fried cabbage it is supplemented.

So please get it right this St. Paddy's.

Don't feed this old beef to your daddies.

It may be much fl asher,

But a simple old rasher,

Is what you should eat with your tatties.

What Is Corned Beef?At least once a year people gather to enjoy a dish that is widely associated with Irish culture. Corned beef is a meat that is cus-tomarily served alongside potatoes and cabbage. Many people understand the “beef” part of the corned beef name, but do not understand the “corned” part.

Corning refers to pickling meat in brine. Brines, which are composed of salt water, were often used to preserve meats when refrigeration was not available.

According to the Department of Agriculture, the word “corn” comes from Anglo-Saxon times when meat was dry-cured in coarse “corns” of salt. Pellets of salt were rubbed into the meat to preserve it.

Corned beef brines today contain more than just salt. They may have different spices and fl avorings to add to the taste of the meat.

Thom-as Award to be given to a college-bound senior graduating from a public high school in Saratoga County in 2012.
