That’s Just Ken

Being an outstanding server means never having to say you’re sorry you’re still waiting tables 20 years later. It’s all about owning the experience—and putting your personal style into play in the right way.

As a young Boy Ken anderson told his mother he wanted to be an actor. His mother, he says,

looked at the youngest of her seven children, sighed and replied, “Well, you better learn to wait tables.”

and learn he did.anderson is the theatrical server you’ll

see sweep up to your table at Café Lurcat in the Loring Park area of Minneapolis, and light up the room. If the guest is in the mood to play, he’ll play. If it’s a romantic couple who want only to gaze into each other’s eyes over sips of champagne, he’ll tone it down a bit. Just as a chameleon adapts its coloring to fit its environment, anderson adapts to the guest. “I can tell within 30 seconds how they’re going to be,” he says of the people seated at his tables.

a perfect night as a server is when he’s able to interact with two or more tables at the same time, to get both groups laughing together. He calls it

being “Cabaret-ish,” although he stops short of singing and dancing.

Toning it down takes a lot of discipline because anderson’s natural inclination is to be over the top. He’s well known in town both as a server and because when he’s not at work he’s out and about. “I don’t drive,” he says. “I walk around the city all the time.”

and when he’s not dressed in his Lurcat uniform—black shirt, black pants—he’s decked out much more flamboyantly. “I love red. I have a big coat, red shoes and I’m a big scarf fan. I have 20 to 30 scarves,” he says.
