Did you know that salmon, from prehistory to the 18th Century, was the most commonly eaten fish in Europe? However the industrial revolution having caused a great degree of water pollution required the rivers to be rehabilitated. This caused the disappearance of salmon in rivers. Belgian farmhouse blue veined cheese made from raw cow’s milk with a bloomy rind. The cheese’s soft and creamy paste is uniquely characterised by its blue vein structure. In actual fact the latter is not the product of injection but precise layering of the curd. The 6 to 8 month ripening process will develop its flavour, making it more intense and rustic, and its paste more crumbly but always just as melting (cutting slices following the curd layering is possible and reflects the cheese’s advanced and artisan ripening).

Farmhouse product.This is a hard cheese which is ripened in the warm cellars. They are rinsed twice a week during ripening and form their natural rind which is rubbed with waxing at the finish. This blue-mould cheese is produced according to an old recipe from two farmers in the French Alps, the mountain pastures of Chavières and Entre-deux-Eaux which are located in Termignon, Savoy between 2000 and 2500 m above sea level. Bleu de Termignon is produced from June to September and ripens for 6 months. This a blue cheese to which no Penicillium is added. Only the milk of a single breed of cow (Tarantaise) is suited for this cheese. Initially it is still white and the formation of mould must be set in motion.Now available in 5 kg or 2.5 kg size formats.

This mountain cheese is made with raw whole milk. Its name comes from the way it has been eaten through history: cut through the middle, the slice is heated and then scraped (raclée). Raclette is also delicious to eat in unheated slices and can be stored for several months as a truckle. This Raclette releases its flavour packed with raw milk from the mountain pastures. It is made in copper vats, just like in the olden days, and slowly ripened on spruce shelves, making this an original product with a melting and fruity texture. Or (Gold) ripening lasts for 2 months and Grand Or (Great Gold) for 4 months. Raclette with Jura White Wine combines raw milk with vineyard flavours and gives rise to a union of memories revealing their real colours when melted.

How to prepare a real Fondue Savoyarde?

Grate your cheese. Warm up the saucepan with garlic and pour in white wine.

Bring to boil, lower the heat and add the cheese bit by bit whilst stirring slowly and constantly in a figure of eight. Once the fondue is creamy, add half a teaspoon of potato flour. Your Fondue Savoyarde is ready. Place it on a hot plate on the table. Be warned, don’t drop your bread on the table otherwise, as tradition would have it, you’ll have a forfeit!
