SCOTCH WHISKY• Scotch whisky (often referred to simply as “Scotch”) is malt whisky or grain whisky made in Scotland. All Scotch whisky was

originally made from malt barley. Commercial distilleries began introducing whisky made from wheat and rye in the late eighteenth

century.

• Scotch whisky is divided into fi ve distinct categories: single malt Scotch whisky, single grain Scotch whisky, blended malt Scotch

whisky (formerly called “vatted malt” or “pure malt”), blended grain Scotch whisky, and blended Scotch whisky.

• All Scotch whisky must be aged in oak barrels for at least three years. Any age statement on a bottle of Scotch whisky, expressed

in numerical form, must refl ect the age of the youngest whisky used to produce that product. A whisky with an age statement is

known as guaranteed-age whisky.

• The spelling Whisky is used for whiskies distilled in Scotland, Wales, Canada, and Japan, while Whiskey is only used for the spirits

distilled in Ireland and America.

• Distiller’s Edition: which are fi nished in special casks selected by the master distiller at each distillery. Dalwhinnie’s are fi nished

in Oloroso casks, Glenkinchie in Amontillado, Cragganmore in Port, Oban in Fino sherry from Montilla, Talisker in amoroso sherry,

VODKAVodka is a distilled beverage from fermented grain,

potatoes, or fruit. Vodka typically has 40% alcohol

which was a standard set by Russian Czar Alexander

the third in 1894 for taxation reasons. Vodka means

little water in Russian, coming from the Russian word

voda. Vodka is the world’s most popular spirit. Most

premium vodkas are distilled numerous times and

at the end of distillation water is added to lower the

proof. The water can impart a very distinct fl avor to

the vodka. The vodkas are then fi ltered, typically over

charcoal to remove further impurities.

Traditionally, vodka may be made from virtually

anything — grapes, soy, beets, potatoes, corn, wheat,

and rye. Some are even made from leftover material

in the oil refi ning process. In many Eastern European

countries, vodka is not as heavily fi ltered as it is in the

West, and so the fl avors, smells, and colors from the

source materials may shine through.

After aging for at least one year, Tequila can then be classified as an “Añejo”. The distillers are required to age Añejo Tequila in barrels that do not exceed 600 liters. This aging process darkens the Tequila to an Amber color, and the flavor can become smoother, richer, and more complex.

A new classification added in the summer of 2006, labeling any Tequila aged more than 3 years, an “Extra Añejo”. With this extended amount of aging, the Tequila becomes much darker, more of a Mahogany color, and is so rich that it becomes difficult to distinguish it from other quality aged spirits. After the aging process, the alcohol content must be diluted by adding distilled water. These Extra Añejo’s are extremely smooth and complex.

A Reposado Tequila is the first stage of “rested and aged”. The Tequila is aged in wood barrels or storage tanks between 2 months and 11 months. The spirit takes on a golden hue and the taste becomes a good balance between the Agave and wood flavors. Many different types of wood barrels are used for aging, with the most common being American or French oak. Some Tequilas are aged in used bourbon / whiskey, cognac, or wine barrels, and will inherit unique flavors from the previous spirit. In 1861 Tequila Herradura was the first distillery to make a Reposado tequila and only made Tequila with 100% Agave.

RUMA distilled alcoholic beverage made from sugarcane byproducts such as molasses, or directly from sugarcane juice, by a process of

fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak cask, usually ex bourbon barrels imported from

the USA, although other barrels such as ex-cognacs may be used. Rum can be referred to in Spanish by descriptors such as ron

viejo (“old rum”) and ron añejo (“aged rum”). The style of the rum also dictates the distillation process, light rums are highly rectifi ed

in continuous stills and are often fi ltered through activated (hot) charcoal to remove the impurities. These are known as single

distillates and will usually be blended with other rums. Gold (añejo) and dark rums are usually distilled in pot stills. Distilling in a pot

still is generally done twice as this increases the alcoholic strength and also removes more unwanted impurities. Pot distilled rums

are fuller bodied with a rich fl avour that continuous distilled rums. As with light rums, pot distilled rums will usually be blended. 3

Brazil: Cachaça-fresh-pressed cane juice fermented and distilled, and can only come from Brazil. 4

Mexico: Produces a number of brands of light and dark rum, as well as other less-expensive fl avored and unfl avored sugarcane-

based liquors, such as aguardiente de caña and charanda.

