    Cider I Up! Drinkers will be overjoyed at the collection of ciders on displayat the Bristol Winter Cider Festival to be held at Brunelsfamous Old Shed at Temple Meads in Bristol. The festivalwhich is now in its fth year has become the largest eventof its kind in the country attracting over a thousands ciderenthusiasts to one big West Country party.

    On o er will be over 100 ciders and perries includingaward winning ciders from Somerset, Herefordshire,Hampshire and South Wales. The term Real Cider refers toa product containing at least 85% fresh apple juice, with noarti cial avourings or colourings, using traditional methodsof cider making. Cider making has long been a traditionalcountryside craft, that involves years of experience to get thecorrect blend of apples for a great tasting cider.

    The production process for making real cider is simple,and has remained unchanged for centuries: Select apples,press them, ferment slowly in barrels over the winter and byearly summer you will have dry, still, refreshing real cider! Aswell as the cider and perries on o er there will be hog roastrolls and cheese platters, and range of soft drinks for thedrivers.

    No event would be complete without music and this willbe provided by the The Mangledwurzels. More than a tribute

    We caught up with Jan at TheCoronation Tap to nd out what itslike to be landlady of Bristols famousciderhouse.

    If someone had said to me 13 years ago that Id be landlady of acenturies-old ciderhouse in a beautiful suburb of Bristol, Id havethought they were bonkers! But lifes full of surprises, and here Iam. My partner Mick had previous experience in the industry; I hadnone at all and its far removed from anything Id ever done. Wecame initially for 3 months and were set a challenge to turn thingsaround as back then The CoriTap was seen by some as the scourgeof Clifton village. Working in the legal eld and for internationalcompanies has maybe surprisingly come in pretty useful and, never having been afraid of hard work, its job done! The CoriTap is avenue to be proud of. We love it!

    Whats its history?It was originally Clifton Farm and 300 years ago was one of the very rstproperties in the immediate area surrounded by orchards and commongrazing land. Up and running as The Coronation Tap in the reign of "Mad"King George III, its traded under the same name on this same site sinceits inception. A stones throw from Brunels Suspension Bridge, we canimagine him enjoying a jug of cider here! Described as a beerhouse andpremises with cottage adjoining, it incorporated a general store providingeverything one could want under one roof. So not that much has changed!

    Why do you think The CoriTap is so incredibly popular?Were asked this a lot, and its hard to de ne really. All we do is open thedoors, make everyone welcome and hope they enjoy what we have onoffer. Its called world-famous, legendary, an institution, a traditionalold boozer, a must experience venue, and were happy with that. TheCoriTap is all those things and more.

    Having a good time is infectious, and theres always something goingon here. There are our ciders, of course, along with brilliant gigs;the annual CoriFEST when we get out of these four walls and takeover Portland Street; reunion nights/weekends, e.g. Bristol UniversityCentenary; parties; lming (we were the location for a Brizzle versionof Casablanca, and we featured in a travelogue series for Japans NTVas they dont have cider or ciderhouses over there; each programmeattracts several million viewers); fundraising events for local charities andmusic bursaries; theatre group and gig rehearsals; recording sessions;CD launches, etc. Were frequently plugged on local and national radiostations; Holey Void, a comedy space soap opera radio sitcom, wantedan audience sound effect and chose to record at one of our gigs "becausethe atmosphere and enthusiasm for the music is so good". Weve been onThe One Show (presented them with some Exhibition cider which wethink Debbie Reynolds may have been sampling)

    What else can we say other than the term CORRIED can be found inthe Urban Dictionary, and it doesn't mean how you feel after having a nicecup of tea and watching an episode of your favourite northern soap! And all of this gives The Cori a buzz, an atmosphere, and a reputation allof its own. Its certainly never boring!

    Who are your customers?Theres a really vibrant mix. All ages from all walks of life and all cornersof the globe.

    The majority are Bristols students (frequently introduced by their parents/grandparents who were educated here), and of course at this time of year freshers come in droves for their initiation. Its an unwritten part of their curriculum.

    Music lovers who come to experience amazing gigs by sensationalmusicians.

    Celebrity sightings are common. Justin Lee Collins, Chris Bonnington;Kasabians Ian Matthews pours a good pint; its rumoured that Princess Anne's chauffeur/bodyguard brought her here on the way home from anof cial visit to Bristol when she was a teenager to wait for the traf c to diedown - either that, or she was thirsty; Alison Moyet, Alan Rickman, Massive Attack, Daniel Day Lewis, God and Elvis; recently the entire Red Arrows

    Flying Squad celebrating their last ight of the season (that was a goodnight!) the list goes on and on.

