Every glass of Krug Grande Cuvée is the fruit of many years of craft and patience. The art of blending gives its unique plethora of flavours and aromas, an absolute elegance that would be impossible to express with the wines of a single year. Notes of toasted bread, hazelnut, nougat, barley sugar and jellied fruits may take you by surprise. You may even taste hints of apples still on the tree, flowers in bloom, ripe and dried fruit, almonds, marzipan, gingerbread, sweet spices and even brioche and honey.
The history of Ruinart rosé, the very first rosé champagne to make its appearance, dates back to the 18th century. Over 250 years ago, its excellent quality remains the essential feature of the production of this delicate wine to this day. The nose is subtle and fresh with tropical fruits and berries. On the palate is distict and full, balance with freshness and voluptuous body.
KRIPTA comes from the best old vineyards of Penedès, an exceptional coupaje of the best plots of Macabeo, Xarel·lo and Parellada. A long ageing process using cork caps that lasts a minimum of 5 years , get a unique bouquet that consolidates Kripta as one of the great wines of the world. The Bottle is a reminiscent of Roman amphora, and the label artist Rafael Bartolozzi are the final elegant touches of this great cava.
Based on careful observation and treatment of factors influencing our land and habitat, we do not apply chemical herbicides nor pesticides, instead we use natural resources to maintain balance in the environment. Wide on entry, full and creamy on the palate. Refreshing finish, versatile and can be enjoyed throughout the meal, from the ‘aperitif’ through to the ‘digestif’.
Auntsfield continues the proud heritage of Marlborough’s first vineyard and winery established in 1873. Our Single Vineyard wines are made from grapes grown at Auntsfield Estate. The style is aimed towards texture, complexity and length, balancing the typical Marlborough fruit spectrum and aromatics with richness and mouth feel.
A genuine gift from past generations, the marles, known as "Saint Doulchard" are situated on Kimmeridgien limestone and are practically unique in the Sancerre which give the wine its own special character. Very fine gold colour with a green sheen. Its nose has a flowery fruity bouquet. Lively, supple and welcoming palate.
Our wine list, much like our culinary philosophy, embraces global inspiration and sourcing items that are true to their origin. We believe that the labels represented in our Master Wine List highlight producers that share this culture. Please
enjoy some of our featured offerings that we believe will not only enhance, but make your dining experience truly a memorable one.
In recent years, a movement towards organic agriculture and eco-friendly practices has had a profound impact on what we eat and drink. Traditional methods of farming, harvesting and viticulture are becoming very important in the wine
world. Spago is proud to highlight these producers below. Our Sommelier would be delighted to make recommendations and offer assistance.
Wine has been part of human adventure for 10,000 years. And human are unique: making natural wine means giving it the benefit of one's personal experience, culture, sensitivity and passion. It would be hazardous to suggest that winemaking is all down to chance. The paper oak indicates our commitment to respect nature as well as the spirit of nature who guides our work, full of freedom, curiosity and a demand that the result is as fine as can be.
The delicacy of Champagne Billecart-Salmon comes from combining the best tradition with the best modern vinification methods. Refreshing wine as you could wish for, it is a great wine for an aperitif. Unusual and gifted with an original personality within the range and supported by a small amount of restrained oxidation.

At Soliste, we have benchmarks to measure ourselves. L’Age D’Or had awakened, in a fashion that conjures all the finesse, minerality, elegance, and acidity that I was expecting from a white burgundy – but it also had this undeniable Russian River DNA, tart apple and quince with very faint vanilla fat in the middle palate.
The wines from the Pernot family in Puligny-Montrachet are well-known throughout the world for classic Puligny and Bâtard style. They have rich concentration and fruit, but more importantly, good acidity that allow them to age gracefully and harmoniously.
Lucien Lemoine is a small, haute-couture négociant house was established by Mounir and Rotem Saouma in 1999. Their aim is to bring to the market each year a maximum of 100 barrels of premier cru and grand cru burgundy according to their most exacting standards of élévage. A focused toffee apple, apricot blossom and wax resin bouquet. Well-balanced and pure with subtle notes of dried apricot and lime, a twist of sour lemon and a long, shows excellent length and clarity on the finish.