French West Indies: Rhum agricole is made from vin de canne, or sugarcane wine—an approach credited to Homère Clément, a

late-19th-century native of Martinique. 5

Colombia: Aguardiente-Anise-fl avoured liqueur derived from sugar cane, popular in the Andean region. Each department of

Colombia holds the rights to produce it, but aguardiente produced in one region can be sold in another. 6

GINThe spirit base of Gin is primarily grain (usually wheat or rye), which results in a light-bodied spirit. The chief fl avoring agent in both Gin is

the highly aromatic blue-green berry of the juniper, a low-slung evergreen bush (genus Juniperus) that is commercially grown in northern

Italy, Croatia, the United States and Canada.

Additional botanicals can include anise, angelica root, cinnamon, orange peel, coriander, and cassia bark. All Gin makers have their own

secret combination of botanicals, the number of which can range from as few as four to as many as 15. Most Gin is initially distilled in

effi cient column stills. The resulting spirit is high-proof, light-bodied, and clean with a minimal amount of congeners (fl avor compounds) and

fl avoring agents

London Dry: Dominant English style of Gin. As a style it lends itself particularly well to mixing.

Plymouth: Full bodied, slightly fruity, and very aromatic

Old Tom: Last remaining example of the original lightly sweetened gins that were so popular in 18th-century England.9

LIQUEURS, BITTERS, APERTIFS & DIGESTIFSLiqueurs (also known as Cordials) are sweet, fl avor-infused spirits that are categorized according to the fl avoring agent (i.e., fruits,

nuts, herbal and spice blends, creams and such). The word liqueur comes from the Latin liquifacere (“to dissolve”) and refers to

the dissolving of fl avorings in the spirits. Top-quality liqueurs are produced by distillation of either the fermented fl avor materials or

the spirit in which they have been infused. Many liqueurs use fi nished spirits such as Cognac, Rum or Whisky as their base. Others

macerate fruit or other fl avorings in a neutral spirit.7

Bitters: Many brands of bitters began as medicinal tonics and soon found a home in cocktails as concentrated fl avor stimulants that

add a nice kick to the mix even though they are only used by the dash. The often secret formulas include a variety of herbs, fruits,

spices, and roots distilled in a base liquor. In today’s bar, bitters are essential, continue to evolve, and each bring their own qualities

to each cocktail, so don’t be afraid to experiment.

An aperitif, from the Latin aperire, or “to open,” enhances the appetite before a meal. They are normally clean, crisp drinks that are

best served cold, but without ice. A digestif is an alcoholic beverage served after a meal, in theory to aid digestion, usually taken

straight. These can be a bit heavier in fl avor and alcohol content in line with the tolerance level of a full stomach.

BRANDYBrandy is an alcoholic beverage that is distilled from wine or a fermented

fruit mash. Named from the Dutch word brandewijn, or “burnt wine,”

because of the use of heat during the distillation process, brandy can be

aged in a variety of different containers. To make a dark brandy, it may

be aged in wooden containers with the addition of caramel solution to

darken the color.

Many wine-producing countries make brandy, with the most outstanding

bottles coming from France, Spain, Portugal and Greece. Cognac,

which comes from the Charente and Charente-Maritime departments

of France, is considered the fi nest of all brandies, as well as Armagnac

from the Gers region. Other well-known worldly brandies include Metaxa

and Ouzo from Greece, Pisco from Peru, and Grappa from Italy. 8

Pisco, a colorless grape brandy, is made in Chile and Peru.

Ouzo is usually produced from pure white alcohol that has undergone a two distillation process (of course, the process varies

from distillery to distillery). After the alcohol has been distilled, it is infused with various herbs such as aniseed (most predominant),

licorice, mint, wintergreen, fennel, and hazelnut.