    Tourists (who dont just come to Bristol to experience The Cori they cometo the UK to nd us!).

    And can we include our resident ghosts? Guess they were probablycustomers once upon a time.

    Tell us about your cidersWell were in the UKs cider city, so theres quite a choice. We haveciders on draught, packaged, iced, mulled; clear, cloudy, dry, sweet

    all of varying strengths. Something for everyone. But perhaps theone were most well-known for is the infamous draught Exhibition.Produced exclusively for us, you cant get it anywhere else on theplanet. Tastes pretty tame but dont be fooled, its strong, and servedin half-pints only. Generally known as students lifeblood, we pre-pour tray after tray to keep up with demand. Variously described, some of the printable versions are loopy juice and the devils urine.

    You might not know this, but researchers believe that quaf ng our West Country traditional tipple could potentially bene t health in thesame manner as red wine is purported to do. Seems cider is packedfull of phenolics (health-giving antioxidants) linked to protection againststroke, heart disease and cancer. Maybe theres some truth after all inthe old saying an apple a day keeps the doctor away.

    If youre really not sure which of our ciders to choose, our staff will helpyou. We have Cider Experience events when you can sample whatson offer. And we sell all our draught ciders as take-aways. Stuck for ideas for Xmas presents? But it doesnt stop there. If you're hosting aparty, ball, corporate event, any kind of celebration - why not invite usto your venue! Ever thought of having a CoriTap Cider Bar/Marquee?

    and your music? Ah, the gigs. Such a buzz! How lucky we are in Bristol to be surroundedby such an amazing hotbed of talent. The CoriTap might be small, butwe do everything we can to support not only sensational local musiciansbut those who come to play here from across the UK, Europe, Australia,the USA. When asked why we provide live music, the answer is simple.Its because we want to, not just because we can.

    And its thanks to all the guys who gig here, the brilliant audiencesand everyone else whos involved, that weve been nalists in ThePublicans UK Music Pub of the Year Awards (which is sponsoredby the Performing Right Society) for the last 2 years running. Seemsweve made quite a name for ourselves as one of the citys moreintimate music venues.

    Ellis Rich, PRS Chairman, said The Coronation Tap has a proven trackrecord of hosting brilliant live music events at their venue, and we arevery proud to support them. Gary Alesbrook, trumpeter (Kasabian/NoelGallagher), said You have a really appreciative crowd here; you playso many places and in some you go through the motions, but here it'sdifferent. I've played every venue in Bristol but this is the best."

    Given the number of changes affecting the industryover recent years, if you were prime minister and couldchange or apply new laws speci c to the pub trade,what would they be?Yes, the industrys been hit extremely hard of late; red tape coming atus from everywhere. This topic has taken over the No. 1 spot from theweather! And it makes you wonder if some things have been thoroughlythought through by the powers that be. If wiping out tradition, breakingup local communities, encouraging underage and binge drinking byallowing sales of cut-price alcohol was the aim, theyve been hugelysuccessful. Enough said. Wait till Im elected!

    What do you like to do in your spare time?Spending time with family and friends; getting out to gigs; the theatre;doing the odd spot of retail therapy (its a girly thing!); and trying to

    nish an on-going property renovation project. And, one day, Id like towrite a book about the whole CoriTap experience. Itd be a best-seller!

    Still groaning under the weight of theexcesses of the party season while

    wondering how youre going to makeit through to the end of the month, itsall too easy to wonder where it all went

    wrong rather than embrace the start of another year.

    While there are the more than laudableresolutions such as giving up smoking,

    why is it that we feel the need to rushheadlong into a new scheme only toabandon it by the end of the month

    making the whole process of choice andselection redundant and therefore futile?

    One could argue that the pressuresof January outweigh the decadence of December? With credit cards maxedand a long wait till pay day, even themost disciplined could be forgiven for

    wanting to head to the hills to escape the

    traditional terror that the month seems toevoke.

    Yet it really shouldnt have to be like that. With just a little more imagination wecould really give ourselves a break andmake the whole New Year experienceone that brims with possibilities andopportunities.

    Perhaps the way forward is tolook before you leap or not set the stakes

    too high.

    Chances are there arent many of us whohavent gained the odd couple of poundsduring the Christmas season but while the

    gym option might seem like the logicalsolution wouldnt it be more sensible tostart off with a weekly class rather than

    throw yourself into a membership whichends up a dim and distant memory by March?Many roads lead to Rome and thepath to enlightenment comes in many

    guises. With a more relaxed attitude the resolutions of old could transform themselves into a positive long-termoutlook with an anchor of longevity andhope.

