Short late harvest,after a careful atten-tion in vineyard. Slow temperature fermentation with a following perma-nence on lees in steel tanks. The wine is always bottled at the beginning of autumn,when the maturation is com-plete. Structured,quite soft , fine and some years also medium dry.

The wine is a late harvest result,it is already structured with a substantial sugary residue. The wine is kept in Slavonia oak barrel until the autumn.After a short spring rifermentation the wine becomes more austere ; however it is fresh and it has a subtle varietyaromatic.aromatic.It is bottled after 18/20 months and it’s keeping there for 6 months.

This typical Umbrian vine and cultiva-tion go back to the Roman conquests, from the ancient "Greek Wine" imported from the Mediterranean islands. This vine found a good climate and soil in Umbria and spread with remarkable ease. We use grapes that always produce a dense and strong always produce a dense and strong wine (never under 12̂) with a charac-teristic bitter aftertaste. The wine has a refined and agreeable taste, and a unique "wine" fragrance together with an unmistakable pale almost gold yellow color. If you serve it fresh it has an appetizing fragrance; in some years it is just a little bit sweet. A natural sparkling wine, obtained by the natural fermentation of Vermino wine, without adding carbon dioxide. It is made with early harvested grapes to obtain a dry wine with a fruity taste, not very strong. We suggest drinking it also during the day, as a nice break. Made with white Sangiovese grapes, Ciliegiolo and red Malavisia grapes, it is matured and worked at the begin-ning with very low temperature to cause a partial fall-out of the colored substances, obtaining a beautiful light ruby red color, brilliant, almost pink. It is very good with all dishes for a complete meal; it is great as a fresh aperitif, delicate with hors d'oeuvre; a discovery with fresh cheese. It is perfect with pizza and as a nice break during the day. Serve fresh, but not cold.

Every year we are usually using the best grapes : for thisreason the Sangiovese percentage can increase.Later on to maceration of 15 days on Later on to maceration of 15 days on the peels, the wine achieves its melo-tactic fermentation laying in stell con-tainers for 6 months. Subsequentely it comes transferred in oak for 18 months. Bottled, it completes its own maturation for 6 months. It’s very good with game dishes and meats.

Made with Merlot grapes cultivated in the Upper Tiber Valley. This wine is good to drink in the springtime after the grape harvest. It has a deep ruby colour, a delicate "wine" fragrance with herbaceous shades, stronger flavour at the beginning that mellows with time. Its dry, fruity and marked with time. In our dialect "Bindolo" means "rascal," a spiteful and astute boy. Made with San Giovese, red Malvasia, and Ciliegiolo grapes harvested in advance and worked in total carbonic maceration, where whole grapes are placed in hermetic sealing containers, with total absence of air for 12/15 days, then softy pressed, the obtained must is allowed to ferment under controlled tempera-tures. Therefore, we obtain a wine ready to drink, with a nice brilliant ruby red colour, with a refined must and fruity smell and a delicate "wine" sweet taste. This way our "Bindolo" gets through the winter and its taste remains unchanged and, during the following spring, due to it not having following spring, due to it not having had manipulation, it starts a new fer-mentation inside the bottle and becomes a sparkling wine.

This wine represents the ancient wine tradition of central Italy. Therefore, we have a dark gold yellow wine, brown with ageing, ready to drink from the second year. The smell is unmistakable and strong of dried fruit with a plum scent. A strong taste, it has the right degree of sweetness with has the right degree of sweetness with a must aftertaste. This is our sweet wine, placed to age for three years in casks (at the begin-ning oak and then chestnut), in rooms where it is possible to feel the daily and seasonal thermal changes. This way the wine obtains a very structured taste with an agreeable apricot and liquorice aftertaste, with an ethereal liquorice aftertaste, with an ethereal scent and a warm dark amber colour. After the wood cask, it spends two years in glass demijohns, to refine its characteristics.
