porterhouse with balsamic steak sauce

Preheat a grill to high on one side and lightly oil the grate. Season a 2-inch-thick

porterhouse steak (3 lbs) with coarse sea salt & pepper. Grill over direct heat for 4 minutes, then rotate the meat 90 and cook 2 more minutes. Repeat on the other side. Move the steak to the cooler part of the grill (position the smaller end away from the heat); cover and cook until the meat reaches 128 to 130 for medium-rare, 12 to 15 minutes. Let rest 5 minutes before slicing.

To make the sauce, simmer 3/4 cup balsamic vinegar, 2/3 cup ketchup, 1/4 cup honey, 2 sliced shallots, 2 tbsp Worcestershire sauce, 1 tbsp dijon mustard, 1/4 tsp allspice, salt, pepper and

sugar to taste until thickened, about 15 minutes. Strain, then whisk in some butter.

cooked until the sugar dissolves and then cooled completely.

Next add the tequila, elderflower-flavored liqueur, simple syrup, pineapple juice, and orange juice. Add ice to glass and stir to mix ingredients. Top glass with red wine and enjoy!

This one hour documentary recounts the dramatic struggle of the late Governor Russell W. Peterson to craft visionary environmental legislation to preserve

Delaware’s shoreline, its forty year history, and the challenges all Delawareans face as we

struggle to balance the desire for development with the love for necessary unspoiled habitats.

(from New Jersey, Pennsylvania, Maryland and Delaware) are volunteers. Directed by Dr. Russell E. Murray, Assoc. Chair of Music at

the University of Delaware, the group consistently wins awards from the North American Brass Band Association, as they did March 30th,

is a successor to the DuPont Employees Concert Band. They incorporated in 1978 with their current name. Member John

Jonathan Wittman (director) was Director of Bands with Newark High School, and principal trumpet with the band for

“Delmarva’s Big Band” with 16 pieces, and they will “take us back in time.” Based in Townsend, Delaware, their repertoire includes 1940s hits from Count Basie, Les Brown, Tommy