Ribolla grapes has been cultivated in this area for more than 1000 years. While fermenting in Georgian amphorae buried underground, it underwent a long maceration with wild yeast and no temperature control. After the drawing off and pressing phases the wine was poured back into amphorae for at least 5 more months before it started ageing in large oak barrels, where it was left for 6 years. Orchard and tropical fruits on the nose with fine tannnis, savory and earthy on the palate.
Settled in Oslavia at the Slovenian border, Stanko Radikon makes with his 11 hectares of vineyards wines like no others. His wines are incredible regarding the energy and the time Stanko puts in the bottles. The grapes are harvested manually and the fermentation takes about 4 months. Then, the wine is age 3 years in large wooden barrels and 1 year in bottle before being released. The nose is intense with floral notes, tropical fruit and assorted spices aromas. The mouth is fresh and complex with a great minerality.
Organic/Natural Wine
Rudi Pichler is among the elite growers of the Wachau producing wines of precision, power, and longevity. The cellar in Wösendorf since 1731, the family dedicate themselves to viticulture, cultivating fifteen hectares of vineyard. Valley and hillside vineyards as well as high-elevation terraces inform the aromatic and spicy complexity of this wine, offering pure, sophisticated drinking pleasure.
Current winemaker Jean-Michel DEISS was born into a long-established family of wine growers, living at BERGHEIM where the domaine is located since 1744. A fascination with medieval history and a desire to produce world class Vins de Garde were the impetus behind the winemaker quest for excellence from his Alsace vineyards. A vibrant mineral interaction with pear, apple and peach that leads to a captivatingly complex and interactively finish.
Kalleske family have been farming and growing grapes since 1853 with Seventh generation brothers, Troy and Tony established the winery in 2002 which is now certified as an organic and biodynamic producer. Plenarius is from a single vineyard of Viognier on the Kalleske property at Moppa. A complex mesh of aromas, soft and rounded with honey and apricot sweetness that providing a provocative and enchanting drink.
Garagiste specializes in artisan wines often undiscovered, unscored, and biodynamic or organic that veer toward a road less traveled. These are wines that speak of a specific place, and usually have very little oak, high acidity, and lean or medium weight textures. They can be among the best, least expensive, and most interesting examples of their kind, but they can also be polarizing, especially for those with a palate that leans toward domestic Chardonnay.

Frank Cornelissen – Nerello Mascalese, "Munjebel", Sicily, Italy 2015 246
Barone Sergio – Nero D'Avola, "Eloro", Sicily, Italy 2014 110
Paolo Scavino – "Nebbiolo, "Carobric", Barolo, Piedmont, Italy 2011 300
Historical traces of this grape seem to state the ancient region of Illyria (which at present-day includes parts of Croatia, Montenegro and Albania) as Primitivo’s country of origin. The main characteristics of the wine are fresh, pure nose of red and black berries and herbs and spices; sumptuous, elegant taste supported by velvety tannins and marked by fresh and mineral notes. These features render the wine extremely enduring.
A rich and fragrant wine of pure Nerello Mascalese from different vineyards, partly from our best parcels where we produce our crus (Zottorinoto-Chiusa Spagnolo, Feudo di Mezzo-Porcaria and Pontale Palino) as well as designated vineyards for this specific wine (Rampante, Piano Daini and Crasà). A classic, traditional Nerello Mascalese with tannins and sweetness of ripe fruit. My vision of a traditional, balanced and rich Northern Valley Etna wine.
An innovative expression of Nero d’Avola DOC, that shows the best liaison between vineyards and terroir. Fresh grass and cherry notes for a complex and extensive taste with a balanced tannin and red ruby colour. In light of its qualities Sergio can be paired with meat dishes, roast beef and seasoned cheeses.
Paolo Scavino is an historical winery in the Barolo region. It was founded in 1921 in Castiglione Falletto from Lorenzo Scavino and his son Paolo. Farming has always been a family tradition and passion. Enrico Scavino a winemaker who inherited the passion and devotion for the land he belongs to. A tightly wound style, with definition to the cherry, strawberry, licorice, spice and mineral flavors. Intense, yet elegant and long on the stony, chalky finish with fine harmony.