    The ip side of thecoin is that weightsand Gyms were

    always somethingI found a tadintimidating yetI was keento improvebody toneand couldnt

    nd a way round it. It turns out thesolution was just an extension of what I

    was already doing and hey presto onceI discovered Aqua-robics and added

    that to the equation it gave me my missing link.

    What Im advocating is a measured approach.Look at your strengths,examine your weaknesses

    and explore whats out there for theres far more than you

    might at rst imagine. Whether it be self-improvement through education or a bit of frivolous

    fun if its an informed choicechances are youre more likely tosee it through and more importantly enjoy it.

    This year why not be a bit kinder to yourself? Start your year as youmean to go on with a quiet butmanageable determination and youmight be surprised by the outcome.

    Undoubtedly one of the highlights of 2010 was our competition to findthe face of Whats On Bristol. With thousands of entries the finals tookplace in July with local lassSamantha Beames crowned the winner.After a hectic few months for our Sam, Whatson managed to catchup with her to ask her whats happened since winning and what her

    hopes and aspirations are for 2011.Q. Sam, its been 6 monthssince you were crowned theFace of Whats On Bristol.

    Apart from securing a contract with a London Agency, whatschanged for you?The competition has given me an

    even more positive approach toachieving my goals. Its given mea great confidence boost and I amnow taking my time to really look atwhat I want to achieve as a model .

    Q. What made you enter thecompetition? Have you enteredmany modeling competitions?I have always been reluctant to entermodeling competitions and have

    only entered a few in the past. Thisone caught my eye and I just wentfor it! Being from Bristol, I thought itwould be a fantastic title to hold andfelt it was time to test myself to seeif I actually had what it takes.

    Q. Tell us a bit about yourself? Whats your background?I grew up in the outskirts of Bristolin Olveston. Modeling wasntsomething I always had a bigambition for as I was extremelyshy. I was approached to do someregular modeling work for car stylingand motor sport events which soondeveloped my interest. In recentyears I have pursued modeling inmy spare time alongside my career.I am now training and working as aquantity surveyor. Although the twocouldnt be much further apart they

    both make me who I am.Q. What do you like to do in

    your spare time? Any hobbies?Dancing is a huge passion of mine.I studied for 2 years when I left

    school at SWADA in Bristol andworked part time as professionaldancer for over 5 years, performingin nightclubs and venues around theUK. I now train weekly with a localhip hop crew and perform at everygiven opportunity.

    Q. What sort of areas do yousee yourself exploring with

    your modeling?I would particularly like to explorefashion and beauty. I love makeup, experimenting with differenthairstyles and mixing fashion trendsto create that edgy look. Id like todo some commercial modeling.

    Q. The stereotype image of

    a model is sometimes seenas someone who is a bit

    vacuous but you have a reallyinteresting job. Do you think that people have the wrongperception sometimes?Yes, I am a strong believer in not

    judging a book by its cover. Peopleare often shocked by my careerchoice as I work in a predominatelymale industry. It is a challengebut I believe a strong professionalapproach can often eliminate thatstereotype and that a model shouldpresent themselves in the way theywish to be received. If that fails

    just smile sweetly with time,people soon realise that youre notthere to make the tea!

    Q. Where would you go to havea really good night out?The girls and I quite often end upin the same places when we go outon the town but its all about gettingdressed up and having a dance tothe latest music, so if theres enough

    space on the dance floor for us tostrut our stuff were there!

    Q. Can you cook and whats your speciality?Unfortunately not! Id give myself 10out of 10 for effort though! Beans onburnt toast anyone?!

    Q. Favourite holidaydestination?

    I love Greece, its beautiful. We hadfamily holidays there when I wasyoung and I love Greek food.

    Q. Signature perfume?Ghost sweetheart is one of my oldtime favourites but the new ladymillion is a must have.

    Q. Favourite colour?(With out being stereotypical)Pink!

    Q. Coronation Street orEastenders?Too hard to choose, they are bothlike comfort food on a lazy Sundayafternoon! Bliss!

And finally, where do yousee yourself in 12 monthstime?I hope that during the next 12months I will be able to createthe right pathway for myself andcontinue to create a balancebetween my career choices.     While Winter rages all around us the natural response is to batten down the hatches and seek solacin something warm and comforting. This month were delighted to offer you two stunning dishes twe believe will well and truly put a smile on your face.We approached Peter Swanepoel, Head Chef of the Cavendish Restaurant within the Dukes HotelBath and asked him to come up with something innovative and delicious he didnt disappoint.If you want to nd out more about Peter and his team of chefs log onto:www.dukesbath.co.uk or call 01225 787960.

