What would I contain in a time capsule to demonstrate the legacy of my country?

What to choose?• The first thing witch came to my mind was El ingenioso hidalgo Don Quijote book

of Miguel de Cervantes.

• Maybe I could develop this presentation around Antonio Gaudí or Dalí.

• What about music? Even The President of the United States danced La Macarena!

• Fashion could be a great topic. Inditex group is growing exponentially. Also Mango.

• If we take it into sports, we are European and World football champion. We have Rafa Nadal and Fernando Alonso. Pau Gasol was never behind.

• If we take it to enterprise level, we have the best bank in the world. Panama Canal expansion is leaded by Spanish company. Also desalination plants and the investigation for Alzheimer disease vaccine.

• Spain is #1 Country in Solar Energy and 13% of our energy comes from renewals.


… but …

• What made Tourism revenue grew up by 14% and situate Spain as #2 most visited country in the world? 57M visitors and we’re only 46M in 2011!

• What situates Spain as 3rd highest life expectancy in the world and 2nd if you are female with 85,3 years old average?

• What are the most pronounced words by every single tourist that comes here?

Our gastronomy• With no doubt what we are most famous and proud is about our

Mediterranean diet and its diversity.

• If I have to save the heritage of Spain in a box I would save this book…

• It was my grandmother’s book which gave to my mother and now to me.


The recipe• So in order to prove I can cook, let’s make a Cocido Madrileño!

• This is a 3-course-meal witch is typical from Madrid. However some other regions of Spain cooks some similar recipe, It is original form The Capital.

• It is a very easy recipe.

• The star product are chickpeas.

• First course is a soup followed by chickpeas and finished by a selection of meats and chicken.

• Let’s we clear some little issue first. Every single house has its own rules. There are as many recipes of Cocido as such us houses in Madrid. It happens the same with Spanish Omelet and Paella and many other things.

• So this is my version. The one I learned from my mother and my grandma.


The recipe• The ingredients we will be using for 6 pax:

– Chickpeas. 1 cup for every person– 1 – 1,5lbs of shank meat– 1 chicken– Some pieces of ham (2-3)– Some leg bones from cow or pig or both– 3-4 cured chorizo– Potatoes– Carrots– A laurel leaf– Noodles


The recipe• The day before we start

cooking, we have to keep the chickpeas in water for at least 8 hours.

• After that time, they will look like this.


The recipe• Let’s place all ingredients but

chickpeas, potatoes and carrots in a pan. If you have a pressure cooker is faster. So I am using it! 20 min.

• Meanwhile I prepare chickpeas, potatoes and carrots. I use some kind of sock to keep it all together.


The recipe• Next step is to add our sock

into the pot for another 20 min.

• So we have it all done. Just we need to separate the broth and add some noodles to finish our soup.

• Nice presentation is required. Meanwhile we can serve some appetizers.


Time to eat• The most important part of the Spanish cuisine is enjoy it with family

and fiends.

Final ideas• Undoubtedly, Spanish restaurants and their chefs have been and will

always be in the list of the world's best. Ferrán Adriá’s El Bulli has been on top for years.

• Nevertheless Spanish cuisine has its origins in very humble dishes.

• Everything in Spain comes around food. Not only special occasion but none a single commercial trade is finished without a good meal and a bottle of wine.

• Maybe not only the book would have to be preserved. Also some of our character should be preserved.

• Some achievements of other cultures comes from engineering or sports or policy. Our greatest achievements are our people.