Organic/Natural Wine
This dynamic wine collaboration represents the innovative excellence of Chef Wolfgang Puck paired with the winemaking mastery of Paul Lato. This wine offers up a dramatic bouquet of plum preserve, crushed currants, rose petal, raspberries and vine smoke, framed—like all Lato's reds—by a lavish application of high-quality new oak. On the palate, the wine is full-bodied, velvety and succulent, with a layered mid-palate, polished tannins and a long, tangy finish.
Located in rural Carlton, Oregon, Ken Wright Cellars is devoted to showcasing the inherent quality of selected vineyard sites. With a clarity and breadth that is unequaled by other varieties, we believe Pinot noir best expresses the character of these sites. The Willamette Valley Pinot Noir is a blend of Ken Wright Cellars' traditional vineyards. Though not at the same level of complexity as the vineyard designates, this blend is extremely enjoyable, lush and full of pure, Pinot fruit.
In 1872 William Ponsot originally from St Romain in Côte d'Or, purchased a wine estate in Morey-St-Denis and set up home there. Past by generations, Rose-Marie Ponsot became the sole Director of the company, seconded by Alexandre Abel and the estate continues to be an entirely family-run business. Excellent verve and freshness to the concentrated, detailed and quite impressively pure and transparent flavors. Persistent finish with fine-grained tannins as those of the Chambolle “Charmes.”
Méo-Camuzet is one of the undisputed star estates of Burgundy runned by Jean-Nicolas Méo and Christian Faurois. Together they produce some of the very best wine in the Côte d'Or. Intense and quite tightly wound on the nose but still vibrant and energetic with a discrete dose of earthy minerality and oak. Fine and quite delicate on the palate with a lovely nervy acidity. This is a gorgeous Clos de Vougeot one of the most delightful and impressive wines.

Shafer – Cabernet Sauvignon, "Hillside Select", Stags Leap District, Napa Valley, California, USA 2008 1100
Planted in 1969, the unirrigated vines at our Yarra Valley vineyard produce elegant, complex and powerful wines. One of Australia’s most iconic wineries with an outstanding international reputation. Classic Bordeaux cabernet-style on which Yarra Yering's reputation was built. Medium-bodied and low in alcohol suggesting delicacy, but nonetheless is a sleeping powerhouse of precision, intensity and concentration that demands a requisite amount of time in bottle to unfurl and allow the drinker in.
Rich and pure, this 100% Napa Valley Cabernet Sauvignon was handcrafted from grapes grown in the historic Beckstoffer Georges III Vineyard in Rutherford. This dynamic wine collaboration represents the innovative excellence of Chef Wolfgang Puck paired with the winemaking mastery of Shrader Cellars.
The 1997 harvest produces wines of dark garnet color and high quality, with redolence of ripe Napa Cabernet. The growing season consisted of a hot Spring which followed by consistent warm conditions through our September harvest. The bouquet is dark and serious, with brooding black-cherry, leather and cedar aromas. In the mouth, flavors of black plums, mint-menthol and tobacco—all with a foresty accent—fill the palate. On the heavy side of medium-weight, with a supple texture, it has a long, toasty finish with fine tannins.
Selected from the best fruit of the vintage on our rugged, sustainably cultivated hillside estate vineyard. Aged in barred and bottled 4 years prior to release, this wine is a dramatic exampleof the Stag Leap District style, offering a balance extract and elegance enjoyable at its youth and rewards those who cellar it for a decade or longer.
Organic/Natural Wine
Excellent concentration, which is already visible in its deep ruby colour with crimson reflections, an indication of youth. The intense bouquet is reminiscent of spices and ripe fruit. Rich and full bodied on the palate with intense fruity aromas which give the wine its excellent enduring characteristics. A very pleasant wine that gives immediate pleasure and can improve over the next seven years.