    Recipeof theMonthThis dish is a hearty winter warmer and is perfect for asnack or as a main meal.It is one of our best sellersat the Restaurant and is perfect for dinner parties.(All the elements can be prepared in advance and stored in the fridge till needed)

    Crispy Pork Rillette,Spiced Blue Squash Puree, Wilted chard, Baby crab apples (serves 4) Preparation time 3 hoursIngredients:500g pork belly(centre cut)20g maldon sea saltsprig of thymehalf a bulb of garlic50ml soya sauce

    50ml rice winevinegar 75ml honey/maplesyruppinch of nutmegseasoning

    20g chervil2 sheets feuille deBrick/Wontonpastry1 egg whitecling lm

    METHOD: PRE-heat oven to 160C,lightly score the fat on thepork belly and rub with salt, place the pork belly on top of the garlicand thyme in a oven proof dish and slowly roast till tender,1-2 hours

    depending on oven(once the belly is cooked,the meat will fall apart totouch) leave to cool before shredding the pork into a mixing bowl, addthe soy, rice wine, honey, nutmeg and mix thoroughly, lastly add thechervil and correct the seasoning to taste. Roll the pork mixture intoa sausage using cling lm,place in the fridge till set once the porkhas rmed up, cut away the cling lm and lightly brush the pastry withegg whites and roll the pork very tightly, making sure you dont tear the pastry, keep chilled till needed. To nish the Rillette, simply pan fryon a medium heat turning the pastry regularly till golden brown, thentransfer to a hot oven for 5 minutes (to get the heat into the centre.)

    Squash Puree2 Blue squashes cut into segments.(Available at Eades Green Grocers, Julian Rd, Bath)sprig of thymesprig of tarragon5g fennel seeds

    2g coriander seeds50ml rape seed oil50g unsalted butter

    60g demerera sugar 100ml white winekitchen foil

    METHOD: Pre-heat oven to 160C,place all the ingredients intothe foil,season with salt and pepper and roast slowly in the oven for a hour or two (Chefs Tip The longer you roast it for the better the

    avour develops and the easier it is to puree) once cooked, transfer toa mixer and puree till smooth.To Assemble the dish

    1 tin of baby crab apples(available in most supermarkets) hand full of chard leaves, knob of butter, salt and pepper.Simply wilt some spinach or chard in a little butter in a warm pan,lightlyheat the crab apples through the oven(same time as the pork belly)heat the puree and serve(we serve it at the Cavendish with porkcrackling seasoned with 5 spice and macerated baby gs.)

    Russel GreenmansVenisonPotato terrine, pear and celeriac puree,chanterelle mushrooms (Serves 4)Preparation time 2 hoursIngredients:800g Venison loinsprig of thyme2 cloves garlic50g butter 10 medium Maris

    Piper Potatoes(peeled and nelysliced)100ml Goose fat10g chopped Thyme

    10g Allspice Berries(chopped nely) 2Conference Pears(peeled and quartered,seeds removed)

    200g Celeriac(Peeled and cut intosmall dice)150ml White Chickenstock

    50g Unsalted butter 100ml CremFraishe15ml Walnut oil300g Chanterelle

    Mushrooms20ml Rape seed Oil15g ChoppedChives1 Lemon

    METHOD:For the TerrinePre heat oven to 180*C.Line a Terrine mould with grease proof papelayer the potato so they are slightly over lapping each other,brush eachlayer with goose fat and season with the thyme and all spice berries(every second layer) repeat the process till the terrine mould is ush a

    the top. Cover with foil and bake in the oven for 75 minutes till potatoare soft. Leave to cool.

    For the PureePlace the pears,celeriac,butter and chicken stock in a medium pan,bring to a simmer on the stove top, simmer till the celeriac softens anhalf the liquid has evaporated,Transfer to a mixer and puree till smoothadd the crem fraishe, walnut oil and season to taste.

    To cook the VenisonPre-heat the oven to 180C, dry the meat with a kitchen towel beforseasoning with salt and freshly ground black pepper, pre-heat a largefrying pan, add rape seed oil,sear the venison on all sides, add thethyme, garlic and butter, (the butter should start foaming) spoon thbutter mixture over the venison and transfer to the oven, cook for minutes and remove from the oven and allow to rest for 10 minuteon a cooling rack.

    To AssembleSlice the terrine into desired portions and pan fry till golden, in a hpan, fry the chanterelle mushrooms very quickly and season withsalt and nish with lemon and chives, slice the rested venison andserve with the warm puree(we recommend servingit with some Curly Kale

    or Sprouting Broccoli andsome toasted hazelnutsto add another dimensionto the dish) nish the dishwith some Maldon sea salt(optional.)
