Garlic page one Ember Cooking/Roasting Garlic In A Skillet• The purpose of this series is to demonstrate ember fired cooking

techniques in an cast iron skillet using a gas grill to provide fire & smoke control. • All you need is a cast iron skillet- Lodge has a great model• Purchase a bunch of garlic from the local famers market. Be sure to purchase

with the stalks on as you’ll need these for presentation and control during the cooking process. • The gas grill will provide a safe place to support the skillet while the hood will

provide air control. Just make sure that the main LP/gas is turned off. We will not be using the LP/gas of the unit.

Garlic page two The SkilletEver wonder what else you could do with the cast iron skillet other than fire place cooking? Well, use it to ember roast garlic! In this series we will show how to set up and ember roast garlic using a cast iron skillet.

While we will use the gas grill for fire proof cooking and air control- make sure the LP/gas is turned off at the tank! It will not be needed for this series.

Garlic page three Ember cooking with the SkilletWe have our skillet placed on the grates of the grill. We will be using Grande Sapore® wood chips from SmokinLicious Gourmet Wood Products. The species selected is Ash. Yes, we use Ash a lot in ember cooking of vegetables because it develops a great bed of coals and has a mild flavor. You will need a ¼ cube of the chips. Remember, we are developing a bed of coals for this cooking technique.

We have filled the cast iron Skillet with Grande Sapore chips from Smokinlicious gourmet wood products. Now we have lite the chips. I used a cooking torch to ignite the chips. I do not recommend anything other than a torch or match be used to light. Please, never use petroleum products! You will continue to burn and add wood chips to the pan until you have around 3 inches of hot coals.

Garlic page five Ember Cooking in a skilletWe are continuing our series on ember cooking in a cast iron skillet using wood chips. We are continuing to build up the bed of coals. Remember you will need approximately 2-3 inches of hot coals before you can begin roasting the garlic.I just keep adding more Grande Sapore Wood chips from Smokinlicious, until they have finally burned down! If there is not enough depth keep adding more! This is the fun part!

Garlic page sixEmber roasting GarlicOur series on Ember roasting Garlic in a cast iron pan continues with these food steps. We have filled the cast iron Skillet with Grande Sapore chips from Smokinlicious gourmet wood products.

Now that the embers are ready- approximately 2-3 inches in the skillet - I have added the garlic by placing them on top of the embers.

Taking the stems I twisted the whole garlic so that it was well seated in the embers. You can see the smoke from the embers is all around the outside of the garlic.

I close the top of the grill to control the amount of air flow to the embers.

Garlic Post 8 Ember roasting GarlicWe are into the final steps of our series on ember cooking/roasting garlic by using a cast Iron skillet. I have used Smokinlicious Grande Sapore Ash wood chips to build up about 2-3 inches of embers.

I placed the garlic with the stems attached into the bed of coals. You can see how it is charring the outside of the garlic. The stems are important as it allows you to turn the garlic without utensils. Turning will provide an even charring on the garlic.

Garlic Post 9 Ember roasting GarlicThe final roasting occurs in this series as we ember roast the garlic in the cast iron skillet- new Grande Sapore wood chips from Smokinlicious have to be added to provide some additional cooking fuel. This will allow the ash base to continue with the cook.The picture of the wood chips igniting is providing some additional heat for the roasting of the garlic. Remember I left the outer covering and stems for the sole purpose to protect the cloves! Ember cooking is direct cooking so as the garlic cooks and the outer shell becomes dry they will ignite with the wood.

We are at the end of the ember cooking process of the garlic. You can see from the picture the great char that we have over the outside of the garlic. The stems are all gone as they have either fallen off or burnt up during the roasting process! Please remove the garlic heads from the pan and allow to cool before the peeling process begins.

Garlic page eleven Ember cooking GarlicThe garlic from our Ember cooking process done in a cast Iron skillet has produced great results. The outer shell of the garlic has been properly charred over the Grande Sapore wood chips. Remember we used Ash for its mild flavor and its great coaling for our ember fire.

When the charred cover is peeled back it reveals garlic cloves roasted to perfection. Make sure you allow the garlic to cool before breaking open otherwise the clove will be too mushy.

Garlic page twelve Ember Roasting GarlicThis is the final product of our ember cooking/roasting of garlic in a cast Iron skillet. Once you peel back the final skin it will reveal a nicely toasted/roasted garlic clove.

The clove will have a wonderful wood flavor to it! This is a fabulous addition to any cooking recipe calling for garlic, including sauces if you want a wood/smoky flavor.