Poggio di Sotto just outside the town of Castelnuovo dell’Abate in the southern part of Montalcino, where he established his estate in 1989. The vines sit on high hills overlooking the Orcia River Valley, with parcels at three different altitudes combining to make a particularly well-balanced wine. Ethereal aromas of wild berry, rose petal and spice swirl around the glass. Elegantly structured palate of black cherry and raspberry compote with bright acidity and tightly knit but refined tannins.
The wine ages in barrique, barrel and oval 15 hectolitre casks for 32 months. Grapes have traditionally been used to soften Nebbiolo's harsh edges with their lighter, fruitier characteristics.
Giovanni Bulgari, chief executive of Podernuovo and the creative soul of this venture, is naturally drawn to all environmental issues, and considers respecting nature an essential element while creating his wine. The quest for excellence and love for nature has always been a passion of the Bulgari family. Hints of wild berries, black fruits, cocoa, leather, toasty, mint, and freshly cut wood. Bold and intense on the palate with spice and balsamic notes.
Valbuena, is the purest expression of the Tinto Fino (Tempranillo) in Vega Sicilia. After fermentation, it is aged for five years, between wood and in the bottle, which is why it is called Valbuena 5º. Intense and complex nose full of nuances. Little by little they give way to red and black fruit in its optimal ripening followed by all kind of nuances: balsamic, spicy, toasted, smoked and a wide range that will be noticed as the wine evolves in the glass. An expressive, complex and balanced red wine with a very good structure. Long and very pleasant
In 1909, Pierre Tramier leads the wine estate and then transfers it to his son-in-law Pierre Perrin, a scientist that developed Beaucastel. Today, the torch is being carried by Jean-Pierre and François, Jacques Perrin's sons that continue the beautiful story of the Château. The nose reveals fruity characters, marked by a very aromatic structure which is incredibly present. The gourmet character of this wine gives it great potential and its youth allows it to be enjoyed right now.
Our vineyard sits on the side of Serralunga d’Alba and Perno and is Southeast facing. Pira contains specific characteristics due to the slow disintegration of the rocks of Castiglione. On the nose sweet tobacco, menthol and worn-in leather add nuance on the open, expressive finish.

Garbole – Corvina/Corvinone Veronese/Rondinella, Recioto della Valpolicella, Veneto, Italy 2008 230

Château Palmer's is a tale of the spirit, recounted in the lives of the Major General Palmer, the Pereire brothers, and continuing today through generations of the Mähler-Besse and Sichel families. Homages to a natural environment and to the traditions of an estate, over time they begin to resonate. Fine bouquet with dark cherries, cedar and a touch of graphite. Medium-bodied with succulent tannins with good structure. Beautifully balanced and concentrated, with fresh, fruity aromas.
The Tokaj Hetszolo estate, known for its unique wines and rich history, is situated in the heart of Tokaj-Hegyalja, on the southern slopes of Mount Tokaj.. Fresh complex nose with apricots, citrus fruits and some melon accompanied by nuts. Rich, full bodied palate with dried fruits, walnut, followed by a hint of caramel and vanilla. The high sugar levels are balanced by the crisp acidity.
Château Rieussec has been a leading wine in Sauternes for several generations. Ranked as a Premier Grand Cru in 1855, it is made with a subtle blend of Sémillon, Sauvignon and Muscadelle. A long period of ageing in oak barrels was needed to round off this very powerful wine. Citrus and fresh fruit aromas combine with candied apricot and green almonds on the nose. Great length on the palate matched with lively, fresh fruit, and a strong impression of honey and acacia blossom.
The goal of the project Garbole is undoubtedly ambitious, not only produce the best Italian wines but also the best recioto wine. An intense garnet/ruby red wine, with sour cherry plum jam and almond scents. A full bodied, strong, dry and persistent, characterised by a good degree acidity which gives it the right degree of freshness.
Late Bottled Vintage ages in cask for a minimum of four and a maximum of six years after the harvest. Because of this long ageing in wood, the LBV´s are less astringent and full bodied than Vintage ports. LBV ports are the result of a single year harvest and tend to be smoother and lighter bodied than a Vintage Port. Exuberantly fruity: raspberry, blackberries, wild berries. Full bodied, spicy and fresh with a persis-tent after taste.
