kale is a cruciferousvegetable with green leaves (Brassica oleracea), with several varieties: curly kale, ornamental kale, and dinosaur (lLcinato or Tuscan) kale, all differ in taste, texture, and appearance. buy it Look for firm, evenly colored, unwilted leaves (yellow edges indicate age) and moist hardy stems. Avoid those with brown spots or small holes. Curly kale has ruffled leaves and a fibrous stalk and a lively pungent flavor with an edge of pepper.Ornamental kale (salad savoy) has either green, white, or purple leaves and its stalks coalesce to form a loosely knit head; mellow in flavor and tender in texture. Dinosaur kale or Lacinato or Tuscan kale has dark blue-green leaves with embossed texture and a slightly sweeter, more delicate taste. Smaller-sized leaves are more tender and mild than larger leaves. “Baby” kale is also available. use itSteam, bake, sauté or use in a stir-fry, or soup, or with grains. Lightly dress in olive oil and lemon for a raw salad. 1-1 ½ cups are a healthful serving. store itPlace kale in a plastic storage bag removing air as possible. Store in the refrigerator for up to 5 days (some can be stored longer), although age increases bitterness. Wash only before using to avoid spoilage. benefitsKale is a nutrition dream, high in fiber, antioxidants and carotenoids (lutein and beta-carotene), and more than 45 flavonoids, particularly kaempferol, anti-inflammatory nutrients (omega-3), and twice the vitamin K as other cruciferous vegetables. Contains vitamins A, C, E, various B vitamins, as well as tryptophan, calcium, magnesium, potassium, iron, protein, and more. NOTE: Does contain oxalates; those with kidney or gallbladder concerns should monitor intake.

ingredients‣6 leeks, cleaned and dark

green sections removed. Cut just where the color begins to change‣ 3 tablespoons salted butter‣ TT  Kosher salt, plus cracked black

pepper‣ 8  small Yukon gold potatoes, peeled and

sliced in half (Yukon's are the richest of all taters)‣ 1 quart Chicken broth‣ 1 cup heavy cream‣ 1 cup 2% milk‣ TBL Olive oil‣ 1 cup white wine or dry vermouth‣ 1/2 teaspoon white pepper

‣1 tablespoon snipped chives‣4 strips bacon, chopped (optional)

directions‣ The potatoes can be cooked a head of

time. Simmer over medium-high heat for 20 minutes. Drain and mash in mixing bowl, add butter to taste, kosher salt and 2% milk. Fold with spatula until creamy. Allow to rest.‣ In a large stock pot, heat the chicken

stock and heavy cream, slowly. Half & Half works too. ‣ Slice the leeks and allow them to sit in a

bath of cold water. This removes the grit within the roots and often associated with leeks.‣ The most important step is sweating the

leeks.. Do not rush it. In a 8-quart saucepan over medium heat, melt the butter combined with olive oil. Add the

leeks and salt and sweat for 5 minutes. Decrease the heat to medium-low and cook until the leeks are tender, approximately 20 minutes, stirring occasionally. Deglace the pan with wine/vermouth. Tip: If you have a stray onion hanging around you can add that too. ‣ Add the cooked leeks, mashed potato's

and bacon to the stock pot. Taste your product. You may want to add more salt, chicken stock or cream. It's all about the texture you prefer.‣ Under medium heat, allow the soup to

cook for 5 minutes. remove from heat. If you are not going to consume straight away, put remaining soup in the fridge ASAP. This "Thermal Shocking" will stop the cooking process.‣ Top individual serving with chopped

scallions or drizzle of white truffle.

In recognition of Delaware Day, December 7,

being the day that Delaware was the first state to ratify the United States Constitution, the Delaware Public Archives has recently created a shadow box exhibit that celebrates the story of

Delaware’s role as the First State to ratify the United States Constitution. This exhibit features

facsimiles of original documents drawn from the collections of the Delaware Public Archives and will only be displayed for a limited time.  These documents, along with the pictures and other Archives resources featured in the shadow box exhibit, describe the state’s role in the ratification process, and the interests and activities of Delawareans during this watershed period in our country’s history. The centerpiece of the Archives’ celebration is Delaware’s Ratification Document. Signed by the thirty delegates on December 7, 1787, this document bears historic witness to Delaware’s role as the first state to approve our nation’s new frame of government.  As noted by State Archivist Stephen Marz, “this display truly shows Delaware at a time when it was a leader in determining the type of government that would be implemented at the national level.” To view documents online related to Delaware being the First State check the webpage http://archives.delaware.gov/exhibits/document/index.shtml

Teditor note: There wasn’t any information posted as to events for this upcoming Celebration. Please check local media for current information.

Journalist Nancy E. Lynch, author of the award-winning social history, Vietnam Mailbag, Voices From the War: 1968-1972, and Vietnam veteran Rick Lovekin presented a multi-

media program at the Court House last Wednesday

evening. Her newspaper column ran from 1968 thru

1972. 1300 names of Delawareans serving in

Vietnam are listed in her book that’s soon to be a

documentary.

Vietnam Mailbag presented.

A very special Christmas tree in the Court House is decorated with photos

of Delaware veterans from all conflicts. If you have a vet to honor there is still time to include their picture on the Veterans’ Tree.

Planning Commission Sub-committee on Parking Seeks Input from

Residents The Planning Commission formed a sub-committee to review the current parking conditions, identify any issues, and suggest solutions. The committee’s work is currently focused on an assessment of parking and the committee is seeking the input of residents and businesses. The committee wants to learn about the experience of residents with parking in their neighborhood and in the commercial area on Delaware Street. One way to give your opinion to the committee is to complete the parking survey. The survey will be sent to every resident with the November Municipal Services bill and can be turned in at City Hall or the Municipal Services Commission office.

The survey is available online at the city web site

➔ http://newcastlecity.delaware.gov until January 11, 2013.

The parking committee will welcome input from the residents and businesses at the meetings at Town Hall. Dates
