Swedish Pancakes with Lemon CurdServings: 10

INGREDIENTS

2 c Monarch® sweet pancake mix

3 c water

PREPARATION Mix water and pancake mix until smooth. Should be the consistency of heavy cream. Spray and heat a 12 inch non stick pan, coat pan with pan spray. Put a 4 oz portion of the batter in the pan and swirl to coat thinly. Brown on one side, then flip and brown the second side.

Lemon Curd INGREDIENTS

½ T corn starch

6 oz Rykoff Sexton™ Meyer lemon juice

1 ½ c water

1 c sugar

14 oz Swedish pancakes

6 T loganberry preserves

½ t salt

¼ lb butter

6 ea, eggs

PREPARATION Combine all ingredients in a food processor; pulse until mixture is combined. Place into storage container and reserve for assembly.
